행동변화단계 모델을 적용한 가임여성의 영양교육 프로그램 개발

  • 우리 사회에서 불규칙한 생활 습관과 외모에 대한 지나친 관심, 운동량의 감소 등으로 인한 젊은 가임여성의 영양상태 불균형은 심각한 우려를 자아내고 있다. 영양교육은 영양상태 개선의 매우 유용한 방법이며 행동변화이론을 적용하여 맞춤식으로 실시될 때 효과적이라는 것이 여러 연구에서 제시되었다. 이에 본 연구는 이론적 틀과 가임여성의 식행동과 영양교육 요구도 조사결과에 근거하여 영양실무자를 위한 건강체중 관리 영양교육 프로그램을 개발하였다. 프로그램 개발에 있어 식습관이 일련의 과정을 거천 변화한다는 행동변화단계모형과 개인적 요인과 환경적 요인의 상호작용이 행동변화에 중요하다는 사회인지론을 이론적 바탕으로 하였다. 본 영양교육 프로그램은 인식전환(문제 행동을 가지고 있으나 행동변화 의향이 없음), 식습관 교정(문제행동을 가지고 있으며 행동변화 의향 있음), 바른 식습관 유지의 세 단계로 나뉘어져 있다. 인식전환 단계에서는 인지된 이득과 장애에 초점을 맞추어 동기부여함양을 강조하였고 식습관 변화 단계에서는 식생활 실태파악과 자아효능감을 함양하기 위한 지식과 기술 습득, 바른식습관 유지단계에서는 자기관리와 사회적지지 유도에 초점을 맞추었다 내용면에서는 과학적으로 근거를 중요시하여 식사의 규칙성과 균형성을 강조하였다. 내용개발에는 관련문헌과 전년도에 실시된 영양교육 요구도 조사결과 및 보건영양교육 자료 전시회를 개최하여 비교 검토한 자료 등을 참고하였다. 인식전환 단계는 내게 맞는 체중 바르게 알기, 저체중, 과제중 문제점인식, 자신감과 의지 유발방법제시, 실천가능한 식행동목표 설정 등의 내용을 포함하였다. 식습관 교정단계에는 식습관교정방법교육, 운동 바르게 하기, 목표체중에 맞는 식단작성방법등을 제시하였고 바른식습관유지단계는 동반인 참석 하에 체중조절방법(식이섭취, 운동방법)토론유도 및 문제점개선방법 제시, 체중관리 어려움 극복방법 등을 제공하였다. 또한 실무에 유용한 간략한 영양교육 및 상담이론과 다양한 교육도구들도 함께 제시하였다. 개발된 교육내용은 내용의 타당성, 이해도, 적합성을 고려하여 연구팀에 의해 수 차례에 걸쳐 수정ㆍ보완되었고 최종적으로 전문 작가에 의해 내용과 포멧이 수정되었다. 애니메이션 전문가에 의해 가임여성의 캐릭터가 개발되었으며, 개발된 캐릭터에 근거하여 프로그램에 필요한 그림이 제작되었다. 본 연구에서 개발한 영양교육 프로그램은 향후 보건영양업무에 적극 활용될 수 있으리라 사료되나, 이를 위해 프로그램의 타당성 검증이 선행되어야 할 것이다.

공중파 TV 방송프로그램에 나타난 식품영양정보 분석(2002-2003넌)-뉴스, 건강관련 정보프로그램, 드라마

  • 오늘날 급변하는 사회경제적 환경 때문에 현대인의 영양과 건강에 대한 관심은 날이 갈수록 높아지고 있어 대중매체에서도 영양과 건강에 대한 정보를 전달하는 경우가 많아지고 있다. 특히 방송매체 중 공중파 TV 프로그램에서의 정보들은 쉽게 접할 수 있어 올바른 영양 및 건강생활을 위한 정보나 실천지침을 국민들에게 전달되는 통로서의 긍정적인 부분도 있으나 시간상 제작환경상 등의 제약으로 인해 왜곡된 정보를 전달하는 부정적인 부분도 있다. 이에 건강관련 식품영양정보 모니터링을 통해 객관적인 평가와 문제점을 파악한 후 유형별로 분류, 분석하여 개선방안을 마련하기 위해서 본 연구에서는 방송매체중 공중파 TV프로그램 중 정확한 보도와 정보전달을 목적으로 하는 프로그램과 드라마 중 가족드라마를 선정하여 건강관련 식품영양정보의 양적 질적 현황을 파악하고자 하였다. 건강관련 식품영양 정보들에 대한 건수, 시간수, 주제, 취재원, 적절성과 부적절성 평가 및 부적절성의 요인들을 양적 질적으로 평가하여 연도별 비교분석을 하였다. 2002년도 4월 30일부터 2003년 9월 30일까지 모니터링 전문 교육을 마친 식품영양학 전공 모니터원이 조사기간 중 담당 프로그램을 모니터하여 각 프로그램에 나타난 식품영양정보의 양과 질을 조사하여 SPSS 통계팩키지를 사용하여 빈도 및 평균분석을 하였다. 총 모니터건수는 15,226건이었으며, 이중 총 건강관련정보건수는 5,623건으로 36.9%를, 식품영양관련 정보는 4,848건으로 31.8%를 차지하는 것으로 분석되었다. 총 건강관련 정보 대비 식품영양정보건수의 비율은 86.2%로 높게 나타났다. 뉴스프로그램의 총 건강관련 정보수는 17.9%에서 16.1%, 식품영양정보수의 비율은 6.6%에서 3.6%로 낮아졌으며, 건강정보프로그램의 총 건강관련 정보수는 51.5% 에서 94.6%, 식품영양정보수의 비율은 32.4%에서 57.4%로 높게 나타났다. 드라마의 식생활관련 장면 방송시간비율은 20.8%에서 17.2%로 낮게 나타났다. 뉴스프로그램에서 건강관련정보가 가장 많이 보도되는 달은 2002년 10월, 2003년 9월로 나타났다. 건강관련 정보의 주제로는 뉴스프로그램은 질환, 건강정보프로그램은 음식, 어린이교육프로그램은 식품, 노인정보프로그램은 생활습관이 가장 높게 나타났다. 정보의 취재원으로는 전문가와 일반인의 인터뷰가 73.7%로 가장 많았다. 식품영양정보의 부적절한 평가율은 뉴스는 49.3%에서 72.2%로, 건강정보프로그램은 54.0%에서 67.8%로 2002년보다 2003년도에 높게 나타났으나, 드라마는 63.2%에서 16.2%로 낮게 나타났으며, 어린이교육프로그램 40.0%, 노인정보프로그램 17.9%인 것으로 나타났다. 드라마의 식생활 장면에서 음식의 양이 부적절한 경우는 28.6%에서 15.8%로 낮아졌으나, 음주장면의 경우 10.7%에서 11.5%로 증가하였음은 앞으로 개선이 필요하다고 생각된다. 흡연 장면의 경우 드라마상의 흡연장면 방송금지 선언의 여파로 1.6%에서 0.2%로 감소하였다. 뉴스 및 정보프로그램에서는 부적절한 평가를 받은 정보들은 적정섭취량이나 실생활에 활용할 실천방안 등에 대한 제시가 없는 경우가 가장 많았으며, 전문용어에 대한 설명부족, 영양가 비교기준이 다르거나, 식품 등의 효과에 대한 내용이 과장된 경우가 많았다. 드라마의 경우 음주, 커피, 야식 등 불필요한 식사장면이 많이 나오거나 음식의 양이 사람수에 비해 많다라는 평가가 가장 높게 나타났다. 연구 결과 TV 프로그램에서 다루는 건강관련 정보기사가 차지하는 비율과 이중 식품영양정보기사가 차지하는 비율이 높아지고 있으나 건강관련정보기사의 질적인 평가에서는 부적절한 평가를 받은 비율도 함께 높아지고 있어 이의 개선이 시급히 요구된다.

The Effects of a Nutrition and Body Shape Education Program as Part of Health Promoting Projects in an Elementary School (초등학교 건강한 학교 만들기 사업에서 수행한 영양 및 신체상 교육 프로그램의 효과)

  • The purpose of this study was to evaluate the effects of a nutrition education program as part of health promoting projects in an elementary school. A total of 168 students in the 4th grade were enrolled in the program for 6 months. A self-administered questionnaire was developed to assess nutrition knowledge and dietary habit. Nutrient intakes and body shape perceptions were measured using 24-hour recall method and self-ratings of body shape figures, respectively. The education program was conducted in various ways, focused on healthy dietary behavior, nutrients' roles and sources, and proper body shape perceptions, etc. After the education program, nutrition knowledge and dietary habit were significantly improved. Dietary habit scores were significantly and positively related to nutrition knowledge levels. Body shape perceptions were significantly and properly changed after the program. Dissatisfaction with perceived current body shape and discrepancy between shapes desired and considered healthy were significantly decreased. But girls still indicated a desire to be leaner than shapes which were perceived current and considered healthy. Nutrient intakes were partly improved by the program, but some nutrients, such as calcium, folate, zinc, sodium and niacin, were still remained deficient or excessive. These findings indicate that enhancement of nutrition knowledge is extended to the improvement of dietary habit. In addition, establishment of proper body shape perception is closely related to healthy dietary habits and is required to good nutrition and health.

Effect of a public health center-based nutrition education program for hypertension in women older than 50 years of age (50세 이상 여성을 대상으로 한 보건소 기반 고혈압 영양교육의 효과 평가)

  • Purpose: The health risk of women increases after menopause. This study evaluated the effectiveness of a public health center-based nutrition education program for hypertension in women older than 50 years of age. Methods: The program included 8-week nutrition education and 8-week follow-up with keeping a health diary and nutrition counseling. The program was evaluated three times: before and after the nutrition education, and after the follow-up. The subjects were classified into hypertensives (n = 44) or normotensives (n = 71). Results: The rate of taking antihypertensive drugs in the hypertensive group was 86.4%. The systolic blood pressure decreased in the hypertensive and normotensive groups after nutrition education (p < 0.05). The body weight (p < 0.001), BMI (p < 0.001), waist circumference (p < 0.001), and percent body fat (p < 0.01) were also decreased after nutrition education in both groups. The hypertensive group showed an increase in HDL-cholesterol level (p < 0.001) and decreases in triglycerides (p < 0.01) and LDL-cholesterol (p < 0.05) levels after completion of the program. The normotensive group also displayed significant changes in HDL-cholesterol (p < 0.001) and triglycerides (p < 0.01). The dietary habits and nutrition knowledge on sodium and hypertension were improved in both groups (p < 0.001). The total score of dietary behavior related to the sodium intake was improved in the normotensive group (p < 0.001). The total score of the high sodium dish frequency questionnaire decreased in both groups after nutrition education and completion of the program compared to that before the program. Decreases in the consumption frequencies of noodles, pot stews and stews, Kimchi, and beverages were significant. The total self-efficacy score was increased in both groups by the program (p < 0.001). In particular, the hypertensive group showed improvement in all items. Conclusion: This public health center-based nutrition education program may contribute to the prevention and management of hypertension and chronic diseases in women over 50 years of age.

  • The purpose of this study was to analyze the effects of dietary life application according to preferred dietary life education type on quality of life of participants in dietary life education programs and to provide basic data necessary to enhance dietary life education. The results of the analyses conducted to classify the types of preferred dietary life education and types of dietary life application and to verify the validity and reliability of the factors are as follows. In terms of the types of preferred dietary life education, health-oriented type, knowledge-oriented type, and experience-oriented type were derived. In terms of types of dietary life application, proactive application and emotional application were derived. Knowledge-oriented type and experience-oriented type were found to affect proactive application and emotional application in terms of real-life application, and proactive application and emotional application were found to affect quality of life. Therefore, in order to enhance the dietary life education for adults in general, it is necessary to improve accessibility by initiating and promoting various programs along with continuous support from central and local governments. Moreover, in order to increase the real-life application and utilization of such programs, the importance of practical and theoretical education must be recognized, and efforts should be made in training specialized instructors.

Analysis of the Dietary Guidelines Practice, Emotional Intelligence, Resilience and Violence According to Family Meal Frequency of Middle School Students (중학생의 가족식사횟수에 따른 식생활 지침 실천도, 정서지능, 회복탄력성 및 폭력성 분석)

  • The purpose of this study was to identify significant differences in dietary guidelines, emotional intelligence, resilience and violence according to the frequency of family meals for middle school students in Daegu. To achieve the purpose of this study, 241 data collected through self-administered questionnaires were analyzed. The collected data were analyzed using the SPSS (v25.0) program for frequency, percentage, standard deviation, reliability, one-way ANOVA and Duncan comparison. The results of this study were as follows. There was a significant difference in the level of the dietary guidelines practice, emotional intelligence and resilience according to the frequency of family meals of middle school students. Implications and suggestions based on the results of this study were as follows. First, family meal frequency is significantly related to middle school students' dietary guidelines practice, emotional intelligence, and resilience (p<0.05). Accordingly, personal efforts and social and institutional arrangements are required to increase the family meal frequency. Second, some of the core competences required in the 2015 revised curriculum were consistent with sub-areas of emotional intelligence and resilience, which can be predicted by the results that family meal experience of middle school students is also related to the development of core competences. In conclusion, increasing family meal frequency is important considering the trend of education, and is required for personality education.

Mothers' consuming behavior of processed foods influences their children's dietary life in kyungpook province (부모의 가공식품 소비행태가 자녀의 식생활에 미치는 영향 - 경북지역 초등학생과 그 부모를 대상으로)

  • This research was performed to investigate mother's influence on their children's dietary life. We surveyed 312 elementary school students and their mothers in kyungpook province, and analyzed the responses using SAS 8.0 statistical program. The results showed that mothers' consuming behavior of processed foods was closely related to their children's dietary life. In detail, mother's preference, eating frequency, positive recognition on processed foods negatively affect on their children's dietary habit and snacking behavior. Also, the children whose mother has higher preference on processed foods showed significantly higher preference on cereals(p<0.05), fast foods(p<0.001), and carbonated beverages(p<0.001). Interestingly, mother's influence was stronger on children's eating frequency than preference of processed foods. The children whose mother has higher preference and eating frequency of processed foods ate significantly less vegetables(p<0.001), milk products(p<0.05), and more cereals(p<0.001), noodles(p<0.001), confectionary(p<0.001), fast foods(p<0.01), carbonated beverages(p<0.01). These results show that mothers' consuming behavior of processed foods significantly influences on their children's dietary life, which suggests the importance of mother's reasonable consuming attitude and behavior on dietary life. To promote children's healthy dietary life, therefore, the education programs for parent and children should be developed and practically used at school.

Effects of family meals on eating behavior, academic achievement and quality of life - Based on the students of middle school at Goyangsi, Gyeonggido - (가족식사가 식생활태도, 학업성취도 및 삶의 질에 미치는 영향 - 경기도 고양시 소재 중학생을 중심으로 -)

  • The objective of this study was to investigate the effects of family meals on eating behavior, academic achievement, and quality of life among middle school students. A total of 302 participants were recruited from a middle school at Goyangsi. We asked participants about family meals, eating behavior, academic achievement, and quality of life, using structured questionnaires. Family meal questionnaires were classified according to frequency, rules, and awareness. The findings of this study were as follows. First, there were significant differences between rules(p<0.05) and awareness (p<0.05) of family meals and family type. Second, there were statistically significant differences between frequency and awareness of family meals and eating behavior, academic achievement, and quality of life. On the other hand, there was a significant difference between rules about family meals and eating behaviors and quality of life. Third, we found that factors of family meal were positively related to the eating behavior, academic achievement, and quality of life at the level of statistical significance. Finally, we found that participants with a higher frequency of family meals and more positive eating behavior were more likely to higher academic achievement and quality of life than those in lower frequency of family meals and less positive eating behavior among middle school students. The frequency of family meals has a strong effect on higher academic achievement and better quality of life. In conclusion, engagement in family meals was related to better eating behavior, academic achievement, and quality of life among middle school students. Our findings may warrant further studies to support the benefit of family meals in improving eating behavior, academic achievement, and quality of life among high school students as well as middle school students.
