Study on the Perceptions and Purchasing Realities of Consumers for Onion Hot-Water Extracts

양파열수추출물에 대한 소비실태 조사

Abstract

In this study, a survey was conducted to determine consumer perceptions and satisfaction for onion hot-water extracts. Among the study subjects, females (53.3%) were in greater number than males, and individuals in their 40s (35.1%) made up the largest group. Cocerning the detailed efficacy of onion hot-water extracts, most respondents (84.5%) were aware of their efficacy and females recognized this more than males (p<0.001). Most consumers (67.3%) purchased onion hot-water extracts from 'health food stores prepared using a double boiler', and many consumers (47.4%) received information on the extracts from families and relatives. Of the respondents, 51.8% said they purchased 'quantities for $1{\sim}3$ months' at one time, and 33.1% stated that the price of onion hot-water extracts was expensive. They considered 'health' the most important aspect when purchasing, and preferred 'pouch packs' (60.3%) and considered 'easiness to open convenience to drink, and safety' (42.0%) the most important product features. Also, 62.8% of the respondents consumed onion hot-water extracts, and many drank them $1{\sim}3$ times a week, with '70 mL' as one dose, and drank them 'regardless of time'. The consumers were satisfied with the listing of health effects, but were not satisfied with the 'taste', 'smell', or 'color' of products. Concerning advertisements for the efficacy of onion hot-water extracts, 72.5% replied 'I trust them a little'. And concerning the expanding onion hot-water extract market, many respondents said it is difficult to choose an onion hot-water extract due to many similar products at the market. They also requested improvements of taste and flavor.

성인 남녀를 대상으로 양파열수추출물에 대한 소비자의 인식정도와 만족도를 조사한 결과는 다음과 같다. 1. 본 설문조사에 참여한 소비자는 총 433명이었으며 여자가 53.3%로 남자보다 많았고, 연령은 40대(35.1%)가 가장 많았다. 양파열수추출물의 효능에 대해 대부분(84.5%)이 조금이라도 알고 있는 것으로 나타났다. 구체적 효능에 대한 인식정도는 '건강에 도움이 된다'는 문항이 가장 높았고, '콜레스테롤 저하 효과가 있다', '고혈압 개선 효과가 있다', '영양적으로 우수하다', '특정기능 강화회복에 좋다', '항산화 효과가 있다', '다이어트에 좋다'는 순으로 나타났으며, 남자보다는 여자가(p<0.001), 학력이 대졸 이상일수록(p<0.05) 양파음료의 효능에 대해 구체적으로 더 잘 인식하고 있었다. 2. 소비자들은 주로 '중탕업소'(67.3%)에서 양파열수추출물을 구매하였으며 '가족.친지 권유'에 의해 양파열수추출물 구매에 대한 정보를 습득한다는 응답(47.4%)이 많았다. 1회에 '$1{\sim}3$개월' 분량을 구입한다는 응답(51.8%)과 구입 시 '가격이 비싸다'는 의견(33.1%)이 가장 많았다. 구매 시에는 '건강성'을 가장 고려하였고, 그 다음이 '맛과 향'이었으며, 가장 선호하는 포장용기는 '파우치팩'(60.3%)였고, '개봉하기 쉽고 마시기 편리하며 안전한 것'(42.0%)을 가장 많이 고려하는 것으로 나타났다. 응답자의 다수(37.2%)가 양파열수추출물을 섭취하지 않고 있었고, 남자는 19.3%, 여자는 52.8%가 전혀 마시지 않는다고 하여 남녀 간에 큰 차이를 보였다. 20대와 30대는 각각 69.7%, 42.9%로 연령이 낮아질수록 기피하는 경항을 보였다. 소득이 낮을수록 섭취하지 않는 비율이 높았고, 소득이 높을수록 섭취비율이 증가하였다. 양파열수추출물 섭취빈도는 1주일에 $2{\sim}3$회 정도가 23.3%로 가장 많았고, 1회 섭취분량은 '70 mL'가 가장 많았고, 섭취시간은 '시간에 상관없이 섭취 한다'는 의견이 많았다. 3. 양파열수추출물의 만족도 조사에서 양파열수추출물의 효능에 대해 다소 만족을 하고 있으나, 향미와 색에 대해서는 불만족스러운 결과를 보였다. 효능 광고에 대해 '조금 신뢰한다'(72.5%)는 의견이 많았으며, 확대되고 있는 양파열수추출물 판매시장에 대해 '유사제품이 많아 선택하기 어렵다'는 의견이 가장 많았고, 맛과 향에 대한 개선요구가 우선순위에서 우위를 차지하는 것으로 나타났다. 양파열수추출물의 구체적 효능에 대한 인식정도는 남자보다 여자가 더 잘 인식하고 있지만 양파열수추출물을 섭취하지 않는 응답자중 여자의 비율이 남자보다 높은 결과를 보이고 있다. 이는 양파열수추출물의 강한 향미의 뒷맛이 여성들이 섭취를 기피하게 된 이유가 아닌가 생각된다. 결과에서 양파열수추출물의 향미증진 요구가 높았고, 구매 시에는 건강성뿐만 아니라 맛과 향을 고려하고 있어 소비자의 관능적 기호성을 만족시키려는 노력이 필요함을 알 수 있다. 아울러서 생리적 효능이 나타날 수 있는 양파열수추출물의 적정 하루 섭취량이나 섭취빈도가 제시되어야 할 것이며, 차별화된 양파열수추출물 제품개발에 노력이 필요하다. 본 연구의 조사 범위가 경남지역 거주자에 국한된 것과 비 섭취자의 수가 많았던 한계점이 있어 향후 양파열수추출물에 대해서 보다 일반화 시킬 수 있는 폭넓은 연구가 이루어지기를 기대한다.
