Changes of Chemical Components in Persimmon Leaves during Growth for Processing Persimmon Leaves Tea (감잎차 제조를 위한 감잎의 성장시기별 함유 성분의 변화)

  • As a foundational study for processing persimmon leaves tea, the physico-chemical characters were investigated in persimmon leaves from Chungdo Bansi, Sagoksi, Kyungsan Bansi and Hiratanenasi during growth. Flesh weights increased rapidly until the middle of May and then decreased slightly. Moisture contents decreased continuously from $79{\sim}81%$ at the beginning of May during growth. Water soluble tannin contents reached $1.55{\sim}2.25%$, maximum values at the middle of May and at the beginning of June, and increased again at the middle of July and then decreased. Contents of catechins, precursor of condensed tannin, indicated $12{\sim}27\;mg%$ at the middle of May and reached $17{\sim}34\;mg%$, maximum values at the middle of June. Contents of catechin were low in order of (+)-catechin, (-)-epicatechin, (-)-epicallocatechingallate, (-)-epigallocatechin and (-)-epicatechingallate. Sugars present in persimmon leaves were composed of sucrose, glucose, fructose, raffinose and mannitol. Sucrose increased continuously, glucose and fructose decreased during growth. Raffinose content was less than 0.1%. Glucose and fructose took more than 90% until the beginning of May, and then sucrose took up $60{\sim}80%$ of total sugar contents. Total vitamin C contents indicated maximum values at the middle of May and at the beginning of June in Chungdo Bansi, Sagoksi and Kyungsan Bansi, maximum vaule at the middle of July in Hiratanenasi. From the basis of these data It was suggested that proper period for picking persimmon leaves prior to processing persimmon leaves tea was from the middle of May to the beginning of June. Since maximum values for most of chemical components occurred at the middle of May and at the beginning of June and persimmon leaves thicken after the middle of June.

The literary characteristics and material status about the translation of Sijo into Chinese poetry (시조 한역 자료의 현황과 그 성격)

  • In this study, we will find out and understand of the literary characteristics and the material status about the translation of Sijo into chinese poetry which is the representative genre in Korean traditional poetry. Most of the work was done from 17th 19th century, and there are about 120 literary men who translated Sijo. 759 works are translated into Chinese poetry and we cannot find 135 works' original poetry. Therefore about 900 works are translated into Chinese poetry. One Sijo can be translated into more than 1 Chinese poetry, so there are more translated works. According to this study, there are 1356 translated works in total. Many works are done in piece by piece, however most of them are in series with many poems from 10 to 100. First, some popular Sijo was translated into series. Second, some serial Sijo or some Sijo of particular writers are translated into Chinese works. In first case, there are 22 writers' 27 works of Sijo along with Shinwi's "Soakbu" and 652 translated works. In the other case, there are 30 writers' 26 works of Sijo including 10 "Kosangugokga", which was translated by Song shiyul. There are 511 translated works. A lot of translations of Sijo into Chinese poetry are in various documents. They are in personal collections of works such as "Beonbanggok" in Namguman's "Yakchunjip". The works are in books of poems such as Hong yangho's "Chunggudangok" and Shinwi's "Jahasoakbu". In collection of Sijo like Shin heum's "Bangongshiyeo" in "Chungguyoungwon", there are some translated works as well. We can understand Sijo which we do not know the lyrics now by studying the materials about the translation of Sijo into Chinese poetry. The materials about the translation of Sijo into Chinese poetry have necessary value for studying the creation and tradition process of Sijo. In addition, with the materials, we can study the interaction between Korean literature and Chinese one, and also we can study about the changing aspects of Chinese poetry in Late Chosun.

Quality characteristics of domestic dried persimmon and imported dried persimmon (국내산과 수입산 시판 곶감의 품질특성)

  • The physicochemical quality characteristics of the domestic and imported commercial dried persimmons were investigated. The moisture content of dried persimmon was approximately 22.78~61.64%, while the moisture contents of the Chinese dried persimmon were 22.78 and 28.20%, respectively, and were lower than the domestic dried persimmon. The pH of the Chinese dried persimmon was 5.09~5.99, while the pH of the Haman dried persimmon has the highest value (pH 5.99). The Brix was approximately $25.07{\sim}42.93^{\circ}Brix$ and weight of dried persimmons were 29.77~77.95 g, while the weight of Yeongdong dried persimmon has the lowest (29.77 g), and the weight of the Sancheong dried persimmon has the highest value. The L values were 18.27~66.20. The a values were -1.26~10.70 and a value of the Sancheong dried persimmon was 10.70, which was the highest. The b values were 2.81~25.25, wherein the b value of the Cheongdo semi-dried persimmon and Sancheong dried persimmon were25.25 and 21.98, respectively, and were higher than others. The appearance score of the sensory characteristics were the highest in Cheongdo semi-dried persimmon, while the appearance score of Wanju black persimmon was 1.39, which was the lowest. The overall acceptability of the Chinese dred persimmons (No.2) was the highest, while that of the Yeongdong, Hadong and Sangju dried persimmons have higher values than the other dried persimmons. The sulfur dioxide content of the 9 kinds of commercial dried persimmon was lower than 10 mg/kg, but not detected.

A Study on the Possibility of Utilizing Both Biotope Maps and Land Cover Maps on the Calculation of the Ecological Network Indicator of City Biodiversity Index (도시생물다양성 지수(CBI) 중 생태네트워크 산정을 위한 도시생태현황지도 및 토지피복지도 활용 가능성 연구)

  • This study modified and applied the ecological network(Indicator 2) from the City Biodiversity Index(CBI) to be tailored to Korea. It is calculated by utilizing a biotope map and a land cover map. The ecological network of Gyeryong-Si was 13,713,703(33.8%) with the biotope map and 17,686,966(37.9%) with the land cover map. The result of the biotope map was lower than the land cover map. The ecological network of Goyang-Si was 4,961,922(4.9%) with the biotope map and 4,383,207(3.7%) with the land cover map. The result of the land cover map was lower than the biotope map. As a main result of the research, an error was discovered in which, when calculating the ecological network, the types of the military unit facilities were distinguished into a special area on the biotope map and into an urbanization promotion area and a forest area on the land cover map. In the case of a middle-classified, land cover map, the land use in the surroundings of the forest area was not subdivided. An error in the development area expressed as a forest green was discovered. When selecting the natural elements, too, regarding the types of artificially-created rivers, artificial ponds, and artificial grasslands, etc. on a biotope map, the exclusions were necessary. Regarding the natural, bare ground on a land cover map, there was a need to calculate by including the natural elements. It was judged that, in the future, the ecological network in the unit of the entire nation can be analyzed roughly by utilizing a land cover map. It was judged that, in a city having a biotope map, the calculation of the ecological network utilizing a map of the present situation of the urban ecology will be a more accurate diagnosis of the present situation.

STUDIES ON THE DIMORPHISM OF THE PERSICARIA SENTICOSA NAKAI (Persicaria senticosa Nakai의 Dimorphism에 관한 연구)

  • HARN, Chang Yawl (Chonnam U. Kwangju, Korea): Siudies on the dimorpism of the Perisicaria senticosa Nakai-Kor. jour. Bot. 3(1) 16-25 During his researches regarding the morphological and physiological properties of Polygonecenae, the author has found that the species, Persicaria senticosa, aiso, besides the heterostylous plants of Polygonum family, Fagopyrum esculentum, and Persicaria japonica which was recently verified by the author as dimorphic, shows the typical floral structure of heterostylism, the description of which is not found in taxonomical works. Further research on this species have revealed that this plant, despite pressessing characteristic structural dimorphism, does not exhibit even the slight signs of heterostlylous properties physiologically. This is a deviation from the usual behavior of normal heterostylous plants. What is interesting is the fact that the physiological behavior of this species is quite contrary to that of P. japonica which is considered to be the most highly specialized dimorphic plant. Thus it is assurred that if some species of this family had taken a heterostylic form in its course of development from autogamy to allogamy, P. seoticosa would be the least differentiated type of dimorphic forms among the three heterostylous plants, including buckwheat, of this family. The results obtained in this experiment are summarized as follows: 1) P. senticosa has two forms of flower, one, long style-short stamened; the other, short style-long stamened. Not only conspicuous is this primary difference, but the secondary difference, such as pollen grain size, is noticeable between long and short styled individuals, thus expressing structurally the definite trait of a dimorphic plant. 2) Structural alteration of floral parts towards dimorphism has preceeded far less in comparison with those of the P. japonica and F. esculentum. 3) Elaborate studies on fertility reveal that this species does not show the slightest sign of the physiological characteristics of dimorphic plants. In other words, regardless of the modes of combinations, legitimate and illegitimate, fertilization and fruit setting flourish unimpaired. 4) Growth of pollen tubes apparently parallels the results in the fertility, tubes reaching ovary approximately 30 minutes after pollination both in legitimate and illegitimate combinations. Pollen tube penetration appears to be comparatively rapid. 5) A slight difference in the growth of pollen tube seems to exist between legitimate and illegitimate combinations, legitimate union giving slightly faster tube penetration. 6) In the present experiment it was clarified that P. senticosa, known to possess one form of flower in taxonomy, is in reality dimorphic plant having two of flowers. Although this species is definitely heterostylous in floral structure, physiological evidence and pollen tube behavior show that the differentiation of this plant toward the dimorphism has apparently proceeded slightly except for some parts of floral organ. In ordinary heterostylous plants it is a matter of common occurrence that when illegitimately cmbined, there is poor or no fertility, Contrary to the universal property of heterostylous plants, no difference is observed in the fertility and pollen tube growth between the legitimate and illegitimate combinations in the case of P. senticosa. Compared to the P. japonica and F. esculentum, which are supposed to have undergone high degree of dimorphic differentiation, it is an unavoidable conclusion that P. senticosa has not yet developed as a heterostyle plant except for some of its floral parts. If P. japonica is assumed to be the most differentiated type of hetenostylous plant, thenthe P. senticosa would be regarded as the primitive, retaining still the self-fertile nature so common to the Polygonum genus. In nature, however, this plant has a better chance to be pollinated legitimately owing to the two forms of flowers than to be pollinated illegitimately. Comparison of the nutrient components of figs based on their cultivars (품종별 무화과의 영양성분 비교)

  • In this study, the proximate compositions, minerals, free amino acids, total polyphenol and flavonoids of figs were analyzed according to their cultivars. The proximate compositions showed moisture at 85.37~87.28%, crude ash at 0.38~0.43%, crude lipid at 0.20~0.26%, crude protein at 0.39~0.81%, carbohydrate at 11.23~13.66% and crude fiber at 5.12~7.55% (dry base). The amount of the following minerals in the figs were highest, in this order: K > Ca > Mg > Na. The total polyphenol contents were highest in this order: Dauphine (198.91~261.64 mg/kg), Banane (211.07 mg/kg) and Horaish (169.90~174.33 mg/kg). The total flavonoid contents were highest in this order: Banane (84.52 mg/kg) > Dauphine (60.47~68.71 mg/kg) > Horaish (44.12~44.60 mg/kg). The quercetin contents were highest in this order: Dauphine, 2.40~3.54 mg/kg; Banane, 3.54 mg/kg; and Horaish, 2.40~2.75 mg/kg; but the flavonoid contents were lowest in this order: Dauphine, 1.11~1.16 mg/kg; Banane, 1.14 mg/kg; and Horaish, 1.09~1.11 mg/kg. The free amino acid content of the figs was 199.70~328.77 mg/100 g; their essential free amino acid contents, 46.45~67.46 mg/100 g; and their GABA (${\gamma}$-aminobutyric acid) contents, 13.57~26.69 mg/100 g.

Weed Infestation and Effective Weed Control in Direct - Seeded Rice (담수(湛水) · 건답직파(乾畓直播) 벼재배(栽培)에서 잡초(雜草)의 발생특성(發生特性) 및 효과적(效果的)인 잡초방제(雜草防除))

  • This experiment was conducted to investigate weed infestation and to determine effective weed control methods in direct-seeded rice. Twenty two weed species occurred in dry- and water-seeded rice, which was mainly composed of annual weeds. Dominant weed species in dry-seeded rice were Cyperus difformis, Echinochloa crus-galli, Aneilema keisak and Digitaria sanguinalis in discending order. Dominant weed species in water-seeded lice were E. crus-galli, C. difformis, Monochoria vaginalis and Scirpus juncoides. E. crus-galli emerged at 7 days after sowing. In water-seeded rice, E. crus-galli emerged at 5 days after sowing, and M vaginalis, S. juncoides and C. difformis at 8~10 days after sowing. Mean days to emerge important weeds was 20 days in dry-seeded rice and 13 days in water-seeded rice. Leaf development of weeds was faster than that of rice in dry-seeded rice. In water-seeded rice, E eras-galli was more vigorous than rice, but leaf development of other weeds were slower than that of rice. Changes in number of weeds and dry weight oil weed species varied depending upon weed species in the direct-seeded rice. Dry weight of weeds were increased greatly from 30 days to 60 days after sowing in dry-seeded rice. Number of weeds tended to increase up to 40 days after sowing drastically, and then trend of the increase was dull thereafter. Dry weight and number of weeds increased up to 20~60 days after sowing in water-seeded rice. Most effective herbicide treatments was foliar application of cyhalofop/bentazon at 20 days after sowing followed by fenoxaprop/bentazon at 45 days after sowing in dry-seeded rice. All herbicide treatments except foliar applications were very effective to control weeds in water-seeded rice. Slight phytotoxicity was observed in foliar applied fenoxaprop/bentazon at 45 days after sowing in water-seeded rice, but it did not affect rice yield.

Occurrence and Repression of Off-Odor in Cooked Rice during Storage under Low Temperature Warming Condition of Electric Rice Cooker (전기밥솥으로 저온보온한 쌀밥의 이취 발생 및 억제)

  • The changes in physicochemical properties of cooked rice stored in an electric rice cooker at different temperature (63, 66, 69 and $72^{\circ}C$) were investigated. The growth of thermophilic bacteria was gradually increased in all samples with storage time up to 6 hours and increased rapidly afterward. The bacterial growth rate was higher during storage at low temperature than at high temperature, and the bacterial number generally reached the maximum at 18 hours of the storage. The number of bacteria in sample stored at $63^{\circ}C$ was increased to $10^6$ CFU/g after storage for 6 hours. The heat treatment at 6 hours of storage decreased the bacterial number to $10^5 $ CFU/g at 8 hours of storage. Bacterial number was gradually increased with storage time after the first heat treatment. When the sample was reheated after 8 hours of storage, the bacterial number was reduced to the level at which off-odor was not detected after storage for 24 hours. During the storage, moisture content of heat-treated sample was lower than that of sample stored at $63^{\circ}C$ but higher than that of sample stored at $72^{\circ}C$. The L value of heat-treated sample was higher than that of the sample stored at $72^{\circ}C$, but lower than that of the sample stored at $63^{\circ}C$. The b value showed an opposite trend to the L value with regard to the storage temperature. Changes in texture were not remarkable during the storage for the sample heat-treated and stored at low temperature. The occurrence of off-odor and browning was depressed in the heat-treated sample, and the texture and overall eating quality were more acceptable than the samples stored at low temperature.

Effects of pH and Natural Polysaccharide Gums on the Foam Stability of Soy Protein Isolate (pH와 천연 다당류 고무질이 분리대두단백질의 거품안정성에 미치는 영향)

  • Experiments were conducted to elucidate the effects of pH change and sodium alginate, gum karaya and gum arabic on the foaming properties of soy protein isolate (SPI). The surface tensions of SPI solution (5%) adding to gums at pH 4.0 and 5.0, near the isoelectric point (pH 4.5) were higher than those at pH 7.0 and 8.0. Specific viscosity of the solutions adding to gums (0.1, 0.2 and 0.3%) at pH 7.0 and 8.0 were $3.6{\sim}51.8$ and $4.0{\sim}51.2$, respectively. In cases of addition of sodium alginates specific viscosity were predominantly increased, while those of gum arabic did not almost increase. Addition of gums reduced the overrun, but it stabilized the foams, especially those of sodium alginates (0.2%) increased the foam stability at pH 5.0, 7.0 and 8.0 by 57, 413 and 315%, respectively. Foaming ability, foam stability and heat stability of the foam were significantly (p<0.05) affected by changing pH. There was a tendency to increase the foaming ability according to the decrease of surface tension. Specific viscosity was also important in foam stability and heat stability.

Rice Fermentation by Korean Amylolytic Bifidobacterium spp. (한국인유래의 Amylolytic Bifidobacterium 에 의한 쌀발효)

  • For bifidus fermentation food, gelatinized rice solution was fermented without liquefaction/saccharification by amylolytic Bifidobacterium spp. isolated from Korean. Eighteen amylolytic Bifidobcterium on the starch agar were isolated from 38 Korean and four strains were finally selected as good amylase producers. The most enzyme-producing strain of Bif. sp. FBD-12 secreted extracellular amylase of 0.17 U/mg and intracelluar amylase of 1.8 U/mg. Three strains of Bif. sp. FBD-12, Bif. sp. FBD-16 and Bif. sp. FBD-17 also showed good growth on pH controlled media by HCI/acetic acid to pH 5.0 while Bif. sp. FBD-6 was not so tolerant that viable cell counts reduced to $10^2\;CFU/mL$ times on the media. Initial cell number of $10^6\;CFU/mL$ for those strains reached to $10^9\;CFU/mL$ on the rice medium supplemented with yeast extract (0.2%) and cysteine (0.05%). Ascorbic acid instead of cysteine was added to the medium for improving off-flavour and the best growth was shown at 0.1% addition. Isolated soybean proteins (ISP) of 3% accelerated the growth of the strains. Maximum count of $10^9\;CFU/mL$ reached within 12 hour fermentation on the rice medium with ascorbic acid and isolated soybean protein instead of 32 hours on the cysteine medium, and total acidity increased from 0.5% to 1% on each media. Reducing sugar in the ascorbic acid/ISP cultures generally increased especially 2 mg/mL to 15.5 mg/mL for Bif. sp. FBD-6. From sensory evaluation, the products showed good acceptability so that it suggested possibility of development of bifidus-fermented rice food.
