Influence on Composting of Waste Mushroom Bed from Agaricus bisporus by using Mixed Organic Materials (혼용자재 특성이 양송이 폐상배지를 이용한 퇴비제조에 미치는 영향)

  • This study was conducted to select organic materials (OM) and nitrogen sources in composting of waste mushroom bed from Agaricus bisporus. We examined physio-chemical properties of the organic materials and the mixture ratio for preparing the wasted mushroom bed (M) compost. The carbon content of sawdust was higher than those of rice straw (R) as OM source and the nitrogen content was high in the order of fowl manure (F)>> pig manure (P)> cow manure (C). The compost was prepared to maintain the criteria of above 25% organic matter and then the change of their ingredients was estimated during the process of fermentation. The temperature of waste mushroom bed+pig manure+rice straw (MRP) treatment was varied fast throughout fermentation, on the other hand the temperature of waste mushroom bed+pig manure+sawdust (MSP) treatment was steadily elevated to the middle of composting. The pH of the compost was somewhat high to pH 8.5~9.0 at the early stage, but decreased to 7.5 at the end stage of composting. The content of OM after fermentation was decreased to the level of 19~21% in rice straw, but the sawdust treatment maintained 25~27% organic matter. The waste mushroom bed+fowl manure+rice straw (MRF) treatment, which contains 26.2% organic matter and 0.68% nitrogen, was the highest among them. The volume of compost was reduced to 50% by using rice straw as organic matter, but reduced to 30% by using the sawdust. The contents of heavy metal in the compost were suitable within the legal criteria. The number of microorganisms were higher in the rice straw than those in the sawdust. It was high in the order of fowl manure> pig manure> cow manure. The major groups consisted of aerobic bacteria, gram negative bacteria and Bacillus sp. and their populations after fermentation were increased to $1{\times}10^1{\sim}1{\times}10^2\;cfu\;g^{-1}$ rather than those before fermentation. Therefore we concluded that the waste mushroom bed+fowl manure+sawdust (MSF 3:9:1 v/v/v) treatment was suitable combination for high organic matter and nitrogen source, and the periods of composting were 50~60 days.

Effect of Natural Tenderizers or Phosphates on Quality Improvement of the Low-grade Seasoned Hanwoo Ribs (천연연화제 및 인산염의 첨가가 저급양념한우갈비의 품질개선에 미치는 효과)

  • In order to improve the quality of low-grade seasoned ribs, kiwi powder, pear powder and phosphates were studied. To seasoned ribs, 0.1%, 0.3% or 0.5% of kiwi powder was added and their MFI(Myofibrillar Fragmentation Index) values were 341.4, 368.3 and 405.1, respectively. As the amount of kiwi increased, MFI value increased(p<0.001). Also, when 0.5%, 1.0% or 3.0% of pear powder was added to seasoned ribs, their MFI values were increased as the addition levels of pear powder increased. As the amount of kiwi and pear powder were increased, WHC(Water Holding Capacity) decreased(p<0.001). On the other hand, as the amount of phosphates added increased, WHC increased. In drip loss, as the amount of kiwi and pear powder increased, it increased. However, drip loss was decreased as the amount of phosphates increased. For meat color, ‘L’ values of pear treatment groups were similar to those of control and ‘a’ values were higher in the treatment groups of 0.1${\sim}$0.3% kiwi powder, 0.5${\sim}$1.0% pear powder and 0.3${\sim}$0.5% phosphate than those of control. In sensory evaluation, treatment group of 0.3% kiwi powder and 0.5% phosphate showed the highest values in juiciness, tenderness and acceptability among the treatments(p<0.01).

Fermentation Characteristics of Bread Added with Pleurotus eryngii Powder (새송이버섯 분말을 첨가한 식빵의 발효특성)

  • Bread was prepared with different concentrations of Pleurotus eryngii powder ($2.5{\sim}10.0%$), and the fermentation characteristics were investigated. While pH of dough increased, fermentation power of dough expansion by fermentation decreased with the increase of Pleurotus eryngii powder added. Although bread weight decreased, there were no significant differences in dough weight, dough yield and baking loss as Pleurotus eryngii powder content increased. In case of volume and specific volume, they were significantly decreased as Pleurotus eryngii powder content increased. Size of bread decreased gradually and aircell uniformity became bigger and random as Pleurotus eryngii powder content increased. As the results of color values, L and b values of crust decreased; however, there was no significant difference in a value. L value of crumb decreased although a and b values increased by adding the Pleurotus eryngii powder content. In the textual characteristics, hardness, gumminess and brittleness of bread significantly increased as Pleurotus eryngii powder content increased. Cohesiveness and springiness of bread decreased as Pleurotus eryngii powder content increased. In case of free amino acid, Glu content was the largest in most samples and most amino acid contents increased by adding the Pleurotus eryngii powder content except for Asp. In descriptive test, scores of color, flavor, hardness and palatability increased, however aircell uniformity, springiness and moistness decreased as Pleurotus eryngii powder content increased. As the results of preference test, color was the best preferred in control${\sim}5.0%$ groups without significant difference. The preference of flavor and texture was in the order of 2.5% group> 5.0% group> 7.5% group> control> 10.0% group as 2.5% group was the most preferred.

Quality Characteristics of Pan Bread Added with Citrus Mandarin Peel Powder (감귤과피 분말을 첨가한 식빵의 품질 특성)

  • This study was conducted to examine the characteristics of bread quality as per addition rate of citrus mandarin peel powder since interests and concerns about healthy functional food have been increased in contemporary society. The result of mixogram from Mixograph showed that dough added with 3% citrus mandarin peel powder was suitable for baking quality. Stickiness of dough was decreased with addition of citrus mandarin peel powder. Compared with the controlled group, fermentation rate was decreased as the level of citrus mandarin peel powder increased while pH levels of dough and bread were significantly decreased. The TPA analysis showed that the hardness and adhesiveness levels increased as the level of citrus mandarin peel powder increased whereas springiness, cohesiveness and chewiness became decreased. Crumb fineness and elongation became higher as seen from the result of crumbScan. Volume and specific volume was decreased. The result of preference test presented that crumb color, texture, flavor and taste were the highest in the M3, which showed highest point in overall preference. In conclusion, M3 was the best in preference, taste and texture, thus determined as the optimal rate in association with the addition of citrus mandarin peel powder.

Characteristics of Sponge Cake Prepared with Yacon Concentrates as Sugar Substitute (설탕 대체제로 야콘 시럽을 이용하여 제조한 스펀지케이크의 특성)

  • Yacon syrup, which contains fructooligosaccharides (FOS), was used as a substitute for sugar to make functional healthy sponge cake. Regarding characteristics of sponge cake with various yacon syrup concentrations, height and volume decreased while moisture content increased with increasing yacon syrup concentration. Sponge cake with increasing yacon syrup content showed a greater green-yellowish color. Springiness, cohesiveness, hardness, and brittleness decreased with increasing yacon syrup concentration. Hardness values of cakes made with 100% sugar (YS 0) and yacon syrup substitute for 10% sugar (YS 10) were not significantly different. Overall acceptance of sponge cake decreased with increasing yacon syrup content, whereas those of YS 0 and YS 10 were not significantly different. For storage period, moisture content of sponge cake with increasing yacon syrup concentration decreased during storage, whereas the decreasing moisture content was less than that of YS 0. The color of sponge cake with various yacon syrup concentrations did not change significantly during storage. Springiness and cohesiveness decreased during storage. Hardness increased with storage period, whereas that of sponge cake made with yacon syrup was lower than that of YS 0. In conclusion, sponge cake made with YS 10 is the best to make sponge cake with high consumer acceptance, reduced sugar content, and FOS.

Drop Impact Analysis of Outside Cooling Unit Package of System Air-Conditioner and Experimental Verification (시스템 에어컨 실외기 포장품의 낙하충격해석 및 시험적 검증)

  • This research examines the drop impact of an external cooling unit package of an air conditioner system. The packaging is composed of a shock-absorbing material, which protects the package contents by absorbing the impact energy and other parts for fixture. Accurate quantification of the impact acceleration experienced by the package contents is necessary to design an effective packaging with minimal volume and sufficient shock absorbing capacity. Explicit time integration was used for the drop impact analyses. A finite element model of the package was constructed, material testing and material model selection were carried out, and sensors for data acquisition were modeled to obtain accurate simulation results. The results were compared with real physical test data. Due to imprecise modeling of the damping, the acceleration and strain values predicted by the simulation were larger than those from physical test. However, the trend of the history data and the peak deceleration value in the direction of impact showed good agreements. Thus, the analysis model and scheme are suitable for the design of an air conditioner cooling unit package.

Differences in Habitat Structure and Herpetofauna Populations Caused by Thinning (간벌에 의한 서식지 구조와 양서·파충류 개체군의 특성 차이)

  • This study was conducted to clarify the differences in habitat structure and amphibian and reptile (herpetofauna) populations between before and after thinning in the coniferous and deciduous forests from June to September 2014 and 2015 at the Mt. Maewha of Hongcheon, Gangwon province, Korea. Forest structure was dramatically changed after thinning. Coverage of understory and mid-story were decreased while volume and number of downed trees were increased after thinning. We used line transect sampling method on a total of 4 transect lines, 2 lines in each forest type. 119 individuals of 5 amphibian species and 5 individuals of 3 reptile species were recorded. Mean number of amphibian species were decreased after thiining in the coniferous forest. There was no observed reptiles after thinning in the coniferous and deciduous forests. Detailed monitoring with different area, frequency and intensity might be needed to clarify more precise differences characterisitics of herpetofauna by thinning.

Prediction Modeling on Effective Thermal Conductivity of Porous Insulation in Thermal Protection System (열방어구조의 다공성 단열재 유효 열전도율 예측 모델링)

  • Porous insulation have been frequently used in a number of industries by minimizing thermal insulation space because of excellent performance of their thermal insulation. This paper devices an effective thermal conductivity prediction model. First of all, we perform literature survey on traditional effective thermal conductivity prediction models and compare each other model with heat transfer experimental results. Furthermore this research defines advanced effective thermal conductivity prediction models model based on heat transfer experimental results, the Zehner-Schlunder model. Finally we verify that the newly defined effective thermal conductivity prediction model has better performance prediction than other models. Finally, this research performs a transient heat transfer analysis of thermal protection system with a porous insulation using the finite element method and confirms validity of the effective thermal conductivity prediction model.

Shelf Life Extension of Steamed Bread by the Addition of Fermented Pine Needle Extract Syrup as an Ingredient (솔잎 발효액의 첨가에 의한 찐빵의 저장성 향상)

  • In order to improve the storage stability of steamed bread, fermented pine needle extract syrup potentially with several functional properties was added in manufacturing the products at levels of 8.3, 11 and 18% based on Brix degree of the dough. The manufactured bread was stored at ambient conditions and measured for quality attributes. Dough added with the fermented pine needle extract syrup maintained its pH and water activity at levels of $5.45{\sim}5.90\;and\;0.94{\sim}0.96$, which are normally suitable for yeast fermentation and for appropriate dough hardness. Addition of the extract syrup increased the bread volume by more than 20%. The bread with higher content of the pine needle extract syrup showed slower increase of bread hardness during storage, suggesting retardation of bread retrogradation. The addition of the pine needle extract syrup in bread dough also inhibited growth of the aerobic bacteria and molds on the bread surface (by $0.8{\sim}24$ in log (CFU/g) at 4 day storage). Use of higher than 11% concentration presented initially a strong fine needle flavor to the bread, which disappeared soon after 2 days. Generally addition of the pine needle extract syrup did not give negative effects on the bread quality including sensory quality. Therefore, the addition of the needle extract syrup could contribute to improving the storage stability and extending the shelf life of the bread.

Effects of Egg White Manufacturing Conditions on the Physicochemical and Sensory Properties of Angel Food Cakes (난백분말 제조 조건에 따른 엔젤 푸드 케이크의 특성 변화)

  • The principal objective of this study was to determine the optimum manufacturing conditions of egg white with high foaming property for the production of angel food cakes. The egg whites were desugarized and powdered at predetermined pHs and drying temperatures. The physicochemical properties of the produced cakes were measured and sensory evaluations were conducted on a 9-point scale. The volume and textural properties of cakes produced from spray-dried egg whites did not differ from those of the cakes prepared from the control egg whites. The pH of batter and the specific gravity of foam and batter with egg white powder at pH 6.74/66.5$^{\circ}C$ did not differ from those of the control, whereas the one prepared with commercial powder lost the characteristics of cake to a significant degree. The overall acceptance scores of egg white powder of pH 6.74/66.5$^{\circ}C$ and commercial powder were 6.25 and 2.33 as compared to the control (6.42). These results indicate that the egg white powder that was desugarized, pH-adjusted to 6.74, and dried at 66.5$^{\circ}C$ might be utilized to prepare angel food cakes with the desirable physicochemical and sensory attributes.
