Effects of Dietary Supplementation of Mulberry Leaves Powder on Chicken Meat Quality Stored during Cold Storage (뽕잎 분말의 첨가 급여가 계육의 냉장저장 중 품질에 미치는 영향)

  • This study was investigated the effects of supplementation diets with mulberry leaves powder on pH, TBARS (thiobarbituric acid reactive substance) and VBN (volatile basic nitrogen) heating loss, WHC (water holding capacity), and drip loss of chicken meat. One hundred sixty broiler were fed diets for five weeks containing 0% mulberry leaves powder (Control), 1% mulberry leaves powder (T1), 2% mulberry leaves powder (T2), and 3% mulberry leaves powder (T3). At the end of this experiment, broiler were slaughtered, and stored at $4^{\circ}C$ for 10 d. As storage time increased, all treatment groups resulted in increased pH, TBARS, VBN and drip loss (p<0.05). The TBARS and VBN were significantly decreased by the supplementation of mulberry leaves powder compared to the control (p<0.05). T3 results in much better TBARS and VBN than other treatment groups. Especially, T3 was significantly (p<0.05) more effective in improving self life compared to other treatment groups. Heating loss and drip loss were no significantly different among treatment group. In conclusion, these data indicate that supplementation of 3% mulberry leaves powder were most effective in decreasing TBARS and VBN.

Effects of Stock Density and Nutrient Levels on Growth Performance, Serum Profile, Immune Status and Meat Quality in Korean Native Chickens (토종 실용계의 사육밀도 및 사료 내 에너지 수준에 따른 생산성, 혈액, 면역 및 계육 품질에 미치는 영향)

  • The study determined the effects of stock density (SD) and energy level (EL) on growth performance, serum biochemistry, and meat quality in Korean native chickens. A total of 240 chickens were randomly assigned to one of the four treatments including two stock density (low, 14, and high, 16 chickens per m2) and two energy level (low, 2,950, 3,000, 3050 ME kcal/kg, and high 3,150, 3,200, 3,250 ME kcal/kg, for starter, grower, and finisher, respectively). During the whole period of the experiment, the chickens were fed ad libitum. The greater final body weight and weight gain were achieved in chickens fed high energy diet, whereas the final body weight and weight gain were significantly reduced in high-density treatment compared with the low density. Chickens in low-density groups had a higher feed intake compared with high-density treatment, however, the energy level did not affect the feed intake. An improved overall feed conversion ratio was detected in the high energy treatment. There was a significant interaction between stock density and energy level on cholesterol concentration. The concentration of aspartate transaminase in serum was increased by higher stock density. There was a significant treatment interaction on IgM levels. Moreover, the carcass rate was significantly increased in the high energy level treatment. Based on the findings, we suggest that rearing chickens in low density with high dietary energy levels could be beneficial by improving the growth performance.

Effect of Halal and Conventional Slaughtering Method with CO2 and N2 Gas Stunning on Physicochemical Traits of Chicken Breast Muscle and Small Intestine (도계 중 할랄방법에 CO2와 N2 가스기절처리가 닭 가슴살과 내장의 물리화학적 특성에 미치는 영향)

  • We investigated the effects of stunning methods and gas treatments during slaughter on the quality characteristics of chicken breast and small intestine. Broilers (Ross 308) were stunned and slaughtered using halal, CO2, or N2 gas stunning methods (for 10 birds). After slaughter, the pH, proximate composition, color, water-holding capacity, cooking loss, and shear force of chicken breast muscle and small intestine were determined. Compared with the halal treatment, CO2 treatment resulted in higher pH and lower cooking loss (P<0.05), and the pH, color, and shear force of chicken breast muscle with N2 treatment were similar to those of the halal treatment (P>0.05). Compared with the halal treatment, the gas treatments resulted in lower pH and lightness and higher redness, yellowness, thickness, and shear force of the small intestine (P<0.05). However, compared with the CO2 treatment, the N2 treatment resulted in lower pH, redness, and yellowness, and higher lightness, thickness, and shear force. Overall, compared with the halal method, our results suggest that the use of N2 gas suppresses the discoloration and deterioration of the texture of chicken meat and small intestine caused by CO2 gas treatment in the gas stunning method.

Effect of Adding Lactobacillus-Fermented Solution on Characteristics of Chicken Breast Meat (식물성 유산균 발효액 첨가에 따른 닭 가슴육의 특성에 미치는 효과)

  • The effect of Lactobacillus-fermented solution (LFS) at a concentration of 0, 1 and 2% on shelf-life extension in terms of total aerobic bacteria and on color, lipid oxidation, and sensorial characteristics of injected chicken breast meat was tested during a 9-day storage period at $4^{\circ}C$. Throughout the whole storage days, addition of LFS showed the significant inhibition of total aerobic bacteria counts in chicken breast meat compared with that of control. However, the addition of LFS to chicken breast meat resulted in the decrease of pH, the increase of $L^*$ and $b^*$ values, and the increase of lipid oxidation in chicken breast meat when compared with those of control at any given storage period (P<0.05). In addition, the chicken breast meat added with LFS was subjected to low scores in sensorial properties such as flavor, taste, tenderness, and overall acceptability. The results suggested that LFS can be used for improving the shelf-life of chicken meat processing product, however, further study to prevent the deterioration of quality such as lipid oxidation and sensorial property is needed.

Quality Characteristics of Yaksun Chicken Sauce with Milk Vetch Roots and Angelica Roots (황기와 당귀를 첨가한 약선 계육 양념의 품질 특성)

  • The purpose of this study was to make Korean yaksun chicken sauce with milk vetch roots and angelica roots. Four different amounts of angelica roots were added to chicken sauces, and general characteristics were measured. The pH values of sauces increased with decreasing Angelica root content. On the other hand, sugar contents, solid contents, and lightness of sauces decreased with decreasing Angelica root content. In a palatability test, sauces with 1 g and 2 g of angelica roots scored high in color, taste, flavor, and overall acceptability. Microbial cell counts of sauces were not significantly different according to the amount of angelica roots. Further, hydroxyl radical scavenging activities and polyphenol contents of sauces were not significantly different except for those of sauces with 1 g of angelica roots. Lastly, flavonoid contents of sauces significantly decreased with decreasing amount of angelica roots.

Quality Changes of Cold Cuts Prepared from Pork and Chicken during Storage (계육과 돈육으로 제조한 Gold Cut의 저장에 따른 품질변화)

  • Cold cuts were prepared from the pork and chicken with polyphosphate salt and spices. Microorganism was more proliferated and acid value was more decreased In pork cold cut rather than chicken cold cut. Otherwise TBA value of chicken cold cut was more increased than that of pork cold cut. Textures of springeness and cohesiveness were not significantly different in both cold cuts. From sensory evaluation, color, appearance and odor were significantly different, but texture, flavor and total acceptability were not significantly different. From these results, if we could study some antioxidants furthermore. we think it possible to manufacture cold cut from chicken.

Effect of Combined Supplementation Catechin and Vitamin C on Growth Performance, Meat Quality, Blood Composition and Stress Responses of Broilers under High Temperature (고온 환경에서 카테킨 및 비타민 C 첨가가 육계의 생산성, 계육품질, 혈액성분 및 스트레스 지표에 미치는 영향)

  • The study was carried out to investigate the effects of dietary combined supplementation of antioxidants as catechin and vitamin C on growth performance, meat quality, blood profiles and stress responses of broilers exposed to high temperature. For this experiment, a total of 360 21-day-old male Ross 308 broilers were used. Treatments were assigned with 6 replicates per treatment and 10 birds per replicate in a 2 × 3 factorial design with vitamin C (0, 250 mg/kg) and catechin (0, 600, 1,200 mg/kg). The heat stress environment was maintained at temperature 32±1℃ and relative humidity 60±5% for 24 hours until the end of the experiment. The supplemented antioxidants had no significant difference in weight gain, feed intake and feed conversion ratio (P>0.05). The content of total cholesterol in blood had no interaction, but decrease (P<0.01) in the supplemented catechin group. Also, the supplementation with catechin showed increase in the SOD activity of blood, and lower corticosterone and IgM levels of broilers. The contents of HSP70 and MDA in liver decrease (P<0.05) with the supplementation of antioxidants, and HSP70 showed an interaction between groups. DPPH radical scavenging ability in breast meat increased (P<0.01) in catechin, but meat quality did not show difference according to treatments. Respiratory rate decreased (P<0.05) in catechin, but no interaction with vitamin C. In conclusion, the combination of vitamin C and catechin can alleviate stress under high temperature, such as HSP70 and MDA, but further study on the optimal supplemental level is needed.

Effects of Dietary Supplementation of Red Ginseng Mare and Korean Mistletoe Powder on Performance and Meat Quality of Broiler Chicken (사료 내 홍삼박과 겨우살이 분말 첨가 급여가 육계의 생산성 및 계육의 품질에 미치는 영향)

  • The objective of this study was to evaluate the effects of different levels of red ginseng mare or Korean mistletoe powder on growth performance and physicochemical properties of thigh meat in broiler. A total of 200 broiler chicks were divided into five groups were fed a basal diet (control), basal diet supplemented with 0.5% red ginseng mare (T1), red ginseng mare 1% added (T2), Korean mistletoe 0.5% added (T3), Korean mistletoe 0.5% added (T4) for five weeks. Growth performance and proximate composition of chicken thigh meat were not influenced by all treatments, except for mortality and crude fat, which was significantly lower in all treatments with red ginseng mare or Korean mistletoe powder compared to control. Dietary red ginseng mare and Korean mistletoe supplementation had no significantly effects on pH, WHC, shear force, CIE $L^*$, $b^*$ values, triglyceride and glucose but TBARS values total cholesterol, and LDL-cholesterol were decreased (P<0.05) by the addition red ginseng mare and Korean mistletoe powder. CIE $a^*$ values increased significantly with added red ginseng mare and Korean mistletoe powder relative to the control (P<0.05). It was concluded that the addition of red ginseng mare and Korean mistletoe powder revealed minor improvements in the lipid oxidative stability of chicken meat.

EFfect of Feed Withdrawal Time on Salmonella Contamination in the Crop, Intestinal Weight, and Blood Parameters of Broilers before Harvesting (절식 시간에 따른 육계의 소낭 내 Salmonella 오염도, 소화관 길이, 혈액 성분, 계육 품질에 미치는 영향)

  • In this study, we aimed to evaluate the impact of different feed withdrawal periods (2, 3, 4, 5, and 6 h) on Salmonella contamination in the crop, intestinal weight, and blood parameters of broilers before harvesting. A total of 100 broilers (initial live weight 1.906±0.06 kg) were randomly assigned to the same five treatment groups and broilers had access to water but no feed before catching. Feed withdrawal times were 2, 3, 4, 5, and 6 h prior to slaughter. Measurements included live weight, pre-slaughter weight, carcass weight, weight of gastrointestinal tract. In addition, Salmonella and Campylobacter contamination in the crop, serum biochemical profiles, counts of leukocytes, erythrocytes, and platelets, and meat quality were assessed. The results demonstrate that carcass weight, blood corticosterone, meat pH, meat color, and water holding capacity did not differ based on the feed withdrawal time. Carcass yield increased as the withdrawal time increased, but the weights of the crop, proventriculus, jejunum, ileum, and rectum were significantly reduced by 6 h (P<0.05). Salmonella counts were the lowest in the crops subjected to 6 h of feed withdrawal (P<0.05). Shear force was highest in chicken breast meat after 6 h of feed withdrawal (P<0.05). However, when the feed was withdrawn after 6 h, the shear force increased, but it did not affect the sensory characteristics in consumers, and the Salmonella count also decreased and had a reduction effect on contamination during slaughter. These findings can serve as reference data for setting the feed withdrawal time.
