Extending Shelf-life of Fuji and Golden Delicious Apples Using Soy PRotein Film Coating (대두단백질 막 코팅을 이용한 후지 및 Golden delicious 사과의 저장기간 연장에 관한 연구)

  • 최근 플라스틱제 식품 포장재에 대한 환경학적 문제가 제기됨으로 인하여 다양한 곡류 단백질의 필름 형성능력에 많은 관심이 모아지고 있다. 단백질 필름으로서 soy protein, wheat gluten, rice bran, corn zein, glatin 및 colloagen 등의 소재들이 많은 관심을 모으고 있으며, 비교적 필름 형성력이 뛰어나고, 저렴한 가격으로 구입할 수 있는 대두 단백질에 커다란 관심이 모아지고 있는 실정이다. 이들 물질로부터 제조된 가식성 필름 및 코팅제들은 식품의 보존기간을 연장시킬 뿐만 아니라 수분 및 용질의 이동을 방지하여 식품의 품질을 개선시킬 수 있다. 또한 이들 필름 및 코팅제들은 산소 및 이산화탄소의 이동, 이로 인한 지방 산화 그리고 휘발성 향기성분들의 감소 등을 조절할 수 있다. 대두 단백질 필름의 사과 코팅제로서의 이용은 개별적 포장이 용이하지 않는 제품들의 코팅제로서 활용하여 대두 단백질 필름 및 코팅제의 잠재적 시장성을 확인하는 하나의 응용분야이다. 본 실험의 목적은 대두 단백질 코팅제를 후지와 golden delicious 사과에 코팅하여 상온 (22$^{\circ}C$)과 냉장온도(2-4$^{\circ}C$)에서 60일동안 보관하여 색도, 경도 및 산도 변화 등을 측정하여 저장 중 사과의 품질에 미치는 영향을 조사하였다. 대두 단백질 코팅제는 대두 단백 용액들 (5g, 8g, 10g/100mL water)에 glycerin (50% w/w의 단백질)을 가소재로 첨가한 후 알칼리 용액으로 pH 9.0에 맞추었다. 그런후 85$^{\circ}C$에서 30분간 가열하여 코팅제를 준비하였다. 후지 사과(붉은색)와 golden delicious 사과 (초록색)를 dipping 방법으로 코팅하여 60일도안 실온과 냉장온도에 저자하여 보존기간의 연장을 확인하였다. 사과품질의 결정인자는 Hunter L, a, b 색도값과 사과의 조직의 강도 (외부 및 내부) 그리고 산도 등을 측정하였다. 코팅된 후지 및 golden delicious 사과의 표피 및 내부 경도는 control과 비교하여 높은 경도를 유지하였다. 또한 냉장온도에서 30일 동안 보관하였을 때, control 사과와 거의 비슷한 경도를 유지하였다. 식품의 색도를 소비자의 기호를 결정하는 중요한 인자이다. 대두 단백질로 코팅된 후지 사과는 상온에서 20일 동안은 control에 비하여 약간의 색도의 증가를 보였으나, 그 후 60일 동안은 색도의 증가를 보이지 않았다. 그러나 냉장 보관한 control 후지 사과에 비하여 색도의 증가가 관찰되었다. 대두 단백질 코팅제가 사과의 색도 변화를 방지하는 효과를 가졌으나, 저장 온도가 색도의 변화에 더욱 큰 영향을 미침을 알 수 있었다. 대두 단백질로 코팅된 golden delicious는 상온에서60일 동안 보관하였을 경우, 사과표피의 색도 변화를 현저히 지연시킴을 확인하였다. 또한 control과 비교하여 성공적으로 사과에 코팅하였으며, 상온에서 보관하여을 때 사과의 품질을 30일 이상 연장하는 효과를 관찰하였다. 이들 결과로부터 대두단백질 필름이 과일 등의 포장제로서 이용할 가능성을 확인하였다.

Preference of Apple Leaves of Three Cultivars, Fuji, Tsugaru and Hongro by Tetranychus urticae Koch and Its Life Table Analysis (점박이응애의 사과 품종(후지, 쓰가루, 홍로)에 대한 선호성과 생명표 분석)

  • Two-spotted spider mite (TSSM), Tetranychus urticae Koch (Acari: Tetranychidae) is one of the major pests in apple orchards. TSSM was known to show different population dynamics depending on apple cultivars. We tested the host plant preference and fitness of TSSM on the leaves of 3 apple cultivars, Fuji, Tsugaru, and Hongro. TSSM showed higher behavioral preference to Fuji than Tsugaru and Hongro, and showed a higher fecundity in Fuji. The immature development of this mite was the shortest in Fuji and longest in Hongro. Total fecundities were not significantly different among cultivars, but daily fecundity was higher and longevity was lower in Fuji. Hongro was the less preferred cultivar for TSSM, and showed the lowest fitness by life table parameters. These results could explain the possible mechanisms of differential population dynamics among apple cultivars. Further study including diverse apple cultivars currently available in Korea could help to deploy time- and cultivar- specific IPM tactics.

Pollination Effect and Nesting Behavior of Osmia cornifrons on 'Hongro', Early and 'Fuji', Late-season Apple Cultivars (중생종 '홍로'와 만생종 '후지'사과에서 머리뿔가위벌(Osmia cornifrons)의 영소활동 특성과 화분매개효과)

  • In order to use Osmia cornifrons more effectively in apples, we investigated the pollination effect and nesting activity of O. cornifrons on 'Hongro', the middle-season cultivar, and 'Fuji', the late-season cultivar. There was a significant difference in the nesting activity and pollination effect of O. cornifrons depending on the apple cultivar. The nesting activity, rate of trap nesting, and reproduction in 'Fuji' were 2.5, 1.5, and 3.8 times greater than in 'Hongro', respectively. The pollination effect according to cultivar 'Fuji' was 1.6 times greater than that of 'Hongro' in the central fruit set. In terms of the quality of fruit, the asymmetry index of 'Fuji' was 2.5 times lower than that of 'Hongro', and the number of apple seeds of 'Fuji' was 1.9 times greater than that of 'Hongro'. The main reason for this result was the air temperature. The activity of O. cornifrons was most affected by air temperature (R2 = 0.578). It is expected that the nesting activity and pollination effect are great in 'Fuji' (17.4-24.1℃) when the temperature during the blooming period is higher than that of 'Hongro' (12.5-20.2℃). Our study provides important information on stable apple production for apple cultivators, and can be used as an evidence for changes in flora and insect fauna caused by climate change.

Fermentation characteristics of cider from late harvest Fuji apples by a sugar tolerant yeast, Saccharomyces cerevisiae SS89 (내당성 효모 Saccharomyces cerevisiae SS89에 의한 늦수확 후지 사과의 사과주 발효 특성)

  • Normal- and late-harvested Fuji apples were fermented using the rapid-fermenting yeast strain Saccharomyces cerevisiae SS89. The late-harvest apples showed a slightly higher soluble-solid content with a lower level of total-acid and moisture (p<0.05) contents as well as hardness (p<0.05) than the normal-harvest apples. During the fermentation, the apples had similar changes in the pH and total-acid content regardless of the harvest time, but the increases in the alcohol content and yeast viable count with the decrease of the soluble-solid content were more rapid in the late-harvest apples than in the normal-harvest apples. After the completion of the fermentation, the soluble-solid and alcohol contents became very similar. The late-harvest cider showed a high total phenolic-compound content and a high DPPH radical scavenging effect, although these were slightly lower than those of the normal-harvest cider. It also showed a higher malic-acid content and higher hue color (p<0.05), Hunter's L, and b (p<0.05) values than the normal-harvest cider. In the sensory evaluation, the late-harvest cider obtained a higher score in taste and a lower score in color compared to the normal-harvest cider.

Identification of ideal size and drivers for consumer acceptability of apple (사과의 이상적인 크기와 소비자 기호도 결정인자 분석)

  • The physicochemical characteristics and consumer perceptions of two Fuji cultivars (Fuji and Royal Fuji) with six different size groups (3D: 30~39, 4D: 40~49, 5D: 50~59, 6D: 60~69, 7D: 70~79, and 8D: 80~89 apples/15 kg) were investigated to identify the ideal size and the drivers of consumer acceptability of apples. For the physicochemical characteristics, the weight, volume, specific volume, L, a, and b colors, hardness, pH, acidity, and brix of apples were measured. A total of 100 consumers were asked to mark the intensity of the characteristics (size, redness, glossiness, surface roughness, apple odor, apple flavor, sweetness, sourness, hardness, crunchiness, and toughness) to determine the ideal characteristics of apples before they were asked to taste the apple products. The consumers evaluated the apple samples in terms of their appearance, odor, flavor, texture, and overall acceptability; the consumers' intent to purchase such apples and willingness to pay for them; and the intensity of the aforementioned characteristics. Compared to the ideal characteristics of apples, the actual apple samples were rated low in their apple odor, apple flavor, acidity, sweetness, hardness, and crispness. The ideal size of the apples was between 4D and 5D. Their overall acceptability was highly affected by their flavor, followed by their texture, odor, and appearance. The acceptability of the appearance was highly correlated with the glossiness (r = 0.80), volume, weight, redness (r = 0.73), and size (r = 0.72). The consumer acceptability of the apples increased with the decreased pH and the increased Brix, hardness, and color b values of the peeled apples. The apple flavor, sweetness, hardness, crispiness, juiciness, and toughness during mastication were noted as sensory drivers of consumer acceptability.

Changes in Firmness of Apples during Exposure to Room Temperature after CA storage (CA 저장한 사과의 상온방치시 경도변화)

  • Fuji and Jonathan apples were stored at cold room and at CA storage conditions of $3%O_2-2%CO_2$ for Jonathan and $4%O_2-3%CO_2$ for Fuji for 8 months, and then tranferred to air at $20^{\circ}C$, 70%RH to compare the some factors related to texture of the apples stored at different storage conditions during exposure at $20^{\circ}C$. Total pectin content and firmness of the apples reduced, considerably with concomitant increases of water-soluble pectin content and polygalacturonase activity during exposure at $20^{\circ}C$ after storage. And the changes were much more serious in the first 5 days than any other period and in the apples stored at cold room, especially in Jonathan than the apples stored at CA storage conditions. From the sensory test the apples stored at cold room maintained acceptable quality for 5days after removal from storage condition. The acceptability from the test was lenghtened for more than 5 days in Jonathan and more than 10 days for Fuji stored at CA storage conditions. when compared with those of the apples stored at cold room.

Selection of Crabapple Pollinizers for 'Fuji' Apple through Physiological and Genetic Analysis (꽃사과 품종의 생리 및 유전적 분석을 통한 '후지' 사과의 수분수 선발)

  • We investigated characteristics and self-incompatibility genotypes of 11 crabapple cultivars to introduce a new pollinizer of 'Fuji' apple tree in Korea. Flowering dates of eleven crabapples were two to seven days earlier than that of 'Fuji'. The rate of pollen germination in vitro was ranged from 85.6% to 98.0% except 'Virginia'. Controlled pollination treatment with each crabapples to 'Fuji' increased fruit set rate about 20.4% to 34.4%, the number of seed per fruit about 13.8% to 42.3% and fruit weight about 7.4% to 16.7% compared to open pollination. Tested crabapples were resistant to peach fruit moth, brown leaf spot and sooty blotch in general. A PCR amplification method using S-RNase primers was carry out in eleven crabapples. S-alleles, $S_3$, $S_5$, $S_9$, $S_{10}$, $S_{20}$, $S_{26} from six crabapples were determinated. Through sequencing analysis, $S_5$ ('Manchurian', 'Virginia') and $S_9$ ('Yantaishagou') showed 100% homologous to previous result. Based on our results, it was recommended that 'Manchurian', 'Hopa A', 'Hanyaehanakaidou', 'Spectabilis' could be promising pollinzers for 'Fuji' apple cultivar.

Suitability Judgment of Storage Conditions by Internal Gas Concentration of 'Fuji' Apples under CA Storage (CA저장 중 후지 사과의 내부 기체농도에 의한 저장조건의 적합성 판단)

  • This study was conducted to develop a index for the judgment of suitability of storage conditions by internal gas concentration of 'Fuji' apples under CA storage, and was examined the relationship between the levels of quality characteristics(flesh firmness, titratable acidity and surface green color) and the infernal ethylene and carbon dioxide concentrations of apples. The levels of quality characteristics were not decreased for terms of storage when the infernal ethylene concentration of apples was below 10 ppm, but the levels of quality characteristics were sharply decreased when it was above 10 ppm of Internal ethylene. The high levels of quality characteristics were maintained by the lower internal carbon dioxide concentration of apples, especially at below 2% of internal carbon dioxide. These result showed that the suitable condition for CA storage of 'Fuji' apples was a condition for having below 10 ppm of internal ethylene and below 2% of internal carbon dioxide in apples. The internal ethylene and carbon dioxide concentrations of apples during CA storage can be used as a crucial index for the suitability judgment of storage conditions.

Influence of Dormancy Level and Carbon Concentration on Freezing Hardiness in Bourse Shoot of 'Fuji' Apple Tree (휴면 정도 및 탄소 함량이 '후지' 사과나무 과대지의 내동성에 미치는 영향)

  • This study was conducted to find out influence of dormancy level and carbon concentration on freezing hardiness in bourse shoot of 'Fuji' apple tree. Bourse shoot of 'Fuji' adult apple tree grafted on M.26 and M.9 rootstocks were used as experimental materials. Dormancy levels of bourse shoot were categorized according to the periods as follows the internal dormancy (late January), the early days after internal dormancy breaking (early February), the late days after internal dormancy breaking (late February), the bud break (late March), and the full bloom (late April). Chilling temperatures with bourse shoot were ranged from 0 to $-40^{\circ}C$. Also, the freezing hardiness according to carbon concentrations were investigated on 'Fuji'/M.9 apple tree that defoliated severely by Marssonina blotch (defoliation) and that of below the average 20 cm in shoot length through heavy crop load (weakness). Results showed that freezing hardiness of bourse shoot may become weaker after internal dormancy breaking. There was no differences in the carbon concentration of bourse shoot of 'Fuji' apple tree grafted on M.9 and M.26, so may be resulted in no difference in freezing hardiness both of bourse shoot grafted on M.9 and M.26 rootstock. Carbon concentration in bourse shoots with weakness and C/N ratio in bourse shoots with defoliation were lower than that of healthy. It may be shown that the freezing hardiness of defoliation and weakness were weaker than that of healthy.

  • Immature apple fruits of cultivars Fuji and Miller were completely resistant to Macrophoma sp. until 10 July. When inoculated on 31 July, apples became susceptible to this fungus, irrespective of cultivar. This fungus grew better on Fuji than Miller. Lesion enlargement on apple at $25^{\circ}C$ was remarkably pronounced relative to $20^{\circ}C$. In both cultivars, the amount of total soluble carbohydrates or reducing sugars in apple fruit flesh was gradually increased as apples became mature. The healthy apples of cultivar Fuji had a higher amount of carbohydrates than those of Miller. The infected apples contained more soluble carbohydrates in comparison to the healthy ones. In healthy apples, there were no consistent differences between Fuji and Miller in amount of total soluble amino acids. With increasing age of apples, the amount of soluble amino acids declined in the fruit flesh of both cultivars. Levels of carbohydrates and amino acids in apple fruits were discussed in association with the immature fruit resistance to Macrophoma sp.
