Quality characteristics and antioxidant activities of aronia jams added with apple (사과를 첨가한 아로니아 혼합잼의 품질특성 및 항산화활성)

  • The objective of this study was to investigate the quality characteristics and antioxidant activities of aronia jam prepared with different content of mashed apple. To analyze the quality characteristics pH, texture, color, antioxidant activity, total polyphenol content, and sensory property were investigated. As aronia amounts decreased, the pH of aronia jam level increased from 3.97 to 4.40, while its total acidity decreased from 0.39 to 0.27. In color, the L-, a-, and b- values increased with decreases in aronia contents when compared with 100% aroma jam. Texture evaluation revealed that the hardness, springiness, gumminess, and chewiness of 100% aronia jam were markedly higher than those of the control and other samples (p<0.05). As the aronia content decreased, both the antioxidant activity and total polyphenol content significantly decreased (p<0.05) and the total anthocyanin content gradually decreased. In the sensory evaluation, the jams containing 50% and 70% aronia showed higher values than those of other samples in overall acceptability. Taken together, aronia jam with 30% apple could be the best in order to meet the taste and functional requirements for consumers.

Environmental Characteristics and Species Composition of Boehmeria platanifolia Habitat in South Korea (남한 개모시풀의 자생지 환경특성과 혼생식물종 분포)

  • This study was conducted to evaluate geographical distribution patterns of natural habitats, soil properties, and plant species grown with native Boehmeria platanifolia in South Korea. The relative density and coverage of Boehmeria platanifolia were 7.0% and 25.6% respectively. Most Boehmeria platanifolia were growing below 200 m of altitude, and they were rarely found at the higher altitude. Over 80% of Boehmeria platanifolia's habitats were found at below $20^{\circ}$ and their habitats were concentrated at the west and the north face slope rather than the south face slope. Nearly 90% of Boehmeria platanifolia were grown at little and middle light condition's area, and 69.1% of them were natively growing in humid soil in their natural habitats. Soil texture of their habitats were mostly clay loam and the soil pH was 6.2. The contents of soil organic matter was $24\;g\;kg^{?1}$ and $P_2O_5$ was $31\;mg\;kg^{?1}$. Plant species grown with native Boehmeria platanifolia were 60 family, 125 genus and 171 species. Clematis apiifolia showed the highest relative density and coverage among plant species grown with native Boehmeria platanifolia.

A Study on Quality Characteristics of Noodle with Whey Powder (유청분말 첨가 국수의 품질 특성)

  • Quality characteristics of conventional and whey noodles were investigated by studying the textural properties. cooking properties, and sensory characteristics. The whey noodles were prepared by mixing whey powder with the wheat flour before noodle production, with the mixture ratio ranging between 1 and 7% in volume. The results are summarized as follows : the addition of whey powder noticeably improved the textural characteristics of the cooked noodles, i.e. hardness, gumminess, and chewiness. The best results were obtained using the following percentage of whey in the mixture: the hardness with 1% added, the gumminess and chewiness with 3% added, and the elasticity with a 7% addiction. The tension force also increased with addition of whey powder, The highest tension force was obtained when 3% of the whey was mixed. While the cooking water of the general noodles displayed a light reddish tint, the cooking water of the whey noodles had a yellow-greenish tint. The cooking water of the whey noodles was more turbid than that of the conventional noodles. The whey noodles increased in volume more than the conventional noodles. after cooking. There was no difference in weight increase and water absorption rates between both types of noodles. More favorable results were shown for appearance, color, texture, and sensory acceptability in the whey noodle than in the conventional noodles.

Optimum Culture Environment of the Benthic Copepod, Tigriopus japonicus (부착성요각류 Tigriopus japonicus의 최적배양환경)

  • The harpacticoid copepod, Tigriopus japonicus is one of the most important zooplankton as a live food for the production of marine fish fry. Thus, the salinity tolerance and the optimum culture environment of this copepod in terms of salinity, temperature and light were examined. The food values of 6 kinds of phytoplankters and 2 kinds of yeast were also investigated for mass culture of this copepod. The results are as follows: After 5 day culture in the experiment of salinity tolerance, the survival rates of the gravid female at $0\%\;and\;90%o\;were\;40\%\;and\;70\%$, respectively. However, at salinity ranging from $2\%o\;to\;80\%o$, high survival rates above $85\%$ were observed. It means T. japonicus is very euryhalinous species. Temperature was more important factor than salinity for the fecundity of T. japonicus. The optimum culture conditions of this species were $24^{\circ}C,\;24\%o$, and 3,000 lux with 24 L: 0D. Under these culture conditions, the average fecundity from a gravid female per spawning was 38 nauplii, and the interval time between spawnings were 2.05 days. Phaeodactylum tircornutum seemed to be the most suitable phytoplankton as a live food for T. japonicus, and the large chlorophyta, Tetraselmis suecica showed the lowest food value among 6 phytoplankters and 2 yeasts. The food value of w-yeast was better than that of baker's yeast, and it is similar to that of phytoplankton such as Amphora sp., Chlorella ellipsoidea and Nannochloris oculata. So, the w-yeast seems to be appropriate food source for mass culture of T. japonicus.

Optimization of White Pan Bread Preparation via Addition of Purple Barley Flour and Olive Oil by Response Surface Methodology (자맥가루와 올리브유 첨가 식빵의 제조조건 최적화)

  • The purpose of this study was to determine the optimal mixing conditions of two different amounts of purple barley flour ($X_1$), and olive oil ($X_2$) in baking white pan bread. The experiment was designed according to the central composite design of response surface methodology, which showed 10 experimental points including 2 replicates. The more purple barley flour added, the more weight, yellowness (b-value), hardness, gumminess, and chewiness increased; but the more volume, specific loaf volume, lightness (L-value), and springiness decreased. The greater the amount of olive oil added, the more hardness, cohesiveness, gumminess, and chewiness increased; but the more yellowness (b-value) and springiness decreased. The physical and mechanical properties were affected more by the amount of purple barley flour than by the amount of olive oil. Sensory properties except flavor were more affected by the amount of purple barley flour than by the amount of olive oil.

Characteristics of Rice Sourdough for Jeungpyun Prepared by Mixed Culture of Saccharomyces cerevisiae and Leuconostoc mesenteroides Strains (Saccharomyces cerevisiae와 Leuconostoc mesenteroides 균주의 혼합배양으로 제조한 증편용 Rice Sourdough의 특성)

  • The aim of this work was to investigate the microbiological and physicochemical properties of the rice sourdough for Jeungpyun prepared by mixed culture of Saccharomyces cerevisiae (S. cerevisiae) and Leuconostoc mesenteroides (L. mesenteroides) strains. The rice sourdough was fermented with S. cerevisiae and L. mesenteroides strains in rice dough for 24 hours at $30^{\circ}C$. Growth of L. mesenteroides strain was decreased after inoculation, however, it increased again after 18 hours of dough fermentation, and the growth of S. cerevisiae showed a typical growth pattern. Also, total aerobic microorganisms counts in rice sourdough were decreased due to the produced organic acids and ethanol during dough fermentation. These products led to a favorable fermentative quotient (FQ; molar ratio between lactic to acetic acid) value of $1.9{\sim}3.2$ and more stable fermentation for rice sourdough formation. The expansion ratio and viscosity were considerably increased by mixed cultivation of S. cerevisiae and L. mesenteroides strains. Addition of the brown rice at 10% (w/w) to dough preparation increased the relative expansion ratio to the highest value.

  • Oral health is a critical factor for diagnosing overall health, as poor oral health has a negative impact on food intake and results in deterioration of nutritional status. The purpose of this study was to research the needs for food developments for the elderly based on their oral and overall health status. Oral status was significantly associated with self-reported health status, and dry mouth (lack of saliva) especially showed a significant relationship with negative self-perception of both oral and overall health. For both elderly men and women, fish and leafy vegetables were the most preferred side dishes. Bread, rice cake, and beverage-type foods were also preferred for snack development. Disease status of the elderly was significantly related with their preference for food development. For instance, those with diabetes were more likely to ask for anti-diabetic diets. The most important factor for the elderly in choosing food was nutritional balance, and less than 3,000 won was cited as an affordable price. The results could be utilized as basic data to develop foods for the elderly.

Effect of Grinding Method on Flour Quality in Different Rice Cultivars (분쇄 방법이 품종이 다른 쌀가루의 품질에 미치는 영향)

  • Eight rice cultivars grown in Korea were analyzed to investigate the quality of flour prepared using wet and dry grinding methods. The hardness of the kernel was related with starch damage following dry grinding but not following wet grinding. Although Chenmaai had the hardest steeped kernel, its flour exhibited minimal starch damage, a lower water absorption index (WAI), and a smaller difference between the RVA properties of wet and dry ground flour. However, Seolgan and Suweon517 are soft grains, and their flours had more starch damage and a higher WAI. In general, soft kernels produce better grinding characteristics. However, our wet grinding results indicated that grain hardness was not the main factor affecting the grinding characteristics. Even Chenmaai, with its hard kernels, had good grinding characteristics, whereas the softer kernels of Seolgan and Suweon517 did not show the appropriate grinding characteristics.

A Study on the Dietary Habits of 5th & 6th Grade Students and the Dietary Life Education by Teachers - Focused on the Elementary Schools in Chuncheon Area - (초등학교 5, 6학년 아동의 식습관과 교사의 식생활교육 실태 및 인식에 관한 연구 - 춘천지역 일부 초등학교를 중심으로 -)

  • This study was conducted to investigate the dietary habits and nutritional knowledge of 5th and 6th graders and the teachers' perception of dietary life education at the elementary schools in Chuncheon area. The children who had breakfast and supper everyday accounted for 54.1% and 80.3% each. Children consumed 'breads or confectioneries'(42.6%) and 'fruits or juices'(39.3) as snacks. Only 57.4% of the children had balanced diet. Only 59% of the children answered correctly at the nutritional knowledge test, and only 75% had good dietary behaviors. About 78% of the teachers had the experiences of dietary life education, and they taught it in class(38.9%) or at school lunchtime(35.2%). The teachers answered that the major nutrition problems of elementary students were bad eating habits(37.7%) and too much ingestion of fast or instant foods(36.2%). They also answered that dietary life education was necessary(79.7%) and should be started more earlier(87.0%). Ironically, about 49% of the teachers answered that dietary life education should be taught by dietitians even if the teacher who spent most of the time with their students is the best person for dietary life education at school. It should be done in children's daily life, especially for elementary school students. Therefore, teachers should recognize the importance and the specialty of dietary life education at the elementary schools.

Effect of Salicornia herbacea L. Powder on the Quality Characteristics of Bread (함초 분말 첨가가 식빵의 품질 특성에 미치는 영향)

  • This study was carried out to investigate the effects of Salicornia herbacea L. powder (SHP) on white bread quality. Crude fiber, crude ash, Fe and Ca contents of bread with SHP were higher than those of control and increased with increasing SHP concentration. The pH of bread with SHP was higher than that of without SHP. Salinity of bread prepared with SHP (0.6, 1.2, 1.8, and 2.4%) did not show any significant difference compared with control. L and b value of the bread were decreased by the addition of SHP. The inside color of SHP (1.8%) added bread did not show significant difference compared with control. The texture (hardness, chewiness, cohesivness, and springiness) of bread prepared with SHP was higher than that of without SHP. DPPH-radical scavenging activity of SHP added bread (0, 0.6, 1.2, 1.8, 2.4, and 6.0%) was 27.95, 30.42, 33.91, 39.51, 41.17 and 63.82%, respectively. DPPH-radical scavenging activity was increased significantly by the addition of SHP. Inhibition of lipid rancidity and total polyphenol contents of the breads were increased by the addition of SHP.
