  • Fifteen species of wild mushrooms, which are classified as edible, medicinal, poisonous, or unknown types, were analyzed for their free amino acid contents. The average total amino acid content was 1,120.0 mg/kg in the edible type, 1,037.8 mg/kg in the medicinal type, and 1,010.8 mg/kg in the poisonous or unknown type, respectively. The edible type wild mushrooms showed the highest average content of total essential amino acids; conversely, the poisonous or unknown type showed the lowest content. Leucopaxillus giganteus (OK811) showed the highest total amino acid (1,212.4 mg/kg) and essential amino acid (490.2 mg/kg) contents among edible type, while Pycnoporus sanguineus (OK1071) showed the highest total amino acid (1,233.7 mg/kg) and essential amino acid (412.8 mg/kg) contents among the medicinal type. Among the poisonous or unknown type, Hypholoma fasciculare (OK826) showed the highest total amino acid (1,223.4 mg/kg) and essential amino acid (442.8 mg/kg) contents. The amino acid contents of wild mushrooms are fundamental data for the screening of useful genetic resources with nutritionally superior properties.

  • The extracts of four species of ectomycorrhizal mushrooms-Cantharellus cinnabarinus (OK1247), Lactarius parallelus (OK1264), Tricholoma matsutake (OK1282), and Ramaria botrytis (OK1283)-were prepared to determine their antioxidant activities and nutritional properties. R. botrytis extract displayed the highest 2,2-diphenyl-1-picrylhydrazyl radical scavenging activity (33.8%), ferric reducing antioxidant power (0.38), reducing power (0.35), total polyphenol (13.83 mg gallic acid equivalent/g), and flavonoid contents (2.56 mg quercetin equivalent/g). L. parallelus extract displayed the highest nitrite scavenging activity. Analysis of amino acid contents revealed that C. cinnabarinus extract had the highest total amino acid (1,046.1 mg/kg) and essential amino acid (404.9 mg/kg) contents, while R. botrytis extract had the lowest total amino acid (708.3 mg/kg) and essential amino acid (247.3 mg/kg) contents. Among the amino acid components detected in the four ectomycorrhizal mushrooms, cysteine was the most abundant, accounting for 14.3~20.7%, followed by phenylalanine, which accounted for 9.5~13.4% of all amino acids. In summary, the antioxidant activities were the highest in R. botrytis extract, and the amino acid content was the highest in C. cinnabarinus extract, among the four ectomycorrhizal mushrooms.

  • The present study was carried out in order to assess the dietary exposure as well as the risk for lead (Pb) and cadmium (Cd) exposure through mushrooms among the Korean population. Various samples (n=536) covering 17 kinds of mushrooms were collected from retail outlets and markets in Korea. The contents of Pb were 0.005 (King oyster)-0.026 (Matsutake) mg/kg in raw mushrooms and 0.014 (Oyster)-16.411 (Manna lichen) mg/kg in dry mushrooms, respectively. The contents of Cd were 0.002 (Enoki)-0.205 (Hericium erinaciium) mg/kg in raw mushrooms and 0.021 (Vegetable worms)-2.650 (Agaricus blazei Muill) mg/kg in dry mushrooms, respectively. The mean dietary exposure of Pb for the general population was $0.053{\mu}g/day$, taking 0.03% of provisional tolerable weekly intake (PTWI). The mean dietary exposure of Cd for the general population was $0.168{\mu}g/day$, corresponding to 0.37% of provisional tolerable monthly intake (PTMI). Therefore, the level of the overall dietary exposure to heavy metals through mushroom for the Korean population was far below the recommended JECFA levels, indicating little possibility of concern.

  • The present study was carried out to assess the dietary exposure and the risk for arsenic (As) and mercury (Hg) through mushrooms intake. Various samples (n = 536) covering 17 kinds of mushrooms were collected from retail outlets and markets in Korea. The contents of As were 0.003 (King oyster) ~ 1.952 (Matsutake) mg/kg in raw mushrooms and 0.015 (Fuscoporia obliqua) ~ 16.95 (Matsutake) mg/kg in dry mushrooms, respectively. The contents of Hg were 0.001 (King oyster) ~ 0.030 (Matsutake) mg/kg in raw mushrooms and 0.004 (Oyster) ~ 0.588 (Matsutake) mg/kg in dry mushrooms, respectively. The mean dietary exposures of As was $0.151{\mu}g$/day, taking 0.005% of provisional tolerable weekly intake (PTWI). The mean dietary exposures of Hg was $0.022{\mu}g$/day, corresponding to 0.071% of PTWI. Therefore, the level of overall dietary exposure to As and Hg for Korean population through mushroom was far below the levels recommended by Joint FAO/WHO Expert Committee on Food Additivies, indicating little possibility of concern.
