Bioactive Compound Accumulation and Antioxidant Activity in Tomato Fruit Skin at Different Ripening Stages (과피색에 따른 토마토 과실의 성숙 단계별 기능성물질 축적과 항산화 활성)

  • This study was conducted to determine the differences in bioactive compounds and antioxidant activity according to the ripening stage of tomato fruits with different skin colors. The tomato samples used three tomato cultivars distinguished by their skin colors as yellow, black, and red at the mature stage. Tomato samples were analyzed for soluble sugars, lycopene, ascorbic acid, polyphenols, and antioxidant activity after being harvested at green, breaker, turning, and mature. The major sugars in tomato fruits are fructose and glucose. The content of fructose and glucose in yellow tomatoes gradually increased during the ripening stages. However, red and black tomatoes, their levels exhibited an initial increase at the breaker points, followed by a period of relative constancy. The lycopene contents in fruits of all skin colors showed a significant increase during ripening stages. The highest content of lycopene was observed at the mature stage in red tomato fruits. Differential patterns in the accumulation of ascorbic acid between yellow and black or red tomato fruits were detected during the entire ripening stages. In yellow tomato fruit, the content of ascorbic acid remained consistently low throughout the ripening stages. Ascorbic acid content in black tomato fruits significantly increased to 2,249 mg·kg-1 of tomato fruits at the mature stage, while in red tomato fruits, it gradually increased to 3,529 mg·kg-1 of fruits at the mature stage. Quercitrin content in tomato fruits gradually decreased during the ripening stages. In yellow tomato fruits, the ABTS radical scavenging activity abruptly increased at the turning stages, while in black and red tomato fruits, it gradually increased according to the ripening stages. The DPPH radical scavenging activity in tomato fruits significantly increased at the turning stages.

제한적 열풍처리에 따른 조생 감귤의 저장중 품질특성 변화

  • 감귤의 수확후 저장, 유통과정에서 부패 억제 및 약제 후숙처리 대체 효과를 얻기 위하여 환경친화적 방법으로서 제한적 열처리 기술의 적용 가능성을 확인하고자, 제주 서귀포산 조생종 온주 감귤의 열풍(hot air)처리에 따른 저장중 품질특성 변화를 살펴보았다. 상처가 없는 일정한 크기(약 120 g 내외)의 건전 과실을 선별한 후, 45$^{\circ}C$에서 2, 4, 6시간 동안 열풍을 가한 다음 5$^{\circ}C$에서 2시간 냉각하였다. 충분히 냉각시킨 과실을 통기성 천공 LDPE 필름에 포장하여 5$^{\circ}C$에서 3주, 18$^{\circ}C$에서 1 주간 저장하면서 생리적, 이화학적, 관능적 특성변화를 측정하였다. 열풍처리 직후 초기 호흡률은 처리구 모두 무처리구와 비교하여 높았으나 처리시간과는 유의적 상관성이 없었고, 저장중 처리구 감귤의 호흡률은 감소하여 21일째는 무처리구와 유사한 수준을 나타내었다. 과실내 기체조성은 처리구간에 차이를 보이지 않았으나 저장 21일부터는 저장온도 상승에 따라 $O_2$는 다소 감소하고 $CO_2$는 증가하는 양상을 보였다. 또한 과즙의 pH, 산도, 당 함량은 열처리에 의해 거의 영향을 받지 않았으며, 과실의 생체 중량감소율과 경도에서도 처리구간의 유의적인 차이를 구분할 수 없었다. 과피 표면색은 저장중 초기에 비해 다소 붉은 색으로 변하였으나, 6시간 처리구에서는 비교적 자은 노란색을 유지하였다. 한편 부패과 발생률에 있어서는 4시간 처리구가 축부병 등에 의한 짓무름 현상과 곰팡이 발생정도, 검은 썩음병에 따른 흑변 정도에서 저장중 가장 낮은 수준을 나타내었다. 그러나 관능적 평가에서는 열풍처리구와 무처리구 사이에서의 유의적인 차이를 발견할 수 없었다. 결과적으로 45$^{\circ}C$, 4시간이상의 제한적 열풍처리는 조생종 온주 감귤의 저장중 부패과 발생률을 현저히 감소시킴으로서 수확후 품질유지에 효과적인 열처리 조건임을 확인할 수 있었다.

  • 과실류 식품에 포함된 엽산치를 Lactobacillus casei 미생물을 사용하여 분석하였다. 측정시 결합형으로 존재하는 엽산을 유리형으로 하기 위해서 conjugase효소를 사용했고, 산화되기 쉬운 형해로 된 엽산을 보호하기 위하여 비타민 C를 첨가하였다. 과실류는 일반적으로 엽산을 소량 함유한 식품으로 나타났다. 각 과실에 포함된 엽산 분석치는 사과 7.5, 살구 8.6, 바나나 20.2, 앵두 3.0, 포도 11.2, 귤 26.6, 복숭아 3.5, 배 10.5, 자두(붉은색) 3.7, 자두(노란색) 2.0, 딸기 19.7, 수학 3.8, 감 7.5, 참외 3.7, 토마도 $9.1{\mu}g$으로 각기 식품 100g 중에 함유 되었음을 보였다.

Effects of Organic Mulches on the Quality of "Niitaka" Pear Trees and Fruit (유기질 멀칭이 배 '신고' 나무의 과실 품질에 미치는 영향)

  • We investigated the effects of organic mulches on the tree and fruit qualities of "Niitaka" (Pyrus pyriforia) pear trees. Trees grown with rice straw mulch had significantly greater potassium (K), magnesium (Mg), and calcium (Ca) concentrations in leaves compared with control trees and those mulched using bark or polyethylene, but the concentrations were below the recommended levels for these nutrients in pear leaves. Bark mulch increased fruit firmness and soluble solid (SS) levels, compared with rice straw mulch. The fruit of trees grown with bark mulch had a higher ratio of SS to total acidity in fresh fruit, and the fruit was dark red in color. The K and Ca concentrations were highest in fruit grown on trees mulched with rice straw and bark, respectively, and competition between the levels of these cations was evident in fresh fruit. Bark and rice straw mulches increased overall fruit quality, and reduced fruit stone size, whereas a polyethylene mulch, devoid of organic material, resulted in a fruit stone size similar to that of the control.

Changes of Fruit Quality in Response to Storage on Sweet Pepper (Capsicum annuum L.) Cultivars in Summer (여름 착색단고추의 저장에 따른 품종별 품질 변화)

  • The summer production of sweet pepper in Korea which cultured in the highland area such as Hapchon is essential for a year-round export, but has the problem, fruits lose easily those marketability. This study was carried out to find changes of fruit quality in response to storage on sweet pepper cultivars in summer. Seven cultivars of sweet peppers, 'Jubilee', 'Plenty', 'Goal', 'Romeca', 'Derby', 'Midas' and 'Maximalia' were obtained iron growers in Hapchon which was highland of 600-800m from sea level and stored at $10^{\circ}C$ with box packing. Fruit quality was evaluated every 4days up to 4weeks. The weight loss of 'Jubilee' was the lowest, that of 'Romeca' was the highest. The firmness of 'Goal' was maintained highly for 4weeks and the red cultivars was higher than those of other color cultivars. The lightness of 'Jubilee' was sensitively affected by storage duration. Seeds of 'Plenty' and 'Derby' were plentifully browned after 4weeks storage. The occurrence of fruit rotting was after 16-204ay storage and those of 'Plenty' and 'Maximalia' were the earliest. The marketability of 'Jubilee' and 'Romeca' maintained by 70% for 16 days was the highest, but most cultivars lost those by 20% after 24days storage. It may be suggested that the marketability of sweet pepper producted in summer can be stored at $10^{\circ}C$ for 2weeks to maintain that of 80%.

  • This study was aimed to test harvest time effect with polyethylene (PE) film liner, 1-methylcyclopropene (1-MCP) and aminoethoxyvinylglycine (AVG) treatments on fruit quality attributes in 'Sangjudungsi' persimmon fruit during cold storage. The fruits were harvested 10 days earlier in 2016 than the mature harvest time in 2015. The ethylene production was significantly lower in early harvested fruits than in mature harvested ones. Flesh firmness was maintained higher in 1-MCP treated fruit than in other treatments during cold storage. The rate of fruit weight loss was significantly inhibited by PE film liner treatment during storage, regardless of harvest time. 1-MCP treatment showed less change in fruit peel color variables ($L^*$ and $b^*$) from the calyx-end and equatorial regions during cold storage, compared with those from the control and PE film treatments. The incidence rate of fruit decay and softening was higher in PE film treated fruits than in the other treatments. However, there was no decay detected in AVG treated fruit. The early harvested fruits were maintained higher flesh firmness, compared with mature harvested fruits. Nevertheless, the mature harvested fruits showed much higher soluble solids content, the redness (Hunter a value) of the fruit peel and respiration rate, compared with early harvested fruits. Furthermore, the rate of weight loss in the fruit was remarkably inhibited in the PE film treatment.

Effect of Storage Temperature on Fruit Quality Attributes and Storage Disorders in Cold-stored 'Sangjudungsi' Persimmon Fruit (저온저장 온도가 '상주둥시' 감의 과실품질 및 저장장해 발생에 미치는 영향)

  • The objective of this study was to evaluate the effect of storage temperature on fruit quality attributes and physiological disorders including peel blackening in 'Sangjudungsi' persimmon (Diospyros kaki Thunb.) fruit stored in air at -1, 0.5 or $3^{\circ}C$ for up to 3 months. Higher storage temperature reduced ethylene production but not respiration rate, compared with lower storage temperature. Flesh firmness decreased continuously as storage time passed but firmness was reduced rapidly in the fruits stored at higher storage temperature. Fresh weight loss increased at higher storage temperatures. Soluble solids content was higher at lower storage temperature than at higher storage temperature. All color variables ($L^*$, $a^*$, $b^*$) were reduced by lower storage temperature, compared with higher storage temperature, regardless of tissue regions. Fruit softening increased as storage duration advanced and with the increase in storage temperature. Results indicated that the 'Sangjudungsi' persimmon fruits stored at higher storage temperature ($3^{\circ}C$) could not retain fruit quality properly on account of lower flesh firmness and higher incidence of peel blackening and fruit decay, compared with lower storage temperature.

Characterization of Monilinia fructicola Associated with Brown Rot of Cherry Fruit in Korea (체리 잿빛무늬병에 관여하는 Monilinia fructicola의 특성)

  • In August 2013, brown rot was observed on cherry fruits (Prunus avium L.) in Hwaseong city, Korea. Fruit rot first appears as small, circular brown spots that increase rapidly in size causing the entire fruit to rot. Grayish spores appear in tufts on rotted areas. Based on these morphological characteristics, the two isolates were identified as Monilinia fructicola. Molecular analysis of 5.8S subunit and flanking internal transcribed spacers (ITS1 and ITS2) was performed to confirm the identification. The ITS sequences had 100% identity with those of other reference M. fructicola isolates of NCBI GenBank. Pathogenicity was tested using spore suspension inoculation on wounded or unwounded cherry fruits. The lesions were observed on wounded and unwounded fruits after inoculation for 7 days. This is the first report on M. fructicola causing brown rot on cherry fruits in Korea.

Characterization of Blooming on Cucumber Fruits (오이 과실 표면의 과분 발생 특성)

  • A white powder-like substance, so called 'bloom', is formed on the surface of fruits of many varieties of cucumber. Although it is a natural phenomenon, bloomed fruits are accepted lower in quality compared to bloomless fruits by consumers. The experiments were conducted to obtain basic informations for breeding rootstocks, and to develop promising bloomless rootstocks from basic source materials collected and selected by seed company. The surfaces of bloomless fruits were appeared on the bladder cell of glandular trichome and the epicuticular waxes. Those of bloom fruits appeared with an injured bladder cell and many particles, which were not seen on those of bloomless fruits. The chromaticity was investigated on the surface of the bloom and the bloomless fruits. The 'a' and 'b' value of the bloom and the bloomless fruits did not show any significant difference. The 'L' value was significantly different and that of bloom fruits was higher than that of bloomless fruits. Fruit Si content was conspicuously lower in the fruits of cucumber plants grafted on the bloomless rootstock than in the fruits of those grafted on general bloom rootstocks.

Effect of Soil Sulfur treatment on Apple Valsa Canker (유황토분 처리가 사과 부란병에 미치는 영향)

  • This study was carried out to examine the effects of soil sulfur mixture on the control apple valsa canker in apple orchard for two years. In organic apple orchard, The recovery percentages of apple valsa canker were compared among control (no treatment), lime sulfur, and soil sulfur in organic orchards. In conventional apple orchards, those of recovery percentages were compared among control, neoasozin, lime sulfur, and soil sulfur. Compared with control, soil sulfur treatments significantly improved the recovery percentages of apple valsa canker infected trees in organic orchard. However, there were no differences between lime sulfur and soil sulfur treatment in organic apple orchard, except BongHyun orchard experiment in 2013. Compared with control fruit qualities, fruit skin red color and fruit firmness were improved in lime sulfur and soil sulfur treatment, respectively. In conventional orchard, apple trees treated with lime sulfur, soil sulfur or neoasozin improved recovery percentages, compared with those of control trees. Soil sulfur treatments recovered 87.5~97.5% of infected 'Fuji'/MM106 apple trees in organic and conventional apple orchards. The trees applied with neoasozin showed significant lower shoot growth than those of soil sulfur treatment in conventional orchard. Soli sulfur treatment improved fruit red color, but did not affected fruit weight, fruit firmness, soluble solids concentrations, and titratable acidity.
