Pasteurization Efficiency and Physico-chemical Changes of Soymilk HTST Pasteurized Using Microwaves (두유의 마이크로파 고온단시간 살균시 살균효과 및 이화학적 성분 변화)

  • This work was to determine the microbial and physico-chemical changes of HTST-pasteurized soymilk using microwave energy. Soymilk was HTST pasteurized$(at\;90^{\circ}C\;for\;20\;sec)$ by three methods: by heating in a stainless steel tube immersed in a hot water bath(MP0), by heating in a microwave cavity to a defiled temperature and then holding in a hot water bath(MP1), and by both heating and holding in a microwave cavity(MP2). The microbial quality based on the total plate count was in the order of MP0, MP2 and MP1. The three samples pasteurized by different methods showed the similar microbial quality with respect to the coliform count, psychrotrophic bacterial count and phosphatase activity. The destruction of trypsin inhibitor was in the order of MP0, MP1 and MP2. There were no significant differences in pH, titratable acidity, viscosity and vitamin $B_2$ content before and after pasteurization and among the different pasteurization methods. The similar or higher quality retention of the MP1 or MP2 supports the possibility of using microwave energy for the HTST pasteurization of soymilk and other fluid food products.

Preparation of Laver Powder and Its Characteristics (김분말의 제조와 특성)

  • Effect of drying methods, such as natural solar drying, hot air drying$(at\;60^{\circ}C\;and\;105^{\circ}C)$, vacuum drying and freeze drying methods, on the quality of laver were investigated to develop optimum processing conditions for preparation of laver powder. Appreciable amount of laver pigments such as chlorophyll, carotenoid and phycobilin were lost during washing and drying process. Their loss was affected significantly by the method of drying. Among the methods tested, high temperature air drying was the worst in retaining laver pigment, while freeze drying was the best. Loss of vitamin C which was in the range of 75-99% was also affected by the method of drying. Isotherms for laver powder shelved sigmoidal shape and monomolecular layer moisture content of both laver powder(Porphyra dentata and Porphyra tenera) determined by the BET equation was 6.30%(dry basis). Laver powders prepared with Porphyra dentata and classified with 50-, 80- and 100- mesh sieves showed monomodal size distribution with the high frequency at 110-120, 100-110 and $80\;{\mu}m$, respectively, which indicated that size or laver powder was homogeneous.

  • This study intends to provide the data to extract the elements that influence users' preference from "setting-up," a Traditional craft skills, and apply it to design and use it, so as succeed to the traditional values by connecting the Traditional craft skills with design and to establish a design-supporting system that can meet contemporary users' desire. In this light, this study, as a basic research, selects a sense of beauty and functional quality as a standard for applying setting-up to design and conducts an experiment to extract the elements of design that are important in setting-up. An analysis of factors based on the experiment reveals that in terms of a sense of beauty and functional quality, typical quality, creativity, historicalness, productivity, safeness are derived as elements that influence setting-up. And an analysis of meaningfulness tells that each element of Panjac Setting-up and Yeongui Setting-up is the most meaningful. This result shows that it is important to know the relationship with elements extracted as emotional elements, which can be useful as an index for establishing a design-supporting system that can serve as a guideline in designing through applying to design.

Amino Acid Composition and Scanning Electron Micrographs of Modified Silkworm Larvae Protein Concentrates (변형번데기 농축단백질 아미노산 조성 및 주사전자현미경에 의한 관찰)

  • This study was designed to determine the amino acid composition and to investigate microstructure by scanning electron micrographs of silkworm larvae protein and modified silkworm larvae protein concentrate. The results were as follows: 1, The protein contents of soybean and silkworm larvae protein concentrate were 70.3% and 84.1%, respectively. 2. In general, the essential amino acid content of silkworm larvae protein concentrate were higher than soybean protein concentrate as well as FAO provisional scoring pattern. Silkworm larvae protein concentrate was especially high in lysine and methionine indicating that it could be a good supplemental source for cereals and beans. Succinylation and acetylation resulted in no difference in most amino acid content. 3. The scanning electron microscopic observations revealed that silkworm larvae protein concentrate had smooth surface topography while defatted silkworm larvae flour showed different shapes and sizes with relatively rough surfaces. Acylated silkworm larvae protein concentrate exhibited less cellularity and denser than protein concentrate. However, succinylated silkworm larvae protein concentrate showed especially good texture indicating that it could increase the functional properties of silkworm larvae protein concentrate.

Antimicrobial Activity of UlGeum (Curcuma longa L.) Extract and Its Microbiological and Sensory Characteristic Effects in Processed Foods (울금 추출물의 항균효과 및 첨가식품의 미생물학적.관능적 특성)

  • In order to develop a natural food preservative, UlGeum (Curcuma longa L.) powder was extracted with ethanol, and its antimicrobial activity was investigated. This ethanol extract showed antimicrobial activity against Bacillussubtilis, Escherichiacoli, and Staphylococcus aureus, and the resulting inhibition zones against the microorganisms by the extract (4 mg/disc) were 11, 10, and 8.5 mm, respectively. To test for further food preservation effects, solutions of the extract were added to rice cakes and noodles at concentrations of 0%, 0.25%, 0.50%, 0.75%, and 1.00%, respectively. Microbial growth was less in the UlGeum ethanol extract-added groups than in the control group. In sensory evaluations, there were significant differences among the groups of rice cakes and noodles in terms of color, taste, flavor, chewiness, and overall acceptability (p<0.05), and the 0.5% added groups received significantly higher scores than the other groups. Furthermore, as storage time increased, the sensory scores of the rice cakes and noodles significantly decreased in all groups (p<0.05). These results suggest that UlGeum is effective for increasing the shelf-life of rice cakes and noodles.

  • Geological information can be used for various purposes, such as the mine development, landuse, environmental protection, construction industry, and the development of water resource. Although geological information is highly useful for developing industrial raw materials, national land management and people's welfare, there is no unified public institution in charge of collecting and managing geological information at the national level. Thus, the government is to collect geological information, to construct database and to utilize and to distribute the information in a long-term and systematic way, the purpose of this study is to propose strategies for establishing an integrated geological information management system. In this study, we A) analyzed the current state and management of geological information in Korea and other countries; B) surveyed demand for geological information and analyzed correlations; C) drew up a conceptual diagram of the national integrated geological information management system; and D) developed strategies for establishing the national integrated geological information management system.

Antioxidant Activities of Medicinal Plant Extracts (약용식물 추출물의 항산화 효과)

  • The antioxidant activities of ethanolic extracts obtained from medicinal plants (Scutellaria baicalensis Georgi, Acanthopanax sessiliflorum Seeman, Pueraria lobata Ohwi, Portulaca oleracea Linne, Crataegus pinnatifida Bunge var. typica Schneider, Euonymus alatus Apterus, Hovenia dulcis Thunberg, Prunus yedoensis Matsumura, Albizzia julibrissin Durazz., Chrysanthemum indicum Linne) were evaluated for total phenolic content, total flavonoid content, DPPH radicals, nitrites, $Superoxide^-$ radicals, $ABTS^+$ radical scavenging activity, and reducing power. Antioxidant capacities were the highest in Prunus yedoensis Matsumura for DPPH radical scavenging activity ($IC_{50}$ $5.39{\mu}g/mL$), reducing power (2.72, $A_{700}$), and nitrite scavenging activity ($IC_{50}$ $167.94{\mu}g/mL$). Hovenia dulcis Thunberg and Acanthopanax sessiliflorum Seeman were effective for their nitrite scavenging activities (over 90% at 1 mg/mL). The $Superoxide^-$ radical scavenging activity of Prunus yedoensis Matsumura ($IC_{50}$ $43.39{\mu}g/mL$) was stronger than tannic acid ($IC_{50}$ $46.51{\mu}g/mL$). Five samples (Prunus yedoensis Matsumura, Acanthopanax sessiliflorum Seeman, Hovenia dulcis Thunberg, Crataegus pinnatifida Bunge var. typica Schneider, Scutellaria baicalensis Georgi) were effective for their $ABTS^+$ radical scavenging activity (more than 90% at 0.5 mg/mL). These results suggest that the ethanolic extracts of Prunus yedoensis Matsumura could be used as a functional ingredient in food products.

Detecting Defects from the Alcoholic Fermentation of Apple Concentrates (사과농축액의 알코올발효 불량화 자료 설정)

  • This study compared and analyzed the quality characteristics of five different apple juice concentrates (A~E) after alcoholic fermentation to establish test indicators for their defects. From our results, the titratable acidity was nearly similar in all diluted solutions. However, A and D showed a high pH of above 4.0 while B, C and E exhibited a low pH of below 3.0. In terms of free sugar content, maltose was undetected in A and D. In contrast, about 698 mg% maltose was found in C and more than 1,000 mg% maltose were detected in B and E. Malic acid, one of the main organic acids in apple, was measured at a high value of about 600 mg% in A and D and about 50 mg% in B, C and E. Potassium, one of the main minerals, was about 180 mg% in A and D, whereas a small amount of potassium, ranging between 6~9 mg% were present in B, C and E. Preservative (by sorbic acid) was not detected at all in all apple juice concentrates (A~E). When the above diluted apple concentrates were fermented, the alcohol contents were 11.2% and 10.8% in DAFB and AAFB, respectively. Alcoholic fermentation almost did not take place in BAFB, CAFB and EAFB. The use of maltose as the yeast may have influenced the fermentation. However, B, C and E were thought to be either defective or contaminated apple concentrates based on the analysis results of free sugar and organic acid.

The Preservative Effect of Egg White Lysozyme Added Surumi Products (난백 lysozyme에 의한 연제품의 방부 효과)

  • Inhibitory effects on bacterial growth by using lysozyme and mixtures of it with other antibacterial substances (sodium hexametaphosphate and sodium pyrophosphate) were investigated against the 7 kinds of hacterial strains isolated from putrefied surumi products. The growth inhibitory concentrations of lysozyme and lysozyme + sodium hexametaphosphate + sodium pyrophosphate against the bacteria were added to kamaboko, imitation crab meat and fried surumi, then viable cell count, pH and VBN were examined during the storage at $30^{\circ}C$ for 7 days. Lysozyme showed growth inhibitions against 6 of 7 isolates and the inhibition effect of mixture of antibacterial substances was multiplied against all the isolates compare with those of its individual use. Growth inhibitory effect of the substances on the bacteria was high in order of lysozyme + sodium pyrophosphate + sodium hexametaphosphate, lysozyme + sodium hexametaphosphate, lysozyme + sodium pyrophosphate and lysozyme. The most effective inhibitory concentration of mixture of the antibacterial substances in kamaboko and imitation crab meat was $0.05\%$ of lysozyme, $0.5\%$ of sodium pyrophosphate and $0.1\%$ sodium hexametaphosphate. But the bacterial growth was slightly inhibited in fried surumi even if the same concentration of the dipped mixture and the effect of the mixture was less than that of $0.2\%$ sorbic acid.

Separation and Preservation of the Male and Female Gametophytes of Kjellmaniella crassifolia Miyabe (Phaeophyta) (개다시마 Kiellmaniella crassifolia Miyabe (Phaeophyta)의 암.수배우체 분리 및 보존)

  • We examined the conditions for separating and preserving the male and female gametophytes of Kjellmaniella crassifolia. The highest percentage of zygote germination (85%) was on semi-solid medium composed of 1.0% transfer gel agar at $15\;^{\circ}C$ and $20\;{\mu}mol/m^2/s$ after a 4-week culture. Zygote germination in PESI liquid medium was 93.5% at $20\;^{\circ}C$ and $20\;{\mu}mol/m^2/s$. The maximum zygote growth was $252{\pm}19.7\;{\mu}m$ on 1.0% transfer gel agar at $15\;^{\circ}C$ and $40\;{\mu}mol/m^2/s$ after 5-week culture, and was $76.7{\pm}2.8\;{\mu}m$ in PESI liquid medium at $20\;^{\circ}C$ and $40\;{\mu}mol/m^2/s$. The respective numbers of separated male and female gametophytes from germinated zygotes were 157 and 93 on 1.0% transfer gel agar and 14 and 28 in PESI liquid medium. The maximum growth of separated male and female gametophytes was $575{\pm}28.3\;{\mu}m$ at $5\;^{\circ}C$ and $60\;{\mu}mol/m^2/s$ and $686{\pm}35.4\;{\mu}m$ at $20\;^{\circ}C$ and $20\;{\mu}mol/m^2/s$ in PESI liquid medium after 3 weeks, respectively. The highest percentage fertilized was $93.3{\pm}5.8%$ at $15\;^{\circ}C$ and $20\;{\mu}mol/m^2/s$ in PESI liquid medium. These results show that the best conditions for the separation and preservation of gametophytes (male and female) consisted of culturing on 1.0% transfer gel agar at $15\;^{\circ}C$ and $20\;{\mu}mol/m^2/s$.
