Quality Changes of Fresh-cut Packaged Fuji Apples during Storage (최소가공 Fuji사과의 포장재 및 전처리 방법에 따른 저장 중 품질변화)

  • Fuji apples were sliced and dipped in distilled water, 1% (w/v) ascorbic acid and 1% (w/v) oxalic acid. After minimal processing, the slices were packaged with three films which have different gas transmission rate and stored in cold room$(0-2^{\circ}C)$. The visual quality, gas composition, pH, texture, soluble solids content and titratable acidity were determined. The most deteriorative effects on quality were produced by browning of flesh. Ascorbic acid inhibited the development of browning and extended storage life from 7 days of control to 14 days at $0-2^{\circ}C$. Minimally processed Fuji apple treated with ascorbic acid and P640 film showed exhausting of oxygen in the packaging after 14 days. It showed only a slight reduction of pH from 3.73 to 3.72. The visual quality, gas composition, pH, texture, soluble solids content, titratable acidity were slightly changed, indicating that higher quality was maintained during storage. Ascorbic acid inhibited the development of browning and extended storage life of fresh-cut Fuji apple.

Studies on the Correlation between Heavy Metal Contents of Apple Orchard Lands and its'Leaves (사과 과수원토양(果樹園土壤)과 그 잎중(中)의 중금속(重金屬) 함량간(含量間)의 상관관계(相關關係)에 관한 연구(硏究))

  • This study was performed to reveal the heavy metal contents in apple leaves, and to estimate the correlation between contents of heavy metals of orchard lands and those of apple leaves. For this experiment, the apple leaves were collected from 58 apple orchards in Korea. The results were as follows ; 1. The average heavy metal contents in apple leaves were 26.44(6,23-182,85) ppm in Cu, 0.34 (0.07-0,61) ppm in Cd and 9.47 (0.00-225.50) ppm in Pb. 2. On the simple correlation coefficients between contents of heavy metals of orchard lands and those of apple leaves, all three copper cadmium and lead were positive but cadmium was insignificanfly, correlated. There was no difference among varieties (Ralls, Jonathan, etc) in these results. 3. The 0.1N HCl extraetion proved, was more suitable than the $IN-NH_4OAC$ extraction for describing the relation-Ship between heavy metal contents of apple leaves and those of orchard lands.

Development of SNP markers for the identification of apple flesh color based on RNA-Seq data (RNA-Seq data를 이용한 사과 과육색 판별 SNP 분자표지 개발)

  • For comparison of the transcription profiles in apple (Malus domestica L.) cultivars differing in flesh color expression, two cDNA libraries were constructed. Differences in gene expression between red flesh apple cultivar, 'Redfield' and white flesh apple cultivar, 'Granny Smith' were investigated by next-generation sequencing (NGS). Expressed sequence tag (EST) of clones from the red flesh apple cultivar and white flesh apple cultivar were selected for nucleotide sequence determination and homology searches. High resolution melting (HRM) technique measures temperature induced strand separation of short PCR amplicons, and is able to detect variation as small as one base difference between red flesh apple cultivars and white flesh apple cultivars. We applied high resolution melting (HRM) analysis to discover single nucleotide polymorphisms (SNP) based on the predicted SNP information derived from the apple EST database. All 103 pairs of SNPs were discriminated, and the HRM profiles of amplicons were established. Putative SNPs were screened from the apple EST contigs by HRM analysis displayed specific difference between 10 red flesh apple cultivars and 11 white flesh apple cultivars. In this study, we report an efficient method to develop SNP markers from an EST database with HRM analysis in apple. These SNP markers could be useful for apple marker assisted breeding and provide a good reference for relevant research on molecular mechanisms of color variation in apple cultivars.

Selection of Crabapple Pollinizers for 'Fuji' Apple through Physiological and Genetic Analysis (꽃사과 품종의 생리 및 유전적 분석을 통한 '후지' 사과의 수분수 선발)

  • We investigated characteristics and self-incompatibility genotypes of 11 crabapple cultivars to introduce a new pollinizer of 'Fuji' apple tree in Korea. Flowering dates of eleven crabapples were two to seven days earlier than that of 'Fuji'. The rate of pollen germination in vitro was ranged from 85.6% to 98.0% except 'Virginia'. Controlled pollination treatment with each crabapples to 'Fuji' increased fruit set rate about 20.4% to 34.4%, the number of seed per fruit about 13.8% to 42.3% and fruit weight about 7.4% to 16.7% compared to open pollination. Tested crabapples were resistant to peach fruit moth, brown leaf spot and sooty blotch in general. A PCR amplification method using S-RNase primers was carry out in eleven crabapples. S-alleles, $S_3$, $S_5$, $S_9$, $S_{10}$, $S_{20}$, $S_{26} from six crabapples were determinated. Through sequencing analysis, $S_5$ ('Manchurian', 'Virginia') and $S_9$ ('Yantaishagou') showed 100% homologous to previous result. Based on our results, it was recommended that 'Manchurian', 'Hopa A', 'Hanyaehanakaidou', 'Spectabilis' could be promising pollinzers for 'Fuji' apple cultivar.

Residue Levels of Chlorpyrifos and Chlorothalonil in Apples at Harvest (Chlorpyrifos 및 Chlorothalonil의 사과 생산단계별 잔류특성)

  • An organophosphorus insecticide, chlorpyrifos and an arylnitrile fungicide, chlorothalonil commonly used far apple were subjected to a residual investigation under field conditions to ensure safety of terminal residues at harvest. After pesticides were applied at standard rate in apple tree fer 15 days for chlorpyrifos and 30 days far chlorothalonil, persistence of their residues in apple was investigated by several interval. At harvest, residual concentrations of chlorpyrifos and chlorothalonil in apple were 1.3 and 2.4mg/kg, respectively, and the residue levels were higher than MRL 1.0 mg/kg in Korea. As well fitted by the first-oder kinetics, biological half-lives of the pesticide residues in apple were 9.3 days for chlorpyrifos and 32.2 days for chlorothalonil. During the storage, half-lives of chlorpyrifos and chlorothalonil were 35.0 and 56.3days at room temperature, and 120.7 and 182.8 days at 412, respectively. Distribution of chlorpyrifos residue in flesh, fruit skin and stalk cavity of each apple corresponded to 0.1% 22.8% and 77.1%, respectively. In case of chlorothalonil, residue in flesh, fruit skin and stalk cavity was 4.4%, 10.4% and 85.2%, respectively.

Effect of Combined Osmotic Dehydration and Hot-air Drying on the Quality of Dried Apple Products (삼투건조와 열풍건조의 조합이 사과 건조제품의 품질에 미치는 영향)

  • This study was conducted to investigate the effects of combined osmotic dehydration and hot-air drying on the quality of dried apple products. Apple cylinders were steeped in 30% and 50% sucrose solutions at different steeping times. During the osmotic dehydration, as the concentration of the sucrose solution and steeping time increased, weight reduction and water loss increased, and the solid gain showed similar results. Osmotic dehydration in the sucrose solutions was followed by hot-air drying at 50 and $70^{\circ}C$. The experimental data were fitted successfully using the modified Page model. At the drying temperature of $50^{\circ}C$, the drying time increased from 4.15 hr for the control to 5.78 hr and 6.42 hr for the 30 and 50% sucrose solution treatments, respectively. Similar results were shown at the $70^{\circ}C$ drying temperature. The k and n values of the apple cylinders decreased by osmotic dehydration, and the k and n of the apple cylinders steeped in the 50% sucrose solution were lower than those of the samples steeped in the 30% sucrose solution. The qualities of the dried apple products were compared to samples that did not undergo osmotic dehydration. The shrinkage and rehydration capacity of the apple products decreased via osmotic dehydration, and decreased as the concentration of the sucrose solution increased. The compressibility ratios of the apple products to raw apple cylinders increased by osmotic dehydration, and increased as the concentration of sucrose solution increased. The sensory evaluation results for the apple products rehydrated in yoghurt indicate that osmotic dehydration greatly enhances the palatability of apple products in terms of appearance, taste, and texture.

Dominance and Distribution of Weed Occurrence on Orchards of Apple, Grape, Peach, Pear, and Plum of Gyeongbuk Province (경북 지역의 사과, 배, 복숭아, 포도, 자두과원의 잡초 발생 분포 및 우점도)

  • The study was conducted to get a information on the dominance and distribution of weeds occurred in major orchards including apple, grape, peach, pear, and plum at 631 sites of Gyeongsangbuk-do during winter and summer season. The weeds classified by family and life cycle occurred in the five orchards were summarized as 36 family and 105 species in apple orchard, 34 family and 126 species in grape orchard, 34 family 126 species in peach orchard, 33 family 98 species in pear orchards, and 36 family 111 species in plum orchard. In addition to life cycle of weeds, most orchards except for pear orchard were dominant to biennial weeds. The most dominant importance value was observed in pear orchards as 6.57%. In winter's season, the weeds were summarized as 31 family and 89 species in apple orchard, 28 family and 71 species in grape orchard, 32 family 111 species in peach orchard, 27 family 68 species in pear orchards, and 33 family 83 species in plum orchard. In summer's season, the weeds were distributed as 31 family and 101 species in apple orchard, 27 family and 69 species in grape orchard, 29 family 91 species in peach orchard, 31 family 94 species in pear orchard, and 31 family 97 species in plum orchard. In winter season, the most dominant weeds in apple, grape, peach, pear, and plum orchard were Capsella bursa-pastoris, Laria media, Capsella bursa-pastoris, Capsella bursa-pastoris, and Erigeron canadensis, in turn. In summer season, the most dominant weeds in apple, grape, peach, pear, and plum orchard were Acalypha australis, Acalypha australis, Setaria viridis, Setaria viridis, and Setaria viridis, respectively.

The Effects of the Levels of Perception about the PB Apples in the Major Supermarkets on the Purchase Intention (대형마트 PB상품의 브랜드 이미지, 품질수준, 지각된 가치가 브랜드 신뢰와 구매의도에 미치는 영향 -PB사과 상품을 중심으로-)

  • The current study aimed to explore the levels of consumers' perception for the PB apples which mainly sold in the large retailers, and then suggest the efficient marketing strategies for activating sales of the PB apples among the farm produce. The findings of the study revealed that the levels of the consumers' perception of value for the PB apples were influential on the brand credibility. In addition, the levels of the quality, perception of value, and brand credibility significantly affected the purchase intention. The image of the brand, however, did not show the effects on the brand credibility and purchase intention. Based on the study, in order to activate the brand for the local farm produce, the analysis results could suggest the four alternatives. Firstly, it is needed for the NB apples to be standardized and improved in terms of the qualities. Secondly, the more efficient ways to facilitate the purchases for the NB apples should be reconsidered in the emotional package. Thirdly, the levels of customers' perceptions for NB apples need to increase by providing them with convenient ways of purchases. Lastly, connecting consumers' groups with producers' groups could eventually enhance the brand credibility.

The Accumulation of Rare Earth Elements Fertilizer and its Subsequent Effects on Apple Fruit Quality at Harvest and During Storage (희토류비료 시비가 사과 과실내 축적과 수확 및 저장 중 사과품질에 미치는 영향)

  • Rare earth elements fertilizer and Ca were sprayed on eight-year-old 'Fuji'/M.9 apple trees during two consecutive seasons, and fruit quality was quantified at harvest and 5-month long storing in a commercial cooling house at $4^{\circ}C$ and 80~85% RH. In the first season, single-sprayed of rare earth elements fertilizer showed appreciable accumulations of its elements (La, Pr, Gd, and Nd) in the fruit. In the following season, application of higher doses accumulated higher amount, indicating that the accumulation of rare earth elements was dose-dependent. However, rare earth elements did not affect the accumulations of Ca, Mg, and K in 'Fuji' apple fruit showed that there was no interaction between rare earth elements and these macronutrients. Double-spray of 0.2% rare earth elements increased fruit redness at harvest and had exhibited better color. Although at harvest it did not show significant effects on fruit weight, pulp firmness and titratable acidity (TA), but had pronounced effects on inhibiting fruit softness and retarded decrease of TA during storing. Furthermore, it reduced respiration rate and inhibited ethylene production during storing indicated that rare earth elements may be an alternative for prolonging the shelf life of 'Fuji'/M.9 apple fruit.

Comparison of Antioxidative Activities of Fuji Apples Parts according to Production Region (후지 사과의 산지에 따른 부위별 항산화 활성 비교)

  • To observe the functionality of Fuji apples, this study compared and analyzed the general and anti-oxidative components of apples based on production region. This study found that DPPH radical scavenging activities among parts of apple from the Chungju region were 82.84% in peels, 26.98% in peel-flesh, and 18.89% in apple flesh, and these values were lower than those from other regions (P<0.01). Antioxidative was 48.64% in the apple core, which was higher than those in peel-flesh and apple flesh. ABTS radical scavenging activity was highest (79.80%) in peels of apples from the Andong region, whereas values in peel-flesh and apple flesh were highest in apples from the Yesan region (P<0.01). For antioxidative activities in the apple core, apples from the Chungju region showed more than twice the value (52.34%) of other regions. Phenol contents in peels were significantly high [12.03 mg gallic acid equivalent (GAE)/g] in apples from the Muju region, whereas phenol contents in peel-flesh were high (6.01 mg GAE/g) in those from the Andong region. Antioxidative activity in apple flesh was significantly high (5.57 mg GAE/g) in apples from the Yesan region. For antioxidative activities in the apple core, apples from Chungju region showed a relatively high value (6.53 mg GAE/g) (P<0.01), although values were low in apple peel, peel-flesh, and apple flesh. For the combined amount of flavonoids, values in apples from the Yesan region were high in apple peel, peel-flesh, and apple core [56.23 mg quercetin equivalent (QE)/g (P<0.01), 4.05 mg QE/g (P<0.05), and 4.00 mg QE/g (P<0.01), respectively], whereas flavonoid content in apples from the Andong region was high in apple flesh [4.35 mg QE/g (P<0.01)]. The results show that anti-oxidative activities were relatively higher in apple peel than flesh.
