레스토랑 고객의 서비스피해경험에 대한 연구 - 호텔 ${\cdot}$ 외식 관련 전공자의 의견을 중심으로 - (Study on the Experience of Accidential Losses by Restaurant Customers - Focused on the Opinions of Hospitality Majored Respondents -)

  • This study investigated legal environments on customers' experiences of accidential losses in a restaurant service. A wide review of the cases showed that restaurant customers' experiences of accidential losses are classified into 11 types as follows; loss of personal belongings with posted warning, loss of personal longings without posted warning, injuries in a restaurant with posted warning, injuries in a restaurant without posted warning, injuries while eating, food poisoning, injuries from defective tablewares, allergic reactions, illegal or unsanitary food supplies, and false labeling of countries of origin. The results of this exploratory study revealed that the respondents had experienced some out of those 11 incidents in average 2.6 times in all of their restaurant visits, and the incidents frequently happened in independent restaurants rather than in fast-food establishments, family restaurants, or hotel restaurants. The results also showed that the accidents from illegal or unsanitary food supplies was happened most frequently and false labeling of countries of origin was mostly anticipated increasing in the future.

  • This study was conducted to evaluate the menu of a Japanese restaurant in a first class tourism hotel. The calculations used for the menu analysis were conducted using MS Excel 2003. Several previous studies have been conducted to analyze menus. For example, Pavesic used of the weighted contribution margins (WCM) and potential food cost (PFC%) to evaluate menus, while Kasavana & Smith used the mix margin (MM%) and unit contribution margin (CM) to evaluate menus. The menu engineering method focused on the customer's viewpoints, while the Cost/Margin analysis method considered the manager's viewpoints. The menus that need continuous keeping Kasavana & Smith (Star) and Pavesic (Standard) included 'Assorted sashimi with side dishes (big), 'Lunch box special', 'Tempura course', 'Broiled Spanish mackerel and side dishes', 'Shrimp tempura', 'Special sushi', 'Seafood Udong', 'Buckwheat noodles'. The results of this study should increase customer satisfaction and profits at the Japanese Restaurant.

뉴욕 소재 한국레스토랑 고객특성 분석 (Profile of Korean Restaurant Patrons in New-york City)

  • Coupled with the international expansion of Korean culture in recent years, a number of restaurants from Korea have been trying to tap into the global market place. The purpose of this study was to identify the characteristics of non-Korean patrons in Korean Restaurants in New-york city. The survey was conducted at six popular Korean restaurants, all of which had been recognized in the Zagat Survey in recent years, located in prime business districts in Manhattan. The data collected from the six local Korean restaurants that participated in this study were qualitatively and quantitatively analyzed. After employing individual in-depth interviews with restaurant operators, a qualitative analysis identified demographic characteristics, Socioeconomic characteristics and segmentation of restaurant operation. Self-administrated survey questionnaires were used to acquire quantitative data. Primary data were collected from non-Korean patrons at the six participating Korean restaurants in New York City in 2008 (N=245). The patrons who answered the survey indicated that they were highly satisfied with the 'Food'; however, they were not satisfied with the 'Beverage' and 'Value'. In addition, older patrons (55<) were not as content with the 'Food' as the younger patrons. The most influential satisfaction variable that affected a patron's intention to revisit the Korean restaurant was 'Food' and 'Overall experience'. This study findings will help Korean restaurant operators and marketers better understand their patrons and formulate strategies to cater and target segments more effectively.

메뉴엔지니어링기법과 CMA 기법을 이용한 메뉴 분석에 관한 연구 - 서울지역 특1급 호텔의 프렌치레스토랑을 중심으로 - (Menu Analysis Using Menu Engineering and Cost/Margin Analysis - French Restaurant of the Tourism Hotel in Seoul -)

  • This study was designed to : (a) analyze the menus of the French restaurant in tourism hotel using the menu analysis techniques of Kasavana & Smith and Pavesic, (b) compare the characteristics of the two analysis techniques. The calculations for the menu analysis were done using the MS 2000 Excel spreadsheet program. The menu mix % and unit contribution margin were used as variables by Kasavana & Smith and weighted contribution margins (WCM) and potential food cost % (PFC%) by Pavesic. In two cases, a four-cell matrix was created and menu items were located in each according they achieved high or low scores with respect to two variables. The items that scored favorably on both variables were rated in the top category (e.g., star, prime) and those that scored below average on both were rated in the lowest category (e.g., dog, problem). While Kasavana & Smith's method focused on customer's viewpoints, Pavesic's method considered the manager's viewpoints. Therefore, it is more likely to be desirable for decision-making on menus if the menu analysis techniques chosen is suited to its purpose.

호텔 세미뷔페 레스토랑의 메뉴 컨셉 분석 - 서울시내 특1급 호텔을 중심으로 - (A Study of Analysis on the Menu Concept of the Hotel Semi Buffet Restaurants - Focusing on the 1st class hotels in seoul -)

  • For the hotel industry, the situations having difficulties in management are becoming we planed by the rises of the cost and labor costs, the imbalance between supply and demand, stiffening competitions between the hotels. Therefore, there has been a plan for a great change to attract customers, escaping from the existing form of management in order to secure competitive powers in the food and beverage field. For that purpose, we plan to investigate into the preference of buffet restaurants in ten 5star hotels in Seoul. By the analysis, we also plan to present the menu concepts that stand out and are preferred by the customers in managing semi-buffet restaurants. Therefore, the linear and planar coordinate values of the H Hotels and I Hotels came out both positive(+) as results of a similarity analysis using MOS, we can predict that they would be positioning on the same dimension. Furthermore we can predict that the menu of antipasto, sushi, sashimi and desserts would be positioning on the same dimension as a result of analysis of the most preferred menu by customers for each station in managing a semi-buffet restaurant. Based on these results, there must be continuous supervision over the menu of buffet restaurants.

울산 및 대구지역 레스토랑의 브랜드 퍼스넬리티가 브랜드 인지${\cdot}$연상, 브랜드 감성-관계 및 브랜드 이미지 및 브랜드 애호도에 미치는 영향 (The Effects of Brand Personality on Brand Awareness/Association, Brand Emotion-Relationship, Brand Image and Brand Loyalty in Family Restaurant of Ulsan and Daegu)

  • The present study assessed how restaurant brand personality affected customer’s awareness/association, emotional-relationship and image, and how these factors influenced brand loyalty. As well, the influence of restaurant brand personality to brand loyalty was assessed. The model was tested in family restaurants in the metropolitan cities of Ulsan and Daegu. Between January 1 and February 28, 2007, questionnaires were distributed to restaurant patrons. A total of 274 questionnaires were statistically analyzed. Empirical results confirmed that restaurant brand personality increased brand awareness/association, brand emotional?relationship and brand image, and that these attributes increased brand loyalty. Restaurant brand personality affected brand loyalty. The research findings indicate that managers of family restaurants should pay attention to the emotional reaction of customers to their establishment. This involves employee actions that make dining a pleasurable experience.

음식관여도 유형에 따른 레스토랑 간편식 선택속성 중요도-수행도 분석 (Importance-Performance Analysis of Restaurant Meal Replacement (RMR) Selection Attributes According to Food Involvement Type)

  • This study evaluated the consumers' demands and points of improvement for restaurant meal replacement through importance-performance analysis by the restaurant meal replacement segment market using food involvement. The results were as follows. First, after segmenting the restaurant meal replacement market using food involvement, it was classified into three markets (multiple involvements, exploration-oriented, and product quality-oriented). Second, an analysis of the importance of restaurant meal replacement selection attributes revealed taste, sanitation, quality, freshness, price, saving time, texture, ingredients, preparation process, and quantity to be highly important. An analysis of the differences according to the market type revealed the multiple involvement type to be more important than other groups, considering the restaurant meal replacement selection attribute element. Third, an analysis of the importance-performance analysis of restaurant meal replacement selection attributes revealed that quantity and price as the selection attributes that needed to be improved first in all three markets. In addition, in the multiple involvement type, food additives appeared as a selection attribute requiring priority improvement, revealing the characteristics of a market that cares about diet and health.

미슐랭 가이드 스타 레스토랑에 대한 기대가치가 방문의도에 미치는 영향 (The Impact of Expected Value of Michelin Guide Star Restaurants on Visit Intention)

  • Purpose: South Korea is one of the markets where diverse and innovative cuisines are being tried. Therefore, the expectations for Michelin star restaurants in South Korea are high. The expected value of a Michelin star restaurant consists of both hedonic and utilitarian aspects of the dining experience. These consumer expectations affect visit intention. Research design, data, and methodology: The survey period was from October 10, 2023 to October 18, 2023, and 302 copies were used for hypothesis verification. Result: Hedonic expected value was found to have a significant positive influence on short-term and long-term visit intention, but had no significant effect on mid-term visit intention. Utilitarian expected value was found to have a significant positive influence on short-term and mid-term visit intention, but did not appear to have a significant effect on long-term visit intentions. Short-term visit intention was found to have a significant positive influence on mid-term visit intention, and mid-term visit intention was found to have a significant positive influence on long-term visit intention. Conclusions: The theoretical implications are restaurants need to utilize third-party certification, such as the Michelin Guide. The practical implication is that Michelin star restaurants should provide expected value to increase short-term visit intention.

COVID-19 엔데믹 상황에서 소비자들의 레스토랑 방문의도에 관한 연구 (A Study on the Consumers' Intention to Visit Restaurants in COVID-19 Endemic)

  • Coronavirus disease-2019 (COVID-19) has led to a decline in restaurant visits, which in turn has changed the decision-making process of consumers. This study aimed to investigate the factors influencing visit intention during the COVID-19 endemic by employing the expanded theory of planned behavior. A total of 291 samples were collected through an online survey for the analysis. Confirmatory factor analysis, correlation analysis, and structural equation path analysis were performed on the collected data using the Analysis of Moment Structures (AMOS) statistical program. The findings of the study revealed the positive effects of attitude and perceived behavioral control and the negative effects of subjective norms on desire. Second, desire played a mediating role between antecedent variables (attitude, subjective norm, perceived behavioral control) and the visit intention. These findings are meaningful in that they expand the theory of planned behavior during the COVID-19 endemic based on factors that affect visit intention.

고객의 개인적 요소가 대기시간 경험에 미치는 영향에 대한 탐색적 연구 (An Exploratory Study on Customers' Individual Factors on Waiting Experience)

  • 서비스를 구매하기 위해 고객들은 자주 대기를 경험하게 된다. 고객은 대기로 인해 불만족을 느끼고 서비스 장소를 이탈할 수도 있기 때문에 서비스 제공자가 대기시간을 관리하는 것은 중요하다. 이를 위해 대기시간에 관한 연구가 다양하게 진행되어 왔다. 그 결과, 서비스 제공 단계별 대기시간 연구, 실제와 지각된 대기시간에 대한 연구, 대기를 경험하는데 영향을 미치는 대기환경과 대기정보 등 매개변수에 대한 연구, 고객의 특성에 따른 대기경험의 차이 연구 등을 통해 고객의 대기경험을 개선시키고자 하였다. 본 연구에서는 Hui and Tse(1996)가 제시한 고객의 행동적 메커니즘의 평가적 요소, 즉 지각된 대기시간, 대기수용정도, 대기에 대한 감정적 반응을 고객이 대기할 때 경험한다는 것을 바탕으로 서비스 제공자가 대기 시점에서 통제하기 어려운 고객의 개인적 요소들(고객충성도, 거래중요도, 대기기대수준)이 미치는 영향을 알아보기 위해 실제 대기상황(패밀리 레스토랑, 놀이공원)에서 탐색적 연구를 하였다. 두 번의 실험을 진행한 결과는 다음과 같다. 첫째, 레스토랑에서 조사한 결과, 고객의 거래중요도가 대기경험에 긍정적으로 미치는 영향이 큰 것으로 나타났다. 이는 레스토랑의 서비스 제공자가 고객의 거래중요도를 높일 수 있는 전략을 통해 고객의 이탈을 효과적으로 방지할 수 있음을 시사한다. 둘째, 놀이공원에서 조사한 결과는 거래중요도뿐만 아니라 고객충성도가 대기경험에 긍정적인 영향을 미치는 것으로 나타났다. 이를 통해, 놀이공원의 서비스 제공자는 지속적으로 고객충성도를 높일 수 있는 전략을 통해 필연적으로 발생하는 대기에 대한 고객의 불만을 최소화할 수 있음을 시사한다. 위의 연구결과는 서비스 장소의 특성에 따라 고객이 대기를 다르게 경험하기 때문에 서비스 제공자는 해당 서비스 장소에 따라 고객특성을 파악하여 이를 강화, 개선해 대기시간을 관리하는 것이 효과적일 수 있음을 시사한다. 셋째, 지금까지 대부분의 연구에서 조절적인 변수로 취급되었던 거래중요도, 대기기대수준 등의 고객 특성이 대기경험에 영향을 미치는 주요 독립 변수로 연구됨으로써 대기경험에 직접적인 영향을 미칠 수 있다는 것을 밝혔다. 즉, 획일화된 서비스전략이 모든 고객을 만족시키지 못하기 때문에, 고객의 개인적 요소들에 따라 대기경험에도 차이가 생길 수 있음을 감안한 마케팅 전략이 필요하다. 또한, 대기시간 연구에서 다루어지지 않았던 고객충성도가 대기경험에 미친다는 것도 알아내었다. 고객충성도는 중·장기의 긍정적인 서비스 경험에 의해 형성되는 것이기 때문에 누적되는 고객만족의 중요성을 위해 대기시간 관리에서 중요한 개념이라고 할 수 있다. 넷째, 실제 대기시간과 대기경험 간의 관계에서 지금까지 대기시간 연구들이 지각된 대기시간을 위주로 연구해왔으나, 실제 대기시간이 대기경험에 미치는 영향도 주목할 필요가 있다는 것을 밝혔다. 특히, 본 연구에서는 한계 대기시간과 함께 실제 대기시간의 영향력을 알아봄으로써, 동일한 실제 대기시간에도 개인이 느끼는 한계 대기시간에 따라 대기경험에 다양한 반응이 있음을 알 수 있었다. 마지막으로, 대기경험 간의 관계에 있어서도 Hui and Tse(1996)의 연구와 달리 고객은 대기시간을 지각하면, 이에 대한 수용여부를 결정하고, 대기상황에 대한 감정적 반응을 한다는 어느 정도의 방향성을 발견할 수 있었다.
