Physicochemical properties and antioxidant activities of baked waffle added with cinnamon powder (베이킹 열처리로 제조된 계피 첨가 와플의 이화학적 특성과 산화방지활성)

  • Waffles with cinnamon powder added in different proportions (0-12% of wheat flour) were baked to investigate the effects of baking on the physicochemical properties and antioxidant activity. Compared with the control without cinnamon, baking loss was lower in waffles with cinnamon, which led to a decrease in waffle hardness. This was attributable to the higher water-holding capacity of cinnamon than wheat flour. With the increase in the amount of cinnamon, the springiness, resilience, and cohesiveness of the waffle decreased, which was thought to result from the decrease in gluten formation by the proportional decrease of wheat flour. The total reducing capacity and DPPH radical scavenging activity of the waffle was significantly increased. This was substantially in agreement with the observations that cinnamon had an appreciable total reducing capacity and radical scavenging activity that were unchanged by heat treatment. This indicates that the antioxidant functionality of cinnamon could be effectively added to thermally processed food.

Evaluation of Leather Meal and Meat and Bone Meal as the Fish Meal Replacer in Israeli Carp Diets (잉어사료에 있어서 피혁분과 육골분의 어분대체원으로서의 평가)

  • This study was conducted to evaluate the possible utilization and the replacing range of leather meal (LM) or meat and bone meal (MBM) as a fish meal replacer for the dietary animal protein source of growing israeli carp, Cyprinus carpio. Five different diets were formulated on isonitrigenous and isocaloric basis of 38.5% curde protein and 15.3 KJ/g diet. Percentage of the graded levels of replacement of white fish meal (WFM) by LM/MBM on the basis of crude protein were at follows : diet 1, 100% WFM (control) ; diet 2, 75% WFM+25% LM ; diet 3, 50% LM ; diet 4, 75% WFM+25% MBM ; diet 5, 50 WFM+50% MBM and LM or MBM, and approximately 64.5% of plant protein. After one week of conditioning period, fish averaging 10g were divided into five groups and fed one of the experimental diets for 12 weeks. In the first and the second 4 weeks of feeding trials, there were no significant differences in weight gain between two groups of fish fed diet 1 (control) and 2 (P>0.05), while fish fed diet 3, 4 and 5 had a significantly lower body weight gain than fish fed diet 1 (P<0.05). In contrast to those two periods, all diet groups were not significantly different compared to diet 1 in body weight gain during the third 4 weeks of feeding trial (P<0.05). These results indicated that LM and MBM could be used as a fishmeal replacer up to 50% in growing israeli carp.

Quality characteristics of rice cookies as affected by coffee addition (커피분말 첨가가 쌀쿠키의 품질 특성에 미치는 영향)

  • The effects of adding varying amounts (0%, 1.5%, 3%, 6%, and 12%) of the medium roasted coffee powder on the quality characteristics of rice cookies, which were prepared without wheat flour, were studied. The ingredients were mixed, cut, baked at $170{\sim}180^{\circ}C$ for 10 min, cooled, and packaged in plastic bags. Lightness ($L^*$), yellowness ($b^*$), chroma ($C^*$), and hue angle ($h^{\circ}$) of cookies decreased as the addition amount of the coffee powder increased. Redness ($a^*$) increased with the amount of the coffee powder. Firmness and phenolic compounds tended to increase with the increase in coffee content, however, the firmness levels of the cookies containing 1.5~3% coffee powder were insignificantly different. Antioxidant activity of cookies increased with the increase in the amount of coffee powder. Antioxidant activity of the cookies added with 3% coffee powder was significantly higher than that of the cookies added with 1.5% coffee powder. As a results of the sensory evaluation, the intensity of darkness, smell, bitterness, hardness of the cookies tended to increase with the increase in the amount of coffee powder. The overall acceptability of the cookies was significantly higher for the cookies containing 1.5~3% coffee powder than for the other samples. These results suggested that coffee powder (approximately 3%) can be utilized as an additive for preparing rice cookies which have simultaneously high antioxidant activity and acceptability.

Effects of young persimmon fruit powder on rice cookie quality (어린 감 과실 분말 첨가가 쌀쿠키의 품질특성에 미치는 영향)

  • This study was conducted to develop rice cookies added with young persimmon fruits. Effects of varying amounts (0-12%) of the fruit powder from a young astringent persimmon fruit (picked at July) on the quality characteristics of rice cookies were studied. Ingredients [rice (Oryza sativa subsp. japonica 'Ilpum') flours, persimmon (Diospyros kaki Thunb. 'Cheongdobansi') powder, sugar, butter, salt, baking powder, egg] were mixed, cut (thickness 3 mm, diameter 35 mm), baked at $170-180^{\circ}C$ for 9 min, cooled, and packaged in polyethylene/nylon bags. The loss rate and spread factor after baking of cookies increased and then decreased with an increase in the amount of fruit powder added. The moisture content and color values ($L^*$ and $a^*$) of cookies decreased with an increase in the amount of the persimmon powder added. Phenolic compounds content and DPPH radicals scavenging activity increased with an increase in persimmon powder content; in particular, the DPPH activity of the cookies sharply increased after the addition of 3% persimmon powder. These results suggest that the addition of the young persimmon fruit powder affected the quality characteristics of rice cookies and this fruit powder (approximately 3%) can be utilized as an additive during rice cookie processing.

중국 "떡"문화의 역사적 발전에 관한 보고

  • "떡"을 대표로 하는 중국 밀 문화는 선사시기의 야생 식물 재배는 역사상의 가공과 이용으로부터 현대 사회의 정밀 가공, 더 깊은 가공의 광범위한 이용에 이르기까지 수천 년의 긴 역사과정을 거쳤다. 그러나 20세기말 이전까지만 해도 밀가루는 중국 사람의 주식 원료 구성에서 그다지 중요하지 않은 위치에 있었다. 하지만 분명해야 할 것은 어떤 종류의 곡물이 한 민족의 주식 원료 구성에서의 높고 낮은 비중이 결코 간단하게 그 사회 의미와 문화가치의 높고 낮음과는 동일시할 수 없다. 중국 사람의 밀 식용 역사가 바로 하나의 전형적인 사례이다. 선진(先秦)시기, 밀의 재배와 식용은 주로 식량 공급이 줄곧 긴장된 상태에 처해있는 각 정권의 "接濟靑黃"(구제식량)하는 전략적 물자였다. 그러나 선진(先秦)시기에서 밀은 경제가치가 아주 높은 곡물은 아니었다. 그 원인은 밀의 무(畝)생산량이 상대적으로 낮을 뿐만 아니라 종자의 수요량도 상대적으로 크기 때문이다. 묵은 곡식은 다 사용되고 새 곡식이 무르익지 않은 공백기에 있는(청황불접) 시기에 전략적 곡식의 사회와 정치 의미 외에 강한 적응성, 광범위한 분포와 낮은 단가가 또한 밀의 상대적 장점으로 될 수 있다. 밀의 경제와 문화가치는 주로 한대(漢代)이후 차츰 드러났다. 혁명적인 변화는 바로 가루 음식의 섭취와 계속적인 확대이다. 밀을 가루로 내어 식용한 후 차츰 기타 곡물의 편의식품 전통 공간을 대체하였고, 한대(漢代)의 딤섬류 식품 "한구(寒具)(고대에 곡물가루 튀김 음식물 현재의 타래떡 등)"에 사용되는 재료도 거의 밀가루를 사용하였다. 오늘날 중국 사람이 자랑으로 여기는 전통식품인 국수, 만두, 혼돈(餛飩), 포자(包子), 소맥(燒麥), 떡, 찐빵(饅頭), 고(糕) 및 공업화 식품인 과자, 빵, 라면, 햄버거 등은 모두 밀가루를 기본 원료로 사용하고 있다. 나아가서 더욱 정밀하고, 다양한 딤섬 종류도 밀가루를 기본 원료로 한 주요 무대이다. 20세기말 이후 밀 소비 인구가 계속 확대되는 추세였으며 높은 소비량은 밀의 재배 면적 확대와 재배지역 확장을 결정하였다. 밀 소비량은 중국 사람의 주식 원료 소비에서 이미 근근이 벼 뒤를 잇는 지위에 올랐다. 통계 자료에 따르면 1949년 중국 밀 면적은 2,185만 헥타르로, 전국 식량 작물 총 면적의 19.6%, 총 생산량 1,380만 톤으로 전국 식량 작물 총 생산량의 12.2%에 달한다. 1980년에 이르러 면적은 2,884만 헥타르로, 총 생산량은 5,416만 톤에 달하였으며, 각각 식량작물 총면적의 24.8%, 총 생산량의 17.0%를 차지하였다. 1981이후 중국 밀 생산량은 또한, 새로운 발전을 가졌으며, 주로 단위 면적 생산량이 비교적 크게 증가되었고 총 생산량도 큰 폭으로 증가되었다. 1981~1985년과 1976~1980년의 5년 평균치를 비교한 결과 재배 면적은 같았으나(단지 0.2%만 증가), 단위 면적당 생산량 및 총 생산량은 46% 증가하였으며, 연평균 증가율이 9.2%에 달하여 50년 이래에 증가 속도가 가장 빠른 시기였다. 비록 지금 중국인의 "배부르게 먹기"문제는 이미 기본적으로 해결되었으나 장기적으로 "배부르게 먹기"의 물질적 보장은 여전히 취약하다. 농사가 가능한 경지면적의 급속한 격감으로 단위 면적당 생산량의 압력을 증가되었다. 국가 표준에 따르면 품질이 좋은 밀은 "탄력이 강한 고품질 밀"과 "탄력이 약한 고품질 밀" 두 가지로 구분된다. 지금 중국 시장의 추세를 보면 밀 품종의 선택에서 주로 탄력이 강한 고품질 밀을 선택하는데 즉 글루텐량이 높고 탄력이 강하며 품질이 좋은 전문 용도에 사용되는 밀을 선택한다. 탄력이 강한 고품질 밀은 주로 빵, 라면, 만두 등 밀가루 탄력을 요구하는 음식을 만드는데 사용된다. 그 중에서 모든 빵은 탄력이 강한 고품질 밀을 사용하고 밀에 대한 품질 요구도 또한 높다. 빵가루의 품질을 높이기 위하여 일부 전문 밀가루 생산 공장에서는 국산 고품질 밀에 수입 고품질 밀을 첨가하여 사용한다. 만두가루를 가공할 경우도 고품질 밀을 첨가하여 밀가루의 품질을 높이고 음식을 맛을 증가한다. 일부 품질이 떨어진 밀에 대하여 고품질 밀을 첨가하여 내부의 품질을 개선하고 찐빵이나 기타 밀가루 음식으로 가공한다. 예를 들면 중국 동북 지역에서는 고품질 밀과 봄밀을 섞어 밀가루의 봄밀의 품질을 개선한다. 총괄적으로 밀에 대한 욕구는 계속 장기적으로 벼에 버금가는 위치를 유지할 것이며 고품질 밀에 대한 욕구는 더욱 강한 추세로 발전할 것이다.

Possible Use of the Animal By-product Mixture as n Dietary Fish meal Relpacer in Growing Common Carp (Cyprinus carpio) (잉어 사료에 있어 축산 가공 부산 혼합물의 어분 대체 가능성)

  • This study evaluated the possible utilization and the replacing range of animal by-product mixture (ABPM) as a dietary fish meal replacer in growing common carp (Cyprinus carpio). ABPM is a mixture of leather meal, meat and bone meal, blood meal and squid liver powder at a specific weight based ratio. Five different diets were formulated on isonitrogenous and isocaloric basis of $40\%$ crude protein and 15.3 KJ/g diet in which white fish meal (WFM) protein was substituted with the ABPM Protein as follows: diet 1, $100\%$ WFM ($0\%$ ABPM, control); diet 2, $75\%$ WFM+$25\%$ ABPM ($25\%$ ABPM); diet $3,\;50\%$ WFM+$50\%$ ABPM ($50\%$ ABPM); diet 4 $25\%$ WFM+$75\%$ ABPM ($75\%$ ABPM); diet $5.0\%$ WFM+$100\%$ ABPM ($100\%$ ABPM). As the dietary protein sources, each diet contained $34.7\%$ of animal protein supplied by white fish meal and/or ABPM and $65.3\%$ of plant protein. After one week of conditioning period, fish averaging 10 g were randomly assigned to each diet treatment as triplicate groups and fed one of the experimental diets for 12 weeks. Weight gain of fish fed diet 1 (control) and 3 were significantly higher than those of fish fed diet 2, 4 and 5 during the first 4 weeks (P< 0.05), while there were no significant differences among all diet groups during the third 4 weeks (P>0.05). Feed conversion ratio of fish fed diet 1 was significantly higher than those fed diet 2, 3, 4 and 5 during the second 4 weeks (P<0.05), while there were no significant differences among all diet groups during the first and the third 4 weeks (P<0.05). There were no significant differences in proximate analysis among fish fed the experimental diets either for the second 4 weeks or the third 4 weeks (P>0.05). These results indicated that ABPM could be used as a fish meal replacer up to $100\%$ in growing common carp.

Effects of Dietary Probiotics Supplementation on Juvenile Korean Rockfish Sebastes schlegeli (치어기 조피볼락 Sebastes schlegeli 사료내 생균제 첨가효과)

  • A 12-week feeding trial was conducted to investigate the effects of dietary supplementation of probiotics as a feed additive for juvenile Korean rockfish Sebastes schlegeli. Four experimental diets supplemented with no probiotic(Control), Bacillus polyfermenticus(BP), Bacillus licheniformis(BL) or Bacillus polyfermenticus plus Saccharomyces cerevisiae(BP+SC) at $1.0{\times}10^7$ CFU/kg diet as a dry-mater(DM) basis were prepared by mixing with a basal diet. After 12 weeks of the feeding trial, fish fed BP+SC diet showed significantly higher weight gain(WG), feed efficiency(FE), specific growth rate(SGR) and protein efficiency ratio(PER) than those of fish fed control diet(P<0.05), however there were no significant differences in WG, FE, SGR and PER among fish fed the BP, BL and BP+SC diets. Fish fed BP and BP+SC diets showed significantly higher condition factor(CF) than that of fish fed control and BL diets. Fish fed BP, BL, BP+SC diets showed significantly higher hepatosomatic index(HSI) than that of fish fed control diet, however there was no significant difference in HSI among fish fed BP, BL and BP+SC diets. Fish fed BP+SC diet showed significantly lower serum glucose than that of fish fed control diet, however there was no significant difference in serum glucose among fish fed BP, BL and BP+SC diets. Fish fed BP+SC diet showed significantly higher respiratory burst activity(NBT assay) than that of the fish fed control and BL diets, however there was no significant difference in NBT assay between fish fed BP and BP+SC diets. Fish fed BP and BL diets showed significantly higher lysozyme activity than that of the fish fed control diet, however there was no significant difference in lysozyme activity among fish fed BP, BL and BP+SC diets. Fish fed BP and BP+SC diets showed significantly lower cumulative mortality than that of the fish fed control diet, however there was no significant difference in cumulative mortality among fish fed BP, BL and BP+SC diets after the challenge test. From these results, dietary B. polyfermenticus, B. licheniformis and B. polyfermenticus plus S. cerevisiae supplementation in juvenile Korean rockfish diet could enhance growth performances, non-speicific immunities and a higher resistance against the specific pathogen.

Effects of dietary Chromic Oxide and Possible Use of the Animal By-product Mixture as a Dietary Fish meal Replacer (무지개송어 사료에 있어 산화크롬의 첨가효과와 축산 가공 부산혼합물의 어분대체 가능성)

  • This study was conducted to evaluate the utilization of animal by-product mixture (ABPM) as a dietary animal protein source of fish meal replacer, and to determine the effect of dietary chromic oxide in growing rainbow trout, Oncorhynchus mykiss. ABPM is a mixture of five anmial by-products such as meat and bone meal (MBM) feather meal (FM), squid live, powder(SLP), poultry by-product (PBP) and blood- meal (BM) at a specific weight based ratio. Diet 1 and 2 were formulated on a isonitrogenous and a isocaloric basis of $46.5\%$ crude protein and 16.7 KJ/g diet; diet 1 (WFM 100), $100\%$ of the animal protein source came from white fish meal; diet 2 (ABPM 40), $60\%$ WFM+$40\%$ ABPM as the animal protein source; diet 3 (-Cr) commercial diet without chromic oxide; diet 4 (+Cr), commercial diet with chromic oxide. After eight weeks of feeding trials, fish fed diet 2 had a significantly lower body weight gain (WG) and feed efficiency (FE) than that of fish fed the other diets (P<0.05). When comparing diet 3 with diet 4, no significant differences were found in WG and FE (P>0.05). There were no significant differences on condition factor, hematocrit level, serum phosphorus, bone phosphorus, whole body phosphorus, and bone ash among fish from all four diet groups. Fish fed diet 4 had a significantly higher whole body lipid than that of fish fed the other diets (P<0.05), These results indicated that ABPM could be used less than $40\%$ in growing rainbow trout with a sufficient period of acclimation, In addition, the $0.5\%$ of chromic oxide can be used to determine the apparent digestibility of the nutrients in the feed without any adverse effects on growth and body composition.
