Quality Characteristics of Tomato Sauce prepared with Different Quantities of Chili Pepper (고춧가루 첨가량을 달리한 토마토소스의 품질특성)

  • The purpose of this study was to determine the best ratio of tomato sauce with chili pepper powder. The investigation of food quality after preparing tomato sauce with chili pepper powder shall be as follows. Moisture was reduced when red chili pepper powder were added gradually, although protein, fat, ash, and carbohydrates were increased. pH values decreased as red chili pepper increased as organic acid was reduced. In case of colour, L-value and a-value were reduced, although b-value increased. Lycopene and ${\beta}$-carotene increased by adding red chili pepper by virtue of the existence of carotenoid. Polyphenol, flavonoid, and DPPH radical also increased with the addition of red chili pepper as a result of red chili pepper's antioxidant property. In an attribute difference test, smoothness showed a low score when red pepper powder was added, but graininess returned a high score as red pepper powder absorbed moisture. The result of the sensory test for sauce, TC2 showed the best score in overall acceptance, while TC3 showed the best score for sauce with pasta in overall acceptance. Tomato sauce with 3% of red pepper powder was shown to have the most acceptable quality and should have powerful manufacture competitiveness.

A study on vegetation and soil environmental characteristics of green roof in Daejeon Metropolitan City (대전광역시 옥상녹화 지역의 식생현황 및 토양환경 특성에 관한 연구)

  • This study was to analyze the soil environmental characteristics and vegetation status of green roof in Daejeon Metropolitan City. The investigated floras of vascular plants are 17 families, 26 genera, 28 species in Seo-Gu Daejeon District Office Building (SG), 25 families, 49 genera, 56 species in Galma Public Library (GP), and 34 families, 57 genera, 60 species in Daejeon City Hall (DC) respectively. Although the larger area shows the more numbers of species in introduced plants and naturalized plant, the naturalized plant ratios were similar with each other. They were 10.71%, 10.71%, and 11.67% at SG, GP, and DC respectively. As a result of analysis on soil physical property, soil depths including vegetation soil and drainage soil of 3 green roofs were 30cm. The depths of vegetation soil at SG, GP, and DC were 0~8cm, 0~10cm, 0~10cm respectively. As a results of soil chemical properties of our study, soil pH of vegetation soil and drainage soil were a range of 6.42 and 7.43, and a range of 6.55 and 7.43 on the average respectively. Available-P contents of vegetation soil and drainage soil were a range of 153.33 and 366.33mg/kg, and a range of 136.67 and 242.67 mg/kg which is very high, respectively. Carbon contents in soil at vegetation soil and drainage soil were a range of 3.16 and 6.38%, and a range of 1.63 and 2.47% respectively. Carbon storage per square meter within 30 cm were 2.76 kg, 2.99 kg, and 3.66 kg at SG, GP, and DC respectively.

Some Observations on the Organelles Participating in the Biliary Excretion in the Hepatocyte of the Biligrafin Injected Mouse (Biligrafin 투여 마우스 간세포의 미세구조적 및 세포화학적 연구)

  • In this study, an attempt was made to investigate the probable organelles participating in the secretion of biligrafin. The animals (ICR male mice, 25-30gm) were divided into normal control and 6 biligrafin injected groups to which 30% biligrafin (0.006ml/gm b.w.) were injected at 10, 20, 40, 80, 160 and 320 min prior to the sampling. The mice of each group were perfused through the heart with ice-cold 2.5% glutaraldehyde buffered with 0.1M Na-cacodylate (pH. 7.4) under the Na-pentobarbital (Nembtal 0.0015mg/gm b.w.) anesthesia and liver tissues were taken from each group. Some specimens were immersed 1 hr in the same solution used in the perfusion. After an overnight rinse in 0.1M Na-cacodylate buffer containing 10% DMSO and 7.6% sucrose, $75{\mu}m$ fronzen sections were made for cytochemical study. The sections were incubated in thiamin pyrophosphatase (TPPase) and inosine diphosphatase (ID Pase) media for 70 min at $37^{\circ}C$ respectively and acid phosphatase (AcPase) medium for 40 min at $37^{\circ}C$. They were postfixed in 1 % $OsO_4$ for 1 hr. The other specimens were immersed for 8 hrs in the fixative consisting of 2.5% glutaraldehyde and 3.0% paraformaldehyde buffered with Na-cacodylate (pH. 7.4). All of the osmificated specimens were processed for electron microscopy. In both normal and biligrafin injected groups, endoplasmic reticulum (ER), vacuoles, Golgi apparatus and lysosomes were seen in the vicinity of bile canaliculus. In the biligrafin injected groups, however, the Golgi apparatus appeared to be decreased and ER and vacuoles were dilated and increased. The rough endoplasmic reticulum (RER) having a few attached ribosomes appeared to be the round saccule, especially at 20 min after biligrafin injection. Smooth endoplasmic reticulum (SER) seemed to be formed by the detachment of ribosomes at the cisternal end of RER. The cistern of SER showed saccules which probably budded off to form the vacuole. The vacuoles were devoid of visible centents. This finding seemed to be in agreement with the biochemical property of the bile constituents. The fusion between the vacuoles and bile canaliculus were frequently seen in the groups injected with biligrafin. The lysosome did not show any changes in the biligrafin injected groups. Accumulation of some material and lipid droplets were seen at the 40 and 80 min after biligrafin injection, especially at the latter. At 160 and 320 min after biligrafin injections, however, they were decreased successively while the RER stack, free ribosomes and polysomes were increased. Although the reactive products of TPPase and IDPase were observed in the ER saccules and vesicles of the normal control and biligrafin injected groups, the fusion between the bile canaliculus and saccules or vesicles could easily be seen in the latter. The AcPase activity, however, was observed in the cistern at the maturing face of Golgi apparatus and lysosomes in both normal and biligrafin groups. The results suggest that the biligrafin is excreted via the vesicles, vacuoles or sacoules probably derived from the SER without the participation of Golgi apparatus and lysosomes, and the excess amount of material is stored as inclusions during the repairing of the organelles being overactive.

Study on Reutilization with Aerobic Microbes of Organic Food Waste Leachates (호기성 미생물을 이용한 음폐수의 처리 및 자원화에 관한 연구)

  • This test established the bioavailability and sample input by mixing the maintaining the microbial machine parts and food waste leachates in weight of 2:1 as advanced experiment, maintaining the constant temperature, agitating and observing its weight and property change for 60 hours. And, I injected daily the established microbial machine parts and food waste leachates rate, maintained the temperature in the reactor with $55{\sim}65^{\circ}C$, and agitated with constant speed. I studied the recycling possibility of food waste leachates by extracting the sample after 24 hours, verifying its characteristics, and repeating the food waste leachates input and sample extraction for about 40 days. Considering all about the results of this study, I saw that 87.32% of food waste leachates was reduced, and the solid of bluebug or food included in the food waste leachates was decomposed within 24 hrs. pH for 43 days after 9 days of stabilization period was maintained from 3.7~3.9 and the ignition loss from 88.67~87.3%, and the quantity of organic matter from 77.6~80.88%. With the similar result daily maintained, it is considered to progress more the minimization by inputting the future food waste leachates. C/N rate satisfies the less than 25 that is the composting basis within 8 days, maintaining between 13~15, with 2% of salt not exceeded, it is able to recycle as the compost of food waste leachates as based on the composting with no extracted heavy metal content.

Physicochemical and Sensory Properties of Commercial Salt-Fermented Shrimp (시판새우젓 종류별 이화학적ㆍ관능적 특성)

  • We evaluated physicochemical and sensory characteristics of 25 commercial salt-fermented shrimps by kind (Oh Jeot, Yook Jeot and Chu Jeot) by manufacturer (traditional marketer (TS) & company (CS)). Salinity and pH ranged 17.9∼28.7% and 7.82∼8.74, respectively, of which Chu Jeot was somewhat higher in salinity and pH, compared with those of the others. Amino nitrogen (AN), volatile basic nitrogen (VBN) and thiobarbituric acid reactive subjects (TBARS) showed great variation ranged with 21.41∼661.13 mg%, 263.2∼1180.2 mg% and 0.507∼1.322 $\mu\textrm{g}$/g, respectively. Hunter color of L value was 53.99∼67.45, a value, 4.98∼12.06 and b value, 4.45∼10.4. Physicochemical quality showed greater variations in Chu Jeot of TS than that of CS. Products of CS have higher salinity while lower VBN and AN than those of TS. Sensory results showed that mean scores of appearance, over-all taste, over-all flavor and over-all acceptability between TS and CS were not significantly different. The mean score of over-all acceptance was the highest in Yook Jeot. Physicochemical and sensory characteristics of salt-fermented shrimps in a PCA plot comprised of first principal component (68.36%) and second principal component (31.36%).

Physiochemical Properties and Plant Growth of The Hydroponic Substrate Using Waste Wood Chip (양액재배용 목재고형배지의 이화학적 특성과 작물생육 특성)

  • This study examined the plant growth and development characteristics of leafy vegetables on the hydroponic substrates of waste wood chips, radiate pine chips, and mat type of waste wood chips. The bulk density of waste wood chips and radiata pine chips were $0.2g/cm^3$ and $0.16g/cm^3$, respectively. The moisture retention properties of both the radiata pine chips and waste wood chips were found to be similar but not better than those of the control rock wool and coco peat hydroponic substrates. The moisture retention property of the mat type was found to be the lowest. The chemical analysis of waste wood hydroponic substrates (w/v) was as follows.; The pH was 6.59, electric conductivity was 6.76 dS/m, total nitrogen content was 0.5%, C/N ratio was 113%, phosphorus was 10.1 ppm, potassium was 77 ppm, calcium was 531 ppm, magnesium was 49 ppm, and sodium was 96 ppm. The results from the radiata pine chemical analysis showed that it had a pH of 5.29, electric conductivity of 4.49 dS/m, total nitrogen content of 0.32%, C/N ratio of 180%, phosphorus of 6.4 ppm, potassium of 83 ppm, calcium of 97 ppm, magnesium of 29 ppm, and sodium of 59 ppm. Except for the plants grown in mat type, the developmental characteristics of the plants grown in rock wool and coco peat hydroponic substrates were similar. Based on the results of the experiment, waste wood resources may possibly be used as an organic solid medium in place of the existing rock wool and coco peat medium.

Comparison of Water Potential Parameters in Aster scaber and Synurus deltoides Leaves Obtained from P-V Curves (P-V 곡선법에 의한 참취와 수리취의 수분포텐셜 비교)

  • This study was carried out to establish a proper cultivation site and diagnose the drought-tolerance of Aster scaber and Synurus deltoides leaves by using Pressure-volume curves. In order to measure pressure-volume (P-V) curves, Aster scaber and Synurus deltoides were cut off above ground part and the tip of the cutting were placed in water, which was covered with a plastic bag. Samples were kept overnight (about 12 hours) in darkness at room temperature (20~25$^{\circ}C$) to achieve maximal turgor (full saturation). The pressure in the chamber was gradually increased from 0.3MPa to 1.8MPa by nitrogen gas. After measured, leaf samples were dried at 80$^{\circ}C$ for 48 hours and dry weight of each samples were determined. The result of the original bulk osmotic potential at maximum turgor ${\Psi}^{sat}_o$ sat was lower -0.8 MPa in Aster scaber leaves than -0.7 MPa Synurus deltoides leaves. Also the osmotic potential at incipient plasmolysis ${\Psi}^{tlp}_o$ in Aster scaber leave was -0.9 MPa. In contrast, the value of maximum bulk modulus of elasticity $E_{max}$ of Aster scaber leaves were approximately two folds higher than that of Synurus deltoides leaves. The values of the relative water content at incipient plasmolysis $RWC^{tlp}$ are all above 90% showing that the function of osmoregulation is somewhat better, and Vo/DW, Vt/DW, Ns/DW of Synurus deltoides leaves were approximately 1~2 times higher than that of Aster scaber leaves. Thus, responses to water relations of Aster scaber and Synurus deltoides such as ${\Psi}^{sat}_o$, ${\Psi}^{tlp}_o$, $E_{max}$, ${\Psi}_{P,max}$, $RWC^{tl}$ were shown that the Aster scaber leaves was slightly higher drought-tolerance than Synurus deltoides leaves. However, in both of Aster scaber and Synurus deltoides, occurring incipient plasmolysis at the high water content, have a relatively lower drought-tolerance property indicating that growth of these plants are cultivated appropriate in high moisture soil sites.

Nano-crystallization Behavior and Optical Properties of Na2O-Nb2O5-TeO2Glasses (1) (Na2O-Nb2O5-TeO2계 유리의 광학적 성질과 나노-결정화거동 (1))

  • In order to develop a new type of nonlinear optical materials or photocatlaysts, Na$_2$O-Nb$_2$ $O_{5}$-Te $O_2$ glasses were prepared using conventional melt quenching method, and the crystallization behaviors and optical properties of these glasses was investigated. The optical and physical properties for Na$_2$O-Nb$_2$ $O_{5}$-Te $O_2$ glasses are: refractive index, n=2.04$\pm$0.04; density, p (g/㎤)=4.87$\pm$0.58; optical energy band of the transmission cut-off wavelength, E$_{0}$ (eV)=3.14$\pm$0.04. The transparent glass ceramics consisting of the nanocrysatls were obtained when the Na$_2$O-Nb$_2$ $O_{5}$-Te $O_2$ glass was first heat-treated at 3$50^{\circ}C$ for 1 h and than at 40$0^{\circ}C$ for 1 h. A cubic crystalline phase consisting of the nano-crysatls transforms into a stable phase at temperature above 47$0^{\circ}C$ for 1 h.

The Development of Squid(Todarodes pacificus) Sik-hae in Kang-Nung District -1. The Effects of Fermentation Temperatures and Periods on the Properties of Squid Sik-hae- (강릉지방의 오징어 식해 개발에 관한 연구 -1. 숙성온도 및 기간에 따른 성분변화-)

  • Kang-Nung sik-hae is a traditional Korean fermented fish product which has remained in existence in Kang-Nung district. In order to preserve the traditional culture of Kang-Nung sik-hae and develop it as a commercial product, the property changes of sik-hae were investigated at different fermentation temperatures and periods. The chemical changes during the fermentation of squid(Todarodes pacificus) sik-hae were studied at different fermentation temperatures and periods. The amounts of proximate compositions and salinity did not change significantly at all fermentation temperatures and periods. The value of pH decreased with increasing storage period at all fermentation temperatures except at $5^{\circ}C$, whereas that of lactic acid at all fermentation temperatures increased. The amount of total arginine increased slightly up to 10-day of storage and decreased after that. The amount of $NH_2-N$ increased rapidly up to 15-day of storage at all temperatures and increased slightly after that. The amount of TMAO decreased significantly at $15^{\circ}C\;and\;20^{\circ}C$ and slightly at $5^{\circ}C\;and\;10^{\circ}C$, whereas that of TMA increased significantly at $20^{\circ}C$ up to 5-day of storage and decreased slightly after that. At all experimental temperatures except $5^{\circ}C$, the amount of TMA increased or fluctuated in proportion to the increase in fermentation periods. Inosine and hypoxanthine were the main components of nucleotides and their related compounds during the fermentation of sik-hae. Summarizing the above results, the optimum fermentation period of sik-hae was concluded to be 15-days at all experimental temperatures except $5^{\circ}C$.

Effects of Dietary Fiber Extracts from Brewer's Spent Grain on Quality Characteristics of Chicken Patties Cooked in Convective Oven

  • Brewer's spent grain (BSG) is a by-product of beer manufacturing. This study was conducted to evaluate the effect of dietary fiber extracts from brewer's spent grain on quality characteristics of chicken patties. The total fiber content of BSG dietary fiber extracts after extraction increased from 58.11% to 68.57%, and the extracted dietary fiber extracts were added to chicken patties at 0, 1, 2, 3, and 4%, respectively. The effects of the BSG dietary fiber extracts on pH, color, cooking loss, reduction in patty diameter, salt-soluble protein solubility, texture, and sensory characteristics of chicken patties were evaluated. The addition of BSG dietary fiber extracts decreased pH and lightness values, and increased redness and yellowness. Chicken patties formulated with 3-4% BSG dietary fiber extracts had the lowest cooking loss among all treatments (p<0.05). The diameter of chicken patties was not affected by the addition of BSG dietary fiber extracts. Additionally, no significant difference was observed in salt-soluble protein solubility after adding 3% BSG dietary fiber extracts compared to that in the control. Textural and sensory properties were different among the chicken patties, and the 3% BSG dietary fiber-added chicken patty had the highest acceptability. Our results indicate that 3% BSG dietary fiber extract can be used as a good source of dietary fiber for improving the quality characteristics of chicken patties.
