  • 유동층 건조법은 다공판으로 된 베드 위에 피건조물을 두고 아래쪽에서 열풍을 보내어 열풍속에서 재료를 부유시켜 열풍과 혼합함으로써 건조되는 방식으로 분체의 건조에 유효한 건조방법으로 알려져 있다. 열 및 물질 전달이 상당히 커서 건조가 빠르게 일어나고 온도가 균일하며 균일한 건조가 가능하다. 또한 건조장치의 처리용량이 비교적 크고 장치의 구조가 단순하여 건조장치의 경제성과 신뢰성이 우수하다.(중략)

Studies on the Fixation of Acetaldehyde by Freeze Drying (냉동건조방법에 의한 Acetaldehyde 고정에 관한 연구)

  • Attempts were made to fix acetaldehyde on base materials, which were selected from carbohydrates, by freeze drying. More acetaldehyde was fixed, in general, on combined base materials than single base materials, and mannitol+lactose were the best among the combined base materials tested. But the combination of mannitol and maltodextrin appeared to be more economical for the mass production. Loss of acetaldehyde during freeze drying was decreased as the concentration of the combined base material was increased, and it reached minimum at 40% of the base material. As dryer chamber pressure was reduced, loss of acetaldehyde during drying was decreased.

A Study on the Measurement of Water Content in Hydrogel Contact Lens by Gravimetric Method (중량측정법에 의한 하이드로젤 콘택트렌즈의 함수율 측정에 관한 연구)

  • Purpose: The purpose of this study is to understand a relation of water content measurement with two different method, water removal method and dry method. Methods: 72 hydrogel contact lens containing various water content (ranged from 47% to 58%) were measured by the gravimetric method at 20$^{\circ}C$and 21% of the humidity. We weighed the dried test specimen at room temperature for 30 min after cooling. Results: In dry blotting method, the water content was measured to 47.43${\pm}$8.48%. The water contents was measured to 48.15${\pm}$8.36% with wet blotting condition. It was found that wet blotting method showed the higher water content of about 7% than dry blotting method. In water content with two dry methods, each of results was measured by 47.89${\pm}$8.06% and 49.56${\pm}$7.06%. In case of microwave method, the water content was measured significantly higher water content of about 1.67% than vacuum oven method. However, no statistical difference was found (p>0.05). Conclusions: In water removal method (Dry blotting method and Wet blotting method) to weigh hydrated test specimen, wet blotting method showed significantly higher water content than dry blotting method. Also in case of dry methods (vacuum oven and microwave) to weigh dry test specimen, water content of microwave method showed higher water content than vacuum oven method, but it should be noted that microwave oven method must be used carefully to measure accurateness on the specimen position and wave power.

Antioxidant abilities and physiological properties of dried Haw extracts prepared using different drying methods (건조 방법에 따른 산사과 추출물의 항산화 및 생리활성)

  • This study was performed to determine the effects of drying methods (HD, hot air drying; FD, freeze-drying) on the antioxidant and physiological abilities of Haw (Crataegus pinnatifida Bunge). Powder color values of dried Haw, L and b, were higher for HD, while the chroma values were higher for FD. The total polyphenol, and flavonoid contents of HD Haw and FD Haw were found to be $9.29{\pm}0.50mg\;GAE/mL$ and $15.48{\pm}0.38mg\;GAE/mL$, and $9.41{\pm}0.26mg\;RHE/mL$ and $26.46{\pm}0.34mg\;RHE/mL$, respectively. DPPH radical scavenging abilities at 100 mg/mL concentration were higher for FD (64.90%) than HD (28.66%), as were the reducing power, ABTS radical scavenging ability, and nitrite scavenging ability. However, the HMG-COA reductase of HD (74.67%) was higher than that of FD (72.10%). The ${\alpha}-glucosidase$ inhibitory abilities of HD and FD at a concentration of 0.1 mg/mL were 24.69% and 97.38%, respectively. These results indicate that Haw is a potential functional material and that freeze-drying Haw is better than hot air drying.

The Quality Properties of Dried Carrots as Affected by Blanching and Drying Methods during Storage (건조 방법에 따른 예비열처리 당근의 저장 중 품질 특성)

  • This study was carried out to investigate the effectiveness of blanching on the different drying methods and to examine the quality properties of carrots dried by freeze., vacuum- or hot air-drying during storage. Blanched carrots (BC) dried faster than raw carrots (RC), while RC showed more effective rehydration than BC by hot air- and vacuum-drying methods. There was more stability for BC on carotene retention and browning degree than RC in all drying methods during storage. Moreover, firmness of RC and BC by vacuum-drying was slightly lower than that of hot air-drying, but higher than freeze-drying. In firmness, BC and RC showed similar trends with different drying methods (decreasing with increased storage periods), while BC showed about 3 time firmer texture than RC in all cases during storage. The dried carrots prepared with blanching treatment showed more fine structures than those not treated. These results showed that the blanching treatment of carrots was good for maintaining quality by various drying methods.

Effects of Drying Method on N-Nitrosamine Formation in Squid during Its Drying (오징어의 건조방법이 N-Nitrosamine의 생성에 미치는 영향)

  • To examine effects of drying methods on the formation of N-nitrosamine(NA) in squid during its drying. Three different types of dried products, which were made by sun, hot-air and traditional drying of squid after removal of intestines, were utilized. NA was analyzed by a gas chromatography-thermal energy analyzer. The contents of nitrate and nitrite nitrogen in dried products were in the range of 0 to 5.2mg/kg and 0 to 2.7mg/kg, respectively. The contents of TMAO and betain nitrogen in squid during its drying decreased, while those of TMA and DMA nitrogen increased. The contents in dried products were 27.8~29.2mg% and 10.4~12.3mg/kg, respectively. N-Nitrosodimethylamine (NDMA) was only detected in squid during its drying, recovery from raw sample and its dried pro- ducts spiked with 10$\mu\textrm{g}$/kg for NDPA was 81.0~ 100.0%. NDMA in raw samples was found to be below 0.05$\mu\textrm{g}$/kg. The levels of NDMA in squid increased remarkably during its drying and those in dried products were ranged from 2.7 to 42.7$\mu\textrm{g}$/kg. The effects of drying methods in squid were found to be quite different. the levels of NDMA in traditionally dried products were 11~16 and 3~4 times higher than those in sun dried and hot-air dried products, respectively It is believed that high levels of NDMA were detected in traditionally dried products because NDMA was formed from reaction between various amines and nitrogen oxide produced by combustion of briquet during drying of squid.

  • 본 연구는 현재 국내 농촌에서 문제시되고 있는 벼의 건조와 저장방법을 개선하기위한 한 가지 방법으로써 Grain bin의 이용에 따른 기술적인 적용가능성을 구명하는데 있었으며 건조열원으로서는 상온공기와 Solar collector 에 의한 보충가열공기를 사용하였다. 건조시험에서는 벼의 건조속도, 층별함수율의 변화, 동력소모량, 도청수율 등을 측정 비교하였으며 건조가 완료된 후에는 저장시험도 아울러 실시하였다. 본 시험을 통하여 얻은 결과는 다음과 같다. 1. 본시험에 사용된 Solar Collector 는 집열면적이 $27.7m^2M$의 Flat-plate 형식이며 내부에 태양열의 저장모체로서 약 $7m^2M$의 검은 돌을 사용하였다. Collector 의 효율은 35%이었으며 Collector를 통과하여 Bin으로 들어가는 공기의 온도는 외기온에 비하여 주간에는 약 $4^\circ C$, 야간에는 약 $8^\circ C$, 정도 상승된 것으로 나타났다. 2. 상온공기와 Collector를 이용한 건조험결과 안전저장함수율에 도달하는 데 약 7일과 약 5일이 소요되었다. 3. 태양열 건조는 상온통풍건조에 비하여 곡물층간의 함수율차이가 약간 크게 나타났으나 건조속도가 빠를뿐만 아니라 동력소모량도 적은 것으로 분석되었다. 4. 건조시험이 완료된 직후 이차에 걸쳐 Bin 내에서 저장시험을 실시한 결과 저장기간중 벼의 안전보전이 가능했으며 평균함수율이 12.0~14.5%범위에서 유지되었다.

Drying of Citron Juice from By-product of Citron Tea Manufacturing (유자차 부산물인 유자즙의 분말화 연구)

  • To increase the utilization of citron, citron juice that is by-product of citron tea was spray dried and freeze dried. Cyclodextrin(CD) was used as wall material to stabilize during drying. The physiochemical properties of citron juice were as follows: water content of 82.3%, pH of 2.45, and there were little different in two kinds of drying or CD added in different ratio. Citric acid, malic acid, succinic acid and lactic acid were detected in all of the samples. Spray and freeze-drying increased markedly yellowness compared to that of citron juice. Heat stability was reduced by both of two kinds of drying, and CD 15% was more decreased than CD 10%. Water uptake by freeze-drying was somewhat higher than that of spray-drying. When sensory properties of original citron juice was compared with those of spray and freeze dried, freeze drying with 10% of cyclodextrin was evaluated as superior to citron juice or other drying conditions.

Effects of Cooking and Drying Methods on the Quality of Shrimp (새우의 품질에 미치는 가열 및 건조방법의 영향)

  • Effects of cooking and drying methods on the quality of shrimp, Metapenaeus joyneri, were investigated. The cholesterol content of fresh shrimp was 81.4mg/100g of dry basis. It was $5{\sim}28%$ less in freeze dried shrimps as compared to hot air dried shrimps. The volatile basic nitrogen and trimethylamine contents of hot air dried shrimp was higher than those of freeze dried one, but total viable count of freeze dried shrimp was lower than that of hot air dried one. The color of cooked-shrimps was much brighter than uncooked-fresh shrimp. Freeze dried shrimp was lighter than hot air dried one. Total color difference $({\Delta}E)$, however, was opposite to its lightness. The mineral component of fresh shrimp was composed of calcium predominantly, followed by potassium and sodium, which were 96% of the total mineral contents. Cooking and drying methods did not affect the mineral content.

  • To develop efficient drying method, one of important process in manufacturing of Saengsik, uncooked food, the change of physicochemical characteristics and functional component contents of cereals dried by various drying methods was investigated. The proximate composition and dietary fiber content of rice, brown rice, glutinous rice and barley showed little changes during hot-air drying (50$\circC$, 55$\circC$, 60$\circC$) and freeze-drying. Yellowness(b) value of hot-air dried products was higher than one of freeze-dried products. The content of niacin was 0.77 mg% in milled rice, 1.84 mg% in brown rice, 0.68 mg% in glutinous rice, 1.00 mg% in barely dried by hot-air at 60$\circC$ and was lower than those of other samples. $\beta$-glucan content in barely was not changed by hot-air drying and freeze-drying method. In conclusion, hot-air drying would be recommended for barley having $\beta$-glucan, a kind of functional components and freeze-drying should be used for raw materials having heat-labile components such as niacin.
