Quality characteristics and antioxidant activity of vegan lentil (Lens culinaris) cookies with different types and content of vegetable oil (식물성 유지 종류와 첨가비율에 따른 비건 렌틸콩 쿠키의 품질특성 및 항산화활성)

  • This study aimed to investigate the quality characteristics of vegan lentil (Lens culinaris) cookies prepared with different types (butter, rice bran oil, canola oil, and coconut oil) and content (10, 20, and 30 g) of fat and oil. The hardness and pH declined with increased fat and oil content. Spreadability, moisture content and antioxidant activity increased with the fat and oil content. The density declined only when rice bran oil was added. Lightness and yellowness decreased with higher concentrations of vegetable oil. Redness increased as more coconut oil and canola oil were added. Rice bran oil cookies had the highest pH, spreadability, moisture content and antioxidant activity. Butter cookies had the highest lightness value, whereas coconut oil cookies had the highest hardness value. In conclusion, rice bran oil could be a quality substitute for butter when developing vegan cookie products.

Effect of Degumming Reagents on the Recovery and Nature of Acetone Insolubles from Rice Bran Oil (미강유로부터 Acetone Insolubles 회수 및 성질에 미치는 탈검제의 영향)

  • Six reagents (water, citric acid, phosphoric acid, oxalic acid, acetic anhydride and maleic anhydride) were evaluated for their effectiveness is degumming rice bran oil. All chemical reagents tested were found to be significantly more effective than water in removing phosphatides from crude rice bran oil. Especially acetic anhydride and phosphoric acid were effective in reducing phosphorous levels (92.5% and 93.3% removeal, respectively). Nonhydratable phospholipids, lysophosphatidyl choline, were removed more effectively by the chemical reagents than by the water degumming. The major phospholipid(PL) components were phophatidyl choline. Oleic, linolieic and palmitic acids were the major fatty acids of PL in rice bran acetone insolubles(AI). The AI recovered by acetic anhydride degumming produced the most stable emulsions. However, the AI obtained from phophoric acid or oxalic acid treatments had very poor emulsifying properties.

Fatty Acid Composition, Contents of Tocopherols and Phytosterols, and Oxidative Stability of Mixed Edible Oil of Perilla Seed and Rice Bran Oil (들기름과 미강유 혼합 식용유의 지방산 조성, 토코페롤 및 식물성 스테롤 및 산화안전성 측정)

  • The fatty acid composition, selected minor components, and the oxidative stability of the mixed edible oil (perilla seed oil and rice bran oil, 3:7 (v/v)) were analyzed. The fatty acid composition of the mixed oil was 32.1% of oleic acid, 30.6% of linoleic acid, 21.4% of linolenic acid, 13.0% of palmitic acid, and 1.7% of stearic acid. The mixed oil contained ${\alpha}$, ${\gamma}$ and ${\delta}$-tocopherols and tocotrienols showing the highest contents of ${\alpha}$-tocopherol. Total amount of tocopherols contained in the mixed oil was 46.63 mg/100 g oil. The composition and content of phytosterols were determined by a GC equipped with a flame ionization detector. Total quantity of phytosterols in the mixed oil was 712.80 mg/100 g oil. The most predominant phytosterol in the mixed oil was ${\beta}$-sitosterol, followed by campesterol and stigmasterol, in a decreasing order. The oxidative stability of the mixed oil was much higher than that of perilla oil, and similar to that of soybean oil, indicating the high oxidative stability of the mixed oil.

Quality Properties of Yakgwa with Different Types Frying Oil (튀김유의 종류를 달리한 약과의 품질 특성)

  • The purpose of this study was to examine the effect of different types of frying oil on the quality of yakgwa such as expansion rate, color, moisture content and rheological properties. Yakgwa fried with corn oil showed the highest expansion in width and length, and rice bran oil in height. With regard to the overall expansion rate, yakgwa fried with rice bran had the highest value. As for lightness and yellowness, yakgwa fried with soybean oil had the highest lightness (34.74), while yakgwa fried with grape seed oil had the lowest lightness (29.82). As for redness, however, no significant difference was found. Regarding fat content, yakgwa fried with rice bran oil showed the highest value with 18.91%, while yakgwa fried with corn oil and canola oil showed the lowest value. No difference was found in moisture content according to the type of frying oil. In relation to the acid value, yagkwa with soybean oil showed the lowest value of $0.24{\pm}0.66$; as for peroxide value, yagkwa fried with rice bran oil showed the lowest value of $3.59{\pm}1.74meq/kg$. No difference was found in hardness, cohesiveness and resilience according to the type of frying oil. Yagkwa fried with corn oil and canola oil showed the lowest value in terms of adhesiveness and chewiness, respectively. The results of the sensory evaluation showed not significance difference in overall preference, but yakgwa fried with rice bran oil had the highest value of $5.93{\pm}1.87$.

  • Exhaust emissions in diesel engine are affected by fuel properties but the reason for this is not clear. Especially the recent strong interest in using low-grade fuel demands extensibe investigation in order to clarify the exhaust emissions. Bio-Diesel oil has a great possibility to solve the pollution problem caused by the exhaust gas from diesel engine vehicles. The use of bio-oils in diesel engines has received considerable atten-tion to the forseeable depletion of world oil supplies. So bio-diesel oil has been attracted with attentions for alternative and clean energy source. The purpose of this paper is to evaluate the fea-sibility of the rice-bran oil for alternative fuel in a diesel engine with rgard to exhaust emis-sions.

  • The effects of rice bran oil on the characteristics of performance and exhaust emissions have been experimentally examined by a single cylinder four cycle direct injection water-cooled and agricultural diesel engine operating at several loads and speeds. The experiments are conducted with light oil blends of rice bran with light oil and rice bran oil as a fuel. The fuel injection timing if fixed to $22^{\circ}$ BTDC regardless of fuel type engine loads and speeds. Any oxygen is not included in light oil while the oxygen contents of 10.7% are included in rice bran oil. The lower calorific value of rice bran oil is less than light oil and the viscosity is very high compared with light oil. In pre-sent study it is found that these major differences of chemical and physical properties control the combustion parameters that affect the performance and exhaust emissions of diesel engines using a rice bran oil as fuels.

  • It seems possible, by use of vegetable oils, to solve the pollution problem caused by the exhaust gas from diesel-engine vehicles. Recently vegetable oils has received considerable attention as an alternative and clean energy source to the foreseeable depletion of world oil supplies. The objective of this study is to experimentally investigate the characteristics of exhaust emissions of a small diesel engine using light oil, rice-bran oil, heated rice-bran oil, rice-bran oil treated with ultrasonic energy. SO$_2$ emission from the pure and the treated rice-bran oils was not detected at speeds hgher than 1,800 rpm while that from the light oil was detected at all the speeds at 4/4 load. NOx emission form these vegetable oils was generally higher compared to that from the light oil for most of the test conditions. tendency opposite to that of NOx emission. The data obtained in this experiment may be applicable for the desist of small diesel engine using the alternative fuels.

  • Bio-diesel oil is a great possibility to solve the pollution problem caused by the exhaust gas from diesel engine vehicles. Recently the use of bio-oils in disel engines has received considerable attention to the forseeable depletion of world oil supplies. So, Bio-diesel oil has been attracted with attentions as an alternative and clean energy source. The objective of this paper is to experimentally investigate the characteristic of performance using light oil, rice-bran oil, heated rice-bran oil, rice-bran oil treated with ultrasonic energy. We included rice-bran oil and applied ultrasonic energy to highly viscous bio-oils. These methods seems to have never been tried yet. The final data may be able to be applicated for the design of the diesel engine using an alternative fuel.

Determination of Sesame oil Adulterated with other Vegetable oils by Spectrophotometric Method (자외선 흡수특성을 이용한 참기름의 이종기름 혼입판별에 관하여)

  • Since there have been no method which can applicable to the screening of commercial sesame oil adulterated with other vegetable oils, the present investigation was carried out particularily focusing on the the pattern of IN absorption of sesame oil and other vegetable oils. For this, a variety of oil samples prepared by the conventional method from sesame seeds, perilla seeds, com, soybean, and rice bran were analyzed by IN spectrophotometer. IN spectra of sesame oil and oil of unheated sesame seeds showed absorption peaks at 215, 230 and 290 nm. While UV spectra of com oil, perilla oil and soybean oil all showed absorption peaks at 215, 230 and 280 nm, that of rice bran oill showed peaks at 215, 290 320 nm. When sesame oil was mixed with com oil, perilla oil or soybean oil, respectively, from which the absorbance of peaks at 290 nm were lower than pure sesame oil. The peak at 320 nm which was typical absorption peak of rice bran oil was still observed in the spectnun of mixture of sesame oil with rice bran oil.
