Evaluation of the Manufacturing Methods on Farm-made Organic Liquid Fertilizers (유기농액비 농가자가제조기술 평가)

  • 유기농액비 자가제조 방법의 표준화를 위해 농가 현황조사를 통해 유기농액비 제조방법을 분류하고 제조 시기별 성분함량 변동상을 분석하였다. 조사대상 액비는 경기 9, 강원 5, 충북, 1, 충남 20, 전남 6, 경북 5, 경남 8 등 총 54종이었다. 자가제조 유기농액비에 사용된 재료는 감, 매실, 복숭아, 사과, 참다래, 토마토, 파프리카, 양파, 파, 인삼, 미나리, 민들레, 쇠비름, 쑥, 익모초, 산야초, 황기, 환삼덩굴, 으름열매, 은행과피, 배 어린 열매, 감껍질, 깻묵, 들깨대, 물미역, 쌀뜨물, 쌀겨, 꽁치, 바다생선 (잡어), 불가사리, 생선부산물(내장, 뼈 등), 액젓부산물(해산물의 뼈가 많이 함유된 물질), 동물뼈(돼지, 닭 등), 골분, 혈분, 천매암, 천일염, 계란껍질, 조개껍질, 게껍질, 새우껍질, 굴껍질, 농가부산물, 음식부산물, 구아노, 들깨 대 숯, 참깨 대 숯 등이었다. 제조방법은 기본재료+물, 기본재료+물+미생물, 기본재료+당밀, 기본재료+당밀+미생물, 기본재료+흑설탕, 기본재료+흑설탕+미생물 등이었다. 유기농액비의 화학적 특성은 다양하였으며, 혈분을 주 원료로 한 유기농액비의 화학성변화는 시간의 경과함에 따라 pH는 4.99에서 3.85로 낮아졌지만, EC, T-C, T-N, $P_2O_5$, $K_2O$, CaO, MgO, $Na_2O$, Fe, Mn, Zn 등은 높아졌다.

Effect of Japanese Apricot(Prunus mume Sieb. et Zucc.) Flesh on Baking Properties of White Breads (매실 과육 첨가가 제빵 적성에 미치는 영향)

  • The effects of Japanese apricot(Prunus mume Sieb. et Zucc.) flesh on baking properties of white breads were investigated by evaluation of specific loaf volume, pH, acidity, rheological property, color and sensory quality. Bread was processed by adding 4.7%, 9.4%, 14.1% and 18.8% of Japanese apricot flesh to basic formulation. The compositions of Japanese apricot flesh were 88.19% moisture, 0.45% crude ash, 4.10% dietary fiber, 4.04% citric acid and 0.41% total sugars. The specific loaf volume of the breads was decreased from 3.274mL/g to 1.857mL/g as Japanese apricot flesh contents increased from 0% to 18.8%. The pH of the breads decreased but the acidity of those increased as the percentage of Japanese apricot flesh to wheat flour increased. Lightness(L value) of the breads decreased by the addition of Japanese apricot flesh, while yellowness(b value) and redness(a value) increased. Texture measurement showed that springiness, cohesiveness and resilience decreased with increase of Japanese apricot flesh contents. While, hardness, gumminess and chewiness were the lowest in the bread with 9.4% Japanese apricot flesh, and increased in the bread with 4.7%, 14.1% and 18.8% Japanese apricot flesh contents. In sensory evaluation, the highest sensory scores for flavor, taste, aftertaste and overall acceptability were obtained when Japanese apricot flesh content was 4.7%, and softness and chewiness was the best when 9.4% of Japanese apricot flesh was added. The moisture content of the breads containing Japanese apricot flesh was higher than that of the control to add no flesh during storage at $25^{\circ}C$. Based on physical, rheological and sensory evaluation, addition of 4.7{\sim}9.4% Japanese apricot flesh suggested to be acceptable for processing bread.

Quality Characteristics of Wet Noodle with Maesil(Prunus mume) Juice (매실(Prunus mume) 착즙액을 첨가한 생국수의 품질 특성)

  • This study was conducted to investigate the properties of wet noodle when different concentrations of Prunus mume juice were added to the wheat flour. The characteristics of wet noodle including cooking properties, color, mechanical texture properties, and sensory quality were determined. The compositions of Prunus mume were 88.19% moisture, 0.45% crude ash, 4.04% citric acid and 0.41% total sugars. The pH of Prunus mume was 2.76. The moisture absorption rate, weight, volume and turbidity of cooked noodles added with Prunus mume juice were lower than reference sample. When the amount of Prunus mume juice increased, the Hunter L(brightness) value, a(redness) value of cooked noodles decreased but b(yellowness) value increased. Instrumental rheological characteristics of wet noodle containing Prunus mume juice were measured with a texture analyzer. The hardness, adhesiveness, cohesiveness, springiness and gumminess of wet noodle with 20% Prunus mume juice were higher than others. However, the hardness of cooked noodle decreased with the increase in the amount of Prunus mume juice into noodle. The adhesiveness, cohesiveness, springiness and gumminess of cooked noodles added with Prunus mume juice were higher than reference sample. The results of sensory evaluation of cooked noodles containing Prunus mume juice indicated that the appearance, color, taste and chewiness of the cooked noodle with 10% Prunus mume juice showed the higher preference than others. Based on cooking properties, rheological and sensory evaluation, addition of 10% Prunus mume juice suggested to be acceptable for processing wet noodle.

Quality Characteristics of Sulgidduk by the Addition of Maesil(Prunus Mume) Cocentrate (매실농축액을 첨가한 설기떡의 품질특성)

  • The purpose of this study was to determine the most desirable mixture ratio of Maesil (Prunus Mume) concentrate torice flour for the preparation of Sulgidduk. The five different levels of Maesil (Prunus Mume) concentrate were 0%, 4%,8%, 12%, and 16% and were stored over 3 days. The results of this study were as follows. First, the water activity of Sulgidduk was significantly increased upon addition of Maesil(Prunus Mume) concentrate to rice flour. However, in terms of mechanical texture characteristics, the hardness of Sulgidduk was decreased, Maesil(Prunus Mume) concentrate was added to Sulgidduk. The control was $764.58{\pm}5.3\;g/cm^2$. Each amounts of added Maesil(Prunus Mume) concentrate to rice flour (4%, 8%, 12%, and 16%) resulted in hardness levels of $633.44{\pm}13.0\;g/cm^2$, $617.64{\pm}16.2\;g/cm^2$, $585.31{\pm}27.5\;g/cm^2$, and $350.98{\pm}10.2\;g/cm^2$, respectively. In addition, both gumminess and cohesiveness of Sulgidduk increased with increasing amounts of added Maesil (Prunus Mume) concentrate to rice flour. Regarding the color value of Sulgidduk, with added Maesil(Prunus Mume) concentrate the L-value decreased, while both a-and b-value increased. In the sensory evaluation, surface color, taste, and flavor were improved with increasing amounts of Maesil(Prunus Mume) concentrate, whereas texture decreased. Based on sensory evaluation, Maesil (Prunus Mume) concentrate resulted in intensified color, taste, and flavor of Sulgidduk. Consequently, 4% to 8% Maesil (Prunus Mume) concentrate to rice flour was determined to the best formula for improving Sulgidduk in terms of sensory qualities such as moistness, color, taste, flavor and so on.

Quality Characteristics and Antioxidative Activity of Garlic Pickles Prepared with Persimmon Vinegar and Maesil (Japanese Apricot) Juice (감식초와 매실액을 첨가한 마늘 피클의 품질 특성 및 항산화성)

  • The quality characteristics and antioxidative activity of garlic pickles prepared with persimmon vinegar with or without Maesil (Japanese apricot) juice were investigated. Heat treated garlic cloves ($110^{\circ}C$, 5 min and then rapidly cooling) were salted with NaCl and $CaCl_2$, and then soaked in pickling solution, and stored at $20^{\circ}C$. The pH of the garlic pickles initially ranged from 2.36~3.24, after which the pH slightly increased to 3.22~4.13 during storage, while the acidity was decreased to 1~1.97. Throughout the entire storage periods, the acidity of the garlic pickle containing persimmon vinegar and Maesil was the highest (1.97%). The hardness of the control sample (non heated garlic) decreased during storage, whereas the hardness of all the heat treated groups did not change after 21 days of storage. Moreover, the chewiness of the persimmon vinegar+Maesil group was the highest among the groups. The Hunter color L value of garlic pickles decreased during storage, while the b value (yellowness) increased for all groups except the two persimmon groups. The $IC_{50}$ of the DPPH radical scavanging activity of garlic pickles at 5 day of storage was 85.98~97.81 mg/mL. However, the antioxidative activity of garlic pickles gradually increased with longer storage times. The persimmon vinegar+Maesil group showed the highest antioxidative activity. Results from the sensory evaluation showed that scores of flavor, taste and over-all preference were higher for the persimmon vinegar+Maesil group than the other groups (p<0.05).

Effect of natural antioxidant extracted from Citrus junos seib. or Prunus mume. on the quality traits of sun-dried Hanwoo beef jerky (유자 및 매실추출물 첨가가 천연건조 한우 육포의 품질특성에 미치는 영향)

  • The objective of the study was to evaluate the quality characteristics of sun-dried Hanwoo beef jerky added with the extract of Citrus junos seib. or Prunus mume. Hanwoo beef shank muscles were sliced, marinated, and sun-dried at $25^{\circ}C$, relative humidity of 35%. The physicochemical quality and microbiological safety of the Hanwoo beef jerky aerobically packaged were analyzed during the storage of $25^{\circ}C$. The moisture content of beef jerky with Citrus junos seib. was the lowest among the treatments after 20 d. Citrus junos seib. and Prunus mume jerky after 10 d had significantly lower aw than those after 0 and 20 d (p<0.05). The pH values of jerky generally ranged from 5.76 to 5.84. The pH value of Prunus mume jerky was significantly higher than those of other jerky samples (p<0.05). Prunus mume jerky showed significantly lower TBARS value than the others after 20 d (p<0.05). Citrus junos seib. jerky showed a significantly lower lightness ($L^*$), redness ($a^*$) and yellowness ($b^*$) than the others during the storage (p<0.05). Prunus mume samples after 10 d had significantly higher $L^*$, $a^*$, and $b^*$ values than the others (p<0.05). With regard to sensory properties, Citrus junos seib. and Prunus mume jerky showed significantly higher flavor and overall acceptability scores than the control (p<0.05). The extracts of Prunus mume will be used in sun-dried Hanwoo beef jerky as a natural agent to retard lipid oxidation and to improve meat color.

가공반찬류의 저장성 향상을 위한 천연 항균복합제재의 처리효과

  • 식품조리 및 가공은 만들어진 제품의 저장성을 전제로 해야 하기 때문에 식품의 변화 혹은 변질에 깊은 이해를 바탕으로 모든 처리와 가공 방법이 검토되어야 한다. 식품의 변질이나 부패는 미생물 작용에 의한 변질이 그대부분을 차지하고 있으며 미생물학적 변질을 방지하기 위해서 화학적 합성보존 제가 상업적으로 사용되고 있으나 최근 소비자의 건강 지향적 욕구가 증대됨에 따라 인공합성품의 기피현상이 두드러지고 있다. 따라서 천연 항균물질의 개발과 이용은 인공 합성보존제의 대처라는 의미와 소비자기피현상을 유발시키지 않으면서 각종 가공식품의 저장성 향상 및 저온 유통식품의 안정성확보라는 견지에서 그 중요성이 있다. 본 실험에서는 식품의 미생물작용에 의한 변질의 저해 효과가 뛰어난 식물성천연항균제품(Botanical antimicrobial agents-Citrus product : 이하 BAAC라 칭함)에 천연보조제(Ginseng extract, Aloe, 매실추출물)를 첨가하여 Paper disk법에 의한 항균성 검사를 실시한 결과 Ginseng extract를 첨가한 경우 생육저해환이 가장 크고 뚜렷하게 나타났다. 따라서 BAAC에 보조제 (Ginseng extract)를 첨가하여 제조 된 천연 항균복합제재(이하 BAAG라 칭함)를 가공 반찬류인 마늘종 무침과 돈육장조림에 첨가하여 처리한 후 꺼내어 상온에서 저장하면서 주사전자현미경 관찰, 대장균수, 총균수의 변화, 외관상의 변화에 미치는 영향을 무처리 대조구와 비교하면서 조사하였다. 주사전자현미경 촬영사진의 결과 분석을 통하여 BAAG를 처리한 균체 세포는 세포막 및 세포벽 기능이 파괴되어 세포내용물이 균체외부로 유출되어 균체의 생육이 억제되며 성장을 저해 또는 사멸시키는 것으로 나타났다. 대장균수는 모든 처리구에서 BAAG의 첨가에 의해 성장이 억제되었으며 농도가 증가시킬수록 균증식 억제 효과가 뚜렷하였으며, 총균수도 압도적으로 낮은 값을 보여주었다. 외관상의 변화와 상품 가치를 측정한 결과는 무늘 종 무침과 돈육장조림의 대조구에서는 4일 경과후 강한 부패취와 아울러, 표피의 갈변정도가 심하되어 관능적으로 부패상태를 인지할 수 있었으며 7일경과 후부터 점질성 갈변물질이 생성되어 상품가치가 크게 떨어진 상태였다. 이와 같은 결과로 볼 때, BAAG의 처리는 BAAC의 경우보다 가격은 저렴하면서도 항균력은 우수한 천연 항균복합제재로써 가공 반찬류의 저장성을 최대한 연장 할 수 있음을 확인 하였고, 반찬류뿐만 아니라 여러 식품군에 다양하게 적용가능 할 것으로 기대된다.

Host range, Life cycle and Natural enemies of Mulberry scale (Pseudaulacaspis pentagona) on Prunus mume in south Korea (매실나무에 기생하는 뽕나무깍지벌레 (Pseudaulacaspis pentagona)의 기주범위, 생활사 및 천적에 관한 조사)

  • Studies were conducted to investigate hosts, life cycle, population dynamics and natural enemies of mulberry scale, Pseudaulacaspis pentagona Ta. & Tozz., from 1987 to 1988 in southern region of Korea. The host plants were 22 families and 74 species. Host plants belonged to genus Prunus in general were severely damaged due to mulberry scale. Mulberry scale was most likely to have three generations a year with first occurrence of larval stage from mid-May to late June, second occurrence from mid-July to mid-August and third occurrence from early September to late October including 3 peaks in early and mid-June, late July and mid-September. In case of each stage occurrence, eggs were peaked on 10th day, larvae on 25th day and adults on 7th day from beginning of occurrence, respectively. Natural enemies were observed as parasitoids of 3 species such as Aphytis diaspidis, Archenomus orientalis and Apterencyrtus mocrophagus and as predators of 3 species such as Chilocorus Kuwanae, Chilocorus rubidus and Hormonia axyridis. Shoot growth was affected by mulberry scale and Lepra to dwindle as much as half of normal growth.

Protective Effects of Food Including Hovenia dulcis on Acute Alcohol Intoxication (급성 알코올 중독에서 헛개나무 추출물을 포함한 식품 조성물의 보호 효과)

  • Over-consumption of alcohol leads to many side-effects such as malnutrition, liver disease, and neuronal disorders and many investigators have tired to identify methods for preventing the side-effects of drinking. In this study, we demonstrated the protective effect of a new food component, SAC-1, containing Hovenia dulcis Thumb and Lonicera caerulea Thumb extract against the side-effects of drinking. We observed that blood alcohol concentration, glutamic oxaloacetate transaminase, lipid peroxidation, and total glutathione level decreased significantly in plasma and liver of mice fed the SAC-1 extract before alcohol intoxication. In particular, SAC-1 had more of a protective effect than that of Hovenia dulcis Thumb extract alone. These results suggest that SAC-1 should further be developed to treat alcohol detoxification and stimulate antioxidative potentials.

Comparison of Heart Rate and Blood Lactate between Ingestion of Prunus mume Solution and Water during Graded Maximal Exercise in Hot Environment (고온에서의 점증적 최대운동시 매실함유 음료 밀 생수섭취에 따른 심박수 및 혈중 젖산농도 변화의 비교)

  • Humans may lose considerable amounts of water and electrolytes from sweat during exercise in a hot climate. Optimal ingestion of fluid-replacement beverages may overcome an obstacle factor of exercise performance in the heat. This study was performed the comparison of heart rate and blood lactate between ingestion of Prunus mume solution and water solution during graded maximal exercise using bicycle ergometer in the heat(ambient temperature of 31-32$^{\circ}C$ and relative humidity of 50-55%). Ten healthy no-heat-acclimatized males participated in the study. Exercise duration until all-out of graded testing in the condition of Prunus mume solution ingestion(786.15$\pm$47.66s) was significantly higher(P<0.05) than the condition of water ingestion. Heart rate at 4 min during graded testing and recovery phase in the condition of Prunus mume solution ingestion was significantly lower(P<0.05) than the condition of water ingestion. Blood lactate concentration at 30min of recovery phase after graded maximal exercise in the condition of Prunus mume solution ingestion was significantly lower(P<0.05) than the condition of water ingestion. Recovery rate of blood lactate concentration at 15 min and 30 min of recovery phase after grated maximal exercise in the condition of Prunus mume solution ingestion was significantly lower(P<0.05) than the condition of water ingestion. Present results suggested that ingestion of Prunus mume solution showed the positive effects on the cardiorespiratory function and acid-base regulation as compared with ingestion of water during graded maximal exercise and recovery phase in hot environment.
