Effects of Gamma Irradiation on Quality of Jeung-pyun during Storage (감마선 조사가 증편의 저장 중 품질특성에 미치는 영향)

  • Jeung-pyun was irradiated at 0, 5, 10 kGy and pH, reducing sugar, microbiological quality, texture profile analysis and sensory quality were investigated during storage for 2 weeks at $25^{\circ}C$. Irradiation significantly reduced total bacteria counts and indicated an increase in hardness with increasing irradiation dose. Treatments with 5, 10 kGy did not cause significant change in the PH, reducing sugar, but pH, reducing sugar, microbacterial counts in 0 kGy were increased during storage. Main putrefactive microorganisms of Jeung-pyun were identified as Bacillus subtlis. In texture profile analysis, cohesiveness and chewiness of all irradiated samples were observed to reduce during storage. In the result of sensory evaluation, the irradiated samples had higher scores than non-irradiated samples after 4 days.

Effects of Heat Pretreatment on the Quality under Storage of Fresh Ginger Rhizomes (저장 전 열처리가 생강의 이화학적 및 관능적 특성에 미치는 영향)

  • Fresh ginger rhizomes were heat-treated for 10 min, 30 min, or 60 min using hot air ($40^{\circ}C$, $50^{\circ}C$, or $60^{\circ}C$), and stored in low-density polyethylene (0.04 mm thickness) bags for 2 months at $12{\pm}1^{\circ}C$. We studied the effects of heat pretreatment on changes in gas levels after packaging, and quality characteristics of the rhizomes. Oxygen and carbon dioxide levels progressively fell and rose, respectively, as the temperature of heat treatment rose and the duration of such treatment was extended. The sprouting rate of ginger rhizomes treated at $40^{\circ}C$ was higher than that of other samples. Rotting, softening, and increasing pH of rhizomes were accelerated by treatment at higher temperature for a longer time. Weight loss and soluble solid levels were not affected by heat treatment. Sensory qualities such as appearance, odor, and overall acceptability of rhizomes fell with treatment at a higher temperature for a longer time. These results suggest that heat pretreatment has a detrimental effect on the quality of fresh ginger rhizomes.

Antimicrobial Activity of Polylysine Coated Film (Polylysine 코팅 필름의 항균활성)

  • This study were investigated to analyzed an optimum preparation condition of coating film and its antimicrobial activity on pathogenic and deteriorative bacteria to obtain fundamental data for development of active packaging film using antimicrobial peptide, polysine. In the preparation conditions of coating film, antimicrobial activity was depending on the concentration of polylysine and polyamide respectively, and relatively high activity was obtained in the film prepared with more than $1.0\%$ (w/v) of polylysine, $40\%$ (w/v) polyamide, and more than $50\;{\mu}m$ of film thickness. Concentration of polylysine migrated from coated film to distilled water was reached at the maximum concentration, about 20 ppm after 3 days and in equilibrium after 7 days of soaking in sterilized water. An antimicrobial activity of coated film showed bactericidal effect of about $10^5\;CFU/mL$ comparing with the control against Bacillus cereus having $4.8{\times}10^5\;CFU/mL$ of initial viable cell numbers, and of about $10^2\;CFU/mL$ comparing with the control against Klebsiella pneumoniae having $6.8{\times}10^5\;CFU/mL$ of initial viable cell numbers. Consequently, it was revealed that polylysine coating film has a potential of applicable possibility as antimicrobial packaging film.

Effects of Different Carbon Dioxide and Oxygen Concentration on the Quality of Oriental Melon during CA Storage (참외 CA저장시 $CO_2$$O_2$농도에 따른 품질 변화)

  • Oriental melon was stored in controlled atmospheres(5, 10 or 15% CO$_2$in combination with 3 or 10% O$_2$) and air as control, and was analyzed half monthly during a 45-day storage for various quality Parameters. Oriental melon which stored in CA condition was lower in weight loss and decay rate than that stored in air. There was no significant difference in firmness by CO$_2$or O$_2$concentration during a month of storage. Fruits stored in 10% CO$_2$+3% O$_2$showed higher level of soluble solids, Vitamin C content and L value than other condition. And also comparatively lower endogenous ethanol accumulation and better state of quality was observed in that condition.

Comparison of Fruit Quality of Various Astringent Persimmon Cultivars during Storage in Atmosphere Controlled with High $CO_2$Concentration (떫은감의 품종별 고농도 이산화탄소의 저장효과)

  • Four cultivar of astringent persimmon(Diospyros kaki L. Cheongdobansi, Sagkoksi, Gojongsi, and Hachiya) were evaluated for quality during 160 days storage in condition of air, 12%CO$_2$+3%CO$_2$, and 16%CO$_2$+ 3%CO$_2$at 0∼2$^{\circ}C$. In the fruits of Cheongdobansi, Sagkoksi, and Gojongsi cultivar, the soluble solids content did not change significantly during storage among treatment, but in the fruits of Hachiya cultivar it decreased during storage in the codition of high CO$_2$concentration. Fruits of Cheongdobansi and Sagkoksi, which were stored in higher CO$_2$concentration, had firmer hardness, less weight loss and decay, showed greater rentention of initial peel color, maintained best qulity than air-stored fruit, but had high tannin contents. And it was necessory to remove astringency for edible fruits.

Quality Characteristics of Takju Fermentation by Addition of Chestnut Peel Powder (율피가루를 첨가한 탁주의 품질 특성)

  • The characteristics of mash qualities of takju prepared by addition of chestnut peel powder(5%, 10%, 20% and 30% per steamed rice) were investigated during fermentation. That is, in all fermentation periods, changes of pit total acid, organic acids, solids, amino nitrogen, total sugar and reducing sugar, microorganisms, alcohol and color were determined and analyzed. There was significant differences in characteristics of mash qualities by addition of chestnut peel powder. In general, contents of total acid, organic acids, amino nitrogen, total sugar, reducing sugar and ethanol of takju added with chestnut peel powder were lower than those of steamed rice only, whereas solid contents was higher. But ethanol content of takju added with 5% of chestnut peel powder after 8 days of fermentation was 9.6% which was similar to that of takju prepared by addition of steamed lice only. Also, microbial populations such as total viable cells, yeast and lactic acid bacteria of the treatments were increased to about $10^8CFU/mL$ after 2 days of fermentation and then decreased gradually. In the beginning stage of fermentation color differences value of the treatments were $1.99{\sim}10.27$, and the differentials reduced gradually during fermentation.

Effect of different days of postharvest treatment and CO2 concentrations on the quality of 'Seolhyang' strawberry during storage (수확 후 CO2 처리 시기 및 농도에 따른 '설향' 딸기 저장 중 품질변화)

  • This study was conducted to determine $CO_2$ treatment condition to extend the shelf-life of 'Seolhyang' strawberry. Fresh strawberries with red color on 80% of the fruit surface were harvested. The samples at two different stages (on the $1^{st}$ and $3^{rd}$ day after harvest) were placed in a gas-tight chamber with 0, 5, 15, or 30% $CO_2$ concentration for 3 hours at $4^{\circ}C$. Then, the strawberry samples were immediately packaged in a PET tray and stored at $4^{\circ}C$. The carbon dioxide treatment was effective in maintaining the quality of 'Seolhyang' strawberries treated on the $1^{st}$ day after harvest. These samples had higher firmness, lower redness, softening index, and decay rate compared to samples treated on the $3^{rd}$ day after harvest. Treatment with both 15 and 30% of $CO_2$ concentration on the $1^{st}$ day after harvest induced an increase of firmness of 'Seolhyang' strawberry after the treatment. Samples treated with 15 and 30% $CO_2$ the $1^{st}$ day after harvest maintained quality for 10 days. However, samples treated with $CO_2$ on the $3^{rd}$ day after harvest lost marketability at 10 days of storage. At the atmosphere containing 30% $CO_2$ on the $1^{st}$ day after harvest was most effective in reducing decay rate and fruit softening, and maintaining bright red color of strawberries among different $CO_2$ concentrations. Therefore, a 30% $CO_2$ treatment within one day after harvest can be a practical postharvest technology to extend shelf-life of 'Seolhyang' strawberry.

Effect of Onion and Garlic Juice on the Lipid Oxidation and Quality Characteristics during the Storage of Conger Eel(Astroconger myriaster) (양파즙과 마늘즙이 붕장어의 저장 과정 중 지방산화 및 품질 특성에 미치는 영향)

  • The purpose of this study was to investigate the effects of onion and garlic juice on the lipid oxidation of fish oil as antioxidants and quality characteristics of fish muscle. The samples were treated with onion and garlic juice at 5%(w/w) or 10%(w/w) of fish muscle, and stored at 4$\pm$1$\^{C}$ and -18$\pm$2$\^{C}$ for 7 and 42 days, respectively. The results of this study were as follows: Lipid oxidation in samples was measured by AV, POV and TBA value. AV and TBA values of the samples treated with 5% onion and garlic juice were lower than those treated with l0% onion and garlic juice. POV of the samples treated with onion were lower than those treated with garlic juice. Lightness and yellowness of the sample were the highest in 10% onion and garlic juice-treated ones. The score of overall quality in sensory evaluation was the highest in the samples treated with onion juice stored at 4$\pm$1$\^{C}$.

  • The effects of salt and temperature on changes of K value, IMP, free amino acids and histamine concentration in Makerel muscle during storage were examined. The content of salt was 0, 3, 5 and 10% and storage temperature was at 0, 8, 16 and 2$0^{\circ}C$. 1. Content of IMP was 607.3mg% In raw material and as storage temperature was decreased and as salt content was increased, the rate of decrease in IMP was slow. 2. K value of raw material was 14% and rapidly increased as temperature increased and salt content decreased. 3. The time required to reach at 50% in K value was 13.6-16.6 days at $0^{\circ}C$ and 1.4-3.3 days at 2$0^{\circ}C$ in 0-10% salt content. 4. Except taurine and histidine, the contents of all free amino acids were slowly increased during storage at $0^{\circ}C$ and in high salt content but at 2$0^{\circ}C$ and in 0% salt they were more rapidly increased. The contents of Ala., Glu., Val.., Leu., Lys., and NH$_3$ were rapidly increased than the contents of Phe., Gly. and Ile. 5. Taurine and histidine were rapidly decreased at high temperature and in 0% salt during storage. 6. The storage condition which produced more than 100mg% in histamine was 3 days at 16$^{\circ}C$(180mg%) and 2$0^{\circ}C$(443.5mg%) in 0% salt and was 10days (163.1mg) at 16$^{\circ}C$ in 3% salt.

Changes in Various Quality Characteristics of Short-ripened Salami During Storage at Chilled or Room Temperatures (단기숙성 살라미의 냉장 및 실온저장 중 품질 특성 변화)

  • This study investigated the microbial contamination levels of raw meats used for short-ripened salami and changes in the microbial and physico-chemical properties of the product during storage at 10 and $25^{\circ}C$ for up to 120 days. The microbial counts of raw meats ranged between 2 and 4 Log CFU/g. Frozen-thawed sow meat showed higher total aerobe and Enterobacteriaceae counts than fresh chilled pork and pork back fat. Staphylococcus aureus was found in all raw materials except fresh chilled pork samples, and Clostridium perfringens was detected in a sample stored for 21 days at $25^{\circ}C$. The counts of total aerobes, lactic acid bacteria and Staphylococcus spp. decreased more rapidly at $25^{\circ}C$ than at $10^{\circ}C$ when the storage time was extended. The growth of Enterobacteriaceae, Pseudomonas spp., Clostridium spp., yeast, and mold were restricted to levels below 2 Log CFU/g during storage. The contents of salt, water, crude protein, crude fat, and ash of salami samples were 3.4, 33.4, 30.8, 32.7, and 4.3%, respectively, which were not affected by storage time or temperature. The pH value of the salami was initially 4.79 and increased to 5.02 and 5.26 after 120 days of storage at 10 and $25^{\circ}C$, respectively, whereas the water activity values decreased from an initial value of 0.91 to 0.90 and 0.88 after 120 days at 10 and $25^{\circ}C$, respectively. The TBA and VBN values increased slowly during storage. The redness value of the salami samples stored at $25^{\circ}C$ decreased more significantly than the samples stored at $10^{\circ}C$. With increased storage time, the values for the rheological characteristics of the salami in terms of hardness, brittleness, elasticity, cohesiveness, gumminess, and adhesiveness tended to decrease more remarkably at $25^{\circ}C$ than at $10^{\circ}C$. Based on sensory evaluation scores, it appears that short-ripened salami is no longer acceptable after 90 days at $10^{\circ}C$ and 30 days at $25^{\circ}C$.
