Quality Attributes of Whole Soybean flour Tofu Affected by Coagulant and Theirs Concentration (응고제 종류와 농도에 따른 전지대두분 두부의 품질)

  • To investigate the textural and physical characteristics of WSF(whole soybean flour) tofu affected by coagulant and its concentration, $CaCl_2$, $CaSO_4$, $GDL(glucono-{\delta}\;lactone)$, $MgCl_2$, and some mixed coagulants were used in this study. Yields of WSF tofu coagulated with $CaSO_4$ and GDL were ranged 4.3-4.5(g/g WSF), but common tofu was 2.2-3.0(g/g soybean). As the water addition ratio increased, L and a value were increased while heating time increased, b value increased. L value of WSF tofu was lower and b value was higher than conventional tofu and 4 commercial tofus. Kinds of coagulant and its concentration significantly affected to textural properties of WSF tofu. As the concentration of coagulant increase, the hardness increased in most all coagulants. WSF tofu coagulated with $CaSO_4$ and GDL recorded low hardness and adhesiveness, and high springiness among the used coagulants at the same concentration. As the hardness increased, the gumminess and chewiness increased in most all coagulants. As coagulation temperature and molding pressure increase, hardness also increased. WSF tofu coagulated with 0.3% $CaSO_4+GDL$ was the most similar in the textural properties with conventional tofu and 4 commercial tofus. WSF tofu coagulated with 0.3% of $CaSO_4+GDL$ at $85^{\circ}C$, 10 times water addition, 5min. heating and $25.0g/cm^2$ molding pressure recorded the highest score in the sensory evaluation.

Effects of Dietary Seaweed on Blood Glucose, Lipid and Glutathione Enzymes in Streptozotocin-Induced Diabetic Rats (미역첨가 식이가 당뇨 유발쥐의 혈청지질과 혈당 및 항산화 효소에 미치는 영향)

  • The purpose of this study was to investigate the effect of dietary seaweed in diabetic rats treated with streptozotocin (STZ) for 7 weeks. The rats (Sprague-Dawley male rats, 180∼200 g) were divided into 4 groups : normal rats fed control diet (C), diabetic rats fed control diet (CD), normal rats fed seaweed diet (M), and diabetic rats fed seaweed diet (MD). Diabetes was induced by single injection of streptozotocin (60 mg/kg, i.p.). Urinary levels of calcium and uric acid, and blood levels of hemoglobin, total cholesterol and low density lipoprotein (LDL)-cholesterol were not significantly different among groups. But high density lipoprotein (HDL)- cholesterol of M and MD groups were higher than that of C and CD groups. Activity of hepatic microsomal G6Pase was significantly (p<0.05) lower in C and M groups than that of CD and MD groups. Hepatic glutathione S-transferase (GST) of M, CD and MD groups were significantly lower than C group (p<0.05), glutathione peroxidase (GPX) of C, M and MD groups were higher than CD group. In conclusion, dietary seaweed may improve blood lipid profiles and GSH-related enzymes in STZ-induced diabetic rats.

Breeding for Spray Carnation 'Lepus' of White Color with Red Edge (적색 피크변의 백색계 스프레이 카네이션 '레퍼스' 육성)

  • A new spray carnation 'Lepus' was released by the National Institute of Horticultural & Herbal Science in 2004. This hybrid was crossed between 'Diamond' and '99257-7 Line' in 2000. The 269 seedling plants were, planted and cultivated in green house. After investigation of the characteristics for four years (from 2001 to 2004), it was finally selected in 2004. 'Lepus' white color with red peak edge is spray type and strong flower stalks. Also, it has medium fragrance, many flowers, and attractive flower arrangement. In particular, flowering was 10 days early and flower stalk was 13cm longer than 'Diamond' (control). In addition, it has medium resistance of Fusarium and the vase life was similar to 'Diamond'.

  • Despite the simplicity of processing, a conventional autocorrelation function (ACF) method for the precise determination of fetal heart rate (FHR) has many problems. In case of weak or noise corrupted Doppler ultrasound signal, the ACF method is very sensitive to the threshold level and data window length. It is very troublesome to extract FHR when there is a data loss. To overcome these problems, the high resolution pitch detection algorithm was adopted to estimate the FHR. This method is more accurate, robust and reliable than the ACF method. With a lot of calculation, however, it is impossible to process real time FHR estimation. This paper is presented a new FHR estimation algorithm for real time processing and studied the real time FHR monitoring system by high resolution pitch detection algorithm.

Fluid dynamical characteristics of microencapsulated phase change material slurries (미립잠열슬러리의 유체역학적 특성연구)

  • An experimental study was peformed to measure the viscosity of microencapsulated PCM slurries as the functions of its concentration and temperature, and also influence to its fluid dynamics. For the viscosity measurement, a rotary type viscometer, which was equipped with temperature control system, was adopted. The slurry was mixed with water and Sodium Lauryl Sulphate as a surfactant by which its suspended particles were dispersed well without the segregation of particles during the experiment. The viscosity was increased as the concentration of MicroPCM particle added. The surfactant increased 5% of the viscosity over the working fluid without particles. Experiments were proceeded by changing parameters such as PCM particles'concentration as well as the temperature of working fluid. As a result, a model to the functions of temperature for the working fluid and its particle concentration is proposed. The proposed model, for which its standard deviation shows 0.8068, is agreed well with the reference's data. The pressure drop was measured by U-tube manometer, and then the friction factor was obtained. It was noted that the pressure drop was not influenced by the state of PCM phase, that is solid or liquid in its core materials at their same concentration. On the other hand, it was described that the pressure drop of the slurry was much increased over the working fluid without particles. A friction factor was placed on a straight line in all working fluids of the laminar flow regardless of existing particles as we expected.

The Analysis on the Effect of Supply Air Velocities by Location of Supply Air Damper on the Performance Efficiency of the Smoke Exhaust Systems (공기유입구 위치에 따른 유입공기의 풍속이 배연시스템 성능효율에 미치는 영향 연구)

  • In smoke control systems the amount of air supply is almost the same as that of smoke exhaust. This study analyzed the effect of supply air velocity on the smoke exhaust behavior using FDS tool. The results showed that fire plume can be disheveled by the rapid air velocities developed when the air supply inlet is located near the fire plume. Disheveled smoke caused the rapid descent of smoke layer level and the reduced visibility. To increase the efficiency of smoke exhaust systems supply air inlet should be located sufficiently far from the location of the fire plume.

Compatibility Test of the Capsule with Cone Shape Bottom Guide Structures to the HANARO Reactor (원추형 하단부 구조를 갖는 캡슐의 하나로와의 양립성시험)

  • The design modification of bottom guide structures of the instrumented capsule, which is used for the irradiation test in the HANARO reactor, was required because of the trouble of the bottom guide arm's pin during irradiation. The previous structure with 3-pin arms was changed into the cone shape of one body. The specimens of the bottom end cap ring with three different sizes (${\Phi}68/70/72mm$) were designed and manufactured. The out-pile tests for the capsule with previous and new three bottom guide structures were performed in the one-channel flow test facilities. In order to evaluate the compatibility with HANARO and the structural integrity of the capsule, a loading/unloading, a pressure drop, a thermal performance, a vibration, and an endurance test were conducted. From out-pile test results, the capsule with the cone shape bottom guide structures was found to be more stable than the previous structure and the optimized size of the bottom guide structure selected was 70mm in diameter. It is expected that the new bottom guide structures will be applicable to all material and special capsules which will be designed and manufactured for the irradiation tests in the future.

  • 본논문은 TCP/IP를 사용하는 기존의 LAN상에 이동 호스트들이 셀의 형태로 덧붙여진 환경에서 이동 호스트와 고정 호스트간의 지속적인 세션을 지원하는 개선된 IP 체계인 SIMIP을 제안하였다. 이동형 프로토콜 설계시 라우팅 최적화가 매우 중요한 항목이고 이는 이동 호스트의 위치정보 관리방법과 직접적인 관계가 있다. 기존의 아이비엠과 마쓰시다 제안은 이를 집중화하였으며 콜롬비아와 소니제안은 이를 분산화하였다. MH 위치정보를 집중화하면 트라이앵글 문제로 인해 최적의 라우팅 경로를 지원할 수 없으며 집중화된 라우터의 실패 발생시는 위험도가 매우 크다. 반면에 분산화하면 위의 문제들은 해결되지만 캡슐화되는 주소를 찾기위해 CACH 또는 AMT와 같은 복잡한 기법이 요구된다. SIMIP은 MH위치정보를 DMR에 집중화하였으나 DMR 실패 발생시는 복수의 GMR중에서 하나가 자동적으로 DMR로 대체되어 위험도를 최소화시켰고, 'DMR 경로변경'에 의해 최적의 라우팅 경로를 지원하였다는 점에서 다른 제안들과 차이가 있다. 이동에 따른 주소변경을 해결하기 위해 가상네트워크 기법을 적용하였고, 이동 호스트로의 데이터 송신시 디폴트 라우팅 개념을 이용하였고, 이동라우터간 터널링에 IPIP 캡슐화를 사용하였다. SIMIP은 다른 제안에 비해 실용성있고, 신뢰성이 강하며, 구현이 용이하므로 산업계에서 활용가치가 있으리라본다.

  • There is a many way of LPRE throttling methods, high-pressure-drop systems, dual-manifold injector, gas injection, multiple chambers, pulse modulation and movable injector components. Especially dual-manifold injector is essentially combines two fixed-area injectors into a common structure, with independent feed systems controlling flow to each injector manifold. In this paper, using indirect photography and liquid film thickness measurement with various injection pressure and tangential entry diameter to decide stability of spray over a wide thrust range in dual manifold injector.

Quality Properties of Baechu kimchi treated with Black Panax ginseng Extracts during Fermentation at Low Temperature (흑삼추출액을 첨가한 배추김치의 저온 저장 중의 품질 특성)

  • To develop a new functional kimchi with cognition-enhancing properties, black Panax ginseng extract (0.5-5%, w/w) was added to a baechu kimchi preparation and the mixture stored at $4^{\circ}C$ for 30 days. Compared with control kimchi, the L values of ginseng-treated material were significantly decreased, but the a and b values were increased. The hardness value of ginseng-treated kimchi was significantly higher than that of control material from the $20^{th}$ day of storage. The edibility period of baechu kimchi treated with ginseng was prolonged by approximately 15 days compared with control kimchi. This resulted from decreases in the numbers of lactic acid bacteria and yeasts during the final stages of fermentation in ginseng-treated material. Inhibition of acetylcholinesterase activity by ginseng-treated kimchi was 2-fold higher than that of control material. A strong ginseng flavor and a bitter taste were evident in kimchi treated with 5% (w/w) ginseng, and sensory quality was thus decreased compared with control material. It was concluded that an appropriate concentration of black ginseng extract was 3% (w/w) in preparation of kimchi with a cognition-enhancing effect.
