Aim & Scope

Aims ‘Korean Journal of Food and Cookery Science (Korean J Food Cook Sci, KJFCS)’ is the official journal of the Korean Society of Food and Cookery Science, which was established in 1984 and was first published in 1985 as the ‘Journal of Korean Society of Food Science’ and changed its name to ‘Korean Journal of Food and Cookery Science’ in November 2008 since the name of the society was changed to Korean Society of Food and Cookery Science in January 2007. The aims of KJFCS is to contribute further the scientific development, advancement, and dissemination of knowledge concerning food science and food preparation innovation in order to promote healthful living and general social welfare. Scope Its publication type includes original research articles, research notes and reviews. However, review articles can be received only if commissioned by the Editorial Board. The journal's scopes are specified as following in the main field of food cookery and application. Other scopes of the journals are foodservice, food culture, dietary life education, applied food science and nutrition, and related academic disciplines. Specified journal scope categories including the main field of food cookery application are as followings: 1)Food cookery and application (experimental food preparation, cooking methods, food chemistry, food processing, preservation, composition, functional foods, microbiology and fermentation, antioxidant, and application) 2)Foodservice (food production, quality control, food safety, satisfaction and consumption patterns) 3)Food culture (traditional culinary culture, study of old culinary papers, recognition of Korean foods) 4)Dietary life education (dietary life status, dietary education) 5)Applied food science and nutrition

    This study attempted to standardize recipe for preparation of Korean foods such as Kalbi tang (beef rib soup), Yukgaejang (Hot meat soup), and Seolnong tang (meat soup). We examined food amount included in recipes which were used by 3 groups such as cookbooks, food service institutions, and restaurants. 1. The first step in standardizing recipe, we analyzed cooking methods from 3 sources, then investigated to them about soups. Kalbi tang was investigated from 10 kinds of cookbooks, 9 places of food service institutions, and 3 places of restaurants. Yukgaejang was investigated from 13 kinds of cookbooks, and 18 places of food service institutions, and Seolnong tang was examined from 7 kinds of cookbooks, 5 places of food service institutions, and 2 places of restaurants. 2. The product which was made by standardized recipe was evaluated suitable for using by sensory panels, the recipe adjusted to the quantities and modified. When the testing was compeletly, the total yield volumn and portions by ten persons were determined as well as material weights and procedures, and the recipe was ready to be set up. For examples, standardized recipes for preparations of Kalbitang, Yukgaejang, and Seolnong tang were as followed; Yield volumn after cooking was 6.5 kg, optimum service temperature was 70$^{\circ}C$, preparation time was 6 or 10 hours for 10 persons, and service volumn per one person was 650 g, and it was presented weight of food materials, procedures, as well as references and cautions. We have in hand try to standardize recipe for preparation about several foods, for the sake of setting up it about Korean foods especially on the focus of soups. We expect that it will be general use of education for cooks as well as application in food service institutions, and does us good of cooking, saving times, economical benefits by regulating materials.

    냉동내성빵효모의 냉동내성기구를 규명하기위한 일환으로 세포의 막 유동성에 관계되는 지질분석을 행하였다. 그 결과, 냉동내성효모 $D_{2-4}$나 CFY보다 비냉동내성 효모 Saccharomyces cerevisiae 2001이 스테롤 : 인지질의 비율이 비교적 높았다. 또 인지질조성이 조사되었는 데, 세효모 모두에 있어 phosphatidylcholine 함량이 가장 높았다. Phosphatidylcholine : phosphatidylethanolamine의 비율은 냉동내성효모가 비내성효모 보다 높게 나타났다. 인지질에 연결된 지방산 함량을 보면, linoleic acid 함량은 $D_{2-4}$에서 높게 나타났으며 지방산의 불포화도는 $D_{2-4}$가 CFY나 S. cerevisiae보다 높았다. 이 결과에서 yeast 세포막의 유동성은 각 효모마다 다르며, 이것들이 저온에서의 효모의 동결장해에 영향을 주는 것으로 생각된다. 생각된다.

    The purpose of this study was to investigate the method of making whole Chinese cabbage Kimchi, the family's taste in Kimchi and the reason for disliking the taste of Kimchi in the Taegu area. The results were as follows; 1) Most housewives learned the method of making the Kimchi from their mothers. Method was as follows; First, scatter salt on the whole Chinese cabbage and soak that for 3∼6 hours. After, wash the whole Chinese cabbage 3 times. Then, add red pepper powder, garlic, ginger and salted fermented anchovy as basic seasoning. Be sure to, mix the red pepper powder and salted fermented anchovy until they taste hot and salty. Store the whole Chinese cabbage until they ferment. Afterwards store the whole Chinese cabbage in the refrigerator. 2) It was the whole Chinese cabbage Kimchi that most family members preferred. 3) Among the family members, the old age group preferred newly made Kimchi because of the cool and fresh taste. The adult group preferred fresh taste, also smell and peculiar taste of the seasoning were important. The adolescent group preferred fresh taste and sour taste. 4) It shows that most of the family likes Kimchi, and among the family members, about 25% of the sons and daughters dislike Kimchi. And it shows that all family members dislike salty taste. 5) The older housewives’ Kimchi was preferred over the younger housewives’ Kimchi.

    가열방법 및 시간에 따른 백미, 현미, 노란콩 및 검정콩의 식이섬유 측정치의 변화 양상은 다음과 같다. 불용성 식이섬유는 가열처리 방법에 따라 변화 양상이 각각 다르게 나타났으며 노란콩을 제외한 다른 시료에서는 가열시간에 크게 영향받지 않는 것으로 나타났다. 수용성 식이섬유는 가열처리에 의해 대체로 증가하는 경향을 보였으며 가열방법에 따라 변화양상이 다르게 나타났다. 가열시간이 길어짐에 따라 백미의 수용성 식이섬유는 증가하였으나 현미는 감소하는 경향을 나타내었다. 그러나 노란콩은 가열시간에 따른 일정한 경향을 나타내지 않았으며 검정콩은 가열시간에 영향받지 않는 것으로 나타났다. 가열처리에 의한 총식이섬유의 변화는 대체로 불용성 식이섬유와 비슷한 경향을 나타내었으며 이는 모든 시료들이 수용성 식이섬유 보다는 불용성 식이섬유의 함량이 현저히 많고 본 실험에서 총식이섬유를 불용성 식이섬유와 수용성 식이섬유의 합으로 계산했기 때문이라 생각된다.

    본 실험은 두유에 칼슘을 강화하기위한 사전실험으로 두유단백질을 단백분해효소로 처리한 뒤 효소처리 전, 후에 나타나는 단백질의 기능적 특성을 비교 분석하였다. 두유단백질과 단백분해효소의 비율이 100 : 1이 되도록 첨가하여 pH7.5, 5$0^{\circ}C$에서 10분간 처리하였다. pH에 따른 용해도는 두유단백(SMP)과 분리대두단백 (SPI)인경우 pH4.7에서 최소를 보이고 산성 및 알칼리성으로 갈수록 증가하였으나 전반적으로 매우 낮게 나타난 반면 효소처리된 두유단백질(PT-SMP)은 전 pH범위에서 SMP에 비해 높은 용해도를 보였고 특히 pH4.7에서는 20배 정도의 높은 용해도를 나타내었다. pH에 따른 유화력은 3가지 시료 모두 용해도와 같은 패턴으로 pH4.7에서 최소를 보이고 산성 및 알칼리성으로 갈수록 증가하는 경향을 나타내었다. SMP와 SPI는 높은 유화력을 나타냈으며 PT-SMP도 이와 유사한 정도의 유화력을 나타내었다. 반면 PT-SMP의 유화안정도는 다소 낮게 나타났다. SMP와 SPI는 pH4.7에서 최소의 거품형성력을 나타내면서 그 외의 pH에서는 약간 증가하다가 pH 12에서는 높은 거품형성력을 보여주었다. PT-SMP는 pH2와 4.7에서 높은 거품형성력을 나타내었고 pH8까지 차츰 감소하다가 pH12까지 다시 증가하였다. 거품안정성은 3가지 시료 모두 30분까지 급격한 감소를 보이다가 차츰 감소정도가 완만하게 나타났다. SMP와 SPI는 pH4.7에서 비교적 높은 안정도를 보였고 pH 12에서는 가장 낮은 안정도를 보였다. PT-SMP는 모든 pH에서 다른 두시료에 비해 낮은 안정도를 나타내었으나 pH4.7에서는 다소 높은 안정도를 나타내었다. PT-SMP는 SMP에 비해서 pH4.7을 제외한 pH에서 높은 열응고성을 나타내었고 가열후 감소된 가용성 단백질의 양을 보면 모든 pH에서 PT-SMP가 높게 나타났다. 이상의 결과로 볼 때 두유단백질에 효소처리를 하게 되면 높은 용해도와 거품형성력, 또 비슷한 정도의 유화력을 나타냄을 알 수 있다. 특히 산성 pH에서 월등한 용해도와 거품형성력을 나타내어 효소처리하여 부분가 수분해된 두유에 과일을 첨가하는 것도 가능하리라 생각되며, 또 효소처리된 두유단백질이 청량음료나 마요네즈, 과일첨가후식의 첨가물로 사용될 때 높은 기능적 특성을 발휘하리라 사료된다.

    This study attempted to examine the effect on sensory characteristcs and physiochemical properties of Omija jelly in various volume of adding carrageenan. The pH of Omija extract was 3.02. The viscosity was increased and the turbidity was decreased according to the increase concentration Omija extract. the sensory evaluation of Omija jelly was the best with the ratio 0.5% carrageenan.

    본 연구의 김치시료는 절인 배추를 수세하여 초산 0.01%, 0.05%, 0.1%의 수용액에서 10분간 침지 후 건져서 김치를 제조하였다. 김치발효중 배추를 중륵과 엽신별로 그 숙성도변화를 관찰하고, 초산첨가 농도에 따른 영향을 알아 보았다. 또한 김치숙성도 판정을 위한 여러방법(pH, 총산도, 휘발성산도, ascorbic acid함량, resazurin test value, pH/acidity ratio)간의 상관성을 검토하였다. 중륵과 엽신의 숙성도는 pH와 산도를 기준으로 관찰할 때 중륵이 엽신보다 숙성이 빠른 경향으로 나타났으며, 적숙기이후에는 별 차이가 없었다. 1$0^{\circ}C$에서 배추김치의 발효중 대조구와 초산전처리구의 특징에 따른 차이는 별로 나타나지 않았다. 초산전처리한 김치는 pH와 총산도를 기준으로 볼 때 대조구에 비하여 김치의 숙성을 앞당기는 경향이었으며, 0.01% 초산전처리구만이 김치의 가식기간을 연장하는 듯 하였다. 이러한 결과는 Ascorbic acid 함량이 비교적 높게 유지된 것으로도 확인할 수 있었다. 휘발성산도는 초산전처리농도가 높을수록 높게 나타났으며, ascorbic acid 함량은 엽신보다 중륵에서 높은 값을 보였고, 초산전처리농도가 높을수록 낮아지는 경향을 나타냈다. 본 실험의 적숙기인 발효 제 3~6일의 pH는 4.6~4.4, 총산도는 0.4~0.5%, ascorbic acid함량은 7.5~11.5 mg%, RV는 4.5~5.0 그리고 pH/acidity ratio는 9~10을 나타냈다. 1$0^{\circ}C$에서 발효시킨 김치의 중륵과 엽신의 RV, 휘발 성산도, ascorbic-acid함량 그리고 pH/acidity ratio는 pH, 총산도와 상관성이 매우 높은 것으로 나타났다.

    건조표고버섯, 생표고버섯, 느타리버섯, 양송이버섯을 조리방법을 달리하여 조리한 후 기계적, 관능적 특성을 측정한 결과는 다음과 같다. 1. 느타리버섯 갓의 응집성과 탄성에 있어서는 조리방법간에 유의차가 없었으나 그외의 다른 버섯들의 경도, 응집성, 탄성, 점착성, 씹힘성은 조리방법별 시료간에 모두 유의한 차이를 보였다. 2. 생표고버섯은 Microwave 처리에 의해 모든 기계적 측정치가 낮아졌으나 그 외의 버섯들은 Microwave처리에 의해 전 기계적 특성들에 있어서 높은 측정치를 나타내었고 소금물로 데친 시료의 Texture 측정치는 가장 낮은 값을 나타내었다. 3. 가열조리의 관능검사에 있어서는 튀김과 볶음조리에 대한 기호가 가장 높았고 데침, 찜, Microwave처리군 중에서는 소금물로 데친 시료의 기호도가 가장 높았다. 4. 버섯요리의 관능검사결과 튀김요리를 제외한 회, 볶음, 전, 전골요리에 있어서 각 연령집단간에 유의한 차이가 있었다. 회, 볶음, 튀김, 전에서 성인집단이 가장 높은 기호를 보였고 튀김은 중학교 여학생이, 전골은 고등학생집단이 가장 선호하였다. 전체적으로 보았을때 전골, 회, 튀김, 볶음, 전의 순으로 버섯요리에 대한 선호도가 높았다.

    The effect of milling on the nutrients of raw and parboiled rice grain samples was investigated. Parboiling treatments of choo chung paddy decreased head rice yields and pressure parboiling proved to be more beneficial in reducing white belly rice. Except PP sample mean length/width ratio of parboiled milled rice kernels(8% milling degree) were more larger than raw milled rice and the extent depended on severity of parboil heat treatment. Parboiling had no effect on the protein content of browm rice(0% milling degree) but increased in 4%, 8% milling degree and in PL40 sample. Parboiled rice had a lower fat and the extent depended on degree of milling. Ash content of parboiled brown rice decreasd compared to raw brown rice and generally decreased according to milling degrees were high. Nevertheless, PP, PT40 and PL40 parboiled milled rice samples(0% milling degree) contained more ash than raw milled rice. Parboiling increased total sugar and reducing sugar and increased according to milling degrees were high. Parboiled rice had a high reducing sugar content than raw rice except for PT sample, and more contained as higher milling degree. Total amino acid content of parboiled brown rice increased compared to raw brown rice except for PL40 sample. Parboiled rice of 4% milling degree had a lower total amino acid content and then 8% milling degree had a higher than raw rice. Ca content of parboiled rice was lower than raw rice and tended to have lower as milling degree were high. Parboiled rice of 0 and 4% milling degree had a lower Fe content degree but higher in 8% milling degree. PP and PT40 samples contained more Fe than any other parboiled rice. Parboiled milled rice contained more thiamin than raw milled rice. Rice of milling degree 6% and PL sample contained most thiamin.

    The Purpose of this study is to survey nutrition education for day-care teachers and children. For this study, 453 day-care teachers were asked questionnaire and responses were analyzed. Textbooks of the teachers were also analyzed and nutrition survey at four different places of day care were carried out. The results of this study are as follows: 1. The majority of the day-care teachers were interested in the nutrition and nutrition education, but only 23.2% of the teachers had experience of nutrition education. 2. As to the nutrition knowledge(high, middle, and low), 58.1% of the teachers responded to the middle level. 3. About 81% of the text materials for the pre-teachers contain subject of the health and nutrition management for the children, however, the contents of nutrition management were limited to 7 pages(0.6% of the volume). For the text materials of the re-education, only 9.1% contains the subject, and the contents of nutrition management were limited to 3% of the volume. 4. The percentage of employing dietitians in the day-care is 12.4%, and menu is prepared mostly by the director of the day care. 5. In the nutrition survey, nutrient intake was mostly unsatisfied.

    Chou에 있어서 원료소맥분에 대한 미분의 대체 가능성을 검토하기 위하여, 중력분에 미분을 0, 25, 50, 75, 100% 첨가한 미분 및 미분복합분에 대한 원료전분별 이화학적특성과 chou형성능력을 조사하고, 반죽의 물리적성질을 개량하기 위하여 증점제인 젤라틴과 유화제 Span20을 첨가한 후 첨가제의 효과를 비교검토하였다. 미분의 물결합능력과 팽윤력은 280%, 28.8로서 중력분 234%, 12.1보다 컸다. 미분과 중력분 호화개시온도는 $65^{\circ}C$로서 동일하였으며, 최고점도는 미분이 중력분보다 컸다. 냉각시의 setback율은 미분은 0.94, 중력분은 1.14로서 미분은 중력분보다 노화가 느린 것으로 판단된다. 중력분에 미분을 혼합한 경우, chou형성은 미분의 혼합비율에 따라 중력분 chou의 80.0-89.0%로 감소하였다. 그러나, 미분에 증점제와 유화제를 첨가하면 chou형성은 무첨가구에 비하여 각각 108.8%, 126.4%로 향상되었다. Chou반죽을 냉동처리할 경우, 반죽제조직 후 구운 chou와 비교하여 차이가 없었다. Chou반죽의 내부구조를 광학 현미경으로 관찰하였던 바, 미분의 반죽내의 원료성분들의 분산은 양호하였으나, 조직이 치밀하였다. 따라서, 유지의 입자는 작고, 함유량도 적었다. 그러나, 미분에 증점제나 유화제를 첨가한 반죽은 원료성분의 분산이 우수하였다. 특히, 유화제 첨가의 경우, 유화가 잘되어 소립의 유지입자가 고르게 다량 함유되어 있었다. 관능검사 결과에서 25%미분복합분, 50%미분복합분, 75%미분복합분의 chou들은 중력분과 비교하여 외형, 외부색, 공동형성, 저작감, 맛의 모든 항목에서 같거나 좋은 평가를 받았다. 100%미분의 chou는 공동형성에서만 100%중력분 chou에 비하여 다소 떨어졌을 뿐, 나머지 항목에서는 유의차가 없었다. 본 실험의 결과로부터 100%미분의 chou는 공동상팽화능력만 다소 떨어졌을 뿐, 맛은 소맥분과 비교하여 큰 차이가 없었던 것으로 나타나, chou제조에 있어서 미분은 소맥분과 대체하여 충분히 사용할 수 있는 것으로 판단된다. 한편, 증점제나 유화제를 첨가함으로써 미분 및 미분복합분의 chou형성능력이 크게 향상되었던 것으로 보아 향후, 이들 첨가제의 종류와 첨가량에 대한 연구 검토가 진행되어야 할 것으로 생각된다.

    Boiled, broiled, deep fried, pan fried 등의 방법으로 조리된 조기와 돼지고기의 50% methanol 추출물에 S9 mix를 첨가한 군, S9 mix를 첨가하지 않은 군, 그리고 nitrite를 처리한 군을 Salmonella typhimurium TA98과 TA100으로 Ames test를 실시하여 돌연변이원 형성을 검토한 결과는 다음과 같다. 1. S9 mix를 첨가하지 않은 조기와 돼지고기는 original weight 0.0125 g과 0.1 g사이의 농도 구간에서 돌연변이 원성을 보였다. 2. S9 mix 첨가시 조기와 돼지고기의 돌연변이원성은 모든 농도 구간에서 S9 mix를 첨가하지 않은 경우보다 2∼5배 정도 증가하여 간접 돌연변이원이 존재함을 확인하였다. 3. TA98과 TA100에 대한 돌연변이원성은 모든 조리법에서 조기보다 돼지고기가 더 높았고, 특히 pan fried법의 경우 S9 mix의 첨가시 돌연변이원성이 매우 높게 나타났다. 4. 조기와 돼지고기의 모든 조리법에서 nitrite 처리시 TA98과 TA100 모두 돌연변이원성이 증가하여 직접돌연변이원임을 나타냈고, 특히 TA100보다 TA98에서 돌연변이원성이 더 높은 것으로 나타났다.

    For the accurate interpretation and objective measurement of textural characteristics of fermented vegetables, first of all, the studies on the microstructure and chemical compositions of vegetable cell, and the changes in the textural properties of vegetables during salting, blanching and fermentation should be carried out. And the mechanical textural parameters were needed to compare with and analyze in relation to the sensory parameters. In this review, the thypical force-distance curves of fermented vegetables were obtained from the compression, cutting and puncture test. And it was showed that the compression force was a more effective textural parameter to express the hardness of fermented vegetables, and the sensory chewiness and toughness were related to the changes in cutting force. In the puncture test, the puncture force was related to the hardness and varied with the size and form of puncture probe; the changes in puncture force by small probe could express the decrease in hardness and crispness, whereas those by large probe could represent the changes in toughness. And the brittleness and crispness could be measured by the break point and the numbers of peak obtained from the force-distance curves.
