급식소 조리종사자의 손 위생교육 효과 평가

  • 단체급식소 조리종사자의 손 위생실태를 알아보기 위해 일반세균ㆍ대장균군ㆍ황색포도상구균에 대한 미생물 검사를 실시하고, 조리종사자의 개인위생 개선을 위해 개인위생의 중요성ㆍ각종 식중독의 발생현황 및 예방대책ㆍ손 위생의 중요성 등에 대해 단계별 위생교육 프로그램을 실시한 후 최종 미생물학적 검증을 통해 위생교육 효과를 평가하였다. 위생교육 전 손 위생실태는 작업 전의 경우 일반세균수는 4.04∼1.49 log CFU/hand, 대장균군수는 6.52 log CFU/hand 이하였고, 황색포도 상구균의 경우 전체의 10% 정도가 검출되었다. A Study on the Investigation of Sanitary Knowledge and Practice Level of School Foodservice Employees in Jeonju (전주지역 학교급식 조리종사자의 위생지식 및 위생관리 수행에 관한 연구)

  • This study was to investigate the sanitary knowledge and its practice level of school foodservice employees in Jeonju area. A total of 508 questionnaires were usable; resulting in 79.0$\%$ response rate. Statistics data analysis was completed using the SPSS 10.0 program. The results of this study were summarized as follow : About 62$\%$ of school foodservice employees were 41 $\∼$50 years old and 84$\%$ of them had a irregular job and they had a sanitation training at least once a month. The school foodservice employees had more knowledge about 'personal hygiene' than that about 'equipment and facilities sanitation', 'foodborn disease and food microorganism' Their hygiene practice level were high for 'equipment and facilities sanitation' (4.90$\pm$0.25) and were lesser in the order from 'foodborn disease and food microorganism'(4.86$\pm$0.30), 'personal sanitation'(4.79$\pm$0.34) and the least for food processing hygiene (4.70$\pm$0.37). As a result of relationship between knowledge and hygiene practice level, knowledge of school foodservice employees was not influenced on tile hygiene practice level during their working.

A Study on the Relationship between Food Hygiene Cognition, Food Hygiene Attitude and Personal Hygiene Control of High School Students based on A Structural Equation Model (구조방정식 모형을 활용한 고등학생의 식품위생인식, 식품위생태도, 개인위생관리 간의 관계 연구)

  • This study was designed to analyze the relationship between food hygiene cognition, food hygiene attitude and personal hygiene control of high school students using a structural equation model. For verification analysis, a total of 1,214 individuals (excluding un-collected and insufficient questionnaires) were analyzed by distributing 30 questionnaires per grade at 16 high schools in Chungcheongnam do from July 16 to October 15, 2015. The factorial capacities showed how well each measurement parameter reflected a potential variable (food hygiene cognition, food hygiene attitude and personal hygiene control) based on a significance of 0.001. This can be interpreted that each individual measurement variable reflects the potential. In addition, correlations among potential variables have all been shown to be static at a significance of 0.01. Evaluation of the pathway factors of the structural model from food hygiene cognition to food hygiene attitude (${\beta}=0.753$) and from food hygiene attitude to personal hygiene control (${\beta}=0.840$) revealed significant static effects. Overall, the results showed that food hygiene cognition affects food hygiene attitude, which subsequently affects personal hygiene control. The results of this study suggest that food hygiene cognition does not directly enhance personal hygiene control, but that it can improve food hygiene attitude, which can in turn increase personal hygiene control.

  • This study is to investigate the knowledge and attitudes of personal hygiene impact on practices of lactating women in Senegal by applying the Health Belief Model. The subjects were 217 lactating Women aged between 15 and 35 in Dakar, Senegal. Data collected from December 2 to 8, 2017. This study used structured questionnaires and all collected were analyzed using SPSS/WIN 22.0 and AMOS 21.0. Data were analyzed with real numbers, percentages, means, standard deviation, t-test, ANOVA, and path analysis. The results of path analysis, personal hygiene knowledge, perceived sensitivity, perceived severity, perceived threats, perceived benefits, and perceived disabilities are factors that influenced personal hygiene practices, accounting for 87.7% in the practices variance of personal hygiene.

Evaluation of Perception for Foodservice Hygiene by Middle School Students in Busan (부산지역 일부 중학생의 학교급식 위생에 대한 인식 평가)

  • The purpose of this study was to evaluate the importance and performance of middle school foodservice hygiene in Busan. In this study, questionnaires were administered to 1,000 students consisting of 100 students in 10 middle schools in Busan in December, 2013. The students assessed importance and performance of personal hygiene as 3.81 and 3.60 on a scale of 5.00, respectively. Males gave higher scores to importance and performance of personal hygienic than females. First grade students gave significantly higher scores than 2nd and 3rd grade students to importance and performance of personal hygienic. The mean scores of importance of foodservice hygiene were 4.47 for food hygiene, 4.25 for equipment hygiene, 4.23 for employee hygiene, and 4.19 for environment hygiene. For importance of foodservice hygiene, females gave significantly (P<0.001) higher scores than males. However, male gave significantly higher scores than females for performance of foodservice hygiene. The importance and performance grid showed important factors for personal and foodservice hygiene. 'Hand washing before eating the meal' for personal hygiene and 'cleanliness of tray' for foodservice hygiene showed the highest importance and lowest performance scores. Foodservice hygiene can be improved through customized education of students regarding meal service and food hygiene, equipment hygiene, and environment hygiene.

Importance and Performance of High School Foodservice Hygiene in Busan (부산지역 일부 고등학생의 급식 위생 중요도 수행도 평가)

  • The objective of this study was to explore hygiene issues by analyzing the importance and performance of personal and school hygiene in school foodservices. Questionnaires were administered to 634 students (10 high schools) in the Busan area. Exactly 29% of respondents had received hygiene education. The average score of importance of students' personal foodservice hygiene was 3.81/5.00, and the performance score was 3.48/5.00. The same scores for school foodservice hygiene were 4.37/5.00 and 3.67/5.00, respectively. Regarding importance and performance of personal foodservice hygiene, students who had received hygiene education showed significantly (P<0.01) higher scores than those without prior education. In terms of importance of school foodservice hygiene, students who had received hygiene education showed significantly higher scores for environment hygiene (P<0.05) and equipment hygiene (P<0.05). Additionally, among grid analysis in personal foodservice hygiene, the areas of high importance and low performance included 'washing hands before the meal', 'using a designated cup for the water purifier', and 'keeping clean around the leftover container'. As for school foodservice hygiene, the same area was 'cleanliness of tray'. These findings suggest that hygiene education needs to be extended to more students, and for school foodservice hygiene, a cleaner environment should be created using equipment hygiene management, including emphasis on ensuring cleanliness of tray.

  • The purpose of this study is to know the status of management of nosocomial infection and to present basic data for improving management of nosocomial infection. As a result, the average score of the recognition and performance of radiologist on the management of hand washing is 4.378, and 4.199 of 5. The average score of the recognition and performance of radiologist on the management of personal hygiene is 4.284, and 3.990 of 5. The recognition of hand washing management according to the general character, statistically significant difference according to the gender, age, education, career. In the performance is statistically significant difference according to the gender, marriage situation. In the recognition of personal hygiene management according to the general character, statistically significant difference according to the age, education, career. Performance of statistically significant difference according to the marriage situation, career. Finally, statistically significant difference between recognition and performance of radiologists on management of hand washing(r=0.453, p=0.000) and personal hygiene(r=0.415, p=0.000).

A Study on the Actual Condition of Food Hygiene Safety Awareness, Food Hygiene Attitude, and Personal Hygiene Control of Male and Female college students in South Chungcheong Province (충남지역 남녀 대학생의 식품위생안전인식, 식품위생태도, 개인위생관리에 대한 실태조사 연구)

  • This study aims to provide basic data for food hygiene safety education by surveying the status of food hygiene safety awareness, attitude, and personal hygiene control of male and female college students in South Chungcheong Province, Republic of KOREA. From May 16 to June 30, 2019, 1,048 survey responses were collected at H University and analyzed statistically using SPSS 23.0. This study found males believed agricultural, livestock, and fisheries products (3.37, 3.08), and processed foods (3.40, 3.00) to be significantly safer, and information on food safety was easier to obtain (3.40, 3.00) than females. They were also more confident in choosing safe food (3.30, 2.97), than females. This indicates that males are more aware of food hygiene safety than females. On the other hand, females responded that they checked the expiration date (4.11, 4.40) and stored food according to characteristics (4.08, 4.30) than males, wash their hands after using the toilet(4.23 4.53) than males. This suggests that females were more aware of food hygiene attitudes and personal hygiene control than males. According to this study, college students' awareness of food hygiene safety and attitude, personal hygiene control showed a gender gap. Males had higher food hygiene safety awareness than females, but their awareness of food hygiene attitudes and personal hygiene control was lower. This suggests that differentiated food hygiene safety education is needed considering these gender differences.

A study on dental hygiene management for mentally retarded person's oral health care of life rehabilitation teacher (지적장애인의 구강건강관리를 위한 생활재활교사의 치위생 중재에 관한 연구)

  • This study examined living rehabilitation teachers of disability facilities in Kyungkido to determine the status of the personal and oral hygiene of the disabled. The results are as follows. First, the personal hygiene of residential disabled people was positively correlated with voluntary toothbrushing, recognition of the importance of toothbrushing, and finding of their own toothbrush. Second, the difficulties related to the oral hygiene practice of residents with disabilities were found to be carrying out abnormalities in their toothbrush and oral examinations at dental medical institutions. In addition, in the spontaneous performance, they did not do well in gum massage and in restraining sugary foods. Third, voluntary toothbrushing was positively correlated with training on toothbrushing, and toothbrushing for more than 3 minutes and the rolling method toothbrushing were positively correlated with the supplement of oral health materials. Therefore, a dental hygiene management program is required continuously for living rehabilitation teachers and the disabled.
