초록
본 연구는 소비자가 추구하는 친환경 기능성 자연 치즈제품의 다양한 아이템 개발을 위해 녹차를 자연 치즈에 접목시킴으로써 녹차의 약리 효과가 부여된 기능성 치즈의 개발 가능성 검토를 위해 실시되었다. 이 녹차 첨가 자연 치즈는 약 4개월간 숙성하면서 유산균의 생육과 pH, 질소화합물의 변화 및 단백질의 분해도 측정 및 카테킨 함량과 관능평가를 통하여 제품의 품질 평가를 실시하였다. 유산균 수는 숙성 12주까지 녹차 1.0% 이상을 첨가한 구에서 대조구에 비해 다소 낮은 유산균 수를 보였으나, 숙성 16주에는 대조구와 녹차 첨가구의 유산균 수 차이가 없었다. pH 5.0~5.3이던 것이 숙성 15주에는 pH 5.9~6.3 범위를 나타냄으로써 숙성이 진행됨으로 점차 상승하였다. 치즈의 숙성 기간 중 질소화합물의 변화는 비단백태 질소화합물(NPN)의 경우 숙성 시작보다 단백질 함량이 증가하였고, WSN과 NCN에 비해 다소 많이 함유되어 있었다. 전기영동 결과, 치즈의 숙성이 진행됨에 따라
