Preparation of Minimally Processed Mulberry (Morus spp.) Juices (최소가공기술을 이용한 오디 과실주스의 제조)

  • Raw mulberry (Morus spp.) juice was prepared by minimal processing using several filter aids, fining agents, and clarifying enzymes, followed by filtration, centrifugation, and membrane filtration. Control of browning in minimally processed mulberry juices by anti-browning agents, sodium hydrosulfite, L-ascorbic acid, citric acid, and NaCl, was investigated using quantitative measurements of color changes during storage. Clarification of mulberry juice was improved by adding several filter aids, fining agents, and enzymes, followed by filtration and centrifugation. Several fining agents, including chitosan, chitin, PVPP, gelatin, and casein at a concentration of 1%, and combination of ultrafiltration and centrifugation at 8,000 rpm were not suitable for clarification of juice owing to strong adsorption of anthocyanin pigment. Combination of $0.01\;{\mu}m$ membrane filtration and centrifugation at 8,000 rpm was effective for clarification of mulberry juice. Browning of minimally processed mulberry juice was inhibited significantly by adding 200 ppm sodium hydrosulfite, and 0.1% L-ascorbic acid (L-AsA) and 0,1% citric acid (CA) also showed considerable browning inhibition. Combination of L-AsA and CA, which was moderately effective for browning inhibition of juice, may be useful as a sulfite alternative for mulberry juice. Optimum sugar ($^{\circ}Brix$)/acid ratio and commercial sterilization of minimally processed mulberry juice were approximately 40 and 10 min at $85-90^{\circ}C$, respectively.

Quality Characteristics of Fresh-cut Potatoes with Natural Antibrowning Treatment during Storage (천연 갈변저해제를 처리한 신선절단 감자의 저장 중 품질특성)

  • Surface browning, caused by cutting and other wound during minimal processing, is very important quality criterion to consumers. Shelf-life of fresh-cut potatoes was extended using natural antibrowning treatments. Fresh-cut potatoes dipped with licorice and green tea extracts were packed with LDPE film and stored at $4^{\circ}C$ for 14 days. Quality characteristics of fresh-cut potatoes were investigated during storage. During storage, L value decreased and PPO activity increased. PPO showed the lowest activity at around 7 days storage, during which browning was effectively inhibited in licorice- and green tea extract-treated potatoes. Total phenol and chlorogenic acid contents increased for 7 days. Results suggest natural licorice extracts with ascorbic acids are effective antibrowning agents for maintaining quality of fresh-cut potatoes.

Effects of Antioxidative Activities and Antibrowning of Extracts from Onion, Apple and Mandarin Orange Peel as Natural Antibrowning Agents (천연 갈변 억제제 개발을 위한 양파, 사과 및 감귤 과피 추출물의 항산화 및 갈변 저해 효과)

  • This study was carried out to investigate antioxidative properties of various extracts and antibrowning effects of extracts in apple slices were investigated by ${\Delta}E$ value and PPO relative activity. Apples were cut into 1.5 cm thickness and they were dipped in 1% extract solutions(OW: water extracts of onion, OE: 80% EtOH extracts of onion, AW: water extracts of apple, AE: 80% EtOH extracts of apple, MW: water extracts of mandarin orange peel, ME: 80% EtOH extracts of mandarin orange peel) for 1 min. OW showed higher than the other treatments for total phenolic contents(94.35 mg/g), PPO inhibition(74.00%). And the highest DPPH free radical scavenging activity(40.27%) measured in ME. ${\Delta}E$ value of apple slices dipped in MW was 2.37 whereas ${\Delta}E$ value of apple slices dipped in AW was 12.12. These results suggest that onion and mandarin orange peel extracts should be a potential source for controlling browning during storage of apple slices.

Browning Inhibition Effect of the Atractylodis Rhizoma Alba Extract and L-cysteine Combination on Agaricus bisporus (백출 추출물과 L-cysteine의 병용처리가 양송이버섯의 갈변억제에 미치는 영향)

  • This study investigated that anti-browning effects of Atractylodis Rhizoma Alba extract and L-cysteine combination. Mushrooms were dipped in solutions (0.1% Atractylodis Rhizoma Alba extract containing 0.05% L-cysteine) for 3 min. The dipped mushrooms were packaged in a polystyrene (PS) tray and wrapped with a polyvinyl chloride (PVC) film, and stored for 14 days at $10^{\circ}C$. The browning inhibition activity (Hunter L, a, b color scale and tyrosinase inhibition activity) and quality changes (weight loss rate, gas composition, firmness and sensory evaluation) were analyzed during storage period. After 14 days, the Hunter L and ${\Delta}E$ value of mushrooms treated in 0.1% Atractylodis Rhizoma Alba extract containing 0.05% L-cysteine were 87.24 and 5.56, respectively. The mushrooms treated with 0.1% Atractylodis Rhizoma Alba extract containing 0.05% L-cysteine also showed higher firmness (13.31 N) and smaller weight loss rate (2.87%) than the untreated mushroom (11.42 N, 3.04%) on storage day 14. During storage period, the sensory evaluation showed that overall acceptability of mushrooms treated with 0.1% Atractylodis Rhizoma Alba extract containing 0.05% L-cysteine were higher than those of the untreated mushrooms, except those that were stored for five days. Overall, the mushrooms treated with 0.1% Atractylodis Rhizoma Alba extract containing 0.05% L-cysteine had a higher tyrosinase inhibition activity than the untreated mushrooms during storage period. This study suggests that the browning of the mushrooms treated with 0.1% Atractylodis Rhizoma Alba extract containing 0.05% L-cysteine solution were inhibited, and the that their shelf life was extended.

Fresh-cut peach의 선도 유지제의 탐색

  • 복숭아는 절단 후 표면의 갈변현상이나 당도 저하 등이 발생하여 신선편이 식품화시 품질열화의 원인이 된다. 이에 본 실험에서는 일차적으로 유명 품종에 한해 fresh-cut peach의 anti-browning chemicals를 탐색하고, 그 결과를 통해 이차적으로 효과가 우수한 chemicals를 선정하여 백향 품종에 농도별 실험을 행하였다. 유명 품종을 반으로 절단한 후 제핵하고 8등분하여 1% ascorbic acid, 1% sodium chloride, 1% sodium ascorbate monohydrate, 0.005% 4-hexylresorcinol 용액에 3분간 침지시켜 draining한 후, PP tray에 담고 PP film으로 밀봉하여 4$^{\circ}C$에서 저장하였다. 가용성고형분은 to sodium chloride 용액으로 처리한 구에서 가장 높게 유지되었고 pH 또한 비교적 일정하였으며, 1% sodium chloride과 1% sodium ascorbate monohydrate 용액으로 처리한 구의 L값이 높게 유지되었다. 따라서 fresh-cut peach에 효과가 있는 것으로 판단되는 이 두 chemicals의 농도별 용액을 조제하여 같은 방법으로 백향 품종의 갈변저해제로서 처리하였다. 그 결과 2% sodium chloride의 가용성고형분이 가장 높게 유지되었으며 2% sodium ascorbate monohydrate 다음으로 2% sodium chloride 용액 처리구의 L값의 변화 양상이 가장 양호한 것으로 나타났다. 따라서 종합적으로 살펴볼 때, 2% sodium chloride 용액의 처리가 fresh-cut peach의 품질 변화 억제에 적합하다고 판단되었다.

가공반찬류의 저장성 향상을 위한 천연 항균복합제재의 처리효과

  • 식품조리 및 가공은 만들어진 제품의 저장성을 전제로 해야 하기 때문에 식품의 변화 혹은 변질에 깊은 이해를 바탕으로 모든 처리와 가공 방법이 검토되어야 한다. 식품의 변질이나 부패는 미생물 작용에 의한 변질이 그대부분을 차지하고 있으며 미생물학적 변질을 방지하기 위해서 화학적 합성보존 제가 상업적으로 사용되고 있으나 최근 소비자의 건강 지향적 욕구가 증대됨에 따라 인공합성품의 기피현상이 두드러지고 있다. 따라서 천연 항균물질의 개발과 이용은 인공 합성보존제의 대처라는 의미와 소비자기피현상을 유발시키지 않으면서 각종 가공식품의 저장성 향상 및 저온 유통식품의 안정성확보라는 견지에서 그 중요성이 있다. 본 실험에서는 식품의 미생물작용에 의한 변질의 저해 효과가 뛰어난 식물성천연항균제품(Botanical antimicrobial agents-Citrus product : 이하 BAAC라 칭함)에 천연보조제(Ginseng extract, Aloe, 매실추출물)를 첨가하여 Paper disk법에 의한 항균성 검사를 실시한 결과 Ginseng extract를 첨가한 경우 생육저해환이 가장 크고 뚜렷하게 나타났다. 따라서 BAAC에 보조제 (Ginseng extract)를 첨가하여 제조 된 천연 항균복합제재(이하 BAAG라 칭함)를 가공 반찬류인 마늘종 무침과 돈육장조림에 첨가하여 처리한 후 꺼내어 상온에서 저장하면서 주사전자현미경 관찰, 대장균수, 총균수의 변화, 외관상의 변화에 미치는 영향을 무처리 대조구와 비교하면서 조사하였다. 주사전자현미경 촬영사진의 결과 분석을 통하여 BAAG를 처리한 균체 세포는 세포막 및 세포벽 기능이 파괴되어 세포내용물이 균체외부로 유출되어 균체의 생육이 억제되며 성장을 저해 또는 사멸시키는 것으로 나타났다. 대장균수는 모든 처리구에서 BAAG의 첨가에 의해 성장이 억제되었으며 농도가 증가시킬수록 균증식 억제 효과가 뚜렷하였으며, 총균수도 압도적으로 낮은 값을 보여주었다. 외관상의 변화와 상품 가치를 측정한 결과는 무늘 종 무침과 돈육장조림의 대조구에서는 4일 경과후 강한 부패취와 아울러, 표피의 갈변정도가 심하되어 관능적으로 부패상태를 인지할 수 있었으며 7일경과 후부터 점질성 갈변물질이 생성되어 상품가치가 크게 떨어진 상태였다. 이와 같은 결과로 볼 때, BAAG의 처리는 BAAC의 경우보다 가격은 저렴하면서도 항균력은 우수한 천연 항균복합제재로써 가공 반찬류의 저장성을 최대한 연장 할 수 있음을 확인 하였고, 반찬류뿐만 아니라 여러 식품군에 다양하게 적용가능 할 것으로 기대된다.

Quality Changes of Minimally Processed Lotus Root (Nelumbo nucifera) with Browning Inhibitors (갈변저해제 처리에 따른 최소가공 연근(Nelumbo nucifera)의 품질 변화)

  • Minimally processed lotus root was stored at 4$^{\circ}C$ followed by dipping in distilled water, 3% ascorbic acid, 1% citric acid, 1% acetic acid, 1% EDTA, 2% lactic acid and 3% malic acid. The weight loss, color, soluble solids, pH, vitamin C and sensory characteristic were measured during storage period. The rate of weight loss decreased in the minimally processed lotus root. ΔL was changed slightly after 1 week storage and 1% acetic acid and 1% EDTA especially retarded a little retardation in browning during storage. Soluble solids was changed slightly, but decreased after 2 week storage in lotus root treated with 2% lactic acid and 3% malic acid. pH increased but vitamin C decreased during storage. The organoleptic quality of lotus root treated 1% EDTA showed the best by sensory evaluation.

Inhibition Effect against Tyrosinase of Condensed Tannins from Korean Green Tea (한국산 녹차로부터 분리한 축합형 탄닌의 tyrosinase 저해효과)

  • For the utilizing of tannins in the functional foods and natural inhibitor against browning reaction by tyrosinase in foods, inhibition effect against tyrosinase of tannins from Korean green tea was determined. Acetone extract from Korean green tea showed inhibition effect against tyrosinase. The gallocatechin compounds showed higher inhibition effect than the catechin compounds. In terms of stereo isomers, (-)-epicatechin compounds had higher inhibition effect than the (+)-catechin compounds. The monomer had higher inhibition effect than the dimer.

Effect of Application of Rice Bran Extract on Quality of Agaricus bisporus during Storage (쌀겨추출물을 적용한 양송이의 저장 중 품질 변화)

  • Postharvest browning of mushroom (Agaricus bisporus) reduces the shelf life of harvested mushrooms. Here, mushrooms were dipped in various solutions (distilled water; DW, 0.25% rice bran extract; RB, 0.1% ascorbic acid; AA, RB + AA) for 3 min. After air-drying at room temperature, the dipped mushrooms were packaged in a polypropylene (PP) films and stored at 4 or $15^{\circ}C$. The quality changes of mushrooms were measured in terms of color, gas composition, firmness, and sensory evaluation during storage. Rice bran extract was measured for total polyphenol content, total flavonoid content, DPPH, ABTS radical scavenging, chelating activity and PPO inhibition activity. No difference in firmness were found in the mushroom samples regardless of dipping solution or storage temperature. At both 4 and $15^{\circ}C$ storage temperatures, RB + AA solution-dipped samples showed the highest L value and lowest delta E value. During the storage period, sensory evaluation showed that overall acceptability of mushrooms treated with RB and RB + AA solution was higher than that of the untreated mushrooms. Total polyphenol and flavonoid contents of 0.25% rice bran extract were $36.42mg\;GAE{\cdot}g^{-1}$ and $4.85mg\;QE{\cdot}g^{-1}$, respectively. The DPPH and ABTS radical scavenging activity of 0.1% ascorbic acid was higher than that of 0.25% rice bran extract. The highest copper ($Cu^{2+}$) chelating activity was found in the 0.25% rice bran extract. The PPO inhibition activity of 0.1% ascorbic acid was higher than that of 0.25% rice bran extract. Our results suggest that 0.25% rice bran extract with 0.1% ascorbic acid is effective anti-browning agent for maintaining quality of Agaricus bisporus during storage.

Extraction Characteristics and Browning Inhibitory Effects of Fresh Garlic by Microwave-assisted Extraction (마늘의 마이크로웨이브 추출 특성과 갈변억제 효과)

  • Oleoresin was extracted from fresh garlic by microwave-assisted extraction (MAE) and its functionality and antibrowning effect were investigated at various extraction conditions. The yield and polyphenol contents of the garlic oleoresin were inversely related to extraction time. The highest yield was l2.9% and maximum polyphenol contents was 574.3 mg% when the oleoresin was extracted for 5 min with ethanol. Apparently, the electron donating abilities of garlic oleoresin increased with extraction time, but there were no significant differences among extraction time intervals. The highest nitrite scavenging effect was found at pH 1.2 and decreased as pH increased. Tyrosinase inhibitory effect was less than 30% for most garlic oleoresin but the 15 minute extraction with ethanol resulted in higher inhibitory effect. Angiotensin I-converting enzyme (ACE) inhibitory effect was highest (89.2%) when oleoresin extracted with ethanol for 20 min. The addition of cysteine, ascorbic acid and citric acid to oleoresin extracts retarded browning action of garlic oleoresin during 10 day storage. 0.1 % cysteine retarded browning reaction and some synergistic effect was found in the combination of citric acid and ascorbic acid.
