The Influence of Processing Method on Electricity Requirement in Cut-Polished Barley Making (할맥가공(割麥加工) 방법(方法)이 소요전력(所要電力)에 미치는 영향(影響))

  • Crease cut pearled baller was studied in relation to product and quality, and processing electricity requirement with various pearling yields. 1. Increasing the pearling rate resulted in increasing broken grain of cut-Polished barley. 2. The range of length/width ratio in cut-polished baller were from 2.09 to 2.13 and those of pearled barley were 1.36, respectively. 3. Cut-polished barley required more electricity than pearled barley at the same polishing rate. As pearling rate increased at first polishing before cutting, total electricity requirement of cut-polished barley reduced significantly.

  • In order to establish an optimal flour milling method for naked barley, the tempering conditions, milling after pearling and mixed flour milling of naked barley with wheat were studied, and the following results were obtained. 1. For the tempering of naked barley, treatment for 48 hours at a moisture level of 13. 5% and addition of 0. 5% water prior to the flour milling is the most useful procedure. 2. The pearling of naked barley before or after tempering lowers the ash content in the flour, but the yield is reduced considerably and two steps of processing make the procedure unsuitable. 3. For the mixed flour milling, the mixing ratio of naked barley to wheat ranging from 10 : 90 to 20 : 80 is optimal.

Elimination of BHC Residues in the Polishing and Cooking Processes of Brown Rice (현미(玄米)의 도정(搗精) 및 취반(炊飯) 과정중 BHC 잔류분(殘留分)의 제거(除去))

  • In order to investigate the effect of polishing washing and cooking processes on the residue level of BHC in rice grain, brown rice samples having a 0.3 ppm total BHC content were subjected to various treatments and residue analysis. The results are summarized as follows: 1) The conventional polishing process of brown rice decreased the residue level down to 8 and 20% for 100 and 70% polished rice, respectively. 2) The washing procedure decreased the level to 34 and 31% for 100 and 70% polished rice, respectively. 3) The cooking processes with a conventional kettle and an automatic electric cooker decreased the residue level to 86 and 77% in 100% polished rice, and 69 and 41% in 70% polished rice, respectively. 4) By summation of the above results in sequence. it was concluded that the residue levels of BHC in cooked rice were 2.3 and 4.3% of original residue in the brown rice for 100 and 70% polished rice, respectively.

  • Rice Processing Complex(RPC) have being constructed with a rice mill plant and a facility of drying and storage to overcome problems caused by UR and to produce good quality of rice. An optimal design of a rice mill plant was required to successfully construct and operate it. The development of a simulation model was essential to the design of a rice mill plant. So, all the objectives of this study were to develop a simulation model for the design of a rice mill plant and to develop and evaluate the rice mill system. In this study the simulation model was developed to design a rice mill plant using SLAMSYSTEM, one of simulation languages. The results of this study were as followings. 1. A simulation model was developed with SLAMSYSTEM to represent the processes of a rice mill plant. The simulation model was used to design a rice mill pilot plant with the capacity of 0.5 ton per hour. The rice mill pilot plant was analyzed by the model with alternatives. 2. In the simulation the rice mill system was much influenced by the separating efficiency of a brown rice separator. Especially, the bottleneck of grain flow occurred at the buffer tank for brown rica. separator under 50% separating efficiency of brown rice separator. Hence, as the alternative simulation was conducted under 60% , 70% separating efficiency of brown rice separator, the bottleneck of the system could be minimized at the 60% separating efficiency of brown rice separator. 3. In the alternative simulation the bottleneck of the system was minimized under the hulling capacity of 1 t/h and 60% separating efficiency of brown rice separator with the capacity of 1 t/h. Under such a condition the max. weight of waiting entities at buffer tanks was less 250kg. So, the capacities of the buffer tanks were determined in the basis of simulation results. 4. The milled rice recovery and head rice recovery of the milling system were 74% and 92% in the simulation, respectively. These results of simulation almost corresponded to those of actual rice mill plants. The developed simulation model could be well applied to design a rice mill plant.

Antioxidative and Anti-inflammatory Activity of Extract from Milling By-products of Sorghum Cultivar, 'Hwanggeumchal' (황금찰수수 도정부산물의 항산화 및 항염증 활성)

  • Sorghum has been consumed as one of the important staple food in the semiarid tropics of Africa and Asia. Sorghum is rich in starch, protein, essential vitamins and minerals and grows relatively well in dry climate regions when it compared with other staple food crops. Sorghum has taken an increased interest due to several studies that report about the beneficial effects of sorghum on human health. In the present study, we investigated the antioxidative and activity of extract of milling by-products (hull and bran) of Korean sorghum cultivar, 'Hwanggeaumchal' as well as its grain. Hull extract showed the highest total polyphenol contents ($29.7{\pm}0.2mg\;GAE/100g$) and major four pigments content ($322.6{\pm}14.5mg/100g$). From results of 2,2'-azinobis-(3-ethylbenzothiazoline-6-sulfonate (ABTS) radical scavenging activity, hull extract ($IC_{50}$, $6.3{\pm}0.1{\mu}g/mL$) was also showed the strongest antioxidative effects. Bran and grain showed similar polyphenol, pigments contents and antioxidative effects. We determined cell viability by MTT assay and evaluated the anti-inflammatory activity by measuring nitric oxide (NO) of hull, bran and grain methanol extract (0.5% HCl v/v) on RAW 264.7 cells. Hull extract treatment was significantly decreased NO production with dose-dependant manner. Apigeninidin as one of the major pigment of hull was showed inhibitory activity against NO production without cytotoxicitiy. Therefore, sorghum milling by-products can be used as a good source of antioxidative and anti-inflammatory agents.

Quality characteristics of clean rice with the processing system (클린라이스 제조방식에 따른 백미의 품질 특성)

  • Clean rice is useful to save time and labor force against washing rice in the household. Nevertheless the quality characteristics of the rice were not established well since the quality characteristics of the rice depend on types of the processing system. The aims of the current study were to understand the quality characteristics of clean rice prepared from the dry, semi-dry, and wet types of processing systems, and to suggest the appropriate processing system for production of clean rice. Here, we found that the quality of clean rice was improved with the increasing whiteness of rice by the dry type, although the whiteness of rice should be below 42 to satisfy 16.0 NTU of the turbidity for higher head rice ratio. Also, both the semi-dry and wet type systems showed higher ratio of head rice than the dry type system at below 16.0 NTU of the turbidity. These results imply that the wet type is more suitable for the place where rice is consumed fast, and the semi-dry type is more proper for long term storage of rice.

Fermentation and Quality Characteristics of Korean Traditional Cheongju by Different Mashing Methods (청주 제조시 담금방법에 따른 발효 및 품질 특성)

  • This study was conducted to investigate the characteristics of fermentation and quality of Cheongju prepared by mashing using rice Nuruk inoculated with Aspergillus oryzae. Mashes were prepared by fermentation for 30-50 days using different amounts of fermenting agent, brewing water, milling ratios and fermenting temperatures. Adding fermenting agent at 15% resulted in slow fermentation, but a final alcohol content of 17% (v/v), similar to other samples tested. Addition of higher amounts of Nuruk resulted in increased amounts of citric acid, tartaric acid and malic acid, but low levels of succinic acid. Incomplete fermentation occurred when the ratio of brewing water was low, but the alcohol content (17%) of all samples was similar. When the amount of brewing water was high, the organic acid was levels were high. The speed of saccharification and fermentation was low when fermentation was conducted at $10^{\circ}C$, but the final alcohol content was the highest at this temperature. However, the content of n-propanol, isobutanol, isoamyl alcohol and organic acid was low at low temperature. At this time, the content of citric acid and malic acid was low, but the content of succinic acid was high. A higher milling degree resulted in a lower content of alcohol, organic acid and higher alcohols, with 10% milling resulting in a significantly higher content than the other samples.

The Physico-chemical Properties of Three Naked Barley Cultivars (Hordeum vulgare L.) Affected by Different Levels of Nitrogen Application (질소시용량의 차이가 과맥의 이화학적 특성에 미치는 영향)

  • Four different levels of nitrogen were applied to 3 naked barley cultivars (Hordeum vulgare L.) Yonezawa, Baekdong and Yeongsanbori. Changes in physico-chemical properties were examined upon these treatments. Total protein content as well as glutelin increased as N level increased. Baekdong contained the highest protein content (13.7%) at N$_2$. Yonezawa and Baekdong contained more lysine than Yeongsanbori. Increased lysine was measured in all cultivars by increased nitrogen application. Among all amino acids proline was the highest in all cultivars, and its increase was paralled to the N levels. Magnesium and potassium were declined and calcium was increased with increased levels of nitrogen fertilizer. Ash content was decreased as nitrogen increased and as the plants have become matured. Three minutes pearling in Yonezawa was not sufficient in terms of water absorption ratio and whiteness. Sixty percent pearling rate in Yonezawa showed a higher absorption ratio and cooking whiteness than non-waxy Baekdong and Yeongsanbori. Gelatinization temperature was lower but maximum viscosity was higher in waxy than non-waxy barley.
