This study has been conducted to screen the decolorization of 4 aromatic synthetic dyes and production of ligninolytic enzymes by 4 white rot fungi such as Bjerkanderia adusta, Cerrena unicolor, Pleurotus pulmonarius and Abortiporus biennis. It was found that B. adusta, C. unicolor, and P. pulmonarius have the ability to efficiently decolorize congo red and moderately decolorized amaranth and orange G in solid and liquid culture media. However, the decolorization rate of 4 synthetic dyes by A. biennis was relatively low. The decolorization of congo red, amaranth, orange G were related to the growth rate of the fungal mycelia in the solid medium. But, the all fungi tested did not efficiently decolorize methylene blue in the liquid culture media. To investigate the production of ligninolytic enzymes in media containing aromatic compounds, fungi were cultured in 1% naphthalene supplemented potato dextrose broth medium. All fungi tested had the capability to produce laccase, lignin peroxidase and manganese peroxidase, and B. adusta was the best ligninolytic enzymes producing white rot fungus among other fungi tested.
This study was carried out to develop the best medium of new oyster mushroom for bottle culture. The new oyster mushroom cv. Miso is a Pleurotus ostreatus developed at the Chungnam Agricultural Research & Extension Services. For the bottle culture media, poplar sawdust+beet pulp+cottonseed meal (5:3:2), poplar sawdust+wheat husk meal (8:2), poplar sawdust+beet pulp+cottonseed meal (6:2:2), poplar sawdust+beet pulp+cottonseed meal (4:4:2), and poplar sawdust+beet pulp+wheat husk meal (7:1:2) were used in 850cc PP bottle. The pH was 5~6 and the C/N ratio 19.7~28.3 in bottle culture media. The time of pinhead formation was 5 to 6 days. For the fruiting body formation after inoculation took 29~31 days. The yield of fruiting body of poplar sawdust+beet pulp+wheat husk meal (7:1:2) medium was the highest at 110.4g/bottle compared to other media. Therefore, such cultivation medium would be appropriate for the commercial production of bottle culture in the new oyster mushroom 'Miso'.
This study was conducted to investigate the effect of post-harvest CO2 treatment on the quality of the 'Gonji-7ho' oyster mushroom. The harvested mushrooms were pre-cooled at 3℃ for 1 day and placed in a gas-tight chamber with 0%, 30%, or 50% of CO2 concentration for 3 hours at 3℃. Next, 400 g of the oyster mushroom sample was packaged into 20-㎛ thick oriented polypropylene (OPP) film bags and stored at 4℃ for 21 days. Treatment with 30% of CO2 treatment maintained the highest stipe firmness of the oyster mushrooms during storage. The stipe lightness (CIE L⁎) was the highest at 14 and 21 days, while the stipe yellowness (CIE b⁎) was the lowest at 2 and 7 days of storage. Therefore, we concluded that the 30% CO2 treatment maintained the overall visual quality of the 'Gonji-7ho' oyster mushroom until 17 days of storage at 3℃. Our results suggest that the shelf life of 'Gonji-7ho' oyster mushroom could be extended by the postharvest application of 30% CO2 for 3 hours during low temperature storage.
Hydrolyzed wheat gluten (HWG) and low glutamic acid (Glu) hydrolyzed wheat gluten with different quantities of NaCl were reacted with several precursors to develop natural meat flavor based on Maillard reaction products (MRP). The MRP based flavors were analyzed for their pH, browning index, DPPH radical scavenging effect, and sensory properties. Synthetic meat flavor from low Glu hydrolyzed wheat gluten with 7% NaCl and ribose, cysteine, methionine, thiamin, lecithin, and garlic powder reacted at $140^{\circ}C$ for 30 min and were most favorable for a roasted meat flavor. Based on an omission test, cysteine was selected as the most important precursor for producing meat flavor compared to methionine, thiamine, and lecithin. Natural precursors including mushroom powder and fat medium were applied to compensate for the synthetic precursors. The optimum formula for meat flavor was 5% ribose, 7.7% cysteine, 6.9% garlic juice powder, 2.1% Lentinusedodes powder digested with protease, and 1% lard. The sulfuric pungent, oily, and salty attributes of the formula decreased and a mild roasted meat flavor was expressed.
The traditional kochujang supplemented with mushrooms (Pleurotus ostreatus and Lentinus edodes) was prepared, and changes in quality characteristics during fermentation at ambient temperature were investigated. The moisture content of kochujang increased by addition of mushroom. The titratable acidity of mushroom-added kochujang was gradually increased during fermentation. Ethanol contents of mushroom-added kochujang decreased with the addition of oyster mushroom, but increased with the addition of oak mushroom. The amino-nitrogen contents increased gradually during fermentation, resulting in significantly higher contents of 9% mushroom-added kochujang than others. The a value of kochujang decreased greatly during fermentation, but L, a and b values showed significantly higher than the control. The growth of bacteria in kochujang was delayed by the addition of mushrooms. Bacterial and yeast counts at the end of fermentation were not influenced by the addition of mushrooms. Sensory evaluation test revealed that color and flavour of kochujang were improved by the addition of mushrooms, and higher score was obtained from the addition of oyster mushroom compared to oak mushroom.

The effects of fixed and variable temperatures on fruiting body formation and characters of mushrooms were investigated with normal and thinning treatment plots. In fixed temperature, as temperature was lower, period of harvest was longer as well as days for pinheading in the both of normal and thinning plots. Harvest rate were 91.0, 90.3, and 95.8% at $13^{\circ}C$, $17^{\circ}C$, and $15^{\circ}C$. In the thinning plot, qualities of mushrooms were 7.5, 8.1, and 7.7, and yields were 86.0, 105.9, 104.0g at 13, 15, and $17^{\circ}C$ respectively. In variable temperature with a variable temperature plot, condition II($17^{\circ}C$ for pin-heading(before reverting, 7-8 days)${\rightarrow}16^{\circ}C$ for extending primodia(before thinning, 4-5 days)${\rightarrow}15^{\circ}C$ for extending (after thinning)) was the best for yield which was better than other conditions by 17.4% and 4.0% and quality of mushroom was highest 8.1 among all conditions.
Some of thermophilic fungi which has growth-promoting effect on Pleurotus ostreatus were isolated from compost during high temperature fermentation process. The temperature optima of 7 isolated thermophilic fungi were $50^{\circ}C$ on PDA media. Isolated strains S-1 and S-2 have the best mycelial growing rate, so these isolates were expected as excellent thermophilic fungi for high temperature composting and mycelial growing of oyster mushroom. In liquid culture, the optimal pH of thermophilic fungi observed variously, pH 7.0-10.0 but most of thermophilic fungi grow well in pH 8.0-pH 9.0 and the final pH of media after cultured was done pH 5.5-6.0. In liquid culture of thermophilic fungi on the optimal condition, S-2 have the best mycelial growing rate. The growing rate of thermophilic fungi S-1, S-2, S-5, and S-10 on lignocellulosic substrates was good but Humicola grisea var. thermoidea, well know thermophilic fungi which has growth-promoting effect on Agaricus bisporus, was poor and which was well grown on PDA at $50^{\circ}C$, pH 7.0. Isolated strain S-1 was identified as Trichophyton sp. and other 6 strains were identified as Sepedonium sp. by morphological characteristics.

In order to observe the K contents, Korean common foods, especially processed foods were analyzed by Atomic Absorption Spectrophotometer. The results obtained were summarized as followed; (I) The K contents of instant noodle(ramyon) was 105-180 mg/100g and K ontents of their soup powder was 500-1000 mg/100g. (2) The K contents of potato products and bean products were less than those of original foods. So it was recongnized that the K contents might reduced during the food process. (3) The K contents of meats was 130-475 mg/I00g and those of meats products was relatively low, 80-260 mg/100g. (4) The K contents of carbonate beverage was very low but that of instant coffed was very high, 2400-2600 mg/100g. (5) There was no Statistical difference between the results of wet ash method and dry ash method in the K contents of all food groups.

It was 69 kinds of tzeam in the main materials of fish vegetables and etc. 2. Materials were classified into the main-materials, sub-materials, seasioning and decorations. 3. There were 42 kinds of measuring units, of them 16 kinds were for volume, 16 kinds were for quantity, 2 kinds were for length and the rest measuring units were 8 kinds. 4. There were 22 kinds of cooking terms. The terms of them, 15 kinds were for heating methods, 7 terms of them were for the cutting process.
