To investigate the optimal salting conditions, the physicochemical properties of Dolsan leaf mustard were compared under various salting times and using various washing methods and storage temperatures at 10% saline. On the other hand, the cell number of lactic-acid bacteria in Dolsan leaf mustard salted under the optimal conditions was also examined during the 50-day storage. The results of the sensory evaluation of the crispness value of the Dolsan leaf mustard treated with stepwise washing after 8h salting showed the optimal conditions for long-term preservation. The pH of the salted Dolsan leaf mustard decreased with the increase in the lactic-acid bacteria during the storage at $4^{\circ}C$. The cutting energy slowly increased during the storage, but the cutting energy of the salted Dolsan leaf mustard treated with stepwise washing remained at the initial values. The color of the salted Dolsan leaf mustard did not change during 40-day storage, but the mustard turned brown after 50-day storage, for which reason it could not be made into Dolsan leaf mustard kimchi. These results could be recommended as the optimal salting conditions and storage time of salted Dolsan leaf mustard for making kimchi.
This study was carried out in order to investigate sterilization effect and to extend storage periods of the Rubus coreanus by treating with tap water (TW), electrolyzed water (EW) and aqueous chlorine dioxide ($ClO_2$). After each treatment plot was soaked with 10, 50, 100, 200 ppm in each sterilizing solution within 30 sec, each treatment was compared during the storage time at room temperature and refrigerator temperature. As results of total plate count according to temperatures and periods, the microbial sterilizing power of each treatment plot was bigger at EW and $ClO_2$ treatment plots than the TW treatment plot; however, it sharply increased on the high concentration $ClO_2$ treatment plot. Futhermore, the cold storage treatment plot had more outstanding microbial sterilizing power than the room temperature treatment plot. As a result of observing the surface of the Rubus coreanus using scanning electron microscope (SEM), no microbe was seen in EW and $ClO_2$ treatment plot. The results of measuring enzyme activity showed a more significant decrease in EW and $ClO_2$ solutions treatment plot than TW treatment plot but gradually increased with time. The contents of total polyphenol revealed similar values on each treatment. The EW and $ClO_2$ treatment of the Rubus coreanus could be considered as good methods for inhibiting microbial growth in fresh vegetables and fruit, thereby contributing to quality maintenance.
The objectives of this study were to analyze environment in the forest and growth characteristics for investigating the characteristics of Robinia pseudoacacia distribution in a Pinus thunbergii forest at the coast. As a result of analyzing inhibitory factors of Robinia pseudoacacia distribution in a Pinus thunbergii forest at the coast, it is considered that the salt level included in a sea wind is supposed to be the primary factor of the slow growth for Robinia pseudoacacia since brown leaves, wilting and early leaf fall have appeared in the 0m spot from the artificial dune which has the high salt level. However, the soil properties and light environment hardly have a effect on the growth of Robinia pseudoacacia because there is no difference among planting places. Also, the growth ring of the horizontal root in 2year individuals 0.1~0.2m away from the dune have been formed for 1 year only as a consequence of analyzing growth rings of Robinia pseudoacacia growing on the coast. It can be infered that the nourishment of the horizontal root from individuals growing on the coast have been provided for the first 1 year only. It is estimated that, in case of the nearby areas on the coast, it is not enough to provided nourishment to the horizontal root due to obstructing the growth of new individuals by a sea wind, so the growth of the horizontal root would be hampered. Therefore, it is considered that impedient Robinia pseudoacacia distribution in a Pinus thunbergii forest at the coast is caused by making no growth of new horizontal roots and newborn individuals.

In order to make a functional jam containing garlic, sugar, acid and pectin were mixed with garlic and concentrated by heating the mixture under atmosphere or vacuum conditions. And changes of some physico-chemical properties of the garlic jam(i.e., color, textural properties, vitamin C) were investigated during storage at $30^{\circ}C$. It was found that lightness(L) was higher in sample of vacuum concentration than that in atmosphere concentration and redness(a) and yellowness(b) were higher in sample of atmosphere concentration. During the storage lightness was found to decrease for all samples with more drastic decrease in sample of atmosphere concentration where browning was more severely observed after 8 weeks of storage. In terms of textural properties, hardness, chewiness and gumminess were higher in sample of atmosphere concentration than that in vacuum concentration. And springiness and cohesiveness were higher in sample of vacuum concentration. Although sensory score for garlic jam found to be lower than that for the existing strawberry jam, the present garlic jam might have high marketability if considering its physiological value.

This study was carried out to develop a new method of cultivation of 'Hwadam' a new variety of Lentinula edodes, to improve fruiting body productivity and reduce labor. To determine the optimum filter number for box cultivation, L. edodes were assessed for their cultural characteristics and mushroom yield. During spawn running of L. edodes in the box, the temperature gradually increased to the highest value of 25.8℃, 23.7℃, and 23.0℃ on day 18 for the four filter, two filter, and no treatment groups, respectively. Oxygen concentration displayed an opposite trend to carbon dioxide concentration, reaching the lowest value on day 21. The oxygen concentration progressively increased as more filters were used (5.4%, 8.2%, and 8.9% treatment with no, two, and four filters, respectively. Growth of L, edodes in the box resulted in the highest yield (2,228 g/7kg substrate) and biological efficiency (70.7%) using four filters. The biological efficiency of the four filter treatment was 29.4% higher compared to bag cultivation (41.3%). Further studies are necessary to verify stable productivity of fruiting bodies through repeated cultivation.
A new oak mushroom cultivar 'Hwadam' was bred from monokaryotic strains of 'GMLE36062' and 'LE15401'. The optimum temperature for mycelial growth of 'Hwadam' on potato dextrose agar was 25℃. The cultivation period of 'Hwadam' lasted for 129 days until the first harvest of the fruiting bodies, including 35 days for spawn run, 84 days for browning, and 10 days for development of fruiting bodies. The fruiting bodies of 'Hwadam' had a hemispherical, brighter pileus and thicker stipe than the control cultivar (Sanjo 701ho). The three-cycle yield of 'Hwadam' was 554 g, which was higher than that of control cultivar (405 g). In addition, 'Hwadam' contained 79.4 mg/g of beta-glucan and 0.93 mg GAEs/g of phenolic compounds, which was similar to that of the control cultivar but higher than that of 'L808' and 'Chujae 2ho'.
The six-year old fresh ginseng harvested at earlier October was stored for 10 weeks in the rendition of 4$^{\circ}C$${\pm}$1$^{\circ}C$ and RH 87∼92%, and the sugar content and the change of color was investigated in an interval of one week by taking sample of it after processed it to red ginseng. The total sugar content was 62.71% before it was stored and was a little reduced to 54.58% after 10 weeks of storage. The reducing sugar content was 11.69% before it was stored and was a little reduced to 9.92% after 7 weeks of storage. For the free sugars, the content of fructose was 0.47% before storage and gradually increased to 4.70% after 10 weeks of storage, and the contents of glucose and sucrose were gradually decreased after they have their peak value of 2.31% and 25.89% at five and three weeks of storage. The content of maltose was 6.62% before storage and it gradually reduced to 1.37% after 10 weeks of storage. The color intensity was generally increased with the storage time, and the total rotor value(ΔE) has its peak value of 8.89 after 9 weeks of storage. For the browning pigment, the absorbance of 420nm and 440nm was increased after 6 weeks of storage. The similar trend was observed at 285nm where the precursor of browning pigment was investigated, however, the change was not observed for the freeze dryed ginseng.
The effects of packaging materials and storage temperature on the quality of dried lotus roots (NelumbonuciferaG.) were studied during 330 days of storage. Using four commercial types of packaging, (PE [polyethylene] film bags, PP [polypropylene] film bags, gunny roll, and paper bags), and four different storage temperatures (-5, 0, 10, and $20^{\circ}C$), changes in moisture content, hardness, color, and sensory qualities of dried lotus roots were investigated. The moisture contents of dried lotus roots stored in PE and PP film bags were higher than those of roots stored in gunny and paper bags. A major difference in moisture content was apparent when roots stored in gunny bags and paper bags were compared. Hue angle values were stable in roots stored in gunny and paper bags at all temperatures. Hardness decreased slightly with increased storage time in PE and PP film bags. Decay rate and marketability of roots stored in PE and PP film bags at $-5^{\circ}C$ were acceptable. The results showed that dried roots packaged with PE and PP were stable in quality, in contrast to roots stored in gunny and paper bags.
As a series of studies on the preservation methods for boiled-dried anchovies, determination of sorption properties and shelf-life prediction were made for the samples. Dried anchovies, which were gamma-irradiated at pre-established dose (5 kGy) after packaging in both a polyethylene film (PE, 0.1 mm) and a laminated film $(nylon\;15\;{\mu}m/polyethylene\;100\;{\mu}m,\;NY/PE)$, were subjected to a quality evaluation during 4 months at different storage conditions, such as $15^{\circ}C/68%\;RH,\;25{\circ}C/75%\;RH,\;and\;35^{\circ}C/84%$ RH. The sample showed 5.47% of BET monomolecular layer moisture content and the corresponding water activity, 0.15. The velocity constants of browning reaction and organoleptic changes in the sample were in proportion to storage temperature, and $Q_{10}$, values were ranged from 2.17 to 2.40 in a given packaging and irradiation conditions. In the shelf-life prediction of the stored sample at $25^{\circ}C$, non-irradiated groups packaged in PE and NY/PE were 84 days and 125 days. While 5 kGy-irradiated groups in the same packaging were 126 days and 138 days, respectively. This finding proved the efficacy of laminated-film packaging and irradiation treatment in preserving the quality of dried anchovies.
This work was to determine the quality changes of milk with respect to the chemical components when HTST pasteurized by microwave energy. Raw milk was HTST pasteurized $(at\;72^{\circ}C\;for\;15\;sec)$ by three methods; by heating in a stainless steel tube immersed in a hot water bath (MP0), by heating in a microwave cavity to a desired temperature and then holding in a hot water bath (MP1) and by both heating and holding in a microwave cavity (MP2). There were no significant differences in pH and titratable acidity before and after pasteurization and among the different pasteurization methods. MP1 or MP2 showed better retention or less destruction than MP0 with respect to vitamin A, vitamin $B_1$, ascorbic acid and lysine content. The higher retention of nutrients of the MP1 or MP2 supports the possibility of using microwave energy for the pasteurization of milk and other fluid food products.
