Effect of Traditional Seasoning on Quality Characteristics of Low Temperature Aging Pork (전통 양념이 저온 숙성 돼지고기의 품질특성에 미치는 영향)

  • This study was conducted to investigate the quality characteristics of seasoned pork prepared by Korean traditional 4 types seasoning such as soy sauce (T1); Kimchi sauce (T2); pickled shrimps sauce (T3) and onion sauce (T4). The samples were seasoned by the proportion of meat to seasonings (1:1). The seasoned samples were aged at $1{\pm}1^{\circ}C$ for 30 days. The results obtained were as follows; pH of T3 was higher (p<0.05) than other treatments during aging periods. Saccharinity and salinity were higher in T1. Except T3, water holding capacity (WHC) have no significantly (p>0.05) different during the aging. Shear force and Volatile basic nitrogen (VBN) were increased in T1 and T4 with aging periods. TBARS have no significantly (p>0.05) different in all treatments at the 1 day of aging, however T1 was significantly higher (p<0.05) compared with other treatments after 10 days of aging. In surface meat color, a* and b* were higher in T2 and lower in T4 with aging periods. In inner meat color, L* was decreased in all treatments with aging periods, however T4 was no significantly (p>0.05) different during aging periods. a* and b* were increased with aging periods in all treatments. Total plate counts was increased at the 10 days of aging and decreased at the end of aging. Escherichia coli of T1, T2 and T3 were decreased with aging periods, however T4 was significantly (p<0.05) increased with aging periods. Lactobacilli spp. of T2 and T3 were higher than other treatments at the beginning of aging. In sensory evaluation, T4 was higher at the beginning of aging, however T1 and T3 were increased sensory evaluation value with aging periods.

  • According to the development of the aircraft industry, the fatigue strength of Aluminum Alloy becomes a great important material, but it seems that we don't understand an effect on the crack growth behaviour very well. This thesis is not only studied about the five kinds of 2017-T3, 2023-T3, 5083-0, 7075-T6, 7N01-T6 among the Aluminum Alloy which are the main materials of the aircraft, but also small or large relations against the fatigue strength of them. The consequence of the research was being progressed the accordance with the order. That is, The order is 2024-T3> 2017-T3> 7N01-T6> 7075-T6> 5083-0. These inclusion came out the acceleration phenomena in the crack growth behaviour among the high ${\Delta}K$ section Nevertheless I figured out their effects were being ignored at the 2b step.

Studies on the Yeasts for the Brewing of Soy Sauce(3) -Isolation and Identification of Osmophilic Yeasts for Higher Concentration of NaCl (간장발효에 관여하는 효모에 관한 연구(제3보) -고농도 식염내성 효모의 분리동정-)

  • This experiment was carried out to isolate osmophilic yeasts for higher concentration of NaCl than 20 per cent may affect greatly the fermentation of soy sauce. 6 strains of yeasts were selected from the soy sauce mashes at the fermentating periods and identified observing their morphological characteristics. Their salt-resistance and effects upon the flavor of soy sauce were examined. The results obtained were as follows: (1) The strain $T_3,T_5,$ and $T_{11},\;T_8,\;T_9,\;and\; T_{10},$ selected were identified Saccharomyces cerevisiae group II, Debaryomyces nicotianae, Saccharomyces chevalieri, Saccharomyces rouxii and Saccharomyces rosei, respectively. (2) They were more salt-resistant on the liquid media than on the solid media in the case of cultures on the media containing more than 26 per cent of NaCl. (3) They were grown on the media containing 5-23 per cent of NaCl better than containing none of NaCl. (4) The strain $T_3,\;T_8,\;T_9,\;and\; T_{10}$ were grown on the media containing up to 28 per cent of NaCl, and $T_5\;and\;T_{11}$ up to 32 per cent of NaCl is the case of liquid cultures. (5) Among them, the strain $T_9$ showed the best alcohol fermentation ability and the best fermentative flavor, and $T_5\;and\;T_{11}$ formed moldy smell and pellicle.

Thyroid Function Test in Thyroid Diseases and Pregnancy - The diagnostic value of free thyroxine by RIA - (임신 및 각종 갑상선질환에서 갑상선 기능 판정에 관한 연구 - 혈청유리 $T_4$의 진단적 의의에 관한 고찰 -)

  • To evaluate the diagnostic accuracy of the measurement of free thyroxine (FT4) by radioimmunoassay, we measured free $T_4\;and\;T_4,\;T_3,\;T_3RU$, TSH and TBG serum levels by radioimmunoassay in 18 healthy persons and 52 patients with various thyroid diseases and 11 normal pregnant women. The results are as follows. 1. In 19 cases of overt hyperthyroidism, $T_3,\;free\;T_4$ and FTI, $T_4/TBG$ ratio reflect hyperfunction in all cases. $T_4$ is increased in 94% (18/19) and TBG and TSH are decreased in 79% (15/19). 2. In 8 patients with overt hypothyroidism, TSH is increased in all cases and free $T_4$ and FTI is decreased in all cases. $T_4$ is decreased in 87.5% (7/8), $T_3$ is decreased in 75% (6/8) and $T_4/TBG$ ratio is decreased in 62.5% (5/8). 3. In 5 patients who are clinically in euthyroid state after treatment of hyperthyroidism, $T_4,\;free\;T_4$, FTI and TSH are in the normal range in all cases and $T_3$ is normal in 60% (3/5) and slightly increased in 40% (2/5). 4. In 10 patients who showed clinically borderline hypothyroidism after treatment of hyperthyroidism, TSH is increased in all cases and free $T_4$ and FTI are decreased in all cases, but $T_4\;and\;T_3,\;T_4/TBG$ ratio are in the normal limit in all cases. So after treatment of hyperthyroidism, TSH, free $T_4$ or FTI are recommended as optimal thyroid function test. 5. In normal pregnancy, free $T_4$, FTI and $T_4/TBG$ ratio reflect normal function, but the other parameters revealed unreliable due to the influence of increased TBG. Also TBG and TSH level in pregnancy is increased significantly compared with normal healthy control group. 6. The coefficients of correlation between free $T_4$ and FTI were 0.862 (p<0.001) and 0.685 (p<0.001) between free $T_4\;and\;T_4/TBG$ ratio. In most patients, diagnostic value of free $T_4$ was comparable and even superior to FTI, so free $T_4$ measurement can be used routinely with thyrotropin assay in the diagnosis of hypothyrodism or with $T_3$ for the diagnosis of hyperthyroidism.

Effect of mixing with non-familiar piglet on change of body temperature (이복자돈과의 체중별 합사가 자돈의 체온변화에 미치는 영향)

  • This study was performed to investigate the change of the body surface temperature during socialization of weaning pigs. A total of 108 piglets (Landrace 60 and Yorkshire 48) aged 31 (${\pm}1.1$) day was used for this study. Experiment was designed as follows; familiar group (T1), randomly mixed with unfamiliar piglets (T2), mixed based on weight of unfamiliar piglet (T3). The transport and mixing of pigs were performed at 10:00, and then body surface temperature was taken by thermo-graphic camera after 4 hours (14:00). Average surface temperature and hot-spot-temperature, which is the hottest spot of the body surface, were analyzed using Testo IRsoft 3.1 software. Average temperature of body surface were 36.0, 38.2, and 37.5 in T1, T2, and T3, respectively. Average of body surface temperature in T2 and T3 were higher (p<0.001) than T1, and average temperature of body surface of T3 was greater (p<0.001) than that of T2. The hot-spot-temperature of T1, T2, and T3 were 38.7, 39.5, and 39.6, respectively. The hot-spot-temperature of T2 (p<0.01) and T3 (p<0.001) were significantly higher than that of T1. Above results demonstrate that grouping unfamiliar pigs leads to increase in the body temperature possibly by pigs aggressive behavior during social conflict. By the result on average body temperature, this study suggests that the mixing with similar body weight would increase the struggle time and frequency.

  • This experiment was carried out to determine the effect of nitrogen application level of cattle sluny(T1:150, T3:250, T53.50 kglha) and chemical fertilizer(T2:150, T4:250, T6:350 kg/ha) on the growth characteristics, dry matter yield and chemical soil property of Sorghum-Sudangrass hybrid [Sorghum bicolor L. Moench]. The results obtained are summarized as follows: Mean stem diameter was significantly increased by increasing nitrogen application level of cattle slurry and chemical fertilizer. Especially, T6 treatment was the highest as 11.1 mm, while T1 treatment w a the lowest as 0.3 mrn. According to the same level of nitrogen application, cattle slurry treaunent(T1, T3 and T5) were showed a lower mean stem hardness than chemical fertilizer treatment(T2, T4 and T6).   • This study was conducted to evaluate the substitution effect of red beet powder on sodium nitrite in emulsion-type pork sausages, and to investigate the effect of the addition of red beet powder on the physicochemical characteristics of emulsion-type pork sausages at 10℃ for 6 weeks. The treatments were divided into five groups: Control (sodium nitrite 0.01%), T1 (sodium nitrite 0.005% + red beet powder 0.5%), T2 (sodium nitrite 0.005% + red beet powder 0.25%), T3 (red beet powder 0.5%), and T4 (red beet powder 0.25%). In the CIE*I didn’t delete this asterisk (*) because it might be a marker for something you wish to add later, but please note that if there is no significance for the asterisk, it should be removed as a typographical error. color of emulsion-type pork sausages, the lightness value of the control was significantly higher than for the other groups (p<0.05). The redness value was higher in T1, whereas the yellowness value was higher in the T3 and T4 groups compared with the others (p<0.05). The pH values of emulsion-type pork sausages were significantly decreased in the T3 and T4 groups by the addition of red beet powder (p<0.05). However, the DPPH radical-scavenging activity was higher in the T1 and T3 groups than in the others (p<0.05). The residual nitrite ion was the highest in the control group (p<0.05). Therefore, it is determined that red beet powder can substitute for nitrite as a natural colorant, and it has a slightly antioxidant effect in emulsion-type pork sausages.

  • This study examines the effects of alginic acid, a source of dietary fiber, in a glucose-derived media. In particular, we examined how the presence or absence of alginic acid affected the differentiation and triglyceride densities of 3T3-L1 cells. We established that the addition of insulin-like growth factor-I (IGE-I) to 3T3-L1 cells results in acceleration of differentiation. We sought to determine the role of alginic acid in the production of fat by adding alginic acid to 3T3-L1 cells and examining its ability to limit or potentiate this stimulatory effects of IGE-I and IGF binding proteins. We have determined that alginic acid restricts 3T3-L1 cell differentiation and the creation of triglycerides, effectively attenuating 3T3-L1 cell metablolism and growth.

Effect of Chemical Fertilizer and Liquid Manure Application on the Growth Characteristics and Feed Value of Corn for Silage and NO3 of Soil (화학비료와 액상분뇨 시용이 사일리지용 옥수수의 생육특성, 사료가치 및 토양의 NO3에 미치는 영향)

  • This experiment was carried out to determine the growth characteristics, dry matter and TDN yield of corn for silage (Zea mays L.), soil nitrate in infiltration water by chemical fertilizer and different manure application(C; chemical fertilizer + chemical fertilizer, T1; Lime +chemical fertilizer + chemical fertilizer, T2; swine manure + swine manure, T3; Lime + swine manure + swine manure, T4; swine manure +chemical fertilizer). The results obtained are summarizes as follows; The mean growth characteristics of T3 treatment(soil treatment: lime + base fertilizer: liquid manure + additional fertilizer: chemical fertilizer) was higher than those of other treatments. The highest yield of dry matter and TDN was obtained in T3 treatment with 18,611 and 13,746 kg/ha, respectively(P<0.05), and the lowest in T1 treatment with 13,529 and 9,541 kg/ha, respectively(P<0.05). The contents of NDF and ADF were not significant different among treatments. However, NDF and ADF content among treatments were the highest with T1 treatment and the lowest with T3 treatment. $NO_3$ level of soil was hardly influenced by the different manure application treatment, and not affected during the experiment time.

  • Absorptive type SP3T(Single Pole Three Throw) and SP8T switch modules over the 6-18 GHz are designed and fabricated. The epitaxial structure of GaAs PIN diode for switch modules are designed for low loss and high power capability. The maximum input power of SP3T and SP8T switch modules are 2 W and 1 W, respectively. The switching time with driver circuit is less than 130 nsec. The maximum insertion loss of SP3T switch module and SP8T module shows 2.8 dB and 4.2 dB, respectively. The isolation between input port and output port is more than 55 dB. Two switch modules for electronic warfare system have passed the environment tests of the related test items.
