The results on the chemical characteristics of the pork fed with fermented feeds are summarized as follows; 1) The pork treated with fermented feeds had lower fat and higher protein content than control pork in proximate compositions. It is considered to be the improvement of the quality. 2) It was not recognized to the difference of oxidation level among the sample porks. 3) Oleic acid was the highest concentration in the components of fatty acid of pork. The rate of the saturated and unsaturated fatty acids is 38.8 % : 59.9 % in the ordinary meat, 40.8 % : 57.8 % in the a high-grade meat, and 36.3 % : 62.0 % in the pork treated with fermented feeds. In addition, the essential fatty acid content of them is 14 %, 11.2 %, and 16.7%, respectively. 4) Glutamic acid was the highest composition in total amino acids and the essential amino acid content was 39% in both an ordinary meat and the pork treated with fermented feeds, and 14 % in high-grade meat. 5) It was no difference in the inorganic content among the samples. The water holding capacity by extraction meat juice was higher to 92 % in the pork treated with fermented feeds and 15.6 % in a loss in quantity by heating than others. Thus, the pork bred with fermented feeds was evaluated to be good in terms of processing and cooking.

In this study, the optimal conditions for salmon hydrolysate using squid liver and compositional properties of hydrolysate were investigated. The optimal conditions were $55^{\circ}C$, pH 5.5 and 0.66~0.67% (w/w) in the ratio of squid liver to acidic and thermal treated salmon muscle. The free amino acid of hydrolysate from the acidic treated salmon muscle was higher than that of hydrolysate from the thermal treated salmon muscle, while the total amino acid and mineral were high in the acidic treated salmon muscle. Furthermore, cadmium of hydrolysate from the thermal denatured salmon muscle was below 2 ppm, and has an acceptable level as potential ingredient. The distribution of peptide molecular weight was 40.0% for 1.0~9.5 kDa, 6.7% for 0.5 kDa, and 47.4% of others in hydrolysate from the thermal treated salmon muscle. Both hydrolysates did not show any toxicity against the HepG2 cell line for up to $200{\mu}g/mL$.

In this study, the effects of feeding citrus byproducts on nutritional properties of Korean native chicken eggs were investigated. Two samples of Korean native chicken eggs were used for this study: T0 (Eggs of chickens that were not fed with citrus byproducts until they became 30 weeks old) and T1 (Eggs of chickens that were fed with 4% citrus byproducts when they were between 17 and 30 weeks old). There was nostatistically meaningful difference between T0 and T1 in terms of various properties, such as general components of egg albumen and yolk, total structural amino acid, and total free amino acid. Also, no significant difference was noticed between T0 and T1 in terms of various components of egg yolk, such as amount of mineral, vitamin, and xanthophyll, which showed that those components are not affected by citrus byproducts. However, the amount of cholesterol of egg yolk for T1 was 1,168 mg/100 g, which was significantly lower than that for T0 which was 1,207 mg/100 g (p<0.05). The amount of L-glutamic acid, one of the free amino acids, of the egg albumen was 39.22 and 58.54 ppm for T0 and T1, respectively. The results of this study show that citrus byproducts can be used for the feed for Korean native chicken by adding them to general feed.
In this study, effects of feeding Holstein cows with TMR feed, which includes un-dried citrus byproducts, on the nutritional components of their raw milk were investigated. Two kinds of raw milk from primipara cows and multipara cows were used for the experiment: T0 (raw milk produced by dairy cows not fed with TMR feed including citrus byproducts) and T1 (raw milk produced by dairy cows fed with TMR feed including citrus byproducts). For both primipara and multipara cows, there was no statistically meaningful difference between T0 and T1 in terms of moisture, crude protein, crude fat, crude ash contents or caloric content. T1 showed a lower amount of cholesterol in raw milk for both primipara and multipara cows, which was especially statistically meaningful in multipara cows (p<0.05). Regarding mineral contents in raw milk, T1 showed significantly higher amounts of Na and S in primipara cows, and Na, Cu, Fe, S in multipara cows, respectively. For both primipara and multipara cows, there were no statistically meaningful differences between T0 and T1 in terms of the total amount of amino acids in the raw milk, the composition of saturated fatty acid/unsaturated fatty acid, vitamin A, E, $B_2$ or $\beta$-carotene, while T1 showed significantly higher levels of vitamin $B_1$ in primipara cows than T0.

This study was conducted to determine the effect of seaweed ingestion on Na, Ca and K balances in healthy male subjects and to elucidate possible hypolipidemic mechanisms. Six subjects were given a nutritionally controlled diet based on their usual intake for 5-days followed by 5 days in which seaweed was added to the basal diet. Based on the results of the study, the relation between the levels of intake and excretions in stool, urine and serum concentrations was analyzed. In this study, the ingested sodium and potassium were mostly excreted in urine. The highest the rate of urinary excretion to intake for K at 64%, followed by 56% for Na, Conversely, Ca was excreted in stool at higher rates. Analysis of the relation between the intake and excretion in stool revealed that Na and K showed a positive relation with statistical significance. There was no statistically significant relation between the intake and serum concentration of any these minerals. The levels of serum cholesterol and triglyceride were remarkably reduced (p<0.05) by seaweed intake. Thus, the results suggest a beneficial effect of seaweed on Na, Ca, K metabolic control and hypolipidemic mechanism of the healthy male subjects.
This study was conducted to investigate the effect of a deep sea water (DSW) supplement on the quality characteristics of chicken meat. One-day-old broiler chicks (Ross 308) were assigned to three groups and supplemented with water (control) or DSW diluted with deionized water at 1:40 (DSW1:40) and 1:20 (DSW1:20) ratios, respectively, for 28 d. The control was fed a basal diet containing 0.18% salt. Five birds were slaughtered from each group, and the breast meat was collected and stored at $4^{\circ}C$ for 9 d. The DSW supplementation did not affect cholesterol content in the chicken meat. The DSW 1:40 supplement decreased fat content (p<0.05), water-holding capacity (p<0.05), and sodium and potassium contents (p<0.05) but increased unsaturated fatty acid content (p<0.05) and the $L^*$ value (p<0.05) of the meat. The DSW 1:20 supplement increased the $a^*$ value (p<0.05) but decreased thiobarbituric acid reactive substance inhibition, the $L^*$ value (p<0.05), and the $b^*$ value (p<0.05) in chicken meat. However, the DSW 1:20 supplement did not affect water-holding capacity, fatty acid composition, or mineral content. DSW supplementation at a higher concentration increased red color but decreased lipid oxidation stability. However, further studies are needed to support our findings.

Quality improvements of soybean sprouts on DSSE(Defatted Sesame Seed Extracts)-treated cultivation were determined in terms of growth rate, nutrient compositions value and the total bacteria. The length, diameter and weight of treated soybean sprouts were increased by 6.2%, 10.0% and 9.1%, respectively, compared with control. The contents of moisture, crude ash, crude fat of the treated soybean sprouts were similar to the control soybean sprouts, whereas crude protein content of the treated sprouts was 17% higher than the control. Both soybean sprouts contained 17 amino acids but the treated sprouts contained the higher contents of glutamic acid, threonine, methionine, tyrosine and valine. Little difference in fatty acid composition was noted between the two soybean sprout samples. Vitamin C contents of the treated soybean sprouts were 18.2 mg%, which corresponds to about 50% more vitamin C than the control. The treated soybean sprouts contained higher contents in minerals such as K, P and Ca than those of the control. The total bacteria of soybean sprouts in the control soybean sprouts increased rapidly after 2-day storage, but treated soybean sprouts increased immediately after 4-day storage.
Objectives: Osteoporosis is considered a serious human disease. We developed an extract of mixed herbs containing root of Platycodon grandiflorum (ExMH-PGR), which is expected to be effective in preventing or treating osteoporosis. The aim of this study was to investigate the anti-osteoporotic effect of ExMH-PGR in osteoblastic MC3T3-E1 cells and osteoclastic RAW 264.7 cells. Methods: To examine the anti-osteoporotic effect of ExMH-PGR, osteoblast and osteoclast differentiation were induced and cultured with various concentrations of ExMH-PGR. Alkaline phosphatase (ALP) activity, collagen synthesis, osteocalcin production, and mineralization in MC3T3-E1 cells were analyzed. Tartrate-resistant acid phosphatase (TRAP) activity and the formation of actin ring in RAW 264.7 cells were analyzed. Results: ExMH-PGR at concentration up to $25{\mu}g/mL$ significantly increased ALP activity, collagen synthesis, osteocalcin production, and mineralization in MC3T3-E1 cells. ExMH-PGR at 50 to $200{\mu}g/mL$ significantly inhibited TRAP activity and the formation of actin ring in RAW 264.7 cells. Conclusions: These results demonstrate that ExMH-PGR stimulates osteoblastic activities and inhibits osteoclastic activities in in vitro systems, suggesting that ExMH-PGR might be considered as an anti-osteoporotic candidate for treatment of osteoporosis disease.
Quality and sensory characteristics of tofu prepared with concentrated to 8 $^{\circ}Brix$ deep ground sea-like water (SW) were investigated to check the availability for coagulants. The tofu was coagulated with three kinds of commercially coagulant, such as $MgCl_2$, $CaSO_4$ and glucono-${\delta}$-lactone. Different amounts of SW and soybean milk were added: SW-20 g/L, SW-25 g/L and SW-30 g/L. The moisture content and pH were significantly lower in which preparation with glucono-${\delta}$-lactone coagulated tofu, and others has not significantly difference each other. The mineral contents in the coagulant influenced the mineral content of the tofu, which contained larger quantities of major minerals. However, the mineral content of the tofu was not affected of the mineral concentration in the coagulant. The L and b values of the tofu prepared with SW were not significantly different. The hardness of the tofu prepared with the commercial coagulants was significantly lower than that of the tofu produced with the SW. The sensory property was lower when the hardness was lower and higher. In conclusion, the quality characteristics of SW-prepared tofu were not significantly different from those of the tofu prepared with the commercial coagulants, but the texture and the taste of the SW-prepared tofu were excellent.
This study was designed to develop dish recipes using Heatsun sprouts to improve the sprouts' utilization and consumption. We created four kinds of dishes with Heatsun sprouts, including Acanthopanacis cortex, Kalopanax pictus, Aralia elata, and Cedrela sinensis, and analyzed their sensory properties and nutrients. In the sensory evaluation, the overall preference for all the dishes was scored higher than 3.0, Unnaumsun-dakgoginaengchae had the highest score (4.48) among the dishes. Unnamusun-dakgoginaengchae contained higher values of protein; vitamin A, E, and B6; and folic acid than the recommended dietary allowances (RDAs). The recipe for Dureupgokgammuchim was created to reduce the bitterness and the astringent taste of Aralia elata, and it was rich in vitamin C, E, and B6, as well as in folic acid and iron. Ogapisunkkonchijolim was cooked to reduce the fishy smell of a saury with the addition of Acanthopanacis cortex. It contained 1.5 times the protein RDAs, and high levels of antioxidant vitamins, including vitamin A, C, and E. Chamjugmandu was made by the mixing tofu and various vegetables without adding meat. It had the highest calorie count among the dishes, and its vitamin A, C, and E contents were higher than the corresponding RDAs.
