Development of an Antimicrobial Edible Coating to Improve Microbial Safety of Wild Vegetables (산채류의 미생물 안전성 증진을 위한 가식성 항균 코팅 개발 및 적용)

  • The edible coating system, consisting of gelatin and bacteriophages, has been developed to enhance the microbial safety of wild vegetables. Newly isolated Escherichia coli phage EP and Staphylococcus aureus phage SP were loaded into the gelatin coating solutions. The phages remained significantly stable for up to 3 days, respectively, and exhibited rapid antibacterial capacity within 2 h of coating application (p < 0.05). The developed coating was applied to bracken and exhibited antibacterial efficacy against E. coli and S. aureus within 6 h (1.9-log CFU/mL and 1.5-log CFU/mL). Furthermore, the coated bracken significantly prevented weight loss and maintained firmness for 10 days (p < 0.05). Consequently, gelatin-based edible coatings containing phages have the potential as an antibacterial packaging strategy.

Studies on the Components of Wild vegetables in Korea (산채(山菜)의 성분(成分)에 관(關)한 연구(硏究))

  • To evaluate the nutritive value, 13 Wild vegetables which commonly used for side dish were analyzed. Their Moisture are lower than that of other vegetables. Crude Protein content of thess Wild vegetables is more than 2% , which is higher than that of other vegetables and these tendencies were also shown in the content of Crude Ash. The content of Crude Fat and of Crude Fiber are similar in the Wild vegetables, but Crude Fiber of C. lanceolata TRAUTV is three times higher than that of other Wild vegetables. In all Wild vegetables, the K content of Mineral is similar, but that of C. lanceolata TRAUTV is very low. The content of Ca and P are quite different among Wild vegetables. The content of Mg is also similar each other, about 16mg%, but that of P. agwilinum var. latiusculum UNDERW, A. elata SEEM, A. altissima SWINGLE, root of A. triphylla (Thunb.)A.DC., H.Thunbergii BAK. is 8.99, 7.69, 4.30, 4.13 and 1.92mg% respectively. Total Amino acids were contained in order of A. elata; 3072.4mg%>C. lanceolata TRAUTV; 2709.4mg%>P. agwilinum var. latiusculum UNDERW, A. altissimB SWTNGLE, A. Japonica KOIDZ, S.palmata MAX. : about 2350mg%>L.Jaluensis KOM., P.Caponicus MAX., leaf of A. triphylla(Thunb.)A.DC., C.Japonicum var. ussuriense, H.plantaginea ASCHERS; about 1400mg%>H.Thunbergii BAK., A.scaber THUNB, root of A. triphylla(Thunb.) A.DC. ; about 600mg%, Asp.A.A. and Glu.A.A. content, 46% of Total A.A. is higher than other Amino acids and the content of Arg. A.A. in C.lanceolata TRAUTV which is higher than that of other Amino acids is 6 times highly than that of other Wild vegetables. A. altissima SWINGLE, H.plantaginea ASCHERS, A.Japonica KOIDZ contain Vitamin C a little avobe, 45.9mg%, 36.8mg%, 30.2mg% respectively. Glucoslde content of L.Jaluensis KOM., C.lanceolata TRAUTV which are 4.1%, 3.5%, were highest of all ana that of P.Caponicus MAX., P.agwilinum var. latiusculum UNDERW, 2.2%, 2.0% is in the second, which seems to be the cause of bitter taste.

The Actual Distributing States of the Fresh Wild Vegetables in the Five-Day Traditional Markets of the Southern Districts in Korea (남부지방 5일장에서 신선 산채류의 유통 실태)

  • This study was carried out to investigate the kinds of fresh wild vegetables, the number of street stalsl, seller's age, and the selling list of items of the street stall in the five-day traditional markets of Gyeongnam Tongyoung and Namhae, Jeonnam Naju and Younggwang, Jeonbuk Iksan and Jangsu, from March to May, 2005. The number of street stalls selling fresh wild vegetables was forty nine in Tongyoung, twenty five in Namhae, thirty in Naju, eighteen in Younggwang, one hundred and thirty in Iksan, and seventeen in Jangsu. The selling lists of items totaled forty items; thirty in Tongyoung, seventeen in Namhae, twenty in Naju, sixteen in Younggwang, twenty seven in Iksan, and thirteen in Jangsu. The main kinds were Aster scaber, Aralia elata, Pteridium aquilinum var. latusculum, Artemisia princeps, Sedum sarmentosum, Oenanthe javanica, Pla쇼codon grandiflorum, Petasites japonicus and Allium monanthum. sprouts or woody plants such as Arazia elate, Ailanthus altissima, Meliosma oldhamii, and Kalopanax pictus were also being sold. About $80{\%}$ of the sellers were over fifty one years old. Half of the sellers were at least sixty years old. More thab $77\%$ of the street stalls in the traditional markets sell fewer than four kinds of fresh wild vegetables.

Antimicrobial Activity on Respiration Diseases Inducing Bacteria and Antioxidant Activity of Water Extracts from Wild Edible Vegetables (산채류 추출물의 항산화 활성 및 호흡기 질환을 유발하는 세균에 대한 항균활성)

  • To investigate the antimicrobial activity on bacteria causing a respiration disease and antioxidant effects of water extracts from 12 kinds of wild edible vegetables, we extracted the water extracts for 72 h in $7^{\circ}C$ using distilled water as solvent. The water extracts except Ixeris dentate and Allium monanthum had high concentrations of phenol compounds and flavonoids. Liguraia fischeri specially had the highest level on total phenol compounds and flavonoids with 205 ${\mu}g/mL$ and 98. 86 ${\mu}g/mL$, respectively. The each 0.05% extracts of Sedum sarmentosum and Liguraia fischeri had high effect on the DPPH radical scavenging activity among wild edible vegetables and the most extracts promoted antioxidant activity with increasing concentration of extract. The catalase activity of Erysimum aurantiacum and Aralia elata showed more than 150 units per g of fresh tissue. The effect of antimicrobial activity on water extracts showed characteristic activity. Only Staphylococcus aureus KCTC 1928 and Corynebacterium diptheriae KCTC 3075 were inhibited cell growth on the other hands, the remainder of bacteria was not inhibited cell growth. Nevertheless, the extracts of wild edible vegetables had specific concentration as MIC for antimicrobial activity respectively. In case of the extract of Aster scaber, Erysimum aurantiacum, and Allium monanthum had over 30% antimicrobial activity on the bacteria causing a respiration disease. In results, the wild edible vegetables include high concentrations of total phenol compounds and flavonoids that give a good antioxidant activity and antimicrobial activity. Therefore the wild edible vegetables are functional food for anti-aging and physiological activation.

Evaluation of Antioxidant and Cognition Improvement Effects of 10 Wild Vegetables Cultivated in Gangwon Province (강원도 10종 산채류의 항산화 및 인지능력개선 효능 평가)

  • The purpose of this study was to investigate effect of methanolic extracts of 10 kinds of wild vegetables cultivated in Gangwon province on antioxidant activity, acetylcholinesterase, and β-secretase inhibitory activities. Results showed that among the wild vegetables, Aralia elata(Miq.) Seem shoot extract exhibited the highest total phenol content (84.65±1.08 mg GAE/g) and total flavonoids content (70.77±0.55 mg RE/g), respectively. The antioxidant activity of wild vegetables extracts was measured by using 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) assay. Aralia elata(Miq.) Seem shoot extracts had the highest DPPH and ABTS scavenging activity (90.16%, 40.18% at 2 mg/mL). As a result, Aralia elata(Miq.) Seem shoot extract was the most effective in terms of acetylcholinesterase inhibitory activity (35.94% at 1 mg/mL). In the β-secretase activity assay, all 10 kinds wild vegetables extracts showed low inhibitory activity, and Aralia elata(Miq.) Seem shoot extract had highest inhibitory activity among the 10 wild vegetables extracts was 14.99%. Taken together, these results showed that Aralia elata(Miq.) Seem shoot extract has potential cognition improvement impact, suggesting that it may provide an effective strategy for improving cognition.

Polyphenol Analysis and Peroxynitrite Scavenging Effect of the Extracts from Eight Korean Mountainous Vegetable (한국 산채류 8종 추출물의 폴리페놀 함량분석 및 Peroxynitrite 소거효과)

  • Mountainous vegetables are usually used in the early stage of plant growth. We attempted to identify the quantity of polyphenols (caffoeoylquinic acids (CQs) and flavonoids) and peroxynitrite scavenging effect ($ONOO^-$) of eight Korean mountainous vegetables. The prominent characteristics were as follows: Only the roots of two plants Taraxacum platycarpum and Ixeris dentata contained chicoric acid. Five CQs were identified in the leaves of Cacalia firma whereas only 3-p-coumaroylquinic acid in the petioles of the plant was shown. The quantities of polyphenols such as quinic acid or tartaric acid derivatives in the mountainous vegetables were generally high, though those of flavonoids were very low. The $IC_{50}$ of chlorogenic acid, chicoric acid and kaempferol were 0.31, 0.12 and $0.25\;{\mu}g/ml$, respectively.

Quality characteristics of Aster scaber and development of functional healthy drinks using its extract (참취의 고부가 식품이용화를 위한 품질특성 및 기능성 건강음료 개발)

  • This study was conducted to investigate quality characteristics of Aster scaber to increase the value of functional food resources. To examine quality characteristics of Aster scaber, various factors such as color, texture, fiber, minerals, tannin, crude proteins, crude lipids and sensory quality were determined using physiochemical methods. The contents of dietary fiber were 0.68 g in each 100 g of Aster scaber (freeze drying base). In mineral contents, iron was the highest value in Aster scaber (freeze drying base). The contents of tannin were 35.6 ppm of Aster scaber (fresh base). Aster scaber was shown significant difference in tannin from freeze drying leaf. From the results of sensory evaluation, the age of 30's and 40's showed a better acceptability in blanching. Functional healthy drinks were made from extracts of Aster scaber for relieving thirst and promoting health. The recipe of drinks were decided to establish manufacture condition through the sensory evaluation, color, flavor, taste, and overall acceptability. The shelf-life was established in 18 months through quality was analyzed such as soluble solids, optical density 480, pH, acidity and microorganisms.

Effect of Korean Native Plant Diet on Lipid Metabolism, Antioxidative Capacity and Cadmium Detoxification in Rats (한국 고유의 산채류 첨가 식이가 흰쥐의 지방 대사 및 항산화능과 Cadmium 제독에 미치는 영향)

  • This study was performed to investigate the effects of Korean native plant diets on lipid and cadmium (Cd) metabolisms and also antioxidative enzyme activities in rats. Seventy male Sprague-Dawley rats weighing 210.3$\pm$2.7g were blocked into ten groups according to body weight. Rats were raised for four weeks with diets containing 0 or 0.04%(w/w) cadmium chloride and 5%(w/w) plant powder-Ssook(Artemisia princeps var. orientalis HARA), Chamchwi(Aster scaber THUNB), Gomchwi(Lingularia fischeri TUBCZ). or Solbeerum (Portulaca oleracea LINNE). Food intake, weight gain, food efficiency ratio, and weights of liver, kidney, spleen and epididymal fat were significantly lower in Cd-exposed groups, food efficiency ratio, and weights of liver, kidney, spleen and epididymal fat were significanlty lower in Cd-exposed groups. Plasma total lipid level, liver total lipid, cholesterol and triglycerde concentrations, and fecal total lipid, cholesterol and triglyceride excretions were decreased by Cd administration. Total lipid and triglyceride concentration in plasma and liver were lower in Chamchwi groups together with increased fecal total lipid and triglyceride excretions. Cholesterol concentration in plasma and liver were lower in Gomchwi groups with increased fecal cholesterol excretions. Activities of red-blood-cell superoxide dismutase(SOD), and liver catalase, SOD and glutathione peroxidase (GSH-px) were decreased significantly by Cd administration. Thiobarbituric acid reactive substance(TBARS) concentrations of plasma and liver were increased by Cd administration. Thiobarbituric acid reactive substance(TBARS) concentration of plasma and liver were increased by Cd administration. Administration of plant diets decreased plasma and liver catalase, SOD and GSH-px activities in Cd-free diet groups and increased them in Cd-administered groups. Plasma and liver TBARS concentrations were decreased in animals fed plant diets, with Chamchwi showing the most effective antioxidative capacity. The concentration of Cd accumulated in blood and tissue decreased in Cd-exposed groups fed plant diets. Liver Cd concentration were lower in the Chamchwi and Gomchwi groups, and kidney Cd levels were lower in the Ssook and Chamchwi groups. Among them, Chamchwi was the most effective in Cd detoxification. In conclusion, Chamchwi and Gomchwi were effective in lowering tissue lipid levels, with Chamchwi having the greatest antioxidative and detoxifying effects.

A Comparison of Photosynthetic Characteristics of Three Ligularia species Under-tree Cultivation (임간재배지에서 세 종 곰취(Ligularia)속 식물의 광합성특성 비교)

  • The photosynthetic characteristics of three Ligularia species, L. fischeri, L. fischeri var. spiciformis and L. stenocephala under-tree cultivated in Dunnae-myeon, Hoengsung-gun were measured and compared. Total mean photosynthetic rate increased with increasing the light intensity up to 2,000 PPFD. Mean photosynthetic rate of L. fischeri increased to maximum value of $21.1{\mu}mol\;CO_{2}m^{-2}s^{-1}$ with increasing the light intensity up to 1,600 PPFD, but it was decreased at 2,000 PPFD. The highest photosynthetic rate was shown in L. fischeri var. spiciformis, followed by L. fischeri, and L. stenocephala. was the highest $27.39{\mu}mol\;CO_{2}m^{-2}s^{-1}$ among three species, followed by that of The differences in photosynthetic rates were significantly different among the species each measuring date. L. fischeri var. spiciformis was more adaptive species at the low elevated under-tree cultivated sites, such as, Sanchemaeul Dunnae-myeon Hoeyngseung-gun than L. fischeri and L. stenocephala.

Analysis of Vegetation and Vegetation-Environment Relationships in Main Wild Vegetables of Ulleungdo in Korea -Vegetation of herb layer of the Aster glehni, Allium ochotense, and Aruncus sylvester - (울릉도 주요 산채류 자생지의 식생 및 환경과의 상관관계 분석 -섬쑥부쟁이, 울릉산마늘, 눈개승마의 초본층 식생을 중심으로-)

  • This study was conducted to provide ecological basic data that use to establish environmental conditions for cultivation of wild vegetables in 2016-2018. Therefore, we investigated the vegetation structure and the correlation between the community structure and the environmental factors for natural habitats of wild vegetables(Aster glehni, Allium ochotense, and Aruncus sylvester) distributed in Ulleungdo. As a result of population and gradient analysis, the vegetation was classified into Aster glehni community, Allium ochotense community, and Aruncus sylvester community. We confirmed that the classification by population analysis was consistent with that by TWINSPAN method, suggesting that they were complemented each other. The importance value of Aster glehni was the highest in all communities, followed by Aruncus sylvester, Allium ochotense, Hydrangea petiolaris, Dryopteris crassirhizoma, Asperula ldorata, Phryma leptostachya var. asiatica, Disporum viridrescens, Hedera rhombea, Anthriscus sylvestris, and Hepatica maxima. According to the results of DCCA ordination analysis, among those communities, the Aster glehni community was distributed in soil where the nutrition including T-N and O.M. were intermediate. The Allium ochotense community was distributed on the a little high northern slope at the highest altitude where the CEC and O.M. were the highest, and other nutrition and pH were low. The Aruncus sylvester was distributed on high slope and altitude on which the amount of exchangeable cation such as $Ca^{{+}{+}}$, $Mg^{{+}{+}}$ and pH were high, and the CEC, $P_2O_5$, and O.M. were the lowest.
