Studies on Drying Method of the Powder to Utilize Deteriorated Sweet Persimmon (파찌감 이용을 위한 분말화의 건조방법에 관한 연구)

  • To utilize deteriorated sweet persimmon(Diospyros kaki T.) effectively, this study was investigated about the effective (Dying method of the powder. Chemical components, minerals, fatty acids and amino acids of hot-air dried and freeze dried conditions were determined Sample conditions used on analysis as follow; pretreatments of hot-air dry and freeze dry were soft, soft+peel, mixer, mixer+peel. The contents of crude protein, crude lipid, crude ash of hot-air dry were 0.9-1.1%,15.0-39.0% and 2.3-3.3%, respectively. And those of freeze dry were 1.3-2.2%, 27.-49.0% and 2.5%, respectively. Potassium, magnesium, phosphorus, calcium and sodium content in hot-air dry and freeze dry were high. Other minerals were less than 3.00ppm in all conditions. The major fatty acid contents were detected capric acid(C$\^$10:0/), lauric acid(C$\_$l2:0)/, tridecanoic acid(C$\_$13:00/), palmitic acid(C$\_$l6:00/), palmitoleic acid(C$\_$l6:1/), oleic acid(C$\_$18:1), linoleic acid(C$\_$18:2/), linolenic acid(C$\_$18:3/). The essential amino acids such as aspartic acid, threonine, serine, glutamic acid, glycine, alanine, valine, methirmine, isoleucine, leucine, tryosine, phenylalanine, histidine, lysine, arginine in freeze dry were contained richly. On the basis of chemical analysis, hot-air dry method will have to supply the additional different method, because simple hot-air dry method was shorten the dry time but had many problems. Therefore, the effective drying method considering changed color and nutrition was shown freeze dry method.

Change of Physicochemical Characteristics and Functional Components in the Raw Materials of Saengsik, Uncooked Food by Drying Methods (건조방법에 따른 생식 원료의 이화학적 특성 및 기능성 성분의 변화)

  • Changes in physicochemical characteristics and functional components content of saengsik, uncooked food, were investigated to find efficient drying methods, one of important manufacturing process of saengsik. No changes in proximate compositions of all samples were observed during hot-air drying at 50, 55, and $60^{\circ}C$ and freeze-drying. Colors of carrot, Lentinus edodes, and sea mustard did not change, while a value of cabbage, L, a, and b values of Agaricus bisporos, and a value of laver changed slightly by hot-air drying at all temperatures and freeze-drying. Dietary fiber content increased by hot-air drying but not by freeze-drying. Reductions in vitamin C and ${\beta}-carotene$ contents of carrot, cabbage, sea mustard, and laver were higher by hot-air drying than by freeze-drying. Contents of total phenolics and lectin of L. edodes and A. bisporos were not affected by hot-air drying and freeze-drying. Contents of pectin, alginic acid, and porphyran in sea mustard and laver increased by hot-air drying.

Effects of Ramie Leaf according to Drying Methods on Antioxidant Activity and Growth Inhibitory Effects of Cancer Cells (건조방법에 따른 모시잎의 항산화 활성 및 암세포 증식 억제효과)

  • This study was carried out to discriminate the effects of the ramie leaf according to the drying methods (hot air drying and freeze drying) on antioxidative activity in vitro and antiproliferation in human cancer cells. There were no significant differences in total polyphenol content of ramie leaf ethanol extracts depending on the drying methods, but total flavonoid content was significantly higher in hot air dried ramie leaf (HR) than in freeze dried ramie leaf (FR). The DPPH radical scavenging activity of HR and FR ethanol extracts were found to be 77.74%, and 77.29% in 1000 ppm, respectively. Antioxidative index of HR and FR ethanol extracts measured by Rancimat were lower than those in BHT, BHA, and ascorbic acid, but were higher than that in control. The antiproliferation effect of 80% ethanol extracts of HR and FR on liver cancer cell line (H460), stomach cancer cell line (AGS), and lung cancer cell line (A549) were increased with a dose-dependent manner. The cancer cell growth inhibition activities of HR and FR ethanol extracts at the concentration of $800{\mu}g/mL$ showed greater than 80% on Hep G2 and A549 cell line, and greater than 75% on AGS cell line. These results suggest that HR and FR ethanol extracts possess potential antioxidative effect and antiproliferation in human cancer cells, and those activities of ramie leaf ethanol extracts depending on the drying methods were similar.

A Study on Lunar Soil Simulant Pretreatment for Effective Simulation of Lunar Surface Environment (달 지상 환경의 효과적 모사를 위한 인공월면토 전처리에 관한 연구)

  • As interest in lunar exploration increases, studies on lunar surface environment simulation including a lunar soil simulant are being conducted. One of the problems when creating a vacuum environment with lunar soil is that it takes long time to reach high vacuum due to outgas from the soil. Most of the outgas is water, and the time to reach high vacuum can be significantly reduced by a pretreatment process that removes moisture adhering to the surface of the lunar soil before putting soil into a vacuum chamber. The existing soil drying methods were examined to determine how these methods were effective to remove moisture from the lunar simulant soil. Drying experiments of lunar soil samples were carried out using a dry oven, a microwave oven, direct heating method and a vacuum oven, and the results of the drying experiment were presented. Drying soil at 110℃ using a dry oven and drying soil by a microwave oven were not enough to remove moisture, and vacuum oven drying method and direct heating drying method at more than 200℃ were effective in water removal.

A comparison of fracture rate of artificial light-weight aggregates by various drying, breaking, and forming methods (건조법, 파쇄법, 성형법에 따른 인공경량골재의 파쇄율 비교)

  • A sheet type of green body was made with the mixture of 60 wt% red clay, 20 wt% fly ash, and 20 wt% stone sludge. Indentations were made on the surfaces of sheets to investigate fracture rate of 1 to 5 mm artificial light-weight aggregates by various drying, breaking, and forming methods. Drying methods of green bodies were natural, electric oven, microwave, and fast drying by torch. Breaking methods of green bodies were ballmill Ⅰ, ballmill Ⅱ, free dropping in the box, and mechanical breaking with roller mill. The depth and width of indent on the surface of the sheet were varied and the thickness of green bodies was also changed to investigate effects of indentation on fracture rates. The highest fracture rate of 42 % among the various drying methods was obtained by microwave drying for 210 sec and the highest fracture rate of 65 % among the various breaking method was obtained by ballmill Ⅱ method. In forming method, an yield of larger aggregates than Ф = 5 mm decreased and that of smaller aggregates than Ф = 5 mm in creased with increasing depth of indentation (only in 3 mm thick green body)and with increasing thickness of green body. The size of aggregates was most homogeneous (by judging from the measurement of aspect ratio of 1 to 5 mm aggregates.) when 3 mm thick green body was rapidly dried by torch and was broken by ballmill Ⅱ method.

  • For the removal of initial water content in cuttlefish, the effects of fixed-bed drying condition on the drying rate were investigated, with following results. 1. The drying rate of cuttlefish dried at fixed-bed condition was also faster than that at natural convection type or hot air dryer.2. By controlling air temperature and its direction to cut-and-peeled sample the drying time can be reduced to 2 hrs. 3. Shirai's equation and Arrhenius' law were applicable to fixed-bed dried cuttlefish. Drying rate constant (k) by Shirai's equation, and Arrhenius' plot were as shown in Table 3, 4 and Fig.3, respectively.

Comparison of Dried Hot Pepper Quality and Production Efficiency by Drying Methods (건조방법에 따른 건고추의 품질특성과 생산효율 비교)

  • Hot pepper is a kind of seasoning vegetables, which is a major item in the Korean vegetable market. Since the use of hot pepper is processed into pepper powder, which is a powder form of dried hot pepper, improvement of quality and productivity of dried hot pepper is important. Therefore, this experiment was conducted to suggest proper drying method by comparing the changes of hot pepper powder ingredients considering production cost according to the drying method. As a drying method, we used sun drying and heat drying which are widely used in practice. We also compared the productivity and quality of dried hot pepper by applying a dehumidifying drying method using a dehumidifier. Drying rate of hot pepper was highest of 85.1% at heat drying. Accordingly moisture content of hot pepper powder was lowest of 13.5% at heat drying. The American Spice Trade Association (ASTA) color value, which influenced the coloring of red pepper, showed higher in heat drying and dehumidified drying treatment than the sun drying treatment. The content of capsaicinoids was higher at sun drying treatment than that of at both heat drying and dehumidified drying treatments. The content of sugar was higher at heat drying and dehumidified drying treatment where drying time was relatively short than that of sun drying treatment. Also, there was no significant difference in sugar content between the two treatments. The production cost of dried hot pepper with dehumidified drying was 9.9% more efficient than heat drying. Through this study, it was found that heat and dehumidified drying method were effective in increasing sugar content and coloring of hot pepper powder. In order to improve the capsaicinoid content of red pepper, it is considered that appropriate drying temperature and drying time should be added in the process of heat drying and dehumidified drying.

Biological activities in Aronia melanocarpa depending on drying methods (건조방법에 따른 아로니아의 생리활성)

  • To investigate biological activities in Aronia melanocarpa various drying methods were employed such as vacuum freeze drying, hot air drying and cold air drying. DPPH radical scavenging activity and ABTS radical scavenging activity of vacuum freeze dried Aronia melanocarpa was higher than hot and cold air dried Aronia melanocarpa. Vacuum freeze drying method showed the greatest contents of total phenol (15.34 g GAE/100 g), flavonoid (3.10 g GE/100 g) and tannin (2.46 g TE/100 g). Total anthocyanin content decreased to 163.52 mg C3G/100 g and 50.15 mg C3G/100 g for hot and cold air drying, respectively. Vacuum freeze-dried method increased the total anthocyanin content (743.09 mg C3G/100 g) when compared with fresh Aronia melanocarpa (163.52 mg C3G/100 g). Total proanthocyanidin content of vacuum freeze dried Aronia melanocarpa has increased to 6.21 g CE/100 g more than eight times compared with fresh Aronia melanocarpa (0.71 g CE/100 g). Chlorogenic acid and neochlorogenic acid content of vacuum freeze dried Aronia melanocarpa were higher than hot air dried and cold air dried Aronia melanocarpa, increasing about three times compared with fresh Aronia melanocarpa. These results suggested that vacuum freeze drying is optimal drying method to enhance biological activities in Aronia melanocarpa.

Phenolic contents and physiological properties of Pleurotus ostreatus by drying method and 30% fermented ethanol extraction for different periods (느타리버섯류의 자실체 건조 방법 및 주정 추출 기간별 페놀성 성분 함량 및 생리활성 효능 비교)

  • The total polyphenol and physiological activities of Pleurotus ostreatus 30% fermented ethanol using different drying methods and extraction periods were investigated. Based on the observed polyphenol content and physiological activity, freeze-drying showed better results than hot air-drying method for P. ostreatus extracted with 30% fermented ethanol for more than 15 days. The total phenolic compound content of 'Gosol' following thefreeze-drying method for 15 days showed the highest value of $0.49{\pm}0.02mg/mL$. Freeze-drying with extraction for 30 days for ASI 2344 showed the highest antioxidant activity based on the DPPH radical scavenging rate of $35.50{\pm}3.29%$. Freeze-drying 'Gosol' for 30 days resulted inthe highest anti-inflammatory and nitrite scavenging activity of $48.40{\pm}3.38%$. Our results showed that P. ostreatus is a functional food.

Physicochemical Characteristics of Ponciri Fructus in Relation to Drying Treatment (포제조건이 지실의 이화학적 특성에 미치는 영향)

  • The objective of this study was to investigate the effect of drying methods on the physicochemical characteristics of Ponciri fructus. Immature fruits of Poncirus trifoliata were harvested, dried by shade, infrared, or freeze drying, and powdered to size of 20 mesh. Then, extracted for 3 hrs with hot-water or 40% ethanol(80$\circC$℃). Freeze dried powder showed significantly higher L and -a value. The content of hesperidin was not affected by drying methods. The yield was the highest from freeze drying. Water extracts showed significantly more browning color, and higher acidity and total sugar content than those of ethanol extracts. Acidity and total sugar of water extracts were the highest in infrared drying and freeze drying, respectively. Browning color, pH, acidity and total sugar of ethanol extracts were not affected by the drying methods. The results suggest that freeze drying has a beneficial effects to enhance the quality of Ponciri fructus.
