Sulfites Contents Survey on Dried Marine Products in Market (시판 건 해산물 중 아황산염류 함량 조사)

  • This study was performed to investigate the contents of sulfites in 2, 770 dried marine products in Seoul Chung-Bu market from March to October in 1999. Sulfites of the samples were determined by Zn powder reduction method and Monnier-Williams's modified method. Eight samples of 2, 770 (0.29%) were detected over 30ppm in SO2 contents by Monnier-Williams's modified method. In samples detected over 30ppm, six dried filefishes(130.2~573.4ppm) were imported from Vietnam, same kind of other one(114.2ppm) was from China and the other one Alaska pollack(196.3ppm) was domestic. By Zn powder reduction method, 259 dried marine products (259/2, 770=9.35%) were positive reaction (1-30ppm). These were 93 dried shrimps, 53 filefish meats, 34 dried squids, 33 slices of dried pollacks and 17 sea mussel meats. So sulfites must be use commonly to prevent black spot and preserve for many dried shrimps, filefishes meats, dried squids etc. According to results, the quality test for the imported dried marine products must be reinforced to supply safety food for the citizens.

The Effect of Various Humectants on Equilibrium Moisture Content and Storage Stability of Seasoned Squid (여러가지 보습제가 조미오징어 평형수분함량에 미치는 영향)

  • This study was, firstly, to investigate water holding capacity in terms of variation of moisture sorption isotherms of seasoned squid treated with sodium lactate, glycerol, propylene glycol, sorbitol, mannitol, sodium benzoate, potassium sorbate and calcium propionate, and secondly, the effect of humectant treatments on storage stability was studied. The criteria for storage stability was based on three quality factors, namely, lipid oxiations, color development by non-enzymatic browning reactions and lipid oxidation, and mold growth. The effect of humectants on equilibrium moisture content was in the following increasing order; mannitol < sorbitol < sodium lactate < propylene glycol < glycerol. The experimental data indicated that sodium lactate has, in practice, potentially positive effect on processing of seasoned squid. During the storage period of 60 days, TBA values increased in all samples tested as humectants concentrations increased up to 10%. However, in the range of 1-7% sodium lactate treatment, the degree of lipid oxidation, browning reactions and mild growth were not high enough to affect the quality of seasoned squid, when compared with conventionally manufactured ones.

  • In non-destructive evaluation of free acid content in apples by near- infrared spectroscopy(NIRS), browning and heat treatment of squeezed apple juice affected to the accuracy but titrable alkali concentration did not. The free acid content in apples after harvest was able to determine using different apples in harvest time for calibration making. The result of MLR, multiple correlation coefficient(R) was 0.77 and standard error of prediction(SEP) was 0.03%. The free acid content in apples during storage was able to determine using calibration equation established with stored apples, R was 0.90 and SEP was ca. 0.04%. The prediction accuracy by LAIR was not sufficient for use of quantitative analysis of free acid content in apple, but classification of law and high level in acid content was supposed to be applicable.

  • For the quality management of ginseng root extracts and their products, the effective constituents contents, physical properties (pH, turbidity, viscosity, optical density) and color intenties of the extracts from white ginseng roots of different cultivating years. The sugar contents, lightness and yellow intensity of extracts from white ginseng roots increased with increased their cultivating years. The crude ash contents turbidity and optical density of extracts from white ginseng roots decreased with increased their cultivating years. Therefore, the extracts from white ginseng root of 5 or 6 cultivated years showed higher quality than the extracts from ginseng root of 4 cultivated years.

Influence of Vacuum Cooling on Browning, PPO activity and Free Amino Acid of Shiitake Mushroom (진공 예냉처리가 포장 저장중 표고버섯의 품질에 미치는 영향)

  • The influence of vacuum cooling and modified atmospheric packaging was investigated about browning degree, polyphenoloxidase(PPO) activity and free amino acid of shiitake mushroom. During storage, surface browning was inhibited by precooling. PPO activities of shiitake mushroom was increased during storage. Especially, PPO activity was rapidly increased as surface browning was proceeded. And PVC-wrapped mushroom was lower than carton box-packed mushroom in the changes of surface browning and PPO activity. Total free amino acid contents of shiitake mushroom was 2,510 mg% at harvest, but free amino acid content of shiitake mushroom decreased consistantly during storage. Precooled mushroom had more free amino acid content than non-precooled and their contents were fluctuated by storage temperature, packaging methods and storage periods.

Effects of oil refining processes on oil characteristics and oxidation stability of sesame oil (정제공정이 참기름의 유지특성과 산화안정성에 미치는 영향)

  • The effect of oil refining processes-degumming, alkali-refining, bleaching and deodorizing-on oil characteristics and oxidation stability of sesame oil were investigated. The colors(L, a, b) of samples were markedly changed and their peroxide and acid values were decreased, while the other characteristics of samples were not changed during refining stages. The L values of alkali-refined, bleached and deodorized sesame oils were largely decreased and their a values were increased due to browning reaction during the storage at $70^{\circ}C$. The colors of crude and degmmed sesame oils were very stable and their peroxide, free fatty acid and conjugated dienoic acid values were slowly increased. Volatile carbonyl compounds formed by oxidation were increased during the storage at $70^{\circ}C$. The results indicated that refining processes did not affect the sesame oil characteristics but decreased the oxidation stability of sesame oil.

  • Phenolic acids are regarded as harmful materials in food and environment science. But recently, regarded as useful materials by their characteristics which bind metal ions and have pharmaceutical effect. It was necessary to remove or recover phenolic acids from solutIon containing phenolic acids. Continuous fixed-bed adsorption was adapted in order to separate phenolic acids from diluted solution and the breakthrough curve was predicted by nonlinear curve fitting method. The larger bed length showed the longer breakpoint time and the slow mass transfer coefficient. Ferulic acid among the phenolic acids was passed through the breakpoint first and the second and. third were p-coumaric acid and gallic acid. These orders were caused by not only ionic strength between adsrobent and adsorbate but also molecular weights.

Dyeability and functionality of Catechu(Part I) -Characteristics of Catechu and Dyeing properties of Cotton- (아선약의 염색성과 기능성(제1보) -아선약 색소의 특성과 면섬유에 대한 염색성-)

  • Catechu is widely used as in natural dyeing as well as in various medicines and tannage. This study investigated the dyeing properties and functionality of Catechu through a series of dyeing experiments using cotton fabric. It was shown that the absorbance of Catechu solution has two peaks at 220nm and 280nm. Thus, it can be concluded that the color constituent of Catechu is a catechol tannin and color tone is YR. The dyeability of Catechu increases as the concentration of the dye is increased. Its variation was shown to be similar to the isothermal absorption curve of the Freundlich. As dyeing time was increases, the dyeability did not change significantly after the 30 minute mark was passed. At high temperatures the dyeability was shown to increase. As the dyeing temperature was increased the color of dyeing fabrics changes from Y and YR to R. Experiments with pre-mordanting method showed that various colors can be obtained using Catechu. Cotton is effective in using K, Cu, Fe mordants, and the dyeability was shown to be improved with low pH. Both washing fastness and light fastness were shown to be low. However, the fabric color gradually changed to red was due to mailard reaction of catechol tannin causing by repeated washing and sunlight. The ultraviolet-cut ability was improved for cotton fabric dyed with Catechu. Also, dyed fabric with Catechu showed very good antimicrobial abilities at 99.9%.

Quality Characteristics of Minimally Processed Sweet-pumpkin during Storage (최소가공 단호박 (Cucurbita maxima Duchesne) 제품의 저장 중 품질 특성)

  • The objective of this study was to investigate the effect of browning inhibitor and vacuum packaging on minimally processed sweet pumpkin. The browning inhibitor were lo/e of ascorbic acid, citric acid, NaCl, MgCl$_2$and their combination. For the minimal processing, sweet pumpkin was sliced and strip-cut followed by dipping in the solution of browning inhibitor. Effective browning inhibitors fer slice sweet pumpkin were ascorbic acid, NaCl and MgC1$_2$, and those fer thin strip were combination and ascorbic acid. The hardness of minimally processed sweet-pumpkin repeated increasing and decreasing and decreased in the final of storage. However the change pattern of hardness was different according to cutting method. Magnesium chloride treatment was generally high grade on sensory characteristics. Sweet pumpkin treated with citric acid was distinguished on carbon dioxide generation and oxygen exhaustion.

Color Changes of Dried Squid Differs in Packaging Films during Storage (포장재를 달리한 마른 오징어의 저장중 색택 변화)

  • To identify the effect of packaging film on browning reaction of dried squid, 3 kinds of packaging film$(NYLON\;12\;{\mu}m/LDPE\;80\;{\mu}m)$ including transparency, white, black film were tested about browning degree of dried squid during storage at ambient temperature for 50 days. During storage period, water content and water activity were maintained almost constant, and microbial count was not changed. When color index was measured by color difference meter, L value and ${\Delta}E$ value were the highest in the dried squid packaged with transparency film. ${\Delta}E$ value was rapidly increased in early packaging period(within 10 day). TBA value was showed same tendency with ${\Delta}E$ value in early storage period. So, the browning was supposed to originated from lipid oxidation by UV light transmitted through packaging film in the early storage period.
