Development of Saengshik Beverage Products and Their Physico-chemical Properties (생식 음료 개발 및 이화학적 특성)

  • Saengshik beverage products were developed to improve the convenience in consumption, and thereby to expand the Saengshik market. Beverages were prepared from 3 commercial Saengshik products (ES, BS, SS) by mixing with water using a high shear blender. The physicochemical and sensory properties of the Saengshik beverage product were compared. The most acceptable beverage product was made of BS at 7.7% (w/w) level. The apparent viscosity of the beverages increased as the Saengshik levels increased. The beverages at lower Saengshik levels showed dilatant fluid characteristics, while they were Newtonian and pseudoplastic fluids at middle and high Saengshik levels, respectively. The beverage products also showed rheopectic type time-dependency at middle (5.7-9.7%) Saengshik levels, while they were time independent at low and high levels.

Condition of Processing and Change of Chemical Composition on the Salted-dried Sardine during the Storage (정어리 염건품의 제조 조건과 저장중의 성분변화)

  • An investigation on optimum condition for processing of salted-dried sardine and quality change of the product during the storage was carried out. The fillets of sardine were salted in 5, 10 and $15\%$ NaCl solution for 12, 24 and 36 hours at $9-10^{\circ}C$, respectively and air-blast dried at $24-25^{\circ}C$ with a velocity of 3 m/sec and then stored at room temperature for 30 days. The results were as follows : The optimum condition for the product was salting in $15\%$ NaCl solution for 36 hours as VBN and histamine contents were 27.5 mg/100g and 42.5 mg/100g, respectively, and also showed a good result in sensory evaluation. Histamine, VBN and TMA-N content of the dried fillets immediately after salting in $15\%$ NaCl solution for 36 hours increased to 47.8 mg, 29.5 mg and 5.4mg per 100g of the sample, respectively and increased slowly during the storage. The peroxide value and acid value of the lipid extracted from the product increased from 15.9 meq/kg to 114.0 meq/kg, and 12.6 to 30.5 during the storage. In the fatty acid composition, $C_{22:6}\;and\;C_{20:5}$ acids were decreased during the storage period.

Effects of a Peroxidase-System-Containing Toothpaste on Whole Saliva in Vivo (Peroxida System을 함유한 세치제가 생체에서 전타액에 미치는 영향에 대한 연구)

  • Peroxidase system은 구강내 고유의 항균체계로서 항세균물질인 $HOSCN/OSCN^-$을 생산하여 다양한 그램 양성 그리고 그램 음성 세균에 대해 살균 및 정균작용을 나타낸다. 본 연구는 peroxidase system을 함유한 치약을 사용한 후 건강한 대상자의 자극성 전타액내 생성되는 $HOSCN/OSCN^-$의 양을 측정하여 최대 생성시간을 결정하였다. 그 후 건강한 대상자에게 임의로 실험치약과 대조치약을 할당하여 2주간 사용하도록 한 후 $HOSCN/OSCN^-$ 최대 생성 시간에 타액을 채취하여 치약 사용전과 2주후의 타액분비량, pH, 점조도 그리고 S. mutans와 lactobacilli에 대한 항균효과를 비교하였다. 구강건조증 환자를 대상으로 한 두 번째 연구에서도 peroxidase system을 함유한 세치제를 사용한 후 생성되는 $HOSCN/OSCN^-$의 최대생성시간을 측정하였으며, peroxidase system을 함유한 세치제가 S. mutans와 lactobacilli에 미치는 영향을 양치전과 양치후 $HOSCN/OSCN^-$의 최대생성시간에 타액을 채취하여 비교하였다. 이와같은 실험을 통해 다음과 같은 결론을 얻었다. 1. 건강한 대상자의 자극성 전타액내의 $HOSCN/OSCN^-$의 농도는 양치후 30분 후 대조군에 비해 peroxidase systems을 함유한 세치제를 사용한 군에서 유의성있게 높게 나타났다 (p < 0.05). 2. 건강한 대상자의 자극성 전타액의 타액분비량, pH, 타액점조도는 peroxidase system을 함유한 세치제를 2주간 사용한 후에도 유의한 변화를 나타내지 않았다. 3. 2주간 실험치약을 사용한 후 건강한 대상자의 자극성 전타액내 S. mutans와 lactobacilli의 양은 peroxidase system을 함유한 세치제를 사용한 군에서 상대적으로 낮게 나타났으나 통계학적 유의성은 없었다(p = 0.206 : lactobacilli, p = 0.944 : S. mutans). 4. 구강건조증 환자의 자극성 전타액내의 $HOSCN/OSCN^-$의 농도는 양치후 30분(p < 0.01)과 60분(p < 0.05)에서 대조군에 비해 peroxidase system을 함유한 세치제를 사용한 군에서 유의성있게 높았다. 5. 구강건조증 환자의 양치 후 30분에 채취한 자극성 전타액내의 S. mutans와 lactobacilli의 양은 peroxidase system을 함유하거나(p < 0.01) 함유하지 않은(p < 0.05) 치약을 사용한 군 모두에서 양치전에 비해 유의성있게 감소하였다. 6. 양치후 30분에 채취한 구강건조증 환자의 자극성 전타액내 S. mutans 양은 peroxida system을 함유한 세치제를 사용한 군에서 대조군에 비해 유의성있게 낮았다(p < 0.05). 7. 양치후 30분에 채취한 구강건조증 환자의 자극성 전타액내 lactobacilli양은 peroxidase system을 함유한 세치제를 사용한 군에서 대조군에 비해 상대적으로 낮게 나타났으나(p = 0.067) 통계학적 유의성은 없었다.

Screening of Bacterial Strains for Alleviating Drought Stress in Chili Pepper Plants (고추 식물의 건조 스트레스 완화를 위한 미생물 선발)

  • Drought stress is considered as one of major abiotic stresses; it leads to reduce plant growth and crop productivity. In this study, we selected bacterial strains for alleviating drought stress in chili pepper plants. As drought-tolerant bacteria, 28 among 447 strains were pre-selected by in vitro assays including growth in drought condition with polyethylene glycol and plant growth-promoting traits including production of 1-aminocyclopropane-1-carboxylate deaminase, indole-3-acetic acid and exopolysaccharide. Sequentially, 7 among pre-selected 28 strains were screened based on relative water content (RWC); GLC02 and KJ40, among seven strains were finally selected by RWC and malondialdehyde (MDA) in planta trials under an artificial drought condition by polyethylene glycol solution. Two strains GLC02 and KJ40 reduced drought stress in a natural drought condition as well as an artificial condition. Strains GLC02 or KJ40 increased shoot fresh weight, chlorophyll and stomatal conductance while they decreased MDA in chili pepper plants under a natural drought condition. However, two strains did not show biocontrol activity against diseases caused by Phytophthora capsici and Xanthomonas campestris pv. vesicatoria in chili pepper plants. Taken together, strains GLC02 or KJ40 can be used as bio-fertilizer for alleviation of drought stress in chili pepper plants.

A Study on the Heat and Mass Transfer Characteristics of Vacuum Freeze Drying Process for Porous Media (다공성 물길의 진공동결건조과정에서 얼 및 물질전달 특성에 관한 연구)

  • Vacuum freeze drying process by which frozen water in a drying material is removed sublimation under vacuum condition, is now applied to various industrial field such as the manufacturing and packaging of pharmaceuticals in pharmaceutical industry, the drying of bio- products in bio-technology industry, the treatment of various quality food stuff in food technology, and so on. The Knowledge about the heat and mass transfer characteristics related with the vacuum freeze drying process is crucial to improve the efficiency of the process as well as the quality of dried products. In spite of increasing needs for understanding of the process, the research efforts in this fields are still insufficient. In this paper, a numerical code that can predict primary drying in a vial is developed based on the finite volume method with a moving grid system. The calculation program can handle the axis- symmetric and multi-dimensional characteristics of heat and mass transfer of the vial freeze drying process. To demonstrated the usefulness of the present analysis, a practical freeze drying of skim Milk solution in a vial is simulated and various calculation results are presented.

  • These surveys were carried out to investigate of damage of agricultural chemicals, tabacco, and factory smoke on silkworm rearing Autumn in 1975 1. Damaging rate in chemicals, tabacco and factory smoke was 1.4, 0.6 and 0.1 percent each other. 2. In damage by agricultural chemicals, it appeared to be chemicals for rice (49.4%) orchard (21.2%) and vegetable (12.3%) in order. 3. Status of damaging rate in tabacco showed 60 and 18 percent in tabacco field and tobacco drying place near mulberry field. and showed 14 and 8 percent in rabacco drying place and tabacco field near rearing house. 4. The damage of factory smoke is largely stone powder of cement.

Examination of Spread-Recoil Behavior of a Shear-thinning Liquid Drop on a Dry Wall (전단희석 액적의 건조 벽면 충돌 후 전개-수축 거동의 관찰)

  • In the present study, spread-recoil behavior of a drop of shear-thinning liquid (xanthan solution) on a dry wall (polished stainless-steel plate) was examined and compared with that of Newtonian liquid (glycerin solution). Nine different kinds of xanthan and glycerin solutions were tested, including three pairs of xanthan and glycerin solutions, each having the same viscosity in low shear rate region ($10^{-2}-10^0\;l/s$). The drop behavior was visualized and recorded using a CCD camera. The maximum diameter and the spreading velocity of the xanthan drops turned out to be significantly larger and the time to reach their final shape was much shorter compared to the cases with the glycerin solutions, due to the smaller viscous dissipation resulted from lower viscosity in the higher shear rate region (>$10^0\;l/s$). As a result, the maximum diameters were measured to be larger than the predicted values based on the model proposed for Newtonian liquids, and the deviation was more pronounced with the solution with the larger viscosity variation. Consequently, viscosity variation with the shear rate was found to be a dominant factor governing the spread-recoil behavior of shear-thinning drops.

Transverseless AFRAMAX급 이중선체 유조선 구조부재의 안전성평가

  • 본 연구에서는 힁부재가 없는 AFRAMAX급 신구조 방식의 유조선을 개발하고자 하였다. 설계의 기본 개념은 1) 이중선체구조를 채용하여 해난사고 발생시 기름유출 방지를 피하고, 2) 힁부재가 없는 극히 단순한 선체구조를 채용하여 용접 로봇등을 활용한 자동건조 비율을 높임으로써 건조 생산성을 향상시키는데 주안점을 두고 있다. 설계 결과 얻어진 선체구조는 기존의 유조선 구 조와 매우 상이하다. 초기구조설계단계에서 구조 부재의 치수는 기존의 선급설계 지침을 활용 하여 결정하였으나, 기존의 유조선 구조와 비교하여 구조배치가 크게 바뀌어 졌기 때문에 기존의 선급설계지침을 만족했다고 해서 구성부재와 국부구조뿐만 아니라 구조 전체적으로도 충분한 구조안전성을 가지고 있는지는 확실치 않다. 따라서 직접구조해석에 의한 구조안전성 평가가 필수적으로 요구되며, 이를 위해 저자들은 선체구조의 최종 종강도(ultimate longitudinal strength), 최종 힁강도(ultimate transverse strength) 및 최종 국부강도(ultimate local strength )를 기준으로한 구조안전성 평가를 수행하였다. 본 논문에서는 이들 중에서 국부 구조부재에 대한 안전성평가 문제만을 다루었다. 결론적으로, 본 연구에서 개발한 선체구조는 건전상태(intact condition)하에서 뿐만 아니라 손상상태하에서도 구조부재는 좌굴 또는 붕괴하지 않고 전반적 으로 충분한 구조안전성을 가지고 있다는 결론을 내릴 수 있었다.

  • Ji, Syok-young wrote a book named Sinhaksinseol(新學新說) in 1891, one of the first hygiene books in Korea. There were the conditions of modern housing like lighting, ventilation and dry and fresh air of a housing site in the contents of the book. Because the book was written when the modern hygiene theory had just been accepted, traditional concept of 'Yangseng(養生),' but it dealt the main environmental conditions of hygienic housing at first, which makes it the leader of modern housing discourses through the newspapers, magazines, academic journals or textbooks from 1890s mid to 1910.

Infrared Irradiation and Conservation Treatment of Wooden Fish Excavated from Wiryeseong Fortress on Seonggeosan Mountain in Cheonan (천안 성거산 위례성 출토 목어의 적외선 조사 및 보존처리)

  • Two wooden fish excavated from Wiryeseong Fortress on Seonggeosan Mountain in Cheonan-si, Chungcheongnam-do Province were frail due to their deterioration within the burial environment. To prevent further deformation, conservation treatment was conducted on them to strengthen the wooden materials and stabilize the dimensions. Prior to the conservation treatment, the species of wood was determined to be pine and infrared Irradiation on the patterns remaining on the wooden fish revealed that they were depictions of carp. For conservation treatment, the wooden fish were impregnated with PEG #3, 350 in a water solution with a 40% concentration, followed by freeze-drying.
