초록
열매와 줄기에 단맛이 있어서 술을 담그기도 하고 간기능 보호와 음주 후 숙취증상을 해소하는 기능이 있는 것으로 알려진 헛개나무를 새로운 식품소재로 활용하고자 하는 연구의 일환으로 헛개나무열매 추출물을 식혜에 첨가하여 식혜의 기계적, 관능적 품질특성과 저장기간 동안의 변화를 살펴보았다. 헛개나무열매 추출물을 첨가한 식혜의 pH는 헛개나무열매 추출물을 전혀 첨가하지 않은 식혜인 대조군이 가장 높았고 헛개나무열매 추출물 첨가량의 종가에 따라 낮아졌다. 색도 측정 결과 명도(lightness값)는 대조군이 가장 높았으며 헛개나무열매 추출물 첨가량이 증가할수록 낮아졌고 적색도(redness값)와 황색도(yellowness값)는 헛개나무열매 추출물의 농도가 높을수록 높아졌다. 당도는 헛개나무열매 추출물의 첨가가 많을수록 높아져 헛개나무열매 추출물을 전혀 첨가하지 않은 대조군은 9.20 이었으나 헛개나무열매 추출물 20% 첨가시 당도가 11.80, 40% 첨가시 12.93, 60% 첨가시 14.00 등으로 헛개나무열매 추출물 첨가가 많을수록 당도가 높았다. 탁도는 대조군의 탁도가 가장 낮았고 헛개나무열매 추출물 첨가가 증가될수록 높아졌다. 헛개나무열매 추출물을 첨가하여 제조한 식혜의 저장기간에 따른 변화는 pH는 대조군이 상대적으로 많이 감소하였으며, 헛개나무열매 추출물 첨가가 많은 식혜일수록 pH의 감소율이 낮았다. 색도에서 적색도(redness값)와 황색도(yellowness값)는 저장기간이 길어질수록 높아졌다. 당도의 저장기간에 따른 변화는 대조군이 저장 10일까지 계속 높아졌으나 저장 10일 이후에는 점차적으로 낮아졌고 헛개나무열매 추출물 20% 첨가 식혜는 저장 12일째가 가장 높았으며, 60% 이상 헛개나무열매 추출물 첨가 식혜는 관찰 16일 까지 계속 높아졌다. 탁도는 모든 시료가 저장기간까지 계속 높아졌다. 헛개나무열매 추출물을 첨가하여 제조한 식혜의 전반적인 기호도에서 헛개나무열매 추출물 40%를 첨가하여 제조한 식혜의 5.50, 20% 첨가한 식혜는 5.40으로 나타나 헛개나무열매 추출물 40% 첨가 식혜와 20% 첨가 식혜가 큰 차이를 보이지 않고 선호도가 높았다. 헛개나무열매 추출물을 첨가한 식혜의 저장중 총균수의 변화는 저장 초기에는 각 군간의 현저한 차이가 관찰되지 않았으나 저장기간이 길어질수록 헛개나무열매 추출물이 많이 첨가된 식혜에서 일반 세균이 적게 관찰되었다. 헛개나무열매 추출물을 첨가한 식혜의 저장일수에 따른 대장균군의 변화는 대조군의 경우 저장 10일째 관찰 결과 10.5 CFU/g을 나타냈으나 헛개나무열매 추출물 첨가 100% 식혜는 저장 16일째에 7.9 CFU/g으로 나타나 헛개나무열매 첨가 식혜가 저장성이 현저히 높았다.
Sikhe, a traditional Korean drink, was prepared with Hovenia dulcis extract (HDE), and its quality and storage characteristics were evaluated through sensory and microbial analyses. In the color analysis, the lightness of the Sikhe showed a decreasing tendency according to the addition of HDE, while redness and yellowness increased. The Sikhe prepared with 20% HDE had the highest sugar concentration at 12days of storage ($4^{\circ}C$). Interms of sensory quality, both the 20% and 40% HDE-added Sikhes had the highest overall preference. The microbial cell counts presented no distinct differences early in the storage. period, but the general bacteria counts of the Sikhe made with the increasing concentrations of extracts decreased with a longer storage period. The coliform counts of the Sikhe prepared without HDE (control) was 10.5 CFU/g at 10 days of storage, but the 100% HDE-added Sikhe had a level of 7.9 CFU/g at 16 days of storage. These results indicates that Hovenia dulcis may inhibit normal microbial growth and extend the shelf-life on Sikhe.
