Antimicrobial Effect of Grapefruit Seed Extract on Preservation for Carrot and Spinach (당근과 시금치 저장에 있어서 자몽종자추출물의 항균효과)

  • In order to preserve the freshness of vegetables and to reduce the rate of decay, grapefruit seed extract (GFSE), a natural microorganism growth inhibiting agent, was applied during the preservation process of heat treated carrot and spinach. To investigate synergic effect of heat and GFSE treatment, carrots and spinaches were treated with or without 10 ppm of GFSE at $70^{\circ}C$. Surface color, texture and microbial counts of the samples were measured during storage at $4^{\circ}C$. GFSE showed an effective inhibitory activity against aerobic bacteria and yeast which might be involved in the decay of vegetables. Heat treatment at 2 min at $70^{\circ}C$ could also well preserve the color and texture of the vegetables. From the results, optimal concentrations of GFSE were 10 ppm and 50 ppm with heat treatment of 2 min $70^{\circ}C$ for the growth inhibitory effect to aerobic bacteria and yeast and preservation of color and texture.

Improvement of Takju Quality by a Ripening-Fermentation Process Using Honey and Extension of Shelf Life by Control of Takju Mash Sediment (벌꿀을 이용한 고액분리 숙성 탁주의 주질 향상과 고형분의 조절에 따른 품질유지기간 증대)

  • This study was conducted to improve quality of takju where natural honey is used to control the ripening fermentation and the amount of sediment derived from takju mash. A koji was prepared using rice starch and Aspergillus awamori var. kawachii. Takju mash was prepared by alcohol fermentation with Saccharomyces cerevisiae and a 3-step addition of steamed rice. The clean part of the mash (CPM) was separated from the sediment at $5^{\circ}C$ and 5% (w/v) of natural honey was added and then ripened for 23 days at 5, 10, or $15^{\circ}C$. Temperature, pH, acidity, and total sugar content showed no significant differences, but a 0.2 percent reduction in alcohol content occurred during storage. However, CPM ripened with honey had a comparatively higher score on sensory evaluation than did immature CPM with added honey added. Takju with 8% alcohol content was prepared by mixing the water from the mixed CPM ripened with honey together with 100, 50, and 25% of the frozen sediment. Several quality characteristics of the takju were checked over 37 days of fermentation at $10^{\circ}C$. The pH was sustained between 4.1 and 4.3, and changes in the number of viable yeast cells, acidity, total sugar amounts, and alcohol content showed similar patterns but differences in scale. Smaller amounts of sediment affected the stability of the takju. Mixing the CPM ripened with natural honey at low temperature moderately reduced the amount of sediment in the mash and resulted in a highly flavorful takju with an extended shelf life.

Effects of Curing Temperature and Times on Chemical Properties and Palatability of Cured Boiled Pork Loins (염지 온도와 기간이 삶은 돼지고기 등심의 이화학적 특성과 기호성에 미치는 영향)

  • The effects of curing temperatures(1, 5 and 10$^{\circ}C$) and times on the chemical properties and palatability of cured pork loins which were cured in the 7% curing solution were investigated. The pork loins cured at 10$^{\circ}C$ curing temperature showed the decreased level of pH and water holding capacity up to 15 days of curing time. The growth of bacteria in the curing solution and surface region of cured loins, cured at 10$^{\circ}C$ were rapid after 12 days of curing. However, bacteria were not detected(<0.05${\times}$10$^2$ CFU/g) in the central region of cured loin until 15 days of curing. The penetration of salt into the central region of cured loins was faster at 10$^{\circ}C$ curing temperature than at lower curing temperatures for all curing times. The difference of salt contents between surface and central regions in the cured loins was less at higher temperature than at lower temperatures, and the difference decreased in boiling process for all curing times. The color fixation of the cured boiled loins was better at 5 and 10$^{\circ}C$ curing temperatures than at 1$^{\circ}C$. The sensory scores for saltiness and flavor of the cured boiled pork loins were higher at higher temperature than at lower temperatures until 9∼12 days of curing. Palatable cured boiled pork loins could be produced under the curing solution at low temperatures of 1 and 5$^{\circ}C$ for 12 and 9 days, respectively.

Image Processing System for Color Analysis of Food (식품의 색채 분석을 위한 영상 처리 시스템)

  • An image processing system was built to evaluate the color properties of apple and meat. The system consisted of video camera, video card, 32 bit microcomputer and an optical illuminator. The operating software was developed to carry out capturing, analyzing, displaying and storing of the 8 bit digitized images of food. The images of apples at various maturing stages were investigated to obtain the color histogram of R, G, B and Hunter value. RGB histogram showed a major difference in G value, 35.01, the minor change in R value, 6.16, and the negligible difference in B value. The image of beef cut was separated into two parts, fat and lean tissue, by applying threshold value method based on the digital value of color. The threshold value for fat was over 240 and for lean under 230 in R value, respectively. The resulting non fat image showed 2% decreased color difference value, ${\Delta}E$, than whole meat cut.

  • This research is about how infants' multi-cultural recognition and their sphere of activity can be changed when married immigrant women and infants' homeroom teachers were put together in the infants' multi-cultural teaching program. The subjects(children under 5) were selected in "S" city of Gyeonggi-do, South Korea. And they were divided into experimental group 1, experimental group 2, and the control group. And this research did a pretest and post-test for the 60 children. The result of this research can be summarized into three parts. Therefore, it is possible to suggest that the improvement of infants' diversity recognition is affected by a certain kind of teacher and that he/ she can improve the infants' play ability. Experimental group 1 is proceeded by both married immigrant woman and the infants's homeroom teacher. Experimental group 2 was managed by only the homeroom teacher who was going through the same program as the teachers above. The control group was managed by a general nurturing program. This research did do a pretest and post-test for this experiment. -by Chun-Ok. Lee was used for infant's multi-cultural measurement. Mee-sook. Kim's measurement was used for measurement of playfulness between same age children. Meaningful differences was exposed in experimental group 1, experimental group 2, and the control group in sequence. The two experimental groups who had experienced a multi-cultural program seemed to have higher playfulness.

Polyethylenimine Mediated Gene Delivery with Various Liposomal Formulations (폴리에틸렌이민 및 그들의 리포좀이 중재된 Plasmid DNA의 운반)

  • The transfection efficiency of plasmid DNA was inspected using multi-cationic polymer, 5, 10, 25 and 50KD polyethylenimine (PEI). The optimal neutralization ratio of PEI/DNA complexes by agarose assay was 1.5-2.0 (nmol/nmol) without much difference in molecular weight of PEI.In vitro transfection assay, most of PEI-mediated plasmid delivery was better compared to the naked DNA. Especially, 25KD PEI at optimal condition gave higher transfection rather than the standard assay of DEAE-dextran or Lipofectin. To enhance the cell targeting delivery, the liposome formulations were introduced using phospholipids. As a result, PC/PE liposomes increased 2-2.5 times of the transfection efficiency of PEI single or PC/PE single delivery, but not the case of 25KD PEI. Moreover, the DOTAP/PE-introduced PEI delivery reduced the transfection of DOTAP/PE single delivery. All these results proved that the PEI can be used not only good transfectants and but also good DNA condensing agents in neutral/anionic liposome for cell targeting delivery.

Influence Factors on Health of Dental Hygienist by Dental Office's Indoor Air Quality (치과위생사의 병원실내공기질에 의한 건강영향요인)

  • This survey was compared and analyzed about the primary factor that dental office's working environment effect on physical subjective symptom and based on self-filling survey, 656 dental hygienists on July through August 2006, and analyzed using descriptive statics, ANOVA and Multiple Regression Analysis. The result of satisfaction degree of hospital working environment was pretty low about office air condition. Most people have complained that office's air quality makes it difficult to their work and mentioned that they were sore and dull all over the back, shoulder, and neck. The odor is major factor to be satisfied with office environment. Proper ventilates the way open the window more often was essential to maintain fresh indoor air quality and keep the extraction materials by separator and sealing tightly for remove the odor. Other factors were temperature, lighting fixture, ventilation facilities, and freshness of air. Dental hygienist was unsatisfied with hospital air condition and this polluted air condition was the cause of physical subjective symptom in work place. Furthermore, this research would be applied for improvement of working environment by decreasing of indoor air pollution.

  • Jeon-buk is well equipped for the growth of the logistics industry as it is the center of inland and marine traffic. However, it was not activated because of the infrastructure insufficiency. This paper surveyed the logistics industry facilities, interviewed people who are engaged in its business, researched into their business difficulties and the problem of the logistics industry of Jeon-buk. As a result of research, this paper makes an alternative plan for the development of the logistics industry of Jeon-buk area.

Efficiency Analysis of ASEAN Ports Using DEA & Shannon's Entropy (DEA결합모형을 활용한 아세안(ASEAN)지역 항만의 효율성 분석)

  • The total container throughput of ASEAN is expected to increase continuously with economic development. However, ASEAN port infrastructure is insufficient to handle the increasing trade volume. According to the World Economic Forum, ASEAN ports except Singapore and Malaysia are ranked in low. Participation in ASEAN port development projects can lead an increase in trade efficiency with S. Korea by improving the port infrastructure of ASEAN countries. In addition, the S. Korean port-related industry can be energized through entering ASEAN port development projects. This study, which measures the efficiency of ASEAN ports, can be used as a basic guideline for the development and the planning of the ports. This study used Data Envelopment Analysis(DEA) and Shannon's Entropy model together to measure ASEAN ports' efficiency. After measuring each DEA (CCR, I-BCC, O-BCC, SBM) weight, the efficiency of ASEAN ports is measured as reflecting each DEA weight. As a result, the ports of Singapore and Malaysia, the major ports in the world, have the highest efficiency. Further, Vietnamese ports need to raise efficiency along with increasing container throughput. Leam Chabang (Thailand), Ho Chi Minh City (Vietnam), and Tanjung Priok (Indonesia) exhibit a negative correlation between container throughput and efficiency; therefore, the ports need to improve so as to maintain competitiveness. Lastly, Cambodia, Myanmar, and Brunei, which do not have active economic development, need to improve their ports for economic development.

  • The purpose of this study was to develop a competency model by career type by designing the specified career paths through the analysis of career experience of the athletes in the professional sports field. For this purpose, career types were identified as sports administrators, judges, leaders, sports information analysts, and global sports talents based on literature analysis, career development type and path guide design, experts interviews. Competency candidates were derived from interviews and workshops on experts. In order to finalize the competency model, it was confirmed by completing the feasibility test of experts. As a result, it is divided into common competency, professional competency, and global professional competency. There are 6 common competencies such as global competence, OA utilization, 29 special competencies by 5 career types, and 2 global competencies like sports foreign affairs, job preparation for international sports organization and the sports league federation. Competency definitions and behavioral indicator were developed for all competencies and could be used to diagnose the competency level of sports talents and to establish career development academy programs based on the competency model.
