The purpose of this study was to investigate effects of the developed nutrition education program focused on individual daily energy requirements and food exchange units using Food Exchange System for diabetes mellitus at a community health center. Developed the nutrition education program, four weeks' nutrition education including provided twice individual meal as diet therapy (2 hour/lesson/week, 4 week), was provided to 20 diabetic elderly (12 male, 8 female, 50-75 yrs): 1st lesson "Introduction: management of diabetes mellitus", 2nd lesson "6 Food groups and sources of 6 food groups", 3rd lesson "Individual daily energy requirements and food exchange units", and 4th lesson "Food choice for diabetes mellitus". For effects' analysis of the developed program, we assessed the changes in anthropometric characteristics; biochemical characteristics and nutrient intakes using 24 hr recall method. Effects of the developed nutrition education program were as follows: weight was significantly decreased, blood urea nitrogen (BUN) and glycosylated hemoglobin (HbA1c) were significantly decreased, and distribution of subjects in BUN and HbA1c was significantly changed. In protein : fat : carbohydrate (PFC) ratio, it was significantly changed from 15.98 : 16.30 : 66.69 to 17.51 : 18.94 : 64.10. In evaluation of nutrient intakes by Dietary Reference Intakes for Koreans (KDRI), protein, fiber, fat, vitamin E, niacin, folic acid, calcium and zinc were shown significantly positive changes in distribution of subjects according to intake level. The index of nutrition quality (INQ), nutrition adequacy ratio (NAR) and mean nutrition adequacy ratio (MAR) were significantly increased. In conclusion, the developed 4 weeks' nutrition education program focused on individual daily energy requirements and food exchange units using Food Exchange System for diabetes mellitus at community health center may improve the symptom of diabetes mellitus.
Objectives : This study was performed to evaluate the effect of the electroacupuncture therapy on abdominal fat deposit without diet, exercise and herbal medication. It was also designed to check the changes of free fatty acid in blood and catecholamine in urine to observe the mechanism of the electroacupuncture efficacy. Methods : 10 volunteers over 85 cm(male, 90 cm) in waist circumferences were recruited, and 10 electroacupuncture treatments were applied on their abdominal subcutaneous fat area for 4-5 weeks. We measured anthropometric factors, abdominal fat area with CT scanning, and the changes of free fatty acid in blood and catecholamine in urine before treatment and after the last treatment. Results : In this study, significant changes were shown in weight, waist circumference, waist/hip ratio, body mass index and body fat percent after the electroacupuncture therapy. There were also significant decreases of visceral fat area, visceral/subcutaneous fat area ratio in CT scanning. The blood level of free fatty acid and the urine level of catecholamine were increased after treatments, but the changes were not statistically significant. Conclusions : This study showed the efficacy of the electroacupuncture therapy on the abdominal fat deposit. But significant changes couldn't be found out in free fatty acid and catecholamine. Further studies that compensate for the limitations of this study are required to confirm the mechanism of the electroacupuncture efficacy.
This study was conducted to examine the effects of Cheonggukjang powder made using black foods on liver function and lipid composition in streptozotocin(STZ)-induced diabetic rats. The experimental animals were divided into 5 groups and fed the following for 7 weeks; normal diet(control), STZ+normal diet(Diabetic), STZ+50% soybean Cheonggukjang supplementation(DSC), STZ+44.5% yakkong Cheonggukjang supplementation(DYC), and STZ+supplementation with 50% yakkong black food(black rice, black sesame seeds, and sea tangle) Cheonggukjang(DYCB). The results showed that the body weight gain and food efficiency ratio of the STZ-induced diabetic groups were significantly lower than those of the control group. In the Diabetic group, glutamic oxaloacetic transaminase(GOT) and glutamic pyruvic transaminase(GPT) activities and total bilirubin content in serum were significantly greater than those in the control group. However, supplementation with Cheonggukjang reduced these values. In the Diabetic group, the triglyceride, total cholesterol, and low-density lipoprotein(LDL)-cholesterol contents in the serum and liver tissue, as well as the atherogenic index(AI) and cardiac risk factors(CRF) were significantly higher than the corresponding values in the control group, although the high-density lipoprotein(HDL)-cholesterol and phospholipid contents were significantly lower than those in the control group. However, supplementation with Cheonggukjang normalized the changed lipid composition in the STZ-induced diabetic rats. Further, yakkong Cheonggukjang and black food contaning yakkong Cheonggukjang normalized AI and CRF.
The present study aimed to investigate the effect of whole wheat cookie supplemented with Capsosiphon fulvescens (CF) extract on serum glucose homeostasis in C57BL/6 mice. This study examined whether the same effect was demonstrated for whole wheat cookie in comparison to previous research documenting the glucose-lowering effect of food products combined with CF extract. Mice were divided into three groups depending on the diet administered: normal cookie (NC), whole wheat cookie (WC), and WC blended with CF extract (WCFE). After 4 weeks of administering the experimental diet, the blood glucose level, serum insulin level, and homeostatic model assessment for insulin resistance index were found to be significantly lower in the WCFE group than in the NC and WC groups. These results suggest that whole wheat cookie containing CF extract is effective in preventing insulin resistance and maintaining blood glucose homeostasis.

In order to investigate the n-3 highly unsaturated fatty acids (n-3HUFA) requirement of the Korean rockfish Sebastes schlegeli, two experiments were conducted in the flush-out aquarium system. 1. Effects of different dietary fatty acids on growth and feed efficiency Efficacy of different fatty acids on the Korean rockfish was investigated by feeding diets containing each of the different fatty acids, 12:0, 18:1n-9, 18:2n-6, 18:3n-3, and n-3HUFA for 9 weeks. The best growth and feed efficiency were obtained from the fish fed diet containing n-3HUFA (P<0.05). 2. n-3HUFA requirement Requirement of dietary n-3HUFA for the Korean rockfish (5.9 g in mean body weight) was investigated with the test diets containing different levels of n-3HUFA ranging from $0\%$ to $4.0\%$ at $8\%$ dietary lipid level. After 6 weeks of feeding experiment, fish performance and fatty acid composition of liver were studied. Growth was significantly improved with increasing dietary n-3HUFA level up to the $0.9\%$ in the diet (P<0.05). Higher values of lipid content, 18:1/n-3HUFA ratio of polar lipid of liver and hepatosomatic index were observed in the fish fed n-3HUFA deficient diets. The groups of fish fed lower levels of dietary n-3HUFA showed higher 18:1 and love. n-3HUFA (EPA+DHA) levels in polar lipid of the liver. The data obtained in these experiments indicated that dietary n-3HUFA was essential for the Korean rockfish, and required level of n-3HUFA was around $0.9\%$ in diet.
This study was designed to investigate the effect of garlic shoot extract administration on serum and liver tissue lipid levels in hyperlipidemic rats. The rats were fed a 45% high-fat diet to induce hyperlipidemia. They were then administered garlic shoot extract (50%) and ethanol extract (75%) at 200 mg/kg B.W./day (GSA-1, GSB-1) and 400 mg/kg B.W./day (GSA-2, GSB-2) for 5 weeks. The total lipid and triglyceride contents in serum were lowest in the GSB-2 group, and the total cholesterol content was significantly lower in the GSA-2 and GSB-2 groups than in the control group. The high density lipoprotein (HDL)-cholesterol content of the GSB-2 group was similar to that of the normal group. The low density lipoprotein (LDL) and very low density lipoprotein (VLDL)-cholesterol contents were significantly lower in the GSB-1 and GSB-2 group than in the control group. atherogenic index (AI) and cardiac risk factor (CRF) were lowest in the GSB-2 group (0.58 and 1.57, respectively). Aspartate aminotransferase (AST), alanine aminotransferase (ALT), and alkaline phosphatase (ALP) activities were significantly higher in the control group than in the normal group, and the levels of AST, ALT, and ALP were significantly lower in the GSA-2 and GSB-2 groups than in the control group. The total lipid content in liver tissue was significantly lower in all the experimental groups compared to that of the control group, but it was not significantly different among the experimental groups. The total cholesterol and triglyceride content in liver tissue was lowest in the GSB-2 group. Antioxidant activity in serum and liver tissue was highest in the GSB-2 group (40.16% and 47.41%, respectively).The thiobarbituric acid reactive substance (TBARS) content in serum and liver tissue was lowest in the GSB-2 group, with the significant difference. Our results suggest that garlic shoot extracts may improve lipid metabolism in serum and liver tissue and potentially reduce hyperlipidemia.
The study examined nutritional conditions to enhance the quality of meals and to provide the basic data for more proper dietary life of college students. Our analysis was based on the body measurement, food intake and food habits for 200 students of Chung-Nam. The nutrient intake was examined using the 24-hour recall method. The data were analyzed by the Computer Aided Nutritional Analysis Program and then the diet quality was estimated using the Mean Adequacy Ratio(MAR), the Nutrient Adequacy Ratio(NAR) and the Index of Nutritional Quality(INQ). The average weight and height of male students were $67.57{\pm}8.66kg,\;174.64{\pm}5.87cm$, while those of female students were $53.46{\pm}6.86kg,\;159.10{\pm}4.19cm$, respectively. The total energy intake of the male students was $3221.71{\pm}200.39kcal$, while that of the female students was $1884.67{\pm}100.93kcal$. The male students are higher than female in % of RDA. The percentages of carbohydrate, protein and lipid for male students were $57.18{\pm}7.83%,\;15.15{\jpm}3.36%\;and\; 27.67{\pm}6.68%$, while those of female students were $58.77{\pm}7.68%,\;15.51{\pm}4.55%\;and\;25.72{\pm}6.20%$, respectively. There was no significant difference in calcium intakes for both groups, however they are less than the RDA. In terms of iron, the male students took $16.98{\pm}5.57mg$ and the female students took $11.35{\pm}2.68mg$, with significant difference (p<0.001). The male and female students showed sufficient intake of vitamins, with significant difference between two groups except for vitamin A. The mean MAR, an index of overall dietary quality, was significantly higher in the male students than female students(p<0.01). Male and female students enjoying two meals or more a day were 59%, and those having enough time for one meal or less a day were 36.5%. Male and female students having no breakfast were 39%. Male and female students having vegetables intake were 53.5%, and having milk or milk products every day were 29.5% of them. In conclusion, nutritional education is recommended to increase the calcium intake and fruit and vegetable consumption for dietary fiber, and to emphasize regularity of meal time.
In order to give basic data to teenager's healthcare, we investigated the food habits according to BMI (Body Mass Index), life style, dietary related self-efficacy and food intake through conducting a research surveying 732 middle school students of the Kwang-ju and Chonnam areas. The results of this study were compared groups in under weight (UW), normal weight (NW), and overweight (OW) groups according to BMI levels. In the male students, height was significantly differently in the UW group as $158.2\pm0.7$ cm compared to other NW and OW groups respectively as $163.7\pm0.6$ cm and $162.6\pm0.7$ cm but in the female students there was no significantly difference within groups. Weight was significantly different between the groups in the male students, whereas there were minor differences in the female students. The average of BMI was $20.7\pm0.1$ on the male students and $20.6\pm0.1$ on the female students which were all within the average, and their obesity was increased as the school grade was higher. Under less than 30,000 won of pocket money was dominating, and most of the students were in a nuclear family. In all male and female students, the inactive hours like watching TV and using computers had no differences between groups. The difference between groups was minor on breakfast time and most of the students thought their problems on unbalanced diet. There was significant difference in the OW group in female students as they thought their problems on unbalanced diets. The frequency of snack was significantly low in the OW group of male students but there were no differences in snack and eating-out food. All students chose fruits as snack food and Korean-style food as eating out food. The OW group in male students were significantly low in the dietary related self-efficacy when they were with their families and feeling depressed but there were no differences in female students between groups. When all students were getting higher BMI, they evaluated themselves badly in their self-dietary habits. Also the more male students had non-physical activity time, the less they had the dietary related self-efficacy and the more female students had physical activity time, the higher they had the dietary related self-efficacy. In conclusion, the OW group had good habits in physical activities for weekends, meal times, frequency of snack consumption but it showed undesirable when they were low in dietary related self-efficacy. Therefore we will provide the systematic nutrition education to them through this study.
This study was performed to investigate the effects of the chitosan oligosaccharide administration on the improvement of the lipid compositions, blood glucose and enzyme activities in the serum of hypercholesterolemic rats fed the experimental diets for 5 weeks. Concentrations of total cholesterol, atherosclerotic index, LDL, LDL-cholesterol, free cholesterol, cholesteryl ester ratio, triglyceride (TG), phospholipid (PL) and blood glucose in serum were higher in the hypercholesterolemic group (group CW) and cholesterol+chitosan oligosaccharide administration group (group CCW) than those in the control group (group BW, basal diet+water). But the concentrations of total cholesterol, atherosclerotic index, LDL, LDL-cholesterol, free cholesterol, cholesteryl ester ratio, TG, PL and blood glucose in serum were lower in the group CCW than those in the CW, whereas the ratio of HDL-cholesterol concentration to total cholesterol and HDL-cholesterol concentration in the group CCW were higher than in the group CW. The activities of alkaline phosphatase (ALP) and aminotransferase (AST, ALT) in serum were lower in the group CCW than in the hypercholesterolemic group CW. From the above results, it was suggested that chitosan oligosaccharide administration was effective in the prevention and improvement of the lipid level, blood glucose and enzyme activities in serum of hypercholesterolemic rats.
Cholesterol-lowering effect of pine nut on mice was investigated by examining changes in body weight, feed intake, and triglyceride, total cholesterol, high density liporotein cholesterol (HDL-C), low density lipoprotein cholesterol (LDL-C), and very low density lipoprotein cholesterol (VLDL-C) contents in mice plasma. Changes in body weight and feed intake between pre-designed experimental animal groups fed various contents of cholesterol and pine nut and control group fed basal diet were not significantly different. Food efficiency ratio of experimental groups fed higher than 10% pine nut was significantly higher than that of control group. Apparent differences in atherogenic index representing cholesterol-lowering effect in plasma were not found among all groups fed 0-20% pine nut. Inhibition activities of water and hexane extracts of pine nut on HMG-CoA reductase and cholesterol esterase were examined in vitro. Hexane extract showed 66% inhibition effect on HMG-CoA reductase, whereas none was observed with water extract.
