Reducing sugar content in processed foods using high intensity sweeteners (고감미도 감미료(High Intensity Sweeteners)를 이용한 당류저감화)

  • Recently, due to the cognition that obesity is the cause of adult diseases, interests of consumers in low-sugar and low-calorie foods are growing more and more. While various policies are being implemented to reduce sugar contents in processed foods, the reduced sweetness caused by lesser sugar content is complemented by using high-intensity sweeteners. Some of the typical high-intensity sweeteners are sucralose, aspartame, acesulfame potassium and stevia, etc. Since the relative sweetness degree, sweetness profile, and physical properties of these sweeteners should be different from one another, it is important that all these characteristics are well-understood before applying them. Thus, the objective of this study is to introduce the properties and applications of high-intensity sweeteners in order to reduce sugar content of processed foods.

Polydextrose and sugar alcohols: their properties and uses in foods (폴리덱스트로스와 당알코올: 그 특성과 식품에의 이용)

  • Carbohydrates play an important role in not only providing the body with calories but also giving taste and texture in foods. Recently, there is a growing interest in low-calorie carbohydrate materials due to obesity and the resulting diseases caused by excessive intake of calories. Polydextrose and sugar alcohols have calories of 2.0 kcal/g and 2.4 kcal/g, respectively. In addition to being a low-calorie material, polydextrose can be widely used as a dietary fiber source, thereby reducing calories and supplementing fiber. Sugar alcohols have sweetness comparable to a table sugar but they are not calculated as a sugar, so it can meet the government's sugar reduction policy. Also, polydextrose and sugar alcohols are not easily decomposed by heat and acid, and thus can be used without being affected by food manufacturing processes.

  • In the case of a partition panel for a vehicle, it is used as a vehicle chassis component that serves to distinguish the indoor and outdoor spaces of a vehicle and is mounted on a backrest portion of the vehicle's back seat to ensure the convenience of passengers by connecting the floor and the side of the vehicle. Because it is a relatively large-sized plate material among automobile chassis parts except the moving parts and non-ferrous materials can be applied, it is considered as a part having a large light-weight effect. However, the partition panel is one of the vehicle parts that must satisfy the light-weight effect as well as various structural reliability, such as torsional rigidity, vibration, and impact characteristics, for securing the running stability of the vehicle when driving at the same time. So, In this study, the possibility of replacing the aluminum partition panel as CFRP(Carbon Fiber Reinforced Plastic) partition panel is evaluated through comparing the two partition panels by using the structural reliability(stiffness/strength analysis), vibration analysis, impact analysis.
