초록
기능성 식품 소재 개발의 일환으로 항산화 및 항암작용 등의 생리활성이 우수한 솔잎 분말과 추출물을 국수에 첨가하여 면의 품질특성 및 기계적 평가, 저장기간 동안의 미생물 생육변화를 살펴보았다. 색도에서 L값은 솔잎 분말과 엑기스 분말을 첨가할수록 유의성 (p<.001) 있게 감소하였으며 a(적색도)값과 b(황색도)값은 솔잎 분말과 엑기스 분말을 첨가할수록 증가하였다. 기계적 검사에서 솔잎 분말의 첨가량이 증가할수록 경도(hardness)는 유의성(p<.05)있게 감소하였으며 응집성(cohesiveness), 탄력성(springness), 검성(gumminess)은 대조군 보다 솔잎분말 첨가 국수가 감소하였다. 솔잎 엑기스 첨가 국수의 경우 각 군간의 유의한 차이는 없었다. 관능평가의 외관 색상은 솔잎 분말과 엑기스 첨가량이 많을수록 진하게 느껴지는 것으로 평가되었으며 (p<.001) 입안에서의 매끄러운 정도는 솔잎 분말과 엑기스 첨가군이 대조군에 비해 매끄럽고 솔잎 엑기스 3% 첨가군이 가장 매끄러웠다. 허브냄새(herbal flavor)는 솔잎 분말 5% 첨가군이 가장 높았고 맛은 솔잎 분말 첨가에 의해 유의하게 감소되었다. 질감의 평가에서 씹힙성(chewiness)과 탄력성(springness)은 솔잎 분말 3% 첨가군이 가장 높았다. 기호도 평가는 외관 기호도(appearance quality)는 솔잎 엑기스 5% 첨각가 가장 높았고 향미 기호도(flavor quality), 맛의 기호도(taste quality), 전반적인 기호도(overall quality)는 솔잎 엑기스 3%가 가장 높았다. 국수의 일반세균수의 변화는 $20^{\circ}C$에서 대조군은 저장 2일에 관찰된 것에 반해 솔잎 분말 및 엑기스 국수는 6일까지 저장성이 연장되었다. 관능검사와 기계적 검사의 상관관계에서 색도에서 L값(명도)는 외관의 색과 매끄러운 정도에 모두 부의 관계를 a값(적색도)과 b값(황색도)는 정의 관계를 나타내었다. 기기계적 검사의 탄력성(springness)은 관능검사의 경도(hardness)와 씹힙성(chewiness), 응집성(cohesiveness)과는 부의 상관관계를 나타났으나 외관과 맛은 탄력성(springness)이 높을수록 높게 나타났다. 이상의 결과로소 솔잎 추출물과 솔잎 분말을 첨가한 제면의 품질특성을 조사한 바 솔잎 추출물 3% 첨가면이 우수하게 평가되었다.
This study summarizes our findings on the effect of pine needle powder and water extract on the quality characteristics of wet noodle and the changes of microbial count during storage. The lightness of wet noodles was significantly decreased with increasing amounts of PN powder and water extract added in the noodles(p<.001), whereas the redness and yellowness of the noodles were significantly increased(p<.001). Texture evaluation showed that springiness was the highest in the noodle prepared with 5% PN extract, whereas brittleness was the lowest in 1% PN extract. At the beginning period of storage, there were significant differences of microbial cell count in PCA and PDA among the samples, but a significant decreasing was observed after 6 days. In the relationship between sensory and mechanical properties, a negative correlation was observed between color and sleekness, while there was a positive correlation with redness and yellowness. Sensory evaluation showed that odor, taste, texture and overall acceptability were the best in noodles processed with 3% PN extract.
