Use of Chicken Meat and Processing Technologies (가금육의 이용과 가공기술)

  • The consumption of poultry meat (chicken and turkey) grew the most during the past few decades due to several contributing factors such as low price. product research and development. favorable meat characteristics, responsive to consumer needs, vertical integration and industry consolidation, new processing equipments and technology, and aggressive marketing. The major processing technologies developed and used in chicken processing include forming/restructuring, tumbling, curing, smoking, massaging, injection, marination, emulsifying, breading, battering, shredding, dicing, and individual quick freezing. These processing technologies were applied to various parts of chicken including whole carcass. Product developments using breast, thigh, and mechanically separated chicken meat greatly increased the utilization of poultry meat. Chicken breast became the symbol of healthy food, which made chicken meat as the most frequent menu items in restaurants. However, the use of and product development for dark meat, which includes thigh, drum, and chicken wings were rather limited due to comparatively high fat content in dark meat. Majority of chicken are currently sold as further processed ready-to-cook or ready-to-eat forms. Major quality issues in chicken meat include pink color problems in uncured cooked breast, lipid oxidation and off-flavor, tenderness PSE breast, and food safety. Research and development to ensure the safety and quality of raw and cooked chicken meat using new processing technologies will be the major issues in the future as they are now. Especially, the application of irradiation in raw and cooked chicken meat products will be increased dramatically within next 5 years. The market share of ready-to-eat cooked meat products will be increased. More portion controlled finished products, dark meat products, and organic and ethnic products with various packaging approaches will also be introduced.

Productivity and Meat Quality of the New Crossbred Korean Native Chickens Compared with Commercial Breeds (신품종 교배조합 토종닭의 생산성과 육질 및 시판 품종과의 비교분석)

  • This study was conducted to evaluate the productivity and meat quality of three newly-developed crossbreds of Korean native chicken (2A, 2C, and 2D) as compared with commercial Korean native chicken (CKNC) and commercial broiler. Totally, 400 birds of different crossbreds were randomly allotted to eight pens, each with 50 birds. The birds were reared ad libitum and slaughtered at the age of 12 weeks. Fifty male chickens were slaughtered at the same day in the same slaughterhouse were selected for the comparison of meat quality. The crossbred 2C had greater body weight than that of CKNC (P<0.05), and had similar uniformity with lower death rate. Although shank length of 2C was the longest among the Korean native chicken breeds, the ratio of shank length to body weight was the lowest among them (P<0.05). The crossbred 2C had similar inosine 5'-monophosphate (IMP) content as that of CKNC in breast meat, and the highest IMP content in thigh meat (P<0.05). In a sensory analysis, the crossbred 2C generally showed, similar savory taste and texture as that of CKNC, and the overall acceptability of thigh meat was the highest in CKNC and broiler. Based on the present results, the possibility of commercialization of a newly-developed crossbred of Korean native chicken was confirmed.

식염을 첨가한 계육의 부위별 최종가열온도 측정을 위한 근장단백질의 이용

  • 본 연구는 계육의 가슴과 다리부위에서 2%의 식염을 첨가하여 $64^{\circ}C$부터 $74^{\circ}C$까지 $2^{\circ}C$ 간격으로 가열하여 pH와 일반성분, 가열감량, 단백질 용해성 그리고 단백질 분획의 변화를 비교 분석하였다. pH는 2%의 식염을 첨가한 것과 온도별로는 차이가 없었지만 다리부위가 가슴 부위보다 높았다. 일반성분 중 수분과 지방 함량은 식염을 첨가한 것과 차이는 없었지만 수분과 지방 모두 다리부위가 높게 나타났다. 단백질 용해성은 가슴부위가 높게 나타났으며 온도가 증가할수록 감소하는 경향을 나타내었지만 식염의 첨가에 따른 차이를 보이지 않았다. 색도에 있어서는 L 값은 가슴부위에서 a 값은 다리부위에서 높게 나타났다. 각 부위에서 가열온도와 식염처리에 영향을 받은 단백질 분획은 다리부위에서 75 kDa와 가슴 부위에서 58 kDa 와 44 kDa이 가열온도 $66{\sim}68^{\circ}C$에서 사라졌다. 또한 원료육에서 다리부위에서 약92,80,60.5 kDa의 분자량을 갖는 단백질이, 가슴부위에서는 90,68,48 kDa의 분자량을 갖는 단백질이 원료육에서만 나타났다. 이러한 근장 단백질 분획은 최종가열 온도 측정을 위한 지시제로서 좋은 자료로 사용될 수 있을 것으로 사료된다.

Xanthophyll을 급여한 계육 모델 시스템에서의 항산화 효과

  • This study was designed to investigate the antioxidant effects of dietary xanthophylls supplementation in broiler breast and thigh meat homogenates during incubation at 37$^{\circ}C$ for 0, 2, 4, 8, 16 hours respectively. Experimental treatments were divided into control, lutein, canthaxanthin, astaxanthin and capxanthin fed meats. The supplementation levels of to chicks were adjusted to 30 ppm in feeds. The 30 ${\mu}$M FeCl$_3$ and 100 ${\mu}$M ascorbic acid were added to meat homogenates in order to catalyze lipid oxidation. In breast meat homogenates, the TBARS(O.D) of all treatments at 2 hour was significantly(p〈0.05) increase. In thigh meat homogenates, the highest TBARS(O.D) value of all treatments appeared at 16 hour incubation and TBARS(O.D) value of all treatments was significantly(p〈0.05) lower than that control during incubation time. The TBARS(O.D) of lutein treatment in breast meat homogenate at 8 hour and 16 hour were significantly(p〈0.05) lower than those of treatments. Also, astaxanthin treated in thigh meat homogenate of the 2 hour and 4 hour and lutein treatment in thigh meat homogenate at 8 hour and 16 hour were significantly(p〈0.05) lower than other treatments. In conclusion, dietary xanthophyll treatments in breast and thigh meat homogenates showed more antioxidant effect to lipid oxidation than control. Especially, lipid oxidation inhibited significantly in lutein fed breast meat, and lutein and astaxanthin fed thigh meat homogenates.

A Study on Components Related to Flavor and Taste in Commercial Broiler and Korean Native Chicken Meat (일반 육계와 한국 토종닭의 정미인자 비교 분석)

  • The characteristics of the components related to the meat taste of the commercial broiler (CB) and the Korean native chicken (KNC) were compared. The breast meat from CB showed higher amounts of $C_{16:1}$ and $C_{18:2}$ but lower amounts of $C_{16:0}$ and $C_{22:6}$. The thigh meat from CB showed a higher amount of $C_{18:1}$ but lower amounts of $C_{16:0}$, $C_{18:0}$, $C_{20:4}$, and $C_{22:6}$. The flavor- and taste-contributing amino acids, including aspartic acid, threonine, serine, glycine, alanine, tyrosine, lysine, histidine, and arginine, were significantly higher in the KNC breast meat, but the level of amino acids in the thigh meat were not different between the two breeds. The measurement of the volatile compounds revealed that CB contains much higher volatile compounds compared to KNC in their fresh breast and thigh meat. Both in the breast and thigh meat, however, the amount of flavor compounds increased significantly after cooking; as such, KNC turned out to have more flavor compounds than CB.

The Effect of Different Electrical Stunning Method§ on Meat Quality in Broilers (육계 도축시 전기실신 방법이 육질에 미치는 영향)

  • This study investigated the effect of different electrical stunning methods on pH, water holding capacity(WHC), cooking loss(CL), meat color and blood spot rate in broilers. One-hundred and forty broiler chickens were slaughtered by 50, 65 and 90 voltage with the same electrical frequency(255 Hz) and stunning time(5 sec) in commercial abattoir. The ultimate pH of leg muscle and WHC of breast muscle decreased with increasing the stunning voltage. However, there were no significant differences in ultimate pH, WHC and CL of breast muscle, and ultimate pH of leg muscle. Lightness(L*) and yellowness(b*) values of leg muscle stunned with 90V, 255 Hz, 5 sec were higher than those stunned with 50V, 255 Hz for 5 sec(p<0.05). But there were no significant differences in color value on skin, breast and wing muscle. Our experiments showed that change of stunning voltage affected some broiler meat quality parameters. However, further research is necessary to examine the effects of stunning condition on broiler meat quality.

Physicochemical properties and oxidative stabilities of chicken breast jerky treated various sweetening agents (당침지 처리된 닭 가슴살 육포의 이화학적 특성 및 산화안정성)

  • Chicken breast jerky (CJ) was prepared by drying chicken breast at $50^{\circ}C$ for 9 hrs after marinating it in a various sweetening sauce including white sugar (WS), brown sugar (BS), rice syrup (RS), fructooligosaccharide (FO), pineapple concentrate (PC), Rubus coreanus extract (RCE), or honey (H), and its physicochemical and sensory properties were investigated. The CJ was found to contain 22.5-25.0% moisture, 41.0-46.6% protein, and 0.4-1.0% fat, which indicates that it could serve as a high-protein and low-fat snack. The type of sweeteners significantly affected the yield, pH, total viable cell count, and water activity of the CJ, showing ranges of 40.9-50.1%, 5.2-5.9, $2.5-6.2{\times}10^4CFU/g$, and 0.74-0.81, respectively. Both the water activity and pH were the lowest in CJ-RCE where of the highest in CJ-WS. The cohesiveness, springiness, and chewiness of the CJ significantly differed depending on the type of sweeteners (p<0.05). CJ-RCE showed the best taste and overall acceptability in a sensory test. After storage at $50^{\circ}C$ for 2 weeks, thiobarbituric acid reactive substance (TBARS) content (58.3 malondialdehyde (MDA) mg/kg) of CJ-RCE was much lower than those of control beef (75.6 MDA mg/kg) and pork jerky (98.0 MDA mg/kg), showing the good oxidative stability of CJ-RCE. Overall, marination in RCE sauce was suitable for the preparation of CJ with good quality in terms of its water activity, fat and protein contents, sensory property and oxidative stability.

Effect of Pyroligneous Acid Supplementation on Growth Performance, Blood Parameter, Ammonia Gas Emission and Fatty Acid Composition of Breast Meat in Korean Native Chicken (사료 내 목초액의 첨가가 토종닭의 생산성, 혈액성상, 암모니아 가스 발생량 및 가슴육의 지방산 조성에 미치는 영향)

  • The current study was conducted to estimate the effect of dietary pyroligneous acid (PA) on performance, noxious gas emission in excreta, blood parameter and fatty acid composition of breast meat in Korean native chicken. A total of 240 one-day-old chicks were allocated to three treatments (PA; 0, 0.1, 0.2%) with five replicate of 16 each per treatment for 10 weeks. Although there was no effect on the performance, ammonia gas concentration was significantly decreased in the PA treatments compared to the control (p<0.05). Birds fed PA had higher serum total protein and high density lipoprotein-cholesterol (HDL-cholesterol) concentration but lower triglyceride content in the PA 0.2% treatment than control (p<0.05). In fatty acids composition of breast meat, myristic and stearic acid were significantly decreased, whereas oleic and linolenic acid were significantly increased in the group fed PA compared to those of the control group (p<0.05). The result of the current study indicates that dietary PA may reduce the noxious gas emission and improve lipid levels as well as increase of monounsaturated fatty acids composition of breast meat in Korean native chickens.

  • Gel properties of recovered protein from mackerel, frozen blackspotted croaker, chicken breast and pork leg using acidic and alkaline processing were evaluated. Myofibrillar protein from mackerel by acidic processing did not form a heat-induced gel. However, the recovered protein including sarcoplasmic protein formed heatinduced gel. Breaking force of gel from mackerel processed at pH 10.5 was the lowest. A deformation value of frozen blackspotted croaker was the highest, followed by chicken breast, pork leg and mackerel. Whiteness of frozen blackspotted croaker was the highest among heat-induced gel. Breaking force, deformation and whiteness were decreased by addition of recovered protein from mackerel, but price was increased. A breaking force and whiteness of heat-induced gel added recovered protein from chicken breast were increased, and the price was greatly decreased. When the constraint of breaking force, deformation and price of raw material were set up above 110 g, 4.5 mm and below 2,000 won/kg. A optimum formulation for blending protein was 36∼50% for frozen blackspotted croaker, 34∼40% for chicken breast, 14∼25% for pork leg. The heat-induced gel of recovered protein from frozen blackspotted croaker showed compact structure compared to that of recovered protein from mackerel. A formulation of chicken breast and pork leg based on blackspotted croaker can be used in surimi based seafood products having various texture.

Effect of Chicken Skin and Pork Backfat on Quality of Dakgalbi-Taste Chicken Sausage (닭갈비맛 계육 소시지의 닭 껍질과 돼지 등지방의 첨가 효과)

  • This study was conducted to investigate the effect of chicken skin and pork backfat on quality of Dakgalbi-taste chicken sausage as fat sources. The sausages were manufactured with 100% chicken breast without fat sources, 85% chicken breast meat with 15% chicken skin or 85% chicken breast meat with 15% pork backfat, respectively. Batters for production of chicken sausage were mixed with 5% Dakgalbi sauce and 4.92% ingredients (meat and lipid basis) for 20 min and then stuffed into casing. All cooked sausages were vacuum-packaged and stored at $4^{\circ}C$ for 14 days. Moisture and crude protein contents were higher in the control, and crude lipid content was higher in chicken sausage with pork backfat (p<0.05). Unsaturated fatty acids content and monounsaturated fatty acids/saturated fatty acids ratio of sausage with pork backfat were lower than those of control and sausage with chicken skin (p<0.05), which were influenced by fatty acids compositions of fat sources. The chicken sausage with pork backfat showed a lower hardness and chewiness, and higher springiness measured by food texture analyzer. The sausage with pork backfat had a high level of water holding capacity (WHC) during storage (p<0.05). In conclusion, Dakgalbi-taste chicken sausage containing chicken skin had higher unsaturated fatty acid compositions, but showed lower textural quality compared with that containing pork backfat.
