Characteristics of Composting of Castor Oil Cake Mixed with Waste from KimChi Factory and Its Influence on Lettuce Growth (김치공장부산물처리에 따른 아주까리유박의 퇴비화특성 및 시비효과)

  • The consumption of KimChi, which Korean are a favorite food, has dramatically increased by changes of life style and waste as by-products in KimChi factory. This study was conducted to evaluate an effect of compost of caster oil cake (COC) mixed with waste from KimChi factory (KWF) and its growth effect of lettuce. Treatments were consisted of 4 treatments as COC compost (60% COC+40% sawdust) as control, control+35% KWF (K-1), control+50% KWF (K-2), and control+65% KWF (K-3). Temperature, pH, O.M. and microbial phase of COC composts blended various ratios of KWF or free were unaffected. It was appeared that nitrogen content of KWF treatments was higher, but the ratio of organic matter and nitrogen was lower than the control. Although KWF treatments were acceptable compost under the guideline of Korean, NaCl content of K-3 was 1.91%, and it was very higher than that of others. In comparison with fresh weight and dry weight of lettuce, K-1 and K-3 were similar to control. These results indicated that the waste from KimChi factory was possible to use the composting raw blended materials below 35% mixtures.

Quality Characteristics of Baechu-Kimchi Salted at High Salt Concentration for a Short Time (고농도 염수에서 단시간 절인 배추김치의 품질 특성)

  • Baechu (Brassica campestris var. pekinensis) was salted in 29.6% brine at $30^{\circ}C$ for 4 hours on mobile automatic salting equipment (MASE) with brine circulation four times, and the quality of MASE salted kimchi was compared with that of general factory salted kimchi (control, 12% brine, $10^{\circ}C$, 16 hr) for 5 weeks. Salinity, acidity and number of lactic acid bacteria of MASE kimchi were higher than those of control at 2.5%, 1.17%, and 8.38 log CFU/g, compared to 1.5%, 1.00%, and 2.68 log CFU/g, respectively, whereas reducing sugar content and texture were not significantly different. Overall quality of sensory evaluation was higher than 4.0 in MASE kimchi compared to lower than 4.0 in the control, and taste was significantly higher (P<0.01). The quality of kimchi salted at high salt concentration and high temperature for a short time was higher than those salted at low salt concentration and low temperature for a long time. Higher productivity in the Baechu salting process can be achieved by shortening salting time with MASE.

Optimal Conditions for Mechanized Salting Process of Salt-Inserting Method for Winter Cabbage to Produce Kimchi (김치용 월동배추 속소금 살포에 의한 적정 기계화 절임조건)

  • This study was carried out to develop a standard methods of mechanized salt-inserting salting process for winter cabbage to produce kimchi. Mid or large scaled mechanized kimchi plants were surveyed to select dominant variables of the mechanized salting process. Salt concentration of salting water, salting time and dewatering time were selected as the dominant variables of the salting process. A series of laboratorial experiment was performed with winter cabbage to determine desirable conditions for the variables. A supplementary experiment with cabbages of the other seasons was executed also to compare the determined conditions each other. Finally the determined conditions of the salting process were tested by plant scale experiments with winter cabbage and proved their validity.

Microbial Inactivation in Kimchi Saline Water Using Microwave Plasma Sterilization System (Microwave Plasma Sterilization System을 이용한 배추 절임수의 미생물 저감화)

  • This study was conducted to decrease the microbial hazard in kimchi saline water with microwave plasma sterilization system and to evaluate the inactivation of foodborne pathogens by the microwave plasma sterilization system as a non-thermal treatment. Contamination of coliform, Escherichia coli, and yeasts and molds were detected in the used saline water, and the microbial populations increased as the saline water was reused repeatedly. The $D_{10}$-values of E. coli O157:H7, Salmonella Typhimurium, and Listeria monocytogenes by the microwave plasma sterilization system were 0.48, 0.52, and 0.45 cycle, respectively. In addition, the microbial populations of coliform, E. coli, Salmonella spp., total aerobic bacteria, and yeasts and molds in the used kimchi saline water were significantly decreased by treating the saline water using the microwave plasma sterilization system. Therefore, these results suggest that microwave plasma sterilization system can be useful in improving the microbial safety of the used saline water.

A Study of Famous Traditional Kimchi in Pusan and Near Pusan Area (부산 및 부산근교의 명가김치 발굴을 위한 연구)

  • Chinese cabbage Kimchi is a traditional fermented food and a numerous variety of Kimchies are produced in Korea. Most of Kimchis are produced on a small scale in the home for individual household use and recipes of Kimchis are deeply embedded in the individual cultures. Currently, however, factory-produced Kimchi is becoming popular by industrialization and changes of life style. This study was conducted to find out recipes of traditional Kimchis which are known delicious in Pusan and its environs and to develop a Kimchi with high quality. The characteristics of Kimchi recipes surveyed in Pusan and its environs are as follow: 1) Large amount of red pepper, garlic and anchovy sauce was used, which made Kimchi hot and spicy. 2) Extracts of dried anchovy or shrimp, or pear and onion juice was used to mix red pepper power. 3) Selection of good quality of Chinese cabbage and red pepper was very important step to determine quality of Kimchi. Furthermore, a numerous variety of submaterials added in Kimchi may also contribute to the high quality of Kimchi. 4) Salt concentration of Kimchi was around 2%, which was lower than it was generally known. Through this survey, it was suggested that maintaining low salt content of Chinese cabbage during salting make Kimchi crispy and juicy.

Presence and Control of Coliform Bacteria in Kimchi (김치 발효중 대장균군의 소장과 억제에 관한 연구)

  • The consistant appearance of coliforms in fermenting kimchi was examined and measures of removing coliforms early in the fermentation were investigated. Allyl isothiocyanate $({\geq}50\;ppm)$, horseradish powder $({\geq}0.4%)$, and garlic juice $({\geq}2.0%)$ were effective in removal of coliforms early in kimchi fermentation. However, mustard powder and methyl methanethiosulfonate were not effective. Nisin, known as a promising agent for the prevention of kimchi over-acidification, allowed coliforms to survive in kimchi longer with only marginal extention of edible period. Individual kimchi ingredients such as Chinese cabbage, garlic, red pepper powder, ginger and green onion were all found to contain coliforms. Coliforms were not detected from garlics sold unpeeled and commercially prepared red pepper powder.

Vitamin $B_{12}$ Contents in Some Korean Fermented Foods and Edible Seaweeds (한국의 장류, 김치 및 식용 해조류를 중심으로 하는 일부 상용 식품의 비타민 $B_{12}$ 함량 분석 연구)

  • There is a limitation to estimate vitamin $B_{12}$ intake due to lack of data on vitamin $B_{12}$ content in many Korean foods. In this study, vitamin $B_{12}$ content was determined in some soybean or vegetable-fermented foods, edible seaweeds and other frequently consumed foods in Korea by microbioassay using Lactobacillus delbruecki ATCC 7830. The traditional type of Doenjang and Chungkookjang contained 1.85 ${\mu}g/100$ g and 0.69 ${\mu}g/100$ g of vitamin $B_{12}$, respectively, while the factory-type of Doenjang and Chungkookjang contained 0.04-0.86 ${\mu}g/100$ g and 0.06-0.15 ${\mu}g/100$ g. Vitamin $B_{12}$ was not detected in steamed soybeans and Tofu which is a not-fermented soybean product, indicating that vitamin $B_{12}$ in Doenjang and Chungkookjang might be produced during the fermentation process. The Korean-style soy sauce contained 0.04 ${\mu}g$ vitamin $B_{12}$/100 mL, but vitamin $B_{12}$ was not detected in Japanese-style soy sauce and white miso. Commercial Kimchi, a representative Korean vegetable- fermented food, made of Korean cabbage, Yeolmu, or Mustard leaves contained 0.013-0.03 ${\mu}g$ vitamin $B_{12}$/100 g, while Kimchi without red pepper and fermented fish sauce (White Kimchi) did not. Vitamin $B_{12}$ content was very high in some edible seaweeds such as laver (66.76 ${\mu}g/100$ g dry weight) and sea lettuce (84.74 ${\mu}g/100$ g dry weight), and it was 17.12 ${\mu}g/100$ g of dried small anchovy, 1.07 ${\mu}g/100$ g of whole egg, and 0.02 ${\mu}g/100$ g of coffee mix. From these results, it is assumed that Koreans take substantial amount of vitamin $B_{12}$ from plant-origin foods. And, with these data, we will be able to calculate dietary vitamin $B_{12}$ content more correctly than before. In conclusion, soybean-fermented foods, Kimchi, laver and sea lettuce are recommendable as good sources of vitamin $B_{12}$ for vegetarians or Korean elderly on grain and vegetable based diet.

  • 현재 국내 외 제조 산업은 기업 시스템의 노후화 등의 많은 문제들이 발생하고 있다. 현재의 자동차 부품공장에서의 불량품에 대한 처리방법은 제품의 생산이 완료된 후 테스트 단계를 거쳐 양품과 불량품을 분류하고 불량품이 발생하면 생산을 중단하고 생산라인의 상태를 점검하는 방식이다. 본 연구에서는 자동차 부품공장의 생산라인에서 불량품 생산을 줄이고 생산라인 가동시간의 지연을 줄이기 위한 불량 예방 모니터링 시스템에 대해 제안한다. 불량 예방 모니터링 시스템은 제품 조립의 각 단계 마다 테스트를 통해 데이터를 수집하고, 수집한 데이터에서 불량이 예상되면 알람 기능을 이용해서 경고를 하도록 설계하였다. 경고 메시지를 통해 불량이 예상되는 곳에 대해 조기에 조치하여 불량품이 나올 확률을 최소한으로 하고 제품의 생산지연 시간을 줄이는 것을 목표로 한다.
