우수 양계농장을 가다-계림농장-산란계

  • 2007년 양돈에서 먼저 시작한 HACCP(Hazard Analysis Critical Control Point, 위해 요소중점관리기준) 인증이 한우, 젖소로 확대되면서 금년 7월에는 양계농장에서 첫 인증을 받았다. 현재 HACCP는 포장육이 42.6%로 가장 많은 인증을 받았고, 가축사육.종축업 중 돼지 138건, 젖소 26건, 한우 20건, 닭에서 산란계 4건, 육계(육용종계 포함) 5건으로 총 9건을 이미 인증(2008.10. 15일 기준) 받았다. 이번 호에서는 산란계 부문(유통포함)에서 2호이자, 산란계 전업농가에서 1호로 HACCP 인증을 획득한 충남 아산 소재 계림농장을 소개하고자 한다. 계림농장은 아산시 지정 농특산물로 선정되기도 했고, 충남지역 최초로 무항생제축산물 인증을 받은 농가로 양계사업에서 선두적으로 발전하고자 노력하는 농장이다.

콩나물의 잔류농약 분석

  • 시판 콩나물중 농약 잔류량을 측정하기 위한 신속$\cdot$간편한 분석방법을 검토하고 서울시내 소재 콩나물 제조업소 및 시중에서 1987년 1월부터 1988년 2월에 걸쳐 콩나물 541건, 발아콩 168건을 구득하여 콩나물 재배시 주로 사용되는 것으로 알려진 Topsin-M, Vitavax, Thiram, Captan을 HPLC와 GLC로 분석하였다. Topsin-M, Vitavax, Thiram은 HPLC로 동시에 신속하고 양호하게 분리할 수 있었으며, Captan은 GLC로 타 성분의 방해없이 깨끗이 분리할 수 있었다. 농약이 검출된 시료는 콩나물 105건(19.4$\%$), 발아콩 44건(26.2$\%$)이었다. 농약 성분별로는 Topsin-M 115건(7.65$\pm$2.71ppm), Vitavax 20건(2.27$\pm$0.42ppm), Captan25건(2.17$\pm$0.93ppm)이었고 Thiram은 검출되지 않았으며 그중 Topsin-M과 Vitavax가 동시에 검출된 시료는 11건이었다.

A Survey on Pesticide Residues of Commercial Flowering Teas (국내 유통중인 식용꽃차의 잔류농약 실태조사)

  • This study was conducted to the amount of pesticide residue in 21 different kinds of 100 commercial flowering teas. Multi-residue analyses of 203 pesticides was performed using the GC-ECD, GC-NPD, GC-MSD, and LC-MS/MS. Pesticide residues were detected in 4 samples (4%) of which 4 samples (4%) violated the maximum residue limits. 4 samples violating the limit were all imported teas. Pesticides detected were chlorpyrifos, flufenoxuron, lufenuron, pyrimethanil and methoxyfenozide. These results indicate the need of continuous monitoring of pesticide residue needs for safety of flowering teas.

Storage Quality Characteristics of Bread Added with Dried Mulberry Pomace (저장 중 건오디박 첨가 빵의 품질 특성)

  • The purpose of this study is to evaluate the storage quality characteristics of bread with added dried mulberry pomace (DMP, 0, 1, 3 or 5%) during storage at $4^{\circ}C$ for 7 days. During the entire storage period, the moisture content was higher in breads containing DMP compared with the control bread. Textural properties by TPA showed that the hardness of DMP bread maintained a lower hardness than that of the control during the entire storage period. Moreover, DSC (Differential Scanning Calorimetry) result showed that ${\Delta}H$ (crystal melting enthalpy) of the bread containing DMP was lower than that of the control bread, which indicate the retarding of retrogradation. The sensory preference test results demonstrated that the bread with 3% DMP had higher scores in over-all preference than the others. These results suggest that DMP delays the retrogradation of bread during storage.

  • 2010년 5월 중 서울 약령시와 서울시내 대형마트에서 유통 중인 약용버섯 및 식용버섯류 16품목 92건 대상으로 중금속(비소, 카드뮴, 납, 수은) 모니터링을 실시하였다. 식품의약품안전청에서 고시한 생약의 잔류오염물질 허용기준 및 시험방법에 따라 실험하였으며, 유통 버섯류의 중금속 함유실태를 파악하고, 버섯의 안전성 기준 제정을 위한 기초 자료를 제공하고자 본 실험을 실시하였다. 새송이버섯 등 생버섯 7종 15건에 대한 중금속 검사 결과 비소 0.01~0.26 mg/kg, 카드뮴 0~0.10 mg/kg, 납 0~0.03 mg/kg, 수은 0~0.007 mg/kg 으로 중금속 함유량이 낮았다. 상황버섯 등 11종 77건의 건조되어 식용 및 약용으로 사용되는 버섯류 중 노루궁뎅이버섯은 4건 중 2건(50.0 %)에서 카드뮴이 0.32~0.82 mg/kg으로 한약재 기준 대비 높게 검출되었으며, 상황버섯은 15건 중 5건(33 %)에서 카드뮴 0.58~0.85 mg/kg, 표고버섯은 9건 중 3건에서 카드뮴 0.42~0.74 mg/kg, 운지버섯 5건 중 1건(20.0 %)에서 1.66 mg/kg, 영지버섯 16건 중 2건(12.5%)에서 수은 0.415 mg/kg과 카드뮴 0.66 mg/kg이 분석되었다. 특히 아가리쿠스버섯은 10건 중 10건(100.0 %)에서 카드뮴(10건) 1.49~7.35 mg/kg, 수은(9건) 0.202~0.505 mg/kg으로 높은 유해중금속 함유량을 보이는 것으로 조사되었다.

Research on the Residual Pesticide and Risk Assessment of Agricultural Products at Local Food Markets in Ulsan (울산지역 로컬푸드 농산물의 잔류농약 실태조사 및 위해성 평가)

  • This study investigated pesticide residues in 367 agricultural products from local food markets in Ulsan. Pesticide residues in these samples were analyzed using multi class pesticide multi-residue methods on the Korean Food Code for 350 pesticides using GC-MS/MS and LC-MS/MS. Residual pesticides were detected in 79 (21.5%) samples and exceeded maximum residual limits (MRLs) in 4 (1.1%) samples (chwinamul, narrow-head ragwort, green onion, apricot). The range of the hazard index (%) was 0.0000-63.1043%, and values for the pesticides that violated the MRLs were 63.1043 (green onion), 0.5417 (chwinamul), 0.0684 (apricot), and 0.0100 (narrow-head ragwort). This risk assessment study showed that the values of hazard index (%) were less than 100%, indicating that the consumption of these local agricultural food products was not harmful for human health.

An Investigation of Microbial Contamination of Side Dishes sold at Traditional Market and Super Market in Ulsan (울산지역 재래시장 및 대형 할인점 유통 반찬류의 미생물 오염도 조사)

  • This study was investigated to determine the contamination levels of total aerobic bacteria, coliform group, $E.$ $coli$ and food-borne pathogens of side dishes from 2 traditional markets (100 samples) and 2 super markets (100 samples) located on Ulsan. The levels (range) of total aerobic bacteria was 4.75 log CFU/g (1.60~6.92 log CFU/g) in traditional market and 4.62 log CFU/g (2.00~6.46 log CFU/g) in super market, respectively. Coliform was detected in 64 and 66 samples sold at traditional markets and super markets, respectively. $E.$ $coli$ was detected in 4 and 6 samples sold at traditional markets and super markets, respectively. The food-borne pathogens, namely $Bacillus$ $cereus$ and $Listeria$ $monocytogenes$ were detected in 1 sample sold at traditional markets, respectively, and $Bacillus$ $cereus$ was detected in 4 samples sold at super markets. However, other pathogens such as $Salmonella$ spp., $Shigella$ spp., $Vibrio$ $parahaemolyticus$, $Yersinia$ $enterocolitica$, $Clostridium$ $perfringens$, $Camphylobacter$ $jejuni$ and Pathogenic $E.$ $coli$ were not detected. The $Saengchae$ and $Seasoned$ $Jeotgal$ were relatively vulnerable compared to the others in the food-borne pathogens.

Determination of Amounts of Benzoic Acid and Propionic Acid in Fermented Soybean Products (장류 중 안식향산과 프로피온산 함량 조사)

  • This study investigated the detection of naturally occurring preservatives in fermented soybean products. Benzoic acid was identified in all of the analyzed samples (gochujang, ganjang, doenjang, and cheonggugjang). The amounts of benzoic acid were in the range of 0.85-11.69 ppm in gochujang, 1.13-7.95 ppm in ganjang, 0.74-17.77 ppm in doenjang, and 1.03-7.64 ppm in cheonggugjang. Propionic acid was found in 24 of 29 gochujang samples, 21 of 30 ganjang samples, 31 of 33 doenjang samples, and 28 of 30 cheonggugjang samples. The amounts of propionic acid ranged from N.D. (not detected) to 49.29 ppm in gochujang, N.D. to 144.67 ppm in ganjang, N.D. to 309.14 ppm in doenjang, and N.D. to 113.07 ppm in cheonggugjang. Among the fermented soybean products, doenjang had the highest average benzoic acid content whereas cheonggugjang had the highest average propionic acid content.

The Child Sexual Assaults by Kin -The Experience of YoungNam District Sunflower Center for Prevention of Child Sexual Assaults- (친족에 의한 아동 성폭력 실태 - 영남권역 해바라기 아동센터의 경험 -)

  • News from the media on sexual assaults to children committed by natural fathers doesn't attract social attention any more. The number of crimes related to Child Sexual Assault(CSA) is increasing every year in spite of the "Special Act on Prevention of Sexual Assault in Korea". The YoungNam District Sunflower Center for prevention of Child Sexual Assaults(SC-CSA) was established in Daegu, June 2005. The YoungNam District SC-CSA provides forensic evaluation of physical evidence, medical and psychological treatment for the victims less than 13 years of sexual assaults simultaneously. This study carried out 36 cases of CSA by kin reported to YoungNam District SC-CSA, among 180 cases in total until December 2006 since its opening. Most of the victims were girls (32 cases). 28 cases (78%) were indecent assaults (78%) and 8 cases (22%) were rapes. The assailants were overwhelmingly males (35 cases). The assailants of 21 cases (58.3%) were identified as the victims' natural fathers. The incident locations were victim's residence (31 cases, 86.1%) and the victims had been sexually assaulted regularly for many years (25 cases, 69.4%). Considering the above research, we can conclude that CSA committed by kin has specific characteristics. CSA is not a one-time incident, but consistently occurring crime. However, in 22 cases (61.1%), the victim's guardian didn't want to report about it or punish the assailants. As the assailants were natural fathers or relatives of the victims, the other family members probably thought it might be shameful to reveal their wrong doings and would lead to defamation of their family's reputation. The SC-CSA provides the counseling and medical treatment to the victims with the consent of the parents. Due to the guardians' misjudgment, the incident is sometimes not reported to the police. By not reporting the incident to the police, the assailant freely commits other crimes, which multiplies victims. The legal Act of supporting the management of the SC-CSA is still not regulated, so the stability of the SC-CSA is not guaranteed, yet. Even though it is obligatory to report incidents to the police, some cases are still not reported. Currently, there are three SC-CSA centers : in Seoul, in Daegu, and in Gwangju. More centers need to be established to diminish CSA cases in Korea.

Reconstruction of the Lower Extremity with the Microsurgical Technique (미세수술을 이용한 하지 재건술)

  • One hundred and sixty patients had reconstructive surgery of the lower extremity with the microsurgical technique at the department of orthopaedic surgery, Yonsei University College of Medicine from 1982 to 1989. There were ninty-six cases of men and sixty-four cases of women, in which the mean age was 23.8 years. These patients were followed for 21.4 months. The causes were 114 cases from traffic accidents, 18 cases from tumors, 12 cases from machinery injuries, 5 cases from burns, 2 cases from explosive injuries, and 9 cases from other reasons. There were 55 cases of scapular flap, 35 cases of groin flap, 23 cases of free vascularized osteocutaneous flap, 18 cases of parascapular flap, 9 cases of combined scapular and latissimus dorsi flaps, and 8 cases of segmental resection and rotationplasty. Success in reconstructive surgery with the microsurgical technique was achieved in one hundred and thirty four cases, and function and cosmetic results were excellent. Free vascularized flap with development of the microsurgical technique has taken an important role in reconstruction of large extremity defects where skin graft and distant flap were not applicable. Reconstruction of the lower extremity with the microsurgical technique is indicated with free vascularized osteocutaneous flap when there is a large defect of bone, a need for injured nerve replacement, and in the case of needed multiple staged operations. In these instences, this technique is regarded as simple one-staged reconstructive surgery.
