Growth characteristics of oyster mushroom in bottle cultivation with addition of cottonseed meal (느타리버섯 재배에서 면실박의 첨가비율에 따른 생육 특성)

  • This study was carried out to investigate the optimum level of cottonseed meal in bottle cultivation of oyster mushrooms. Mycelial growth was slightly slower than that of the control at a cottonseed meal level ${\leq}10%$. Pileus diameter and thickness were highest at 14%, and stipe diameter was highest at 12% cotton seed meal. The hardness of pileus and stipe was greatest at 16% cotton seed meal. L-values tended to be lower at low levels of cotton seed meal, but the a- and b-values showed no significant difference among the treatments. The yield of fruiting body was 147.2 g/850 ml in the control and slightly higher at 147.6 g/850 ml using 12% cotton seed meal.

  • Main materials used as media for oyster mushroom cultivation are pine sawdust, beet pulp, cotton seed pomace. Increases in the price and the unbalance of demand and supply of cotton seed pomace was often damage to oyster mushroom cultivation farm, so we investigated agricultural by-product to replace the cotton seed pomace for bottle cultivation of oyster mushroom. Treatment of coconut oil meal or coconut pomace delayed incubation period about 3 days compared with cotton seed waste treatment(control), but yield and income index showed similar to each other in three treatment. Consequently coconut oil meal and coconut pomace could select for cotton seed pomace substitute.

Fermentation Characteristics of Juice Pomace Feed by Horse Feces Microbes (말분변 미생물을 이용한 주스박 사료의 발효 특성)

  • In vitro fermentation was conducted to figure out alternative fiber sources for horse feed. For the development of value-added products as a horse feed resource, the pomaces from apple, carrot, grape, and citrus were fermented under solid-state conditions in the presence of 60% soybean meal with 40% of each fruit pomace at 60% of moisture content. Lactobacillus plantarum SK3873, Lactobacillus plantarum SK3893, Weissella cibaria SK3880, and Bacillus subtilis SK3889 were isolated from the fermented fruit pomace by inoculation of horse feces. For the growth of Bacillus subtilis, Saccharomyces cerevisiae, and Lactobacillus plantarum, they were inoculated in 3-step order at 0, 12, and 24 h, respectively. The fruit pomace was fermented for 48 h at $35^{\circ}C$. The pH of the apple, carrot, grape, citrus and all mixed pomaces decreased from 5.45~6.25 to 4.40~4.77. Microbial growth was maintained at $10^8{\sim}10^9cfu/g$. After 12 and 24 h incubation, dry matter of carrot pomace were highest at 54.84 and 56.66%, respectively (P<0.05) and that of grape pomace was lower than others during fermentation (P<0.05). Dry matter was generally reduced by about 20%. NDF decreased gradually or maintained after 24 h, indicating the fiber degradation. Ash content tended to decrease during fermentation. After 48 hours fermentation, Bacillus, yeast and Lactobacillus showed an excellent growth by using juice by-products. These results suggest that fermented juice pomace has a potential as horse feedstuff with probiotics to maintain beneficial microflora in horse gut.

  • Two experiments were conducted to investigate the effects of the addition of ginseng meal to distillers feed on the silage quality, and feed intake and dry matter (DM) digestibility in goats. In Experiment I, three levels of ginseng meal (0.15, and 30%) were added to the distillers feed to make three types (treatment) of distillers feed silages (DFS), There were five replicates per treatment. Samples of 20 kg each were put into vinyl bag and vacuumed by an air compressor. Vinyl bags were kept at $20{\sim}25^{\circ}C$ for 30 days before being analyzed. In Experiment II, 12 male Korean native goats were employed to investigate the DM intake and digestibility of silages from Experiment I. There were 4 replicates per treatment.   • This study was conducted to investigate the constituents of pumpkin and sweet-pumpkin. Moisture content of pumpkin was higher than that of sweet-pumpkin, but the other proximate constituents were lower. The major free amino acids were aspartic acid, threonine and cystine in pumpkin and cystine, arginine and tyrosine in sweet-pumpkin. Non-volatile organic acid of sweet-pumpkin was higher than that of pumpkin. Crude fat content of pumpkin and sweet-pumpkin were 0.33% and 0.48%. The major fatty acids were palmitic acid, linolenic acid and linoleic acid in pumpkin and oleic acid, linoleic acid and palmitic acid in sweet-pumpkin. The content of unsaturated fatty acid was 52.3%, 71.5% in pumpkin and sweet-pumpkin, respectively. The contents of minerals, vitamin C and carotenoid in sweet-pumpkin were higher than those of pumpkin.

Storage Quality Characteristics of Bread Added with Dried Mulberry Pomace (저장 중 건오디박 첨가 빵의 품질 특성)

  • The purpose of this study is to evaluate the storage quality characteristics of bread with added dried mulberry pomace (DMP, 0, 1, 3 or 5%) during storage at $4^{\circ}C$ for 7 days. During the entire storage period, the moisture content was higher in breads containing DMP compared with the control bread. Textural properties by TPA showed that the hardness of DMP bread maintained a lower hardness than that of the control during the entire storage period. Moreover, DSC (Differential Scanning Calorimetry) result showed that ${\Delta}H$ (crystal melting enthalpy) of the bread containing DMP was lower than that of the control bread, which indicate the retarding of retrogradation. The sensory preference test results demonstrated that the bread with 3% DMP had higher scores in over-all preference than the others. These results suggest that DMP delays the retrogradation of bread during storage.

Nutritional Analyses and Antioxidant Activity of Apple Pomace (사과 부산물의 영양성분 분석 및 항산화 효과)

  • To enhance the applications of apple pomace, which is a by-product of apple, this study analyzed the nutritional components, ursolic acid content, and antioxidant activity of different solvent (distilled water, fermented alcohol, and methanol) extracts. The samples included hot air-dried and freeze-dried apple pomace. The moisture, protein, fat, ash, and total dietary fiber contents of hot air-dried apple pomace were 3.2%, 3.9%, 2.4%, 2.0%, and 28.5%, respectively, and those of freeze-dried apple pomace were 8.2%, 3.4%, 2.4%, 1.8%, and 33.0%, respectively. Ursolic acid was not detected in the distilled water extract of either sample. However, in hot air-dried apple pomace, the methanol extract was 1,753.32 ㎍/ml, and the fermented alcohol extract was 1,532.94 ㎍/ml. In freeze-dried apple pomace, the methanol extract was 1,407.04 ㎍/ml, and the fermented alcohol extract was 1,221.81 ㎍/ml. The total polyphenol and flavonoid contents were 306.7 ㎍/ml and 950.1 ㎍/ml, respectively in methanol extracts of hot air-dried apple pomace and 277.6 ㎍/ml and 925.0 ㎍/ml, respectively in methanol extracts of freeze-dried apple pomace. 2, 2'-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activities of hot air-dried apple pomace were 73.3% in methanol extract and 59.4% in fermented alcohol extract, and those of freeze-dried apple pomace were 76.1% in methanol extract and 66.0% in fermented alcohol extract. Both samples had the lowest antioxidant activity in distilled water extracts. Similar to DPPH radical scavenging activity, both samples showed increasing 2,2'-azino-bis(3-ethylbenzothiazoline-6- sulfonic acid) (ABTS) radical scavenging activity in the order of methanol, fermented alcohol, and distilled water. All samples had stronger reducing power than ascorbic acid (311.5 ㎍/ ml) as a positive control.

  • 직지대모인 박병선 박사가 지난 2011년 11월 23일 세상을 떠났다. 그 후 1년. 인천가톨릭대학교 신학대학은 지난해 11월 23일 박병선 박사 선종 1주기를 기념해 추모미사 및 루갈다 아카이브를 개관했다. 루갈다는 박병선 박사의 세례명으로, 루갈다 아카이브에는 박병선 박사가 기증한 도서 1286권, 비도서 68점 등이 전시되고 있다.

중국음악과 한국음악의 리듬

  • 우리나라에서는 리듬을 장단이라고도 한다. 장단은 그 말이 뜻하는 바와 같이 대부분 길고 짧은 음이 모인 부가 리듬형이다. 이것은 서양음악의 분할리듬과 대조되는 것이다. 우리나라 음악의 리듬은 길고 짧은 음이 모여 장단을 이룬다. 그래서 3박은 2+1, 5박은 3+2, 8박은 5+3, 10박은 6+4, 16박은 11+5의 장단이다. 중국음악의 리듬은 대개 1자1음식(syllabic)이다. 그리고 4언1구 5언절귀 7언절귀 등 시형은 여러 가지가 있지만, 대부분 4박으로 부른다. 그래서 한국음악은 중국음악에 비하여 리듬이 복잡하다. 이것은 우리말이 중국어보다 리듬이 복잡하기 때문이다.
