Hygienic Quality of Drinking Water Served in Restaurants and Quality Characteristics of Drinking Water Boiled with Various Plant Materials (외식업소 음용수의 위생실태와 침출재료에 따른 기호성과 저장성)

  • The viable cell of 60% drinking water among 25 drinking water served in restaurant of Daegu district showed above 100 CFU/mL which is sanitary standard of drinking water. The 50 CEO of restaurant considered drinking water served in their own restaurant as just safe and were very deficient in aware of sanitation about drinking water. Sensory quality of drinking water boiled with plant materials, such as barley, Cassia semen, corn, Buckwheat, Korean solomon's seal, Chamomile, Brown rice-green and peppermint was improved in color, taste, flavor and overall acceptability compare to marketed drinking water, respectively. Especially drinking water boiled with Korean solomon's seal was the best In overall acceptability. The number of total bacteria reached above $10^2 CFU/mL$ in marketed drinking water after 4 days storage at 10. But the growth of microorganism did not occur in boiled drinking water with Brown rice-green tea, Korean solomon's seal, barley, Cassia semen and com during storage for 10 days at $10^{\circ}C$, respectively. The number of total bacteria reached above $10^2 CFU/mL$ in marketed drinking water after storage for 1 days at $25^{\circ}C$. The growth of microorganism was accelerated in boiled drinking water with corn, Korean solomon's seal, barley, Cassia semen except Brown rice-green tea during storage far 10 days at $25^{\circ}C$, respectively.

Rheological Properties of Dough Added with Barley Bran (보리등겨 첨가 반죽의 물성변화)

  • Effect of barley bran flour on bread quality was investigated. With addition of barley bran flour, crude protein and ash contents of bread increased, and color of crumb and crust became darker than control group made with pure wheat flour. Content of dietary fiber in bread made with 5% barley bran flour was twofold higher than that of control group. Hardness of bread increased and volume decreased in proportion to bran content. Sensory qualities of 5% barley bran flour-added group and control group were not significantly different, but decreased in 10 and 15% barley bran flour-added groups, revealing optimal content of barley bran flour to be 5%.

Effects of Enzyme Treatments on Quality and Yields of Barley Tea (보리의 효소처리가 보리차의 품질 및 수율에 미치는 영향)

  • In order to improve the quality and yields of barley tea(water extracts), enzymatic hydrolysis was carried out with using three kinds of mired enzymes of ${\alpha}-amylase,\;{\beta}-amylase$ and protease. The barley treated with enzymes were the crushed , soaked and slightly roasted(light brown) Youngsanbori(hulless) and the physical, chemical and sensory characteristics were investigated. The results showed that enzymatic hydrolysis caused a signigicant increase in solid yields (80%) of barley tea, particularly with the mixed enzyme 5,000 which has higher activity of ${\alpha}-amylase$ than the other enzymes. The intrinsic viscosity of barley tea was reduced by enzymatic hydrolysis as the value of dextrose equivalent increased The Hunter L, a, b values was lower for the enzyme treated barley tea but showed not significant difference with reaction time. The organoleptic evaluation clearly showed that both intensity and acceptability of odor and taste was markedly Increased. The roasted nutty, and sweety odor and taste were particular in increase by mixed enzyme 5,000.

  • In and attempt to investigate the milling method of barley, four kinds of barley were used for this study. The results are summerized as follow: 1) The optimum tempering and priority of milling quality of barley is shown as following table. Barley is Tempering moisture 15%, Tempering time 24hr. Naked barley is Tempering moisture 14%, Tempering time 48hr. Barley and Naked barley are Tempering moisture 13%, Tempering time 48hr. 2) Economic value of pearled materials milling is disadvantageous, because of the milling expenses are burdensome and flour extractions are fallen down 12.5% in barley and 13.6% in naked barley as compared with unpearled materials milling. 3) Wheat flour milling process may be used without any adjustment when mixed with 90% of wheat and 10% of barley. 4) Unpearled naked barley is the most suitable for flour milling when mixed with wheat.

  • This study was carried on comparison of forage yields and growth of cropping system as forage (winter & summer) in Cheonan 2015~2016. The species of forage crop used were Barley (cv. Youngyang), Sorghum (cv. SX17), Proso millet (domestic) and Japanese millet (cv. Jeju). Plant height is the lowest when harvested in lough stage than in the harvests of all summer crops. The dry matter yield of lough stage was 1,343 kg/10a in barley. Looking at the dry matter according to cropping systems, the sorghum was higher at 10,018 kg when harvested at the lough stage than at the harvest. Dry matter of Proso millet and Japanese millet also had higher at the lough stage than at other harvest times. ADF content of sorghum was lower than that of harvesting, but Proso millet and Japanese millet showed higher ADF content in lough stage. The NDF content of the three crops was higher than that of the harvests, and crude protein content was higher in harvest than that of at lough stage. Total production of crude protein against dry matter yield was about 761 kg when sorghum was harvested at lough stage. There was no difference in the content of TDN among three crops according to harvesting time.

Influence of Rainfall on Germination of Malting Barley at Harvesting Season (수확기의 강우가 맥주보리 발아에 미치는 영향)

  • In order to find out the effect of rainfall at harvesting season on germination of malting barley, the seeds sampled from Cheju island and southern part of Korea were examined. The germination rate of seeds from Cheju island where rainfall was frequent at harvesting season, ranged from 46 to 71%, even though disease infection of the seeds was not that serious as would be expected. High sugar content of seed was resulted from the degradation of carbohydrates during the harvest season. From TZ test the rainfall - affected seeds were found to be highly viable but in the state of secondary dormancy. Results of cold germination test showed that the seeds were recovered from the secondary dormancy. Therefore, it was recommended that the seeds affected by the rainfall at harvesting season should be utilized after 12 months when the dormancy period terminated. The germination percent of the seeds was significantly enhanced by prechilling and / or 1 ppm gibberellic acid treatment. Different seed lots showed different rate of germination and the degree of dormancy.

  • Amylose content, water absorption and amylograph characteristics of waxy and nonwaxy barley varieties were studied. Amylose content of nonwaxy varieties ranged from 23.4% to 31. 5% and waxy varieties showed 5.4%-9.5%. Water absorption of waxy varieties was highest among the materials tested. Waxy barley showed lowest gelatinization temperature among the varieties. Gelatinization temperature was positively related with the maximum viscosity in all tested varieties. There was no relationships between amylose content and gelatinization temperature, gelatinization time and viscosity.

  • The mature fruit wall structures were investigated in Lapsana communis, its six subspecies and the four species of Lapsanastrum (Asteraceae; Lactuceae). Lapsanastrum differs from Lapsana communis in some features: two or three protrudent costae verse equally developed costae, hairly versus glabrous exocarp, respectively. Moreover, Lapsana has no sclerenchymatous‐fiber cells in mesocarp, while Lapsanastrum has sclerenchymatous fiber cells. The differences in fruit wall structure between Lapsana and Lapsanastrum obviously support the separation of Lapsanastrum from Lapsana s. lat.
