Growth characters and harvest time for the artificial cultivation of Mycoleptodonoides aitchisonii (침버섯 인공재배 생육 특성과 수확 최적 시기)

  • Mycoleptodonoides aitchisonii has been used a culinary material and traditional medicine for a long time in worldwide and recently the researches to find biological effects have been increased such as dopamine activation, preventive effect against phytopathogens, inhibitive effect against erythrocyte coagulation, anti-oxidative effect, anti-tumorigenic effect, etc. However it is hard to cultivate Mycoleptodonoides aitchisonii it is impossible to be mass-produced and in order to solve the problem in this study we found the appropriate cultivation period and the harvest point for it. For life cycle (from primordium formation to harvest) the morphology, weight, and quantity of polysaccharide of Mycoleptodonoides aitchisonii were measured using with 5 bodies per a day and it could be divided for 4 stages; primordium formation, growth, needle maturation, and aging. And then from the results the Zeide nonlinear growth curve could be gotten. At 13th day after cultivation there is the relation between the change of media weight and body weight and at 14th day after cultivation the rate of polysaccharide in the body was 11 %. However in the case of O2 insufficient supply the malformation of them was observed.

Changes of Physicochemical Characteristic and Functional Components of Cereals for Saengsik, Uncooked Food by Drying Methods (건조방법에 따른 생식 원료 곡류의 이화학적 특성 및 기능성 성분의 변화)

  • To develop efficient drying method, one of important process in manufacturing of Saengsik, uncooked food, the change of physicochemical characteristics and functional component contents of cereals dried by various drying methods was investigated. The proximate composition and dietary fiber content of rice, brown rice, glutinous rice and barley showed little changes during hot-air drying (50$\circC$, 55$\circC$, 60$\circC$) and freeze-drying. Yellowness(b) value of hot-air dried products was higher than one of freeze-dried products. The content of niacin was 0.77 mg% in milled rice, 1.84 mg% in brown rice, 0.68 mg% in glutinous rice, 1.00 mg% in barely dried by hot-air at 60$\circC$ and was lower than those of other samples. $\beta$-glucan content in barely was not changed by hot-air drying and freeze-drying method. In conclusion, hot-air drying would be recommended for barley having $\beta$-glucan, a kind of functional components and freeze-drying should be used for raw materials having heat-labile components such as niacin.

Bioactive Component Analysis and Antioxidant Activity in Fresh Sprout of New Kalopanax septemlobus Cultivar (음나무 신품종 새순의 유용물질 함량분석과 항산화활성)

  • This study was carried out to analyze the nutritional composition, bioactive compound and antioxidant activity in fresh sprout of 3 new Kalopanax septemlobus cultivars. Cheong-San, Cheong-Song and Cheong Sun 1 had largest carbohydrate (52.90, 53.12, 55.28%), crude protein (34.23, 31.33, 33.58%) in the proximate composition and had largest K (2.29, 2.22, 2.23%) followed by Ca (0.44, 0.34, 0.37%), Mg (0.24, 0.19, 0.19%) in the mineral contents. Three new cultivars contained a total of 26, 25 and 28 different kinds of amino acids, respectively and the number of essential amino acid is 6, 6 and 7 species, respectively. Also, Cheong-San had higher total polyphenol contents and Cheong-Song had higher total flavonoid contents. DPPH free radical scavenging activity of 70% ethanol, water extracts of Cheong-San and Cheong-Song is higher than others at 100 ppm. In the ABTS radical cation decolorization activity, 70% ethanol extract of Cheong Sun 1, water extract of Cheong-San and Cheong-Song are higher activity than others and all samples have more than 85% ABTS racial cation decolorization activity at 500 ppm. Our results suggest that new K. septemlobus cultivars possess good antioxidant capacities with a high nutritional value and might have potential applications in the food and medical industries.

Variation of Functional Compounds in Leafy Chinese Cabbage Grown Under Different Light Conditions in a Plant Factory (광 조건에 따른 식물공장 재배 쌈 배추의 기능성 성분 변화)

  • A recently developed Chinese cabbage cultivar, Shinhong Ssam, was cultured under different light conditions at a plant factory to evaluate effects of light on the production of functional compounds. The effects of the following combinations of red (R), blue (B), and white (W) LED light were compared to that of fluorescent light: R+B, R+W, and R+B+W. Under R+B light, the Chinese cabbage failed to grow well. In contrast, under R+W, R+B+W, and fluorescent light conditions, cabbages had similar growth rates. Cyanidin, the only anthocyanidin detected, accumulated in cabbages under LED conditions to levels more than 2-fold of that in cabbages grown under fluorescent light. Phenolic acid and flavonol levels varied subtly, whereas caffeic acid was found to be between 70- and 160-fold greater in LED-illuminated cabbages than in those exposed to fluorescent light. The amounts of free amino acids and sugars that affect the taste of vegetables were greater in the cabbages exposed to LED light than in those grown under fluorescent light conditions. In conclusion, R+W LED light produced Shinhong Ssam with greater nutritional value than those grown under R+B+W LED and fluorescent lights.

A Stack of Recessive Alleles of Kunitz Trypsin Inhibitor, Lectin, and Stachyose in Soybean (콩에서 쿠니츠트립인히비터, 렉틴 및 스타키오스에 대한 열성 유전자의 집적)

  • Soybean [Glycine max (L.) Merr.] is one of the major food sources of protein, oil, carbohydrates, isoflavones, and other nutrients for both humans and animals. However, soybean seeds contain antinutritional factors, such as lectin protein, Kunitz Trypsin Inhibitor (KTI) protein, and stachyose. The objective of this research was to stack recessive alleles for development a triple recessive genotype, titilelers2rs2, with low KTI protein, lectin protein, and stachyose contents. Three parents (Gaechuck#2, PI200508, and 14G20) were used to develop the breeding population. The presence or absence of the lectin and KTI proteins was detected by western blotting. The stachyose content in mature seeds was determined by HPLC. Agronomic traits, such as plant type, plant height, maturity date, lodging, seed quality, and 100-seed weight, were evaluated for the four $F_3$ plant strains. One $F_4$ plant strain with the desired agronomical traits was selected. One new strain with the triple recessive titilelers2rs2 genotype was developed. The plant height of the new strain was 51 cm and the 100-seed weight was 31.0 g. The new strain had a yellow seed coat and yellow hilum. The stachyose content of the new strain was 3.8 g/kg. One strain developed in this research will be used to produce improved yellow soybean cultivars that are free of lectin and KTI proteins and low in stachyose content.

감귤과피를 이용한 유색미 제조중 동할미 발생에 관한 연구

  • 최근 식생활의 서구화로 쌀 위주의 식생활에 많은 변화를 가져와 쌀 소비량은 해마다 줄어들고 있는 반면 기능성을 가미한 쌀의 소비가 늘고 있음을 감안하여, 우리나라 제주도에서 생산되고 있는 감귤과피의 물 균질액을 쌀에 코팅하여 아름다운 색상과 기능성을 지닌 유색미를 제조코자 하였다. 본 연구에서는 감귤과피에 존재하는 기능성 성분인 carotenoids 및 bioflavonoids가 물에 불용성이어서 균질화 기법을 통하여 유색미 제조에 편리한 물 추출용액을 제조하였으며 이를 이용하여 유색미를 제조할 경우 동할미 발생에 미치는 여러 가지 조건을 검토하였다. 물균질액 내의 감귤과피 농도(CC: 5-8%)와 쌀에 대한 물질액의 비율(WC: 20-80%)에 따른 동활미 발생정도를 조사한 결과 WC의 농도가 높을수록 동할미 발생율이 낮아졌으나 CC의 농도는 큰 영향을 미치지 않았다. WC와 처리온도(30-6$0^{\circ}C$)의 영향은 크지는 않았으나 온도가 높을수록 혼합회수(5-20분)가 적을수록 발생율이 낮았다. WC의 처리농도가 60-80%으로 높을 때는 dipping 시간(5-20분)이 길어질수록 발생율이 높아졌으나 WC의 농도가 20-40%일 때는 낮아졌다. 물균질액의 온도(30-6$0^{\circ}C$)는 높을수록 낮아졌으며, 건조온도(30-6$0^{\circ}C$)는 높을수록 동할미 발생율이 높았다.

Anti-oxidative Activity and Chemical Composition of Various Heracleum moellendorffii Hance Extracts (추출 조건에 따른 어수리의 항산화 활성 및 성분 분석)

  • Anti-oxidative activities of Heracleum moellendorffii Hance extracts were measured after extraction with 50% (v/v) ethanol or water (at $80^{\circ}C$ or $20^{\circ}C$). The total polyphenol content was highest (64.73 mg GAE/g) in extract from 50% ethanol extraction at $80^{\circ}C$. In extracts obtained by water extraction at $80^{\circ}C$ and $20^{\circ}C$, the total polyphenol contents were 39.78 mg GAE/g and 23.17 mg GAE/g, respectively. The antioxidant activities of the ethanol extract at $80^{\circ}C$ were highest, as assessed by DPPH radical scavenging activity (69.14% at 50 ppm), reducing power (OD 0.93), and $ABTS^+$ radical-scavenging activity (85.62% at 1,000 ppm). At $80^{\circ}C$, the antioxidant activity of the 50% (v/v) ethanol extract was 8-20% higher than that of the water extract. Also, the chemical composition of extract from ethanol extraction at $80^{\circ}C$ was analyzed. The levels of moisture, crude protein, crude fat, and crude ash were 6.38%, 4.35%, 0.67%, and 1.96%, (all w/w), respectively. The Na, K, Mg, Zn, Fe, Ca, and P contents of the extract were 53.41, 398.26, 5.80, 0.40, 5.27, 3.56, and 47.17 mg/100 g, respectively. The total levels of polyphenolic compounds and flavonoids in the ethanol extract were 64.73 mg GAE/g and 49.54 mg RE/g.

Establishment of the Extraction Process by Evaluation of Proanthocyanidin Contents and Antioxidative Activities of Pine (Pinus densiflora) Needle Extracts. (적송잎 추출물의 proanthocyanidin 함량 분석 및 항산화 활성 검증을 통한 추출공정 확립)

  • We evaluated proanthocyanidin contents out of total polyphenolic compounds in two pine needle extracts prepared by combined extraction methods and compared their antioxidative activities. Amounts of total polyphenolic compounds of sub-supercritical hotwater precipitate (SSHP) and sub-supercritical hotwater supermatant (SSHS) were 225.4 and 116.6 mg/g, respectively. Amounts of proanthocyanidin of SSHP and SSHS were 9.9 and 3.6 mg/g, respectively. Thus, the ratio of proanthocyanidin contents over total polyphenolic compounds of SSHP and SSHS were 4.3 and 3.9%, respectively. Antioxidative activities ($IC_{50}$) of SSHP and SSHS measured by DPPH radical scavenging were 41.5 and $50.7\;{\mu}g/ml$, respectively. These results indicates that two combined extracts, SSHP and SSHS showed higher antioxidative activities than extract prepared by hot water or sub-supercritical. In conclusion, extraction procedures for SSHP and SSHS could be useful methods for preparing the effective components of functional food products.

Antioxidant Components and Antioxidant Activities of Mealworm (Tenebrio molitor Larvae) (갈색거저리(Tenebrio molitor) 유충의 산화방지 성분 및 활성)

  • In order to utilize edible insect larvae as a functional material, the antioxidant components and activities of Tenebrio molitor larvae extracts were evaluated. The total phenolic content of the extract by ethanol concentration (95%, 70%, 50%, water) of T. molitor larvae powder was the highest in the 50% ethanol extract at 459.23 ± 1.05 mg%, and the total flavonoid content was the highest in the water extract at 19.86 ± 0.69 mg%. The DPPH radical scavenging activity of T. molitor larvae powder extract was the highest in 70% ethanol extract at 82.60 ± 0.00%, followed by water, 50% ethanol, and 95% ethanol extract. The ABTS radical scavenging activity in 50% ethanol and water extract was highest at 97.57 ± 0.16% and 95.33 ± 0.41%, respectively, with no significant difference. Significantly, the reducing power was the highest in water extracts, followed by 50%, 70%, and 95% ethanol extract. The results confirmed the antioxidant components and antioxidant activities of T. molitor larvae have been identified, indicating that it is worth using as a functional material.

Contents of Chemical Constituents in Organic Korean Cabbages (유기농 배추의 영양 및 기능성 성분 함량)

  • To evaluate the chemical characteristics of organic Korean cabbages, the content of moisture, crude protein, crude lipid, crude ash, dietary fiber, mineral, vitamin C, free sugar, organic acid, chlorophyll and carotenoid were analyzed in organic and nonorganic cabbages. The levels of crude protein, crude lipid, crude ash, soluble dietary fiber, insoluble dietary fiber, minerals(Ca, P, Ee, Mg, S, Zn), ascorbic acid, dehydroascorbic acid, fructose, glucose, sucrose, chlorophyll a, chlorophyll b and carotenoid in organic cabbages were higher than those in nonorganic cabbages. However, the content of moisture, malic acid, citric acid, potassium in organic cabbages were lower than those in nonorganic cabbages.
