This experimental work was conducted in order to find out the optimum time of harvest of Japonica-type(Akibare) and Indica-type(Tong-il) rice variety for three harvesting systems by investigating the harvestirg losses and milling quality. The study was also concerned atout the nature and amount of grain losses incurred during the each sequence of post-harvest technologies, and based on these results, a modification of existing systems giving a minimum grain loss was attempted. Binder, combine, and traditional harvesting systems were tested in this study and five grain moisture levels were disposed according to the decrease of grain moisture. The results are summarized as follows: 1. The total losses of Akibare variety were ranged from 1.1 to 1.5 per cent for the traditional harvesting system, 2.1 to 4.8 percent for the harvesting system by use of binder, and 2.8 to 4.3 percent for the harvesting system by use of combine as the grain moisture content was reduced from 24 to 15 per cent. Milling recovery of the harvesting system by use of binder, 74.8~ 75.7 percent, was a little higher as it was compared to that of traditional harvesting system, 74. 3~75. 0 percent, and that of the harvesting system by use of combine, 73.8~ 75.0 per cent. Head rice recovery of mechanically dried paddy samples was higher than that of sun-dried paddy samples. 2. The total losses of Tong-il variety were ranged from 3.8 to 5.0 per cent for the traditional harvesting system, 5.2 to 10.0 percent for the system by use of binder, and 3.0 to 5.0 perent for the system by use of combine as the grain moisture was reduced from 28 to 16 percent.

This study was carried out to compare the grain quality under lodging time and grade at ripening. Ripened grain ratio and 1000-grain weight were higher with lodging of plants at $45^{\circ}$ angle from the ground and increased with crop development. The number of spikelets, as well as the protein and amylose content of the grains, were higher in plants under severe or complete lodging than those under lodging at $45^{\circ}$ angle from the ground. Palatability and sensory evaluation values were higher in plants under lodging at $45^{\circ}C$ angle from the ground than those under complete lodging. Brown rice: rough rice ratio was higher with lodging of plants at $45^{\circ}C$ angle from the ground and increased with crop growth. Milling recovery and milled rice recovery were higher with lodging of plants at $45^{\circ}C$ angle from the ground, whereas chalky grain, cracked grain and damage grains were higher at complete lodging.
Consumption of waxy corn is steadily increasing due to consumer preference for natural food. However, availability of waxy corn is limited because most of them are used for steamed waxy corn. It is therefore important to create new demands of waxy corn using food processing technology. There is little prior research about characteristics of milled kernel in waxy corn. This study examined the physicochemical and cooking properties of milled kernel using nine waxy corn hybrids. Colored hybrids (Heukjinju, Miheukchal, and Eolrukchal1) showed high milling yield and low change of grain length after milling process compared to other hybrids. The total starch content ranged from 62.1 to 68.4% and the gelatinization temperature of starch was lowest in Yeonnong1 ($69.9^{\circ}C$). The breakdown viscosity of Yeonnong1, Miheukchal and Heukjinju was higher than those of tested hybrids, whereas setback viscosity of those hybrids was lower. In cooking properties of milled waxy corn, water absorption and volume expansion rate were high in Yeonnong2 (84.9, 219.3%), Miheukchal (85.9, 211.4%), and Heukjinju (80.9, 203.7%). In the sensory test, the overall preference was significantly higher in Heukjinju and Miheukchal. Thus, Heukjinju, Yeonnong2, and Miheukchal showed good scores in milling yield, cooking properties, and the preference of sensory test. These results will provide fundamental information to extend milled waxy corns usage.
This study was carried out to clarify the effect of silicate application on rice grain quality and storage characteristics in Ilpumbyeo cultivar. In yield and yield components, panicles and spikelet numbers were increased and ripened grain rate was also increased by 2%. Head rice yield was increased by $7.7{\sim}9.5%$ in silicate application. Protein content of milled rice was reduced by $0.2{\sim}0.3%$ and head rice rate was increased by $2.9{\sim}6.7%$ in silicate application due to decrease of chalky and damaged rice rate. In milling characteristics, color separation rate was improved by $4.2{\sim}7.2%$ and colored rice rate was decreased by $5.5{\sim}16.6%$ in silicate application. Acid value of stored brown rice were increased slowly in low temperature and silicate application, but that in room temperature and no silicate application was increased remarkably. The best degree rate of stored brown rice (over than 7.5 of pH) measured by the pH of grain was increased by the silicate application in both low and room temperature. Therefore, it was suggested that the storage characteristics of rice grain was improved by the silicate application.

Response surface methodology (RSM) was used to monitor extraction characteristics of extracts from Sarcodon aspratus. Based on a central composite design, independent variables were microwave power (30~150 W), ethanol concentration (0~100%), and extraction time (1~9 min). Dependent variables were yield, electron-donating ability, total phenol contents, and SOD-like activity. Coefficients of determination ($R^2$) for dependent variables ranged from 0.80 at 0.97. The maximum extraction yield was 50.28% under conditions of 125.1 W microwave power, 18.67% ethanolic concentration, and 7.06 min extraction time. The maximum extraction electron-donating ability was 22.14% under conditions of 31.09 W, 45.76%, and 4.32 min. The maximum extraction total polyphenol content was 30.54 mg tannic acid equivalent/g at 122.54 W, 48.05%, and 8.36 min. The maximum extraction SOD-like activity was 33.44% at 121.17 W, 47.42%, and 8.41 min. Based on superimposition of four dimensional RSM with respect to extraction yield, electron-donating ability, total polyphenol content, and SOD-like activity obtained under various extraction conditions, optimum ranges of extraction conditions were found to be microwave power of 78~88 W, ethanol concentration of 39~57%, and extraction time of 3.5~9 min.
Preparative conditions of high-gel strength agar from Gelidium amansii have been studied, The effect of NaOH pretreatment on the quality and yields of agar extracted from Gelidium amansli was examined. The Bel strength of agar extracted from C. amansii pretreated with NaOH was higher than that of agar extracted from G. amansii non-pretreated with NaOH. The gel strength of agar extracted from G. amansii was influenced by concentration, temperature and time of pretreatment with NaOH. It was found that the proper concentration, temperature and time of NaOH pretreatment to produce high-gel strength agar was $6\%$ NaOH, $80^{\circ}C$ and 2$\~$3 hrs. The principal sugars of agar extracted from G. amansli were galactose and 3,6-anhydrogalactose.
The dietary fiber contents of seaweeds including Drown algae (Undaria pinnatifida, Laminaria japonica, Hizikia fusiforme), red algae (Gelidium amansii, Gracilaria verrucosa) and green algae (Ulva lactuca) and the extraction condition of the fiber was investigated. The dietary fiber contents of Undaria pinnatifida, Laminaria japonica, Hizikia jusiforme, Gelidium amansii, Gracilaria verrucosa and Ulva lactuca were $47.2\%,\;50.7,\;42.6\%,\;48.8\%,\;44.5\%\;and\;40.0\%$, respectively. It was effective to extract soluble dietary fiber with sodium salts such as disodium carbonate and disodium EDTA in brown algae. In red algae, it was effective to extract soluble dietary fibre with disodium EDTA. Also, the extraction time and temperature affected the yields of dietary fiber.

쌀의 연간 생산량은 재배기술의 발달과 더블어 500만톤 이상을 꾸준히 유지해 오고 있는 반면에 식생활패턴은 점차 인스턴트화 되고 육류소비가 증가함으로써 1인당 소비량이 1990년 119.6kg에서 2002 년 87.0kg으로 급격히 감소하는 추세를 보이고 있다. 이러한 현상은 재고누적으로 이어져 2002년말 기준으로 1,190만석의 재고가 발생되고 있으며, 더욱이 WTO체제하에서 쌀시장 개방압력이 강화되고 있는 실정으로 앞으로 재고문제는 더욱 심화될 것으로 전망되고 있다. 이렇게 쌀이 남아도는 현실에서 국내 유통미의 품위는 싸라기 및 분상질립, 피해립, 이물 등 불완전립의 비율이 매우 높아 일본산이나 미국산에 비해 품질이 현저히 떨어지고 있어 고품질 가공을 통한 차별화가 시급히 요청되고 있는 실정이다. 따라서 본 연구에서는 최근 고품질 쌀 가공을 위해 설치 운영되고 있는 완전미 가공시설을 중심으로 완전미 가공기계장치의 구성 실태 및 제품의 품위 등을 조사분석하여 완전미 가공 기계장치의 개량요인을 도출하고, 이를 토대로 기계장치를 보완하기 위한 기초자료를 얻고자 하였으며, 그 결과를 요약하면 다음과 같다. 현재 보급되어 있는 완전미 가공시설의 구성형태는 기존 미곡가공시설에 홈선별기를 1대를 추가 설치한 제 I유형, 색채선별기1대 + 홈선별기 1대를 추가설치한 제II유형, 색채선별기 1대+입선별기 (개조) 1대를 추가한 제III유형으로 크게 나누어지고 있다. 이들 시설의 도정능력은 백미 가공시에는 I, II, III유형에서 각각 24.0, 27.7, 24.0톤으로 높았던 반면에 완전미 가공시에는 각각 3.1, 5,3, 4.5톤으로 처리능력이 크게 떨어지는 것으로 나타났다. 가공수율면에서는 일반백미로 가공시 72.0% 수준이었으나 완전미로 가공시에는 64.3%로 7.7%의 수율 감소를 가져왔지만 완전립률이 일반백미로 가공시 I, II, III유형에서 각각 89.08, 91.57, 88.00% 에서 완전미로 가공시에는 각각 98.02, 98.43, 97.78% 높아져 품질이 크게 향상되었다. 따라서 완전미 가공시설을 도입할 경우 쌀의 외관품질을 크게 높일수 있는 것으로 나타났다. 또 현재의 완전미 가공시설에 있어서 개량이 필요한 부분은 미숙립 등을 효율적으로 제거해 가공효율을 높이기 위해서는 입선별기의 개량이 요구되었으며, 홈선별기의 경우에는 선별정도는 문제가 없었으나 처리능력의 향상이 필요한 것으로 나타났다. 따라서 완전미 가공효율을 높이기 위한 선별기 개량연구를 계속 수행중에 있다.
Antibacterial, antifungal, anticancer, and ACE inhibitory activities of methanol, ethyl acetate, chloroform, and hexane extracts of garlic were investigated. Methanol extract showed highest yield of 7.9-8.8 brix. Ethyl acetate and chloroform extracts showed strong antibacterial activities as determined by inhibition zone (8-16mm) against B. subtilis and P. aeruginosa, and good antifungal activities as determined by inhibition zone (8-30mm) against A. niger, M. miehei, and T. reesei. Wando, Banyans, Chinese, and Seosan garlic methanol extracts showed 65.6, 60.4, 70.1, and 55.3% ACE inhibitory activities, 42.3, 53.8, 50.4, and 54.5% anticancer activities against SNU-1, and 11.3, 20.2, 36.6, and 30.5% anticancer activities against HeLa, respectively.
